I absolutely love this restaurant! Their customer service is fantastic from the second you walk into the door. I always order the beef chimichangas and they are so good. The price is very reasonable considering the large amount of food they give you. It's also great that they give you a very large bag of tortilla chips with salsa when you order to go.

Pretty good Mexican food here today. Had the ground beef tacos and their chips and salsa. It was all really good. The salsa especially had a really good limey flavor. I'd give it a 5 star, but any place that serves beans and rice as sides to a dish can't get a perfect rating. Beans and rice is prison food.

My family and I have been patrons of this great spot for many years now. The service is always great, the staff and Owner's family are fantastic. Oh yes, we LOVE the food as well.

This was one of the first Mexican restaurants we came to in Meridian (Boise). After going to a few others, we decided, kids included, that this is one of our favorites in the area. It's not perfect but it's close enough without being too picky. All of the staff are very friendly. The main suggestion I would make is to clean the carpets and tile floor and and fix some of the ceiling tiles so it's a little more presentable. I've found this to be a common issue with many Mexican restaurants. All week long my kids keep asking if we can go to Fiesta Guadalajara. The pico is really good and warm fresh tortilla chips are a plenty.

I've seen positive reviews that state plenty of parking. Duh, who wants to eat this stuff? We first tried it almost 3 years ago shortly after moving to Kuna. It was terrible. Crappy service, dirty bathrooms, and mediocre food. We decided to give them another try. Heck, 3 years in business, may we hit a bad day or they've improved. Wrong. The free chips, salsa & beans. Chips were stale and unsalted, salsa was ok, but the beans they were gross. Not only lacking in flavor but very greasy mouth feel. Should have walked out at this cause if you're a Mexican restaurant and can't get chips & salsa right, you shouldn't be in business. We order and hubby specifically asks if there are onions in his meal. No sir, no onions. You can already guess, it was loaded with onions. At this point he was done with their lackluster service & food and didn't get a replacement. Son got the beef fajitas. There was probably 2 oz. of beef, tons of onions a few peppers and some tomatoes. The food would be bad enough on it's own, but then on top of that, you can hardly find a server to save your life. If that all wasn't bad enough, their women's bathroom was filthy. How hard is it to clean out a vent fan every few months. This one obviously hadn't been done in years. Don't know who these folks are giving the place good reviews - maybe they never been anywhere else. Taco Bell seriously has more flavor.

We tried this place 5 years ago while visiting. After California Mexican food, this was not good. Now that we live here we thought to give it another try. Meh - absolutely NO flavor to the food. Not even salt and pepper helped to raise the taste level. This is not Mexican food. Mexican food has spices and flavor. The margaritas were good and the waitress was super nice. Go for a drink - avoid this place for food.

Okay, it was just plain gross! When a Mexican restaurant gives one basket of chips and bowl of salsa free and then charges for each additional, that's a sign to RUN! The chips were nowhere close to being fresh. The beans I would say were rehydrate. I ordered a taco with shredded beef and it came with canned tomatoes and beef chunks. The rice tasted like a box, not that it came from a box but actually the box. Basically there was nothing good about this place. I can't figure out why the parking lot was full. On the positive side our waitress was super nice.

Went to Fiesta Guadalajara with a group during a quiet Sunday evening. We were hopeful, but everything was meh. In short, this place would work in a pinch, but there has to be better Mexican food in the Treasure Valley. Here's the long of it: - Waiting to be seated: Our group was acknowledged right away, wait was minimal - Seating: We passed several dirty tables on the way back to our large table though restaurant was quiet. Table appeared clean at a glance but was actually dirty - looks like they didn't move any of the salt/peppers/sugars when they wiped the table - Service: Friendly, but lacking. Initially we were seated and checked on several times by a woman who turned out to be the hostess, not our server, but she didn't mention that until after bringing out drinks and checking on answers to questions about the bar and the menu. When our server came to the table later, he was able to answer only part of our questions - when asked about the beers offered, he started with, "Now don't quote me on this, [...]" , (I couldn't resist ;) ) which left with the feeling that we'd be gamboling on if any beer we ordered would be there or not. - Food: Large dinners, as well as kid's menu items, were ordered by our group. The food took a while but was served hot. The food was okay, leaning a little on the oily side for my preference. None of the food (ranging from carne asada platter to fajitas) stood out as really fantastic to anyone. The chips and salsa served to the table while we were waiting for our food order were pretty good, though we found it interesting that the salsa had large chunks of stewed tomatoes - every Mexican restaurant has its own special salsa version right? - Boxes & Check - Didn't take long to get a couple to-go boxes and the check, however, we waited for the server to close our check and finally had to go up to the hostess station to pay. Not sure if table or hostess counter is the way to pay here. There are so many more restaurants to explore in the Treasure Valley, and there was nothing amazingly terrible or wonderful to make me want to return to Fiesta Guadalajara.

The food was quite tasty and the customer service was fantastic. The atmosphere was pleasant and the service team worked together smoothly to assure our needs were met. It was my first time here and I would be more than happy to return.

Love their appetizer sampler/combo thing. But only when it's to go. They just make it different, and it tastes better. Also the quesadilla in the app combo is prefect full of cheese, but the actual quesadilla meal, has little cheese.

I was pleasantly surprised with this restaurant because I am a fan of Chapalas and have not found anything that matches it in Idaho so far ( I am from AZ so I am fairly picky). The food was priced slightly cheaper then Chapalas and the portions were a lot bigger. I had the Carne Asada which I normally get at Chapalas also. The taste was comparable and I blame the slight lack of charring on the meat which I am fond of to the fact that I decided to get my meat rare so it barely stayed on the grill. Anyhow the beans and salsa with complimentary chips where average.. I don't really compare them to any other restaurant because I know everyone pours it out of a can when it comes to beans or at least it tastes that way. The salsa seemed homemade though... our waiter was very quick with our food and polite:). I did not get any adult beverages since I am prego so cannot comment on the strength but what I did notice is they gave us a sopapilla at the end of the meal which I always love and sadly Chapala never gives. I will definitely be back and this time bring the hubby to try out the drinks and get his opinion on the food.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
