Meh. Just your run of the mill Americanized Mexican food joint. Mediocre, unfortunately what I've come to expect from Boise's Mexican restaurants. On the upside, service was good and they have drink specials.

I had always liked Chapala.... until my most recent visit. I was making a trek to the country and thought that a burrito would be the easiest with which to drive. Sooo, I called my nearest Chapala. I was very clear on the telephone about what I wanted - just a burrito with rice, beans, cheese and chicken with pico on the side. He repeated it back to me. Because of the communication gap, I restated the only thing I wanted. All was good. I get there and he rings me up. He says, "that'll be $10.34." "For a burrito?" I say. "Yes" I pay it. I ask why it is so much "for just a burrito." He says that there is rice and beans. Right. Usually, those are the least expensive burritos. I tell him again that the *only* things I want in a bag are rice, beans, cheese and chicken all wrapped up in a tortilla. He says, "okay. It comes with chips and salsa." I tell him that I don't want the chips and salsa and reiterate the only things with which I want to walk out the door, as I'm going to be driving. "Okay" he says. Well... my order comes out. It's in a rectangle shaped aluminum 'to go" container. It's in a bag. And, there are a bag of chips and a container of salsa in the bag. I say to him, "I have a feeling this is not what I ordered." He proceeds to seat another couple as I open the container. Nope! Not at all what I ordered. There was a small burrito, covered in cheese, with rice and beans next to it. Also in the bag were the chips and salsa, which I said I did not want. I again, stated to the guy that *all* I wanted was the rice, beans, cheese and chicken wrapped in a tortilla. "Oh, we don't do that" he says. Suffice to say, they lost my business. Proceed with throat punch.

Typical Mexican restaurant in terms of decor but I am there for the food. The place was not that busy which kind of surprised me because the food is fantastic. The location is a little off the beaten path but that should not stop anyone from frequenting this place. If you like good Mexican food this place is for you. Try the chile Colorado it is that good.d

The service and food was great. We had dinner here after a long day. The food was hot right out of the kitchen. Chips and salsa at the table. My only complaint and it not even a complaint. The server did ask if my wife wanted another margarita but never asked if I wanted another beer.

So six four-star+ reviews on Yelp can't possibly steer an out-of-towner wrong, can they? Ha! Knew I wasn't going to have authentic Mexican food when I walked in and every - EVERY - guest in the place was white. Knew I needed to lower my expectations when I opened the menu - you've seen this menu a hundred times before, at every other Americanized Mexican place. Same old combinations. Then the chips and salsa arrived - chips tasting fresh from a bag, warmed under a light, and the refried beans brought with the chips showing off that funky grey color that tells you it's the best stuff you can get from a can. So, I hoped for the best and ordered my "tester," the chile relleno. Also ordered a chalupa. Dish arrived within minutes. Literally. I took my phone out to read some news and the food arrived before I got to the third story. Chalupa fell apart when picked up, but the relleno sat there, solid and flat. Inferior cheese inside, no flavor, and it was smothered in -- you know already, don't you? you've seen it a thousand times -- that thin red "enchilada sauce" that Americanized Mexican places seem to think must be ladled over everything. Did it taste fresh? No, not for a second. There wasn't a single flavor that told me any sauce wasn't from a can. Was it good? Not any better than any other two-star Mexican place you can find anywhere. The salsa brought with the chips wasn't half bad - that was the best thing going. Waitress was fine. Other staff were rushed, including a manager who removed and dropped off checks without a word. So, I offer this review to put your expectations into check. If you're hoping for some seriously excellent authentic Mexican food, you'd think from reading the other reviews here that this might be good. It isn't. It's just average Americanized Mexican food from a can. Just know, going in. Wished I had.

Good, solid Mexican food. What I expect from all of the Chapala locations around town. Service is super fast and friendly. Salsa is the best in town. Carne Asada is my favorite.

I didn't break my promise. I talked my co-worker into driving me out to this restaurant again on the follow-up work I performed at this airport. This time I had the single enchilada combo with shredded beef. The taste and quality of the food is still top notch, but I'll stick with the chicken or ground beef. The shredded beef is very hard to pull apart and it turns into a single ball of beef that gains solidity as you try and pick it apart from the tortilla. I'm sure it was good entertainment for my K and his wife, though.

This place has to have the quickest service of any restaurant we have found in a long time. Everyone from the manager on down is attentive to every customer. The salsa is great and the food was pretty darn good as well.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
