    I love Pho and eat a lot of it here in Seattle but generally in small dedicated neighborhood shops. I would like to try the Pho here just to critique it but this place has way better fare to offer. I fear this restaurant is a push for most Boiseans but I hope they figure it out. When hitting a Vietnamese Bistro like this (or provincial vietnamese) I skip the Pho and try the Banh Hoi trays and crepes. I find them stellar here, in fact the crepe is the best I've ever had...a great addition to a tray BTW. It's time for middle america to branch out beyond Pho and this place will certainly help you do that.

    Excellent, thoughtful, friendly service. My boyfriend had the spicy beef soup and I had the main beef entree. Delicious! We shared the summer rolls for appetizers: light, tasty, fresh. We are both from the Bay Area and found P.N. up to snuff with San Francisco fare.

    The pho at Pho Noveau is a hit. The broth has bursting flavors of star anise, garlic, cilantro, beef, and all the other spices that dabble in that bowl of goodness! Vermicelli noodles are chewy and add a nice texture that compliments the fresh veggies and meat. The service can be slow, but it never seems to be an issue with the quality of the food. So be patient and order an appetizer! I suggest the fresh spring rolls. They are a tasty treat before the main course! I promise you won't be able to eat just one.

    'Lemongrass' chicken bahmi taste more like mc Donald's 1$ menu sandwich with cilantro on it. Service ok, no attention to customers. If you like pho soup, it actually tastes like pho.. But anything else, well there is a lot better options on 8th street.

    This place is the Pho King of Boise! The service was outstanding. I went there on a Saturday night and was seated immediately and got my Pho within minutes. I even got to meet the chef behind the amazing broth. The staff calls her grandma and she is originally from Vietnam. It doesn't get much more authentic that that!

    Not an experienced Pho eater, but after eating here in Boise I'm ready to become one. Crepe appetizer was delicious as was chicken pho. Service was average. The place was busy on a Saturday mid-afternoon. I will be back.

    Probably one of the freshest, best tasting pho shops in town. They've improved so much since I first came here. The broth is fresh and not greasy, fresh vegetables, and the amount you get for $8.50 is quite enough to keep your belly full for a while! We also got the fresh roll with pork and shrimp as an appetizer. They were delicious. The peanut dipping sauce is amazing with it. My friend also ordered the Pork Bahn Mi. It's a little stiff on the price for $8.50 since most bahn mi's run you $4-6, but they do serve it with sweet potato fries, so I guess that makes up for the cost. When I came almost 6 months ago with my sister and ordered a meat dish, we hardly were served any rice. When we asked for more, the waitress said she would have to charge us for it. When my sister made a comment about not getting much in the first place, our waitress returned with more rice for free. I will say the service is friendly and prompt. I'll have to come back and try a few more dishes again before I give five stars.

    This is the best PHO place in town. Honestly I can't get enough of this place, service is always on point, pho broth is amazing, veggies are always fresh and the beef can be served rare. Some of the menu items I really enjoy are: Fresh Rolls (Shrimp & Pork) Cha Gio - Fried Egg Rolls (Vietnamese Style) Spicy Beef Pho (w/vermicelli noodles) Sweet & Sour Soup - Vegetarian This place is tucked in downtown and you're bound to love it.

    I am super picky about Vietnamese food and have extremely high standards so I was so pleased when I tried Pho Nouveau. The food was amazing, so fresh and light and such great flavor. We had the lemongrass chicken wraps and pork vermicelli bowl and they were both amazing. I also had the Vietnamese drip coffee with sweetened condensed milk and it was a very delicious treat. I will certainly be eating here a lot and would definitely suggest it to others.

    I do not eat the Pho here, because it's only so-so. If you read through my reviews, you may discern a pattern where I pick out one or two things a restaurant does well, and then promote it based on that. I like to be positive, I can't help it. The Bun Thit Noung here is the best in the valley in my opinion. The noodles and veggies are fresh, crisp, and spring off the tongue. The meats are well grilled and flavorful, and the accompanying fish sauce is just flavorful enough to not overpower everything else. The same sentiments can be said for their spring rolls. In general the service I've received here has been decent, and the ambiance is appropriate for a bistro-like Asian restaurant. 4 stars for the excellent Bun Thit Noung and Spring Rolls.

    It's probably not fair that I'm commenting because it's just not my thing. Don't get me wrong, I love ethnic food but brothy soup is not my idea of good food. I gave a middle of the road rating 3 *. Maybe this will be helpful for people that are not fans of soup that may be considering it.

    The pho is great, the chicken curry is fantastic, but I am literally addicted to the sizzling Saigon crepe. I have been known to order it to share as an app, and then just decide to order my own for dinner since sharing it is so painful... Nice cozy spot right downtown. Love it.

    Pho Nouveau brought a refreshing atmosphere to the pho scene. In the northwest it is very common for pho restaurants to have little decor and little signature notes that make them unique. The interior brings a nice warm tone that is inviting and warming, the French music with the option of a French baguette was a nice nod to the history of Vietnam. My girlfriend and I tried the fresh summer (spring) rolls, the chicken curry, and of course the pho. The summer rolls were wonderfully cooked, and served with a unique peanut sauce that was more liquid than most, which at first was alarming but ended up having a wonderful taste. The summer roles had just enough basil and just enough protein that they were well balanced and no one component overpowers another. The curry was more of a stew than a traditional Thai or Indian curry, this was a good change of pace. Although made with coconut milk suggesting more of a Thai recipe, the consistency and flavor definitely has strong roots in Vietnamese style of cooking. The server also directed us to try the chicken dipped in salt and lime which was a flavor so wonderful it left me asking for more. The curry had the option of rice or French baguette and since the curry is more of a stew, both would pair wonderfully with it. Finally, the pho, was delicious and clearly freshly made. It did not taste like it had come from the same stock that had been made from weeks before. It was a balanced flavor overall however it ran just slightly on the salty side, but was not too acidic. Definitely will return, a good refreshing experience.

    DID NOT EAT HERE!!! HORRIBLE CUSTOMER SERVICE!!! Went on Thursday 07/31/14 around lunchtime. There were 2 customers in the whole restaurant. The hostess threw an attitude about setting up for a party of 9. We sat down and the two waitresses stood behind the counter talking and didn't acknowledge us at all. After 15 minutes of just sitting there while they chit chat we walked out. As we were walking out they finally spoke to us ans asked if we were leaving. My husband said yes and we walked out of the door. NEVER EVER eating here. I wish I could give them 0 stars!!!

    This is BY FAR the best Vietnamese food I have had outside of Vietnam. I had Pho' from here months ago and I cannot stop thinking about it. In fact, every Vietnamese Food restaurant I go to in Los Angeles (my hometown) or anywhere I travel, is held to the standards PN set for me. The broth in their Pho is rich in flavor, as if it had been stewing for hours, if not days. The meats and herbs were as fresh as I've had in a restaurant. This is very clean food. The service was great. The atmosphere is perfect. This is the best restaurant in Boise.

    After a horrible day of travel hassles missed flights and hotel reservations that were completely wrong on our anniversary, we stopped in for a bowl of hot pho! Best pho ever and Blake our server was the best and totally made our night! Great food great service... We will definitely be back!

    The fresh rolls were pretty good but the pho (beef) was pathetic. I would be embarrassed to have pho in the name of my business and be serving what tasted like a powdered soup mix broth. It was extremely salty and as well as a sweetness. Having eaten pho regularly for 30 years, this was dismal. Bummer! The service was prompt and friendly.

    The food itself is a solid 3-star, but I'm adding the extra star for our friendly server. This is my first time in Idaho and whenever I get off a long flight, I like to eat noodle soup. My husband suggested this place from the listing that he found on Google. I am from the DC area where there are plenty of good Pho places, but I don't think it would be fair to rate this place based on my DC standard. I read many insulting reviews from Californian transplants to many of the local favorite places and I wish that they would just stay there! I ordered Chicken Pho, my husband had the spicy Vietnamese beef noodle soup, and my son ordered the clear noodle soup with seafood. The food arrived quickly and they were piping hot. The vegetables that they served with the soup were nice and fresh. My soup tasted slightly different than what I'm used too, but it was good nonetheless. My husband and son both like their soups. The service is excellent.

    I came to Boise to visit my son and his pregnant girlfriend. She had been craving Pho all weekend, so today I treated her to lunch before heading back home. Let me say, everything about dining here from beginning to end was absolutely terrible. When we walked in, there was one other customer and they told us we could seat ourselves. No problem. We sit down, they drop off our menus, did NOT bother to ask us if we wanted anything to drink. Fortunately, they did bring water. Two guys came in after us so the waiter went and took their order before taking ours. Maybe he assumed that because my son's girlfriend went to clean up that we weren't ready. However, he would have known that we knew exactly what we wanted before we walked through the door, had he just asked. When he finally came over to take our order, we asked for some lemons for our water and ordered some Pho. When the Pho came, they had the beef in the broth. The beef is never supposed to be in the broth until you're ready to eat it because it overcooks the meat, as ours was. The Pho was fairly bland, as the waiter brought TWO slices of jalapeño for both bowls, two tiny wedges of lime for both bowls, no onions, and no green onions. We asked for more jalapeños and lime, which he brought us, and that was alright. My son's girlfriend got a little jalapeño in her eye an he barely offered any assistance. After she went to rinse out her eye, he gave her a wet napkin to put on it. Seriously. The waiter never once asked us if the food was alright, if we needed a refill on our waters, or if we wanted to order anything else. When he decided we were done, he brought our check over without saying a word. I told him we would some to go boxes. So what does he do? While I went to wash my hands, he takes both of our bowls and puts them in one container. I don't mind that, as I was getting ready to head to the airport and leave that for my son when he got off work. What irritates me is that this guy threw out half of the broth because it didn't fit into one container. It is SOUP. Get another container and put the soups in TWO containers. It's that simple. I just paid nearly $20 for that and you throw away the food I just asked you to box. Really??? When I asked him about it, he proceeds defensively to say that he asked my son's girlfriend. What he didn't mention is that he asked her if he could put both leftovers in one container. He did not ask her if he could dump put half of the food we just bought. If I didn't have to head to the airport, I would have asked to speak to the manager right away. Oh, I did call to ask for a manager and the waiter said there is no manager. I told him to have the owner call me. Not only did he get defensive, he also cut me off, was completely unapologetic and proceeded to tell me how many years he's been in the service industry. Not once did he acknowledge how horrible the service he gave was. This was ridiculous. I would never want to eat there again, nor would I ever recommend it to anyone.

    We went here for a coworker's birthday. It was extremely tasty! They have lots of things that don't contain gluten, which made me happy. Our server was very knowledgeable about the ingredients in the many dishes. I felt very comfortable eating here and I plan to return soon.

    I go hear every time I'm in Boise, I only get one item, it is so dang good I won't deviate. The spicy beef...an absolute must try. Every year I bring other guys from work and they all agree, best Pho in US.

    Very busy every table is full, possibly a good sign. The menu is good in terms of Vietnamese I have seen better. So how was the food? I had the pork and egg roll with noodles which was average quality and tried the Pho which was very lackluster in quality. I would say it's low end and have had better. The service was horrible, my drink was never refilled even after business slowed and my waitress after accepting my payment said thanks and walked away never to return. No " how was your food" or " please come again" NOT IMPRESSED.

    Love, love, love this place. The appetizers are splendid and the pho is divine. Coming from Seattle, where Asian cuisine is plentiful and isn't so much here in Boise, this is my choice for Vietnamese food here. Quite the satisfying experience.

    I have had pho in many places, including Vietnam. The pho in this restaurant is awful: it has way too much anise and salt, and the meat was tasteless. My companions did not complain too much about the food and the prices were cheap, and the place was quiet (not many patrons) so I give them two stars rather than one.

    I've been here several times...it's been a favorite go to of mine anytime I have a Boise layover. This last visit, however, was somewhat of a disappointment. The "Bun" noodle bowl I ordered was well below average and the fresh spring rolls were not as good as I remember them to be. A little smaller, sauce on thin side and pork was over cooked in both the noodle bowl and the spring rolls. I'm going back today for lunch and will update review.

    Vietnamese in a great funky hole in the wall on Idaho Street.. No flavor in the broth...none. I am sure that it can go with either chicken or beef....so not the true flavor. LITTLE SAIGON Nampa, ID....Rocking PHO!

    I like Pho Nouveau for it's curry. I usually get the chicken curry, which comes with a baguette, not rice. I order the rice on the side and have a little of both starches. There is always plenty to take home too. I think the Pho here is good as well. It's not the best ever, but it's good for our options in town. I don't really know how much I like the staff here, though. I would say they are a little snobby? Maybe one in particular. FYI: If you are gluten free, they use a lot of brown rice flour not wheat flour. A plus in my world.

    I think I could really love this place if I didn't take my order to go. Vietnamese "sizzling saigon crepes" are one of my top favorite ethnic foods. Crunchy, sweet, savory, fried & fresh ALL together like a rave in your mouth.

    As far as Pho goes, I would give this a 3, but in Boise, its a 4. I order the Clear Noodle soup and we had the Fresh Tofu Spring Rolls. The clear noodle soup is a pretty large portion and reheats the next day very well. I added a couple drops of Hoison sauce and a large amount of Red Chili Paste, which goes well with the ginger garlic broth in the soup. The fresh spring rolls aren't as good as Mai Thai next door, but the place is decent. Service is a little slow even when there is no one in the restaurant. But when you want some tea and noodle soup, its a great place in downtown Boise.

    Not authentic and small portions for the price. The pho soup base came out SWEET... as if the soup base wasn't flavorful enough and they dumped leftover sweet & sour sauce to make up for that. Normally pho places pride themselves on their soup--a full salty flavor which comes from stewing a giant pot of bones for hours on end. This easily could have been an Asian soup based dessert. After the disaster at Don Khanh I knew better than to compare Pho Nouveau food in Boise to Vietnam. I ordered a grilled pork sandwich because I thought that would be harder to mess up (french bread, meat and pickled veggies), and the portion was smaller. It came with fries, which I'm 90% sure came from a frozen bag. The sandwich was pretty good, but I was sad at paying $7+ for it. Little Vietnamese shops generally charge about half that (for that portion).

    For a restaurant that bills itself as being a Pho place, this place doesn't have too many Pho items on the menu, and is much closer to being a generic Asian fusion restaurant. However, that's good news if your date doesn't know what Pho is and decides she doesn't want any once she finds out. The food is good. The service is good. The place is almost a gastropub, since it has a prominent bar and so few tables. This is a good solid dining choice all around.

    Come for the three dollar happy hour beers. Stay for the delicious clear broth. The chicken was even nicely seasoned before adding it to the pho. Steaming bowl is served with a side of nice aromatics including Thai basil and cilantro. This is really good, if not old-fashioned, comfort food! Forget the rolled, fried, drunken, etc stuff. This place is called PHO Nouveau; and for a good reason.

    This was our third visit to Pho Nouveau and it was as delightful as the previous two. I had the pho (why mess with a very good thing) and it was superb, though I do not claim to be a pho expert. There were five of us, two of us had the pho (because we are very smart), my wife had the grilled beef and our other friend had the grilled pork chop. All of them gave their meals five stars! The reason I only rate this place with four stars is twofold. First, the person who seated us was rather rude - she might of just been having a bad day or did not like the idea that we requested seating other than the one she was showing us. Second, the menu is not very "kid friendly" - I don't know what Vietnamese children eat, but they would have to order full sized meals in order to satisfy their hunger. No matter, we both love this place and have made ourselves a promise to visit every time we are in Boise.

    Nice location and a refreshing break from the usual. The food is pretty darn good for locals who aren't in the mood for another burger or have no idea what "real" Vietnamese food is. I lived in Vietnam for 3 years and also worked in Seattle where many fresh-off-the-boat Vietnamese restaurants litter back roads and dark alleys. The service at Pho Nouveau has always been good and drink prices can be worth the walk over. I think it'd be a good first date place, but anyone who has dined in Vietnam or larger cities and looking for some real good Vietnamese food in Boise will surely be disappointed.

    this was way better than i expected. the food looked pretty authentic all around. the big minus here for me is the MSG. im slightly allergic to MSG so when food has a lot of it i feel super bloated and out of it. also our waitress was maybe slightly new. i think she delivered the wrong food to the wrong table and the lady in the kitchen yelled at her. she wasnt super fast .... i had the clear noodle soup and there was a lot of shrimp. also mussels. the noodles were good! not soggy or stale. the MSG killed me though

    Mehh.....2.5 stars at best.... We stopped in for lunch. I was craving Pho after a night out of liquid over indulgance. They said we could sit anywhere. The options for more than 2 people to sit were limited. (We had 3). Service was spotty and they 2 waitress' seemed to be pacing in circles not helping each other out or just overall looking rather inefficent. We waited a bit to have someone take our order. People were waiting quite a while for food. When it came time for the check (we had been waiting for a bit already). I politely asked our waitress. To which she replied, "It will have to wait I need to take their order first." After about 10-15min of chitchat while they table ordered and she described the various dishes on the menu to them we eventually got our check. In short if you have an hour for lunch including travel/walk....you are taking a chance going in here. In my expereince I have been able to get a meal at a vietmanese place and EASILY be out in an hour. They are not that busy it just takes FOREVER!!

    This place came highly recommended by several people, and as my fiancé and I love Vietnamese food we had to try it. We were certainly less than impressed by our experience. The place has Nouveau on the sign, but people rave about it as though it's the best traditional pho ever... It really isn't. Overpriced, underwhelming food, and cramped seating. We had a very hospitable server, but the food was so unimpressively flavorless given what else is in the area for half the price.

    I order the pho bo with double beef when I come in for lunch, which is so enough that I have become well acquainted with the friendly staff. In fact, when in town I try to eat here at least once a week. It's always quick, and always tastes great. I never hesitate to recommend this place to friends and visitors looking for delicious authentic Vietnamese food

    What could have been a catastrophic dinner (broken chair that nearly dumped me into the lap of a neighboring table when i sat down) turned out to be a fairly enjoyable outing. I haven't been to many vietnamese restaurants but the spicy beef entree was surprisingly good. If you can put up with the edgy service, the food will be worth it. What hinders this review from 4 stars is the broken chair and the amateur service.

    In a swarm of little joints to cop some nosh, this hip bar is tucked in the middle of the block with the cutest sign outside. We had a papaya salad and a beef sandwich as we tried to hide from a 100F sunny day while in town for a seminar. Our bill for 2 iced teas and the salad and sandwich was just about 20 bucks, so very comparable to what we're used to paying, and really outdid our expectations. Thanks Pho Nouveau for pleasing our palettes !

    Anyone who gripes this food lacking "authenticity" need to lay off the crack pipe. I'm willing to bet that I've consumed more Vietnamese food in Vietnam and Westminster than all the other reviewers of this restaurant combined. And I thought Pho Nouveau was great. The menu may be lacking a huge expanse of traditional Vietnamese menu items, but for good reason. I don't think frog legs, fermented meat, intestines or pickled vegetables would be much of a hit in a town like Boise. And since being successful and staying in business are the biggest goals of any restaurant, this seems like a pretty sensible strategy. What the menu does have is a perfect blend of traditional Vietnamese dishes that will appeal to an inland, culinarily conservative population that has zero Vietnamese influence. The chicken curry is the best we've had at any kind of restaurant in Boise. The same can be said for the pho. The beef in PN's pho was more tender moist than most of pho stores 1-200 in Westminster. It was lacking the "traditional" tripe (like some other reviewers complained), but again I think about 90% less locals would be willing to try the pho, if tripe was an ingredient. Portions are generous for the price. None of us were able to finish our entrees. Service us very friendly every time we dine here. If you're around for lunch, Pho Nouveau makes a great banh mi (Vietnamese sandwich). The summer rolls at Pho Nouveau are the best of any Vietnamese restaurant in town (we've literally tried them all). Ignore the complainers and try PN for yourself.

    Fast service with some fantastic, helpful servers. We normally don't eat at Vietnamese restaurants. However, this time we did. The servers helped us understand how to eat it properly. I hope to be back again. Prices were good. Dishes weren't just filler food. Instead, they had a lot of meat and presented well on the plate.

    The Grilled Chicken and Spring Roll noodles bowl is my personal favorite. Add a spoonful of chili paste and it is lovely. Service could be improved at times, but I enjoy the food so much that it doesn't always bother me. I was able to visit this restaurant with a Vietnamese native and he really enjoyed the authentic quality of many of the dishes.

    Trevor was the best waiter & the food was wonderful! Trevor was so attentive & nice, & made us feel like family even though it was our first time there. We had the spring rolls which were fantastic! Everyone in our party loved the chicken curry and hot & spicy chicken. We will definitely will eat there again when we visit.

    On a recent Pho comparison tour I rate Pho Nouveau #3. Fusion Grill out in Meridian is way better. Nouveau has sub par noodles. The broth was greasy. There were hardly any herbs provided. And it was $12! I know we are downtown, but the taxes can't be that high can they? They do have beer now which is a plus. I really want to like this place but I keep getting less and paying more than I think is fair. And come on, punch up the selections of soup a bit.

    Yum! Pho is not usually my "go to" choice of food, but my sister is obsessed with it. So we decided to come here. I had the beef Pho. It was perfect for the rainy weather we were having. It was packed in there too so obviously people like it. My broth was so flavorful. The anise in it is a nice touch of warmth. The atmosphere is very cozy as well.

    I haven't eaten here but tried twice! The two times I walked in, no one acknowledged my presence. The first time I went in, a girl was behind the counter playing with her phone & when I asked her if they were open she said, "yeah" and slowly came over. What a turn off! I checked out the menu, which looked good but I couldn't volunteer myself to be subjected to what would be crap service so I left. The second time was basically the same, different details. Get better service! If the front of the house is that lazy and disinterested in what's going on, it doesn't bode well for what's going on in the kitchen.

    Pretty darn good. I had the spicy beef soup and she had the chicken pho both of which were very large portions and delicious. The best part of the meal was the appetizer, the crispy Saigon crepe. Way yummy.

    The summer rolls were excellent! I ordered the beef pho, which I have had many places. The broth tasted a little different, (not bad though) but overall I really like it. The decor is nice but it seems like they need an extra server both times I have been there.

    I discovered Pho Nouveau on a scorching summer evening, and proceeded to douse my chicken pho in sriracha sauce, making the whole experience VERY HOT. I have since been back several times and determined that the best thing on the menu is the chicken curry with jasmine rice. The serving is enough for two meals, and has big slices of chicken, carrots and sweet potatoes, giving it a unique flavor. The summer rolls with tofu make a great appetizer on warm nights. They've got a great selection of beers on tap, and outdoor seating in the summer perfect for people watching downtown. Buyers beware though! The cooks are very generous with their use of MSG, in typical Vietnamese fashion. They will refrain from using it if you ask.

    I'm a former Pho addict. I conquered my addiction when I moved to Boise and was unable to find a decent Pho restaurant. I had a chance to dine at Pho Nouveau today and the addiction is coming back. It's true that they only offer 2 Pho varieties but the standard Beef Pho soup I had today was fantastic. We started our meal with the salad rolls. They were a bit out of the ordinary. They were way too stuffed with noodles and lacking in pork/shrimp/salad. The soup was better than most places in Boise again I felt there was way too many noodles and about 6 small slices of beef. Overall, I was happy with my meal and I will return.

    Pho is what I get at closeby restaurants back home when I feel like a quick satisfying meal. A huge bowl full of noodles, rare slices of steak that's tender and cooked in the hot broth, the little extras that I throw into the bowl (along with Sriracha and hoisin sauce) - it always adds up to a pleasurable dining experience - no frills needed. That being said, this place really didn't live up to expectations. First off, for a place called Pho Nouveau, it was really odd to see only two pho options (one of which being chicken pho). I suppose the owners were afraid of exposing Boise natives to such exotic options as tendon and tripe. It's a shame because those are often the best pieces of meat within the pho! There were plenty of other options, though including Bun and rice plates. The place used to be a bar - so it was quite odd to come into it to see no alcohol and the bar area still intact. The restaurant felt cramped and it didn't help that the table where I sat (located next to the bar) was a bottleneck for the waittresses. Remove the table and you'll probably feel like you have more room. But if you decide to keep it, get taller high chairs. It's difficult to eat when you feel shorter than the table... For lunch I got the pho (obviously). Overall, it was so-so at best. The broth felt like it was missing... something. Disappointing was the amount of meat (barely 10 slices), but worst of all was the fact that the meat tasted over-cooked as if they were boiled to well done and then placed again into the broth. No bueno =/ I paid $10 for the bowl that was barely the size of a medium (with the contents of a small) and that I could've gotten at home for about $6 after tax AND tip. =/ Also, the water had a strange after taste that I can only describe as... plasticky. The service was also, to borrow another Yelper's description, "rough." When I walked in, it took the owner about 5 minutes to notice I was standing there before she told me to seat myself. if the place were busy, I'd understand, but there were barely 4 tables seated at the time I walked in. I usually think of pho as a fast and good meal - unfortunately, it took about 10 minutes to get my check and change. Apparently it takes 3 waittresses to figure out how to make change for a $20. Prepared? I guess not - the owner had to reach into her own pocketbook to get my change... Not sure if I'll be back again... nice try, though...

    Want some good pho in Boise? This is your place. The bowls are big and plentiful. Comes with a side of bean sprouts, basil and limes which is great. Ask for the chili paste - don't know where they get it from, but it's very flavorful and great in the soup. Try out the spring rolls too, they are very tasty and good for sharing.

    Went for lunch, had their chicken curry rice plate, would definitely have it again. Prices are generally reasonable (restaurant rather than take-out pricing on banh mi, otherwise pretty much in line) and I would definitely go back to try their Bun and Banh Mi. If I were in Boise more often and could try this a few more times, I think it has the potential to move higher in my ratings.

    This little gem opened up in the old Falcon location in the heart of downtown but I had yet to visit so I made a point to pop in on this brisk winter's eve. The restaurant is decorated modestly with plenty of seating for such a small establishment. The lay out is still very much as it was with the previous folks but modernized just a bit. I was very surprised to find all of their drinks on the 2 for 1 happy hour specials, even bottled drinks. I ordered up a sake which came in an individual bottle warmed, while my friend enjoyed the plum wine. The menu offered up a nice selection of beers with options spanning Asia. The wine selection was also nice but most options from the U.S. With 1/2 off appetizers we would be crazy not to try at least a couple. We ordered the Summer Rolls with Tofu (normally $5.50) and the Sizzling Saigon Crepe (normally $5.75). Both were fantastic. The Summer Rolls came with a very light peanut sauce that provided a delicate flavor without over powering the rolls. The crepe was something I had never had before. It was filled with shrimp and chicken, served with herbs, cucumber, and carrots, and lettuce to wrap around it. Very tasty. When we first arrived, our service was great with the server being very attentive. But as our time there progressed, the service got a little spotty. I couldn't tell if a different server had taken over and we were just forgotten about or if our server had just gotten overwhelmed with tables. We still very much enjoyed the food, drinks, and atmosphere. We would definitely return and try some of the other tasty offerings on the menu!

    Coming from California, where there are plenty of Pho restaurants, we were surprised to find one in Idaho. The dining experience was a bit more upscale than the ones on Cali. Arriving 15 min before they opened, they noticed us outside and let us in early. Pho was actually just one of the entrees in the menu, with your choice of beef, chicken, and meatballs. In Cali, there are usually more meat options such as flank, brisket, tendon, and tripe. The soup came with all the standard sauces and vegetables on the side, and overall the Pho tasted just as good as the ones we have in Cali. For drinks, we had the Thai ice tea and iced Vietnamese coffee. Both were excellently made.

    This is going to be a silly review because I am allergic to Pho and Ramen. BUT, it does not stop me from going to all different Pho restaurants. I recently moved home from Hawaii, where Pho and Ramen are VERY popular. All of my friends and family love Pho and they all love Pho Nouveau. Prices are OK, but your portions are huge. Its a clean kitchen and nice ambiance. They have other item on the menu like the Crepe, which is not what you'd expect, but an amazing appetizer. I recommend this place to everyone !

    Horrible wait staff- mainly one extremely bad server. The food is amazing. Had to give it 2 stars because the service is so bad. Lunch shouldn't take 2 hours, and the way in which the server talks to her tables as well as her etiquette is just awful. Unfortunately, we've gone here too many times when the service was poor to continue going on a regular basis. Just so you know- I waited tables for years, so I'm not expecting too much here.

    The only meals that I've tried here was the grilled beef and chicken, and it was delicious! Well other than that the big bowls of noodles that my boyfriend always gets. The only bad thing that I'd say about this restaurant is the customer service. My bf and I walked in there and sat down waiting for a waiter, we waited for 5-7 mins or so. Still no waiter. Another couple walks into the restaurant and they get served before we do. We didn't get served until another waiter noticed that we had no menus in front of us. C'mon people! Talk about customer service! They really need to hire new waiters or something. Overall though the food is fantastic!

    Probably one of the freshest, best tasting pho shops in town. They've improved so much since I first came here. The broth is fresh and not greasy, fresh vegetables, and the amount you get for $8.50 is quite enough to keep your belly full for a while! We also got the fresh roll with pork and shrimp as an appetizer. They were delicious. The peanut dipping sauce is amazing with it. My friend also ordered the Pork Bahn Mi. It's a little stiff on the price for $8.50 since most bahn mi's run you $4-6, but they do serve it with sweet potato fries, so I guess that makes up for the cost. When I came almost 6 months ago with my sister and ordered a meat dish, we hardly were served any rice. When we asked for more, the waitress said she would have to charge us for it. When my sister made a comment about not getting much in the first place, our waitress returned with more rice for free. I will say the service is friendly and prompt. I'll have to come back and try a few more dishes again before I give five stars.

    This place is the Pho King of Boise! The service was outstanding. I went there on a Saturday night and was seated immediately and got my Pho within minutes. I even got to meet the chef behind the amazing broth. The staff calls her grandma and she is originally from Vietnam. It doesn't get much more authentic that that!

    The pho at Pho Noveau is a hit. The broth has bursting flavors of star anise, garlic, cilantro, beef, and all the other spices that dabble in that bowl of goodness! Vermicelli noodles are chewy and add a nice texture that compliments the fresh veggies and meat. The service can be slow, but it never seems to be an issue with the quality of the food. So be patient and order an appetizer! I suggest the fresh spring rolls. They are a tasty treat before the main course! I promise you won't be able to eat just one.

    This is the best PHO place in town. Honestly I can't get enough of this place, service is always on point, pho broth is amazing, veggies are always fresh and the beef can be served rare. Some of the menu items I really enjoy are: Fresh Rolls (Shrimp & Pork) Cha Gio - Fried Egg Rolls (Vietnamese Style) Spicy Beef Pho (w/vermicelli noodles) Sweet & Sour Soup - Vegetarian This place is tucked in downtown and you're bound to love it.

    I am super picky about Vietnamese food and have extremely high standards so I was so pleased when I tried Pho Nouveau. The food was amazing, so fresh and light and such great flavor. We had the lemongrass chicken wraps and pork vermicelli bowl and they were both amazing. I also had the Vietnamese drip coffee with sweetened condensed milk and it was a very delicious treat. I will certainly be eating here a lot and would definitely suggest it to others.

    I came to Boise to visit my son and his pregnant girlfriend. She had been craving Pho all weekend, so today I treated her to lunch before heading back home. Let me say, everything about dining here from beginning to end was absolutely terrible. When we walked in, there was one other customer and they told us we could seat ourselves. No problem. We sit down, they drop off our menus, did NOT bother to ask us if we wanted anything to drink. Fortunately, they did bring water. Two guys came in after us so the waiter went and took their order before taking ours. Maybe he assumed that because my son's girlfriend went to clean up that we weren't ready. However, he would have known that we knew exactly what we wanted before we walked through the door, had he just asked. When he finally came over to take our order, we asked for some lemons for our water and ordered some Pho. When the Pho came, they had the beef in the broth. The beef is never supposed to be in the broth until you're ready to eat it because it overcooks the meat, as ours was. The Pho was fairly bland, as the waiter brought TWO slices of jalapeño for both bowls, two tiny wedges of lime for both bowls, no onions, and no green onions. We asked for more jalapeños and lime, which he brought us, and that was alright. My son's girlfriend got a little jalapeño in her eye an he barely offered any assistance. After she went to rinse out her eye, he gave her a wet napkin to put on it. Seriously. The waiter never once asked us if the food was alright, if we needed a refill on our waters, or if we wanted to order anything else. When he decided we were done, he brought our check over without saying a word. I told him we would some to go boxes. So what does he do? While I went to wash my hands, he takes both of our bowls and puts them in one container. I don't mind that, as I was getting ready to head to the airport and leave that for my son when he got off work. What irritates me is that this guy threw out half of the broth because it didn't fit into one container. It is SOUP. Get another container and put the soups in TWO containers. It's that simple. I just paid nearly $20 for that and you throw away the food I just asked you to box. Really??? When I asked him about it, he proceeds defensively to say that he asked my son's girlfriend. What he didn't mention is that he asked her if he could put both leftovers in one container. He did not ask her if he could dump put half of the food we just bought. If I didn't have to head to the airport, I would have asked to speak to the manager right away. Oh, I did call to ask for a manager and the waiter said there is no manager. I told him to have the owner call me. Not only did he get defensive, he also cut me off, was completely unapologetic and proceeded to tell me how many years he's been in the service industry. Not once did he acknowledge how horrible the service he gave was. This was ridiculous. I would never want to eat there again, nor would I ever recommend it to anyone.

    I do not eat the Pho here, because it's only so-so. If you read through my reviews, you may discern a pattern where I pick out one or two things a restaurant does well, and then promote it based on that. I like to be positive, I can't help it. The Bun Thit Noung here is the best in the valley in my opinion. The noodles and veggies are fresh, crisp, and spring off the tongue. The meats are well grilled and flavorful, and the accompanying fish sauce is just flavorful enough to not overpower everything else. The same sentiments can be said for their spring rolls. In general the service I've received here has been decent, and the ambiance is appropriate for a bistro-like Asian restaurant. 4 stars for the excellent Bun Thit Noung and Spring Rolls.

    Pho Nouveau brought a refreshing atmosphere to the pho scene. In the northwest it is very common for pho restaurants to have little decor and little signature notes that make them unique. The interior brings a nice warm tone that is inviting and warming, the French music with the option of a French baguette was a nice nod to the history of Vietnam. My girlfriend and I tried the fresh summer (spring) rolls, the chicken curry, and of course the pho. The summer rolls were wonderfully cooked, and served with a unique peanut sauce that was more liquid than most, which at first was alarming but ended up having a wonderful taste. The summer roles had just enough basil and just enough protein that they were well balanced and no one component overpowers another. The curry was more of a stew than a traditional Thai or Indian curry, this was a good change of pace. Although made with coconut milk suggesting more of a Thai recipe, the consistency and flavor definitely has strong roots in Vietnamese style of cooking. The server also directed us to try the chicken dipped in salt and lime which was a flavor so wonderful it left me asking for more. The curry had the option of rice or French baguette and since the curry is more of a stew, both would pair wonderfully with it. Finally, the pho, was delicious and clearly freshly made. It did not taste like it had come from the same stock that had been made from weeks before. It was a balanced flavor overall however it ran just slightly on the salty side, but was not too acidic. Definitely will return, a good refreshing experience.

    DID NOT EAT HERE!!! HORRIBLE CUSTOMER SERVICE!!! Went on Thursday 07/31/14 around lunchtime. There were 2 customers in the whole restaurant. The hostess threw an attitude about setting up for a party of 9. We sat down and the two waitresses stood behind the counter talking and didn't acknowledge us at all. After 15 minutes of just sitting there while they chit chat we walked out. As we were walking out they finally spoke to us ans asked if we were leaving. My husband said yes and we walked out of the door. NEVER EVER eating here. I wish I could give them 0 stars!!!

    This is BY FAR the best Vietnamese food I have had outside of Vietnam. I had Pho' from here months ago and I cannot stop thinking about it. In fact, every Vietnamese Food restaurant I go to in Los Angeles (my hometown) or anywhere I travel, is held to the standards PN set for me. The broth in their Pho is rich in flavor, as if it had been stewing for hours, if not days. The meats and herbs were as fresh as I've had in a restaurant. This is very clean food. The service was great. The atmosphere is perfect. This is the best restaurant in Boise.

    The fresh rolls were pretty good but the pho (beef) was pathetic. I would be embarrassed to have pho in the name of my business and be serving what tasted like a powdered soup mix broth. It was extremely salty and as well as a sweetness. Having eaten pho regularly for 30 years, this was dismal. Bummer! The service was prompt and friendly.

    The food itself is a solid 3-star, but I'm adding the extra star for our friendly server. This is my first time in Idaho and whenever I get off a long flight, I like to eat noodle soup. My husband suggested this place from the listing that he found on Google. I am from the DC area where there are plenty of good Pho places, but I don't think it would be fair to rate this place based on my DC standard. I read many insulting reviews from Californian transplants to many of the local favorite places and I wish that they would just stay there! I ordered Chicken Pho, my husband had the spicy Vietnamese beef noodle soup, and my son ordered the clear noodle soup with seafood. The food arrived quickly and they were piping hot. The vegetables that they served with the soup were nice and fresh. My soup tasted slightly different than what I'm used too, but it was good nonetheless. My husband and son both like their soups. The service is excellent.

    I have had pho in many places, including Vietnam. The pho in this restaurant is awful: it has way too much anise and salt, and the meat was tasteless. My companions did not complain too much about the food and the prices were cheap, and the place was quiet (not many patrons) so I give them two stars rather than one.

    I've been here several times...it's been a favorite go to of mine anytime I have a Boise layover. This last visit, however, was somewhat of a disappointment. The "Bun" noodle bowl I ordered was well below average and the fresh spring rolls were not as good as I remember them to be. A little smaller, sauce on thin side and pork was over cooked in both the noodle bowl and the spring rolls. I'm going back today for lunch and will update review.

    Very busy every table is full, possibly a good sign. The menu is good in terms of Vietnamese I have seen better. So how was the food? I had the pork and egg roll with noodles which was average quality and tried the Pho which was very lackluster in quality. I would say it's low end and have had better. The service was horrible, my drink was never refilled even after business slowed and my waitress after accepting my payment said thanks and walked away never to return. No " how was your food" or " please come again" NOT IMPRESSED.

    For a restaurant that bills itself as being a Pho place, this place doesn't have too many Pho items on the menu, and is much closer to being a generic Asian fusion restaurant. However, that's good news if your date doesn't know what Pho is and decides she doesn't want any once she finds out. The food is good. The service is good. The place is almost a gastropub, since it has a prominent bar and so few tables. This is a good solid dining choice all around.

    Come for the three dollar happy hour beers. Stay for the delicious clear broth. The chicken was even nicely seasoned before adding it to the pho. Steaming bowl is served with a side of nice aromatics including Thai basil and cilantro. This is really good, if not old-fashioned, comfort food! Forget the rolled, fried, drunken, etc stuff. This place is called PHO Nouveau; and for a good reason.

    Anyone who gripes this food lacking "authenticity" need to lay off the crack pipe. I'm willing to bet that I've consumed more Vietnamese food in Vietnam and Westminster than all the other reviewers of this restaurant combined. And I thought Pho Nouveau was great. The menu may be lacking a huge expanse of traditional Vietnamese menu items, but for good reason. I don't think frog legs, fermented meat, intestines or pickled vegetables would be much of a hit in a town like Boise. And since being successful and staying in business are the biggest goals of any restaurant, this seems like a pretty sensible strategy. What the menu does have is a perfect blend of traditional Vietnamese dishes that will appeal to an inland, culinarily conservative population that has zero Vietnamese influence. The chicken curry is the best we've had at any kind of restaurant in Boise. The same can be said for the pho. The beef in PN's pho was more tender moist than most of pho stores 1-200 in Westminster. It was lacking the "traditional" tripe (like some other reviewers complained), but again I think about 90% less locals would be willing to try the pho, if tripe was an ingredient. Portions are generous for the price. None of us were able to finish our entrees. Service us very friendly every time we dine here. If you're around for lunch, Pho Nouveau makes a great banh mi (Vietnamese sandwich). The summer rolls at Pho Nouveau are the best of any Vietnamese restaurant in town (we've literally tried them all). Ignore the complainers and try PN for yourself.

    Fast service with some fantastic, helpful servers. We normally don't eat at Vietnamese restaurants. However, this time we did. The servers helped us understand how to eat it properly. I hope to be back again. Prices were good. Dishes weren't just filler food. Instead, they had a lot of meat and presented well on the plate.

    The Grilled Chicken and Spring Roll noodles bowl is my personal favorite. Add a spoonful of chili paste and it is lovely. Service could be improved at times, but I enjoy the food so much that it doesn't always bother me. I was able to visit this restaurant with a Vietnamese native and he really enjoyed the authentic quality of many of the dishes.

    It's decent pho but I can't say it is THE best in Boise. However, I don't recommend the spicy.....its so greasy and gamey that it approaches inedible.

    Trevor was the best waiter & the food was wonderful! Trevor was so attentive & nice, & made us feel like family even though it was our first time there. We had the spring rolls which were fantastic! Everyone in our party loved the chicken curry and hot & spicy chicken. We will definitely will eat there again when we visit.

    On a recent Pho comparison tour I rate Pho Nouveau #3. Fusion Grill out in Meridian is way better. Nouveau has sub par noodles. The broth was greasy. There were hardly any herbs provided. And it was $12! I know we are downtown, but the taxes can't be that high can they? They do have beer now which is a plus. I really want to like this place but I keep getting less and paying more than I think is fair. And come on, punch up the selections of soup a bit.

    This was our third visit to Pho Nouveau and it was as delightful as the previous two. I had the pho (why mess with a very good thing) and it was superb, though I do not claim to be a pho expert. There were five of us, two of us had the pho (because we are very smart), my wife had the grilled beef and our other friend had the grilled pork chop. All of them gave their meals five stars! The reason I only rate this place with four stars is twofold. First, the person who seated us was rather rude - she might of just been having a bad day or did not like the idea that we requested seating other than the one she was showing us. Second, the menu is not very "kid friendly" - I don't know what Vietnamese children eat, but they would have to order full sized meals in order to satisfy their hunger. No matter, we both love this place and have made ourselves a promise to visit every time we are in Boise.

    Nice location and a refreshing break from the usual. The food is pretty darn good for locals who aren't in the mood for another burger or have no idea what "real" Vietnamese food is. I lived in Vietnam for 3 years and also worked in Seattle where many fresh-off-the-boat Vietnamese restaurants litter back roads and dark alleys. The service at Pho Nouveau has always been good and drink prices can be worth the walk over. I think it'd be a good first date place, but anyone who has dined in Vietnam or larger cities and looking for some real good Vietnamese food in Boise will surely be disappointed.

    this was way better than i expected. the food looked pretty authentic all around. the big minus here for me is the MSG. im slightly allergic to MSG so when food has a lot of it i feel super bloated and out of it. also our waitress was maybe slightly new. i think she delivered the wrong food to the wrong table and the lady in the kitchen yelled at her. she wasnt super fast .... i had the clear noodle soup and there was a lot of shrimp. also mussels. the noodles were good! not soggy or stale. the MSG killed me though

    Yum! Pho is not usually my "go to" choice of food, but my sister is obsessed with it. So we decided to come here. I had the beef Pho. It was perfect for the rainy weather we were having. It was packed in there too so obviously people like it. My broth was so flavorful. The anise in it is a nice touch of warmth. The atmosphere is very cozy as well.

    The pork was delicious, but the shrimp had a funky taste, as did the rice ( how can you mess up white rice?) Cucumber salad had very good flavor, but included canned pineapple pieces- yes, canned! This offense brought the place down a whole star.

    Mehh.....2.5 stars at best.... We stopped in for lunch. I was craving Pho after a night out of liquid over indulgance. They said we could sit anywhere. The options for more than 2 people to sit were limited. (We had 3). Service was spotty and they 2 waitress' seemed to be pacing in circles not helping each other out or just overall looking rather inefficent. We waited a bit to have someone take our order. People were waiting quite a while for food. When it came time for the check (we had been waiting for a bit already). I politely asked our waitress. To which she replied, "It will have to wait I need to take their order first." After about 10-15min of chitchat while they table ordered and she described the various dishes on the menu to them we eventually got our check. In short if you have an hour for lunch including travel/walk....you are taking a chance going in here. In my expereince I have been able to get a meal at a vietmanese place and EASILY be out in an hour. They are not that busy it just takes FOREVER!!

    This place came highly recommended by several people, and as my fiancé and I love Vietnamese food we had to try it. We were certainly less than impressed by our experience. The place has Nouveau on the sign, but people rave about it as though it's the best traditional pho ever... It really isn't. Overpriced, underwhelming food, and cramped seating. We had a very hospitable server, but the food was so unimpressively flavorless given what else is in the area for half the price.

    I order the pho bo with double beef when I come in for lunch, which is so enough that I have become well acquainted with the friendly staff. In fact, when in town I try to eat here at least once a week. It's always quick, and always tastes great. I never hesitate to recommend this place to friends and visitors looking for delicious authentic Vietnamese food

    What could have been a catastrophic dinner (broken chair that nearly dumped me into the lap of a neighboring table when i sat down) turned out to be a fairly enjoyable outing. I haven't been to many vietnamese restaurants but the spicy beef entree was surprisingly good. If you can put up with the edgy service, the food will be worth it. What hinders this review from 4 stars is the broken chair and the amateur service.

    In a swarm of little joints to cop some nosh, this hip bar is tucked in the middle of the block with the cutest sign outside. We had a papaya salad and a beef sandwich as we tried to hide from a 100F sunny day while in town for a seminar. Our bill for 2 iced teas and the salad and sandwich was just about 20 bucks, so very comparable to what we're used to paying, and really outdid our expectations. Thanks Pho Nouveau for pleasing our palettes !

    Pho is what I get at closeby restaurants back home when I feel like a quick satisfying meal. A huge bowl full of noodles, rare slices of steak that's tender and cooked in the hot broth, the little extras that I throw into the bowl (along with Sriracha and hoisin sauce) - it always adds up to a pleasurable dining experience - no frills needed. That being said, this place really didn't live up to expectations. First off, for a place called Pho Nouveau, it was really odd to see only two pho options (one of which being chicken pho). I suppose the owners were afraid of exposing Boise natives to such exotic options as tendon and tripe. It's a shame because those are often the best pieces of meat within the pho! There were plenty of other options, though including Bun and rice plates. The place used to be a bar - so it was quite odd to come into it to see no alcohol and the bar area still intact. The restaurant felt cramped and it didn't help that the table where I sat (located next to the bar) was a bottleneck for the waittresses. Remove the table and you'll probably feel like you have more room. But if you decide to keep it, get taller high chairs. It's difficult to eat when you feel shorter than the table... For lunch I got the pho (obviously). Overall, it was so-so at best. The broth felt like it was missing... something. Disappointing was the amount of meat (barely 10 slices), but worst of all was the fact that the meat tasted over-cooked as if they were boiled to well done and then placed again into the broth. No bueno =/ I paid $10 for the bowl that was barely the size of a medium (with the contents of a small) and that I could've gotten at home for about $6 after tax AND tip. =/ Also, the water had a strange after taste that I can only describe as... plasticky. The service was also, to borrow another Yelper's description, "rough." When I walked in, it took the owner about 5 minutes to notice I was standing there before she told me to seat myself. if the place were busy, I'd understand, but there were barely 4 tables seated at the time I walked in. I usually think of pho as a fast and good meal - unfortunately, it took about 10 minutes to get my check and change. Apparently it takes 3 waittresses to figure out how to make change for a $20. Prepared? I guess not - the owner had to reach into her own pocketbook to get my change... Not sure if I'll be back again... nice try, though...

    Want some good pho in Boise? This is your place. The bowls are big and plentiful. Comes with a side of bean sprouts, basil and limes which is great. Ask for the chili paste - don't know where they get it from, but it's very flavorful and great in the soup. Try out the spring rolls too, they are very tasty and good for sharing.

    Went for lunch, had their chicken curry rice plate, would definitely have it again. Prices are generally reasonable (restaurant rather than take-out pricing on banh mi, otherwise pretty much in line) and I would definitely go back to try their Bun and Banh Mi. If I were in Boise more often and could try this a few more times, I think it has the potential to move higher in my ratings.

    I discovered Pho Nouveau on a scorching summer evening, and proceeded to douse my chicken pho in sriracha sauce, making the whole experience VERY HOT. I have since been back several times and determined that the best thing on the menu is the chicken curry with jasmine rice. The serving is enough for two meals, and has big slices of chicken, carrots and sweet potatoes, giving it a unique flavor. The summer rolls with tofu make a great appetizer on warm nights. They've got a great selection of beers on tap, and outdoor seating in the summer perfect for people watching downtown. Buyers beware though! The cooks are very generous with their use of MSG, in typical Vietnamese fashion. They will refrain from using it if you ask.

    I like Pho Nouveau for it's curry. I usually get the chicken curry, which comes with a baguette, not rice. I order the rice on the side and have a little of both starches. There is always plenty to take home too. I think the Pho here is good as well. It's not the best ever, but it's good for our options in town. I don't really know how much I like the staff here, though. I would say they are a little snobby? Maybe one in particular. FYI: If you are gluten free, they use a lot of brown rice flour not wheat flour. A plus in my world.

    Vietnamese in a great funky hole in the wall on Idaho Street.. No flavor in the broth...none. I am sure that it can go with either chicken or beef....so not the true flavor. LITTLE SAIGON Nampa, ID....Rocking PHO!

    I think I could really love this place if I didn't take my order to go. Vietnamese "sizzling saigon crepes" are one of my top favorite ethnic foods. Crunchy, sweet, savory, fried & fresh ALL together like a rave in your mouth.

    As far as Pho goes, I would give this a 3, but in Boise, its a 4. I order the Clear Noodle soup and we had the Fresh Tofu Spring Rolls. The clear noodle soup is a pretty large portion and reheats the next day very well. I added a couple drops of Hoison sauce and a large amount of Red Chili Paste, which goes well with the ginger garlic broth in the soup. The fresh spring rolls aren't as good as Mai Thai next door, but the place is decent. Service is a little slow even when there is no one in the restaurant. But when you want some tea and noodle soup, its a great place in downtown Boise.

    This is going to be a silly review because I am allergic to Pho and Ramen. BUT, it does not stop me from going to all different Pho restaurants. I recently moved home from Hawaii, where Pho and Ramen are VERY popular. All of my friends and family love Pho and they all love Pho Nouveau. Prices are OK, but your portions are huge. Its a clean kitchen and nice ambiance. They have other item on the menu like the Crepe, which is not what you'd expect, but an amazing appetizer. I recommend this place to everyone !

    Not authentic and small portions for the price. The pho soup base came out SWEET... as if the soup base wasn't flavorful enough and they dumped leftover sweet & sour sauce to make up for that. Normally pho places pride themselves on their soup--a full salty flavor which comes from stewing a giant pot of bones for hours on end. This easily could have been an Asian soup based dessert. After the disaster at Don Khanh I knew better than to compare Pho Nouveau food in Boise to Vietnam. I ordered a grilled pork sandwich because I thought that would be harder to mess up (french bread, meat and pickled veggies), and the portion was smaller. It came with fries, which I'm 90% sure came from a frozen bag. The sandwich was pretty good, but I was sad at paying $7+ for it. Little Vietnamese shops generally charge about half that (for that portion).

    This little gem opened up in the old Falcon location in the heart of downtown but I had yet to visit so I made a point to pop in on this brisk winter's eve. The restaurant is decorated modestly with plenty of seating for such a small establishment. The lay out is still very much as it was with the previous folks but modernized just a bit. I was very surprised to find all of their drinks on the 2 for 1 happy hour specials, even bottled drinks. I ordered up a sake which came in an individual bottle warmed, while my friend enjoyed the plum wine. The menu offered up a nice selection of beers with options spanning Asia. The wine selection was also nice but most options from the U.S. With 1/2 off appetizers we would be crazy not to try at least a couple. We ordered the Summer Rolls with Tofu (normally $5.50) and the Sizzling Saigon Crepe (normally $5.75). Both were fantastic. The Summer Rolls came with a very light peanut sauce that provided a delicate flavor without over powering the rolls. The crepe was something I had never had before. It was filled with shrimp and chicken, served with herbs, cucumber, and carrots, and lettuce to wrap around it. Very tasty. When we first arrived, our service was great with the server being very attentive. But as our time there progressed, the service got a little spotty. I couldn't tell if a different server had taken over and we were just forgotten about or if our server had just gotten overwhelmed with tables. We still very much enjoyed the food, drinks, and atmosphere. We would definitely return and try some of the other tasty offerings on the menu!

    Coming from California, where there are plenty of Pho restaurants, we were surprised to find one in Idaho. The dining experience was a bit more upscale than the ones on Cali. Arriving 15 min before they opened, they noticed us outside and let us in early. Pho was actually just one of the entrees in the menu, with your choice of beef, chicken, and meatballs. In Cali, there are usually more meat options such as flank, brisket, tendon, and tripe. The soup came with all the standard sauces and vegetables on the side, and overall the Pho tasted just as good as the ones we have in Cali. For drinks, we had the Thai ice tea and iced Vietnamese coffee. Both were excellently made.

    Horrible wait staff- mainly one extremely bad server. The food is amazing. Had to give it 2 stars because the service is so bad. Lunch shouldn't take 2 hours, and the way in which the server talks to her tables as well as her etiquette is just awful. Unfortunately, we've gone here too many times when the service was poor to continue going on a regular basis. Just so you know- I waited tables for years, so I'm not expecting too much here.

    I'm a former Pho addict. I conquered my addiction when I moved to Boise and was unable to find a decent Pho restaurant. I had a chance to dine at Pho Nouveau today and the addiction is coming back. It's true that they only offer 2 Pho varieties but the standard Beef Pho soup I had today was fantastic. We started our meal with the salad rolls. They were a bit out of the ordinary. They were way too stuffed with noodles and lacking in pork/shrimp/salad. The soup was better than most places in Boise again I felt there was way too many noodles and about 6 small slices of beef. Overall, I was happy with my meal and I will return.

    The only meals that I've tried here was the grilled beef and chicken, and it was delicious! Well other than that the big bowls of noodles that my boyfriend always gets. The only bad thing that I'd say about this restaurant is the customer service. My bf and I walked in there and sat down waiting for a waiter, we waited for 5-7 mins or so. Still no waiter. Another couple walks into the restaurant and they get served before we do. We didn't get served until another waiter noticed that we had no menus in front of us. C'mon people! Talk about customer service! They really need to hire new waiters or something. Overall though the food is fantastic!

    Not an experienced Pho eater, but after eating here in Boise I'm ready to become one. Crepe appetizer was delicious as was chicken pho. Service was average. The place was busy on a Saturday mid-afternoon. I will be back.

    I love Pho and eat a lot of it here in Seattle but generally in small dedicated neighborhood shops. I would like to try the Pho here just to critique it but this place has way better fare to offer. I fear this restaurant is a push for most Boiseans but I hope they figure it out. When hitting a Vietnamese Bistro like this (or provincial vietnamese) I skip the Pho and try the Banh Hoi trays and crepes. I find them stellar here, in fact the crepe is the best I've ever had...a great addition to a tray BTW. It's time for middle america to branch out beyond Pho and this place will certainly help you do that.

    Excellent, thoughtful, friendly service. My boyfriend had the spicy beef soup and I had the main beef entree. Delicious! We shared the summer rolls for appetizers: light, tasty, fresh. We are both from the Bay Area and found P.N. up to snuff with San Francisco fare.
