    Why do I like this place so much? The food is good (sometimes really good), but sometimes you get something that is just a wee bit off (my meal recently was too salty). The atmosphere is a bit to be desired. The wait staff sometimes needs a bit of help, and the food can take a while to make. But you can get a great plate of food for $11-15, and you're supporting local culinary programs. So 5 stars for furthering culinary education in Milwaukee! :) In fact, when I mentioned the salt thing to the waitress, she had the two sous chefs come out so I could tell them. While this was a little uncomfortable (for me AND for them), it was a good experience. They appreciated the input, and I learned your meal will depend more on the instructor than the students. So leave comments on those cards, people!

    So this is a hard review. Really good quality food? Check. Decent prices on said food? Check. Pretty iffy service. Check. Tuesday-Thursday lunch only service. Check. I can't with a good conscience give this place 5 stars. It's run by students and because of that, it's just not there. The food I had was delicious, and plated quite beautifully. The service was a little bit awkward, with bad timing, quiet talking, and just a general lack of confidence. There was also little things, like dropping off bread and three spreads on the table and not describing what was in the spreads until being prompted. It also took a while for waters to be brought, and the ordered drinks took almost 10 minutes (a beer, and tea). The whole point of this restaurant is to force the students to learn the skills that will let them succeed in a culinary career. So yes, service was a bit of a mess. The food did come out quickly though, and was prepared correctly. I got the shrimp bisque, hangar steak medium rare, and the salted caramel tart. All of that being said, it is totally worth a visit here if you can swing the schedule. The potential awkwardness should not be a deterrent to a great meal. An amuse, bread, soup, main, and desert for under $30 is pretty great, and this is far better than your usual lunch fare. I felt like it's kinda like watching sausage being made. The whole situation might not be terribly pretty, but I still enjoy the finished product.

    So you're saying I get a 3 course lunch for $20 and I get to help and support some culinary students? What's not to like? I think Mike M's being too harsh or he got a really, really awkward students. My meal was smooth, my servers were on point and there wasn't any noticeable difference in the service here and other casual places I've been. I love that there are cameras showing all the stuff happening in the back of the house - it's so open and interesting. The food was delicious and plated so pretty. The dessert was top notch. If you get there early enough, make sure you stop by the cafe across the hall and get yourself some super cheap goodies from the baking students.

    A friend recently posted about her trip to Cuisine at MATC and I was reminded that I really wanted to check it out but I'm never downtown during the time the restaurant is open. I had an appointment that let out at 11:00 last week and I decided to take a chance on getting in without a reservation. The menu offers a few salads, appetizers and 5-6 entrees. I decided on the Gnocchi a la Romana ($6) small plate and Braised Veal Breast entree ($14). The gnocchi was served as 2 large pieces, which is a presentation I've never seen before. The portobello, shitake, and crimini mushroom ragout provided a savory flavor which helped the very slight cake-like texture of the gnocchi. The braised veal breast was cut and served as medallions and the meat was so tender, I could break it apart with a spoon. I'm sure I could have cut itbwuth the handle of the spoon if I tried. The apple-celery-leek stuffing and cider sauce added nice layers of flavor. I was really happy with my choice. Cuisine is only open Tuesday through Thursday and reservations are taken for time slots between 11:15 and 12:15 to get everyone out by 1:00 or 1:30. If at all possible, make a reservation and support this MATC restaurant. The culinary school is one of the best in the country and the students do a great job!

    I am a student at MATC but this way my first venture to Cuisine which resides on the first floor of MATC downtown. The culinary students run the kitchen overseen by their instructors. They have TV's throughout the restaurant and you can see your food as it is being prepared. We were the first ones there today. They are open for lunch and the prices are pretty comparable to what you would pay for a half portion at a higher priced restaurant like Bartolotta's. We started out with a shrimp bisque and I had the sticky buns with hoisin sauce and pork belly. It was delicious! There were also homemade sweet pickles which went great with it. There was also a complementary liver pate which I loved. Our entrees were pork loin and steak. Both were cooked beautifully. We would go back again, it was a gourmet meal at bargain prices. I only wish they would give discounts for MATC students.

    In the interest of education this place is awesome! The cost benefit ratio is outstanding. I had a generous portion of Lamb for lunch accompanied by gnocchi and an amazing sausage stuffing. All the food was delicious. The area of struggle revolves around the service. As it is an establishment meant to help educate and train, the staff may stumble through proper etiquette with ordering or display a certain level of clumsiness regarding the appropriateness of removing dishes. The attention to your table may also be less than you are accustomed to. It must be taken in stride as the prices reflect this experience. It is of great economic value and is a service to the students. Reservations are required and they are only open for lunch on Tuesdays through Thursdays. If you have an opportunity, check it out.
