    I've eaten here multiple times - too many to count actually. I LOVE their bean & cheese burritos smothered in their homemade spicy cilantro ranch dressing that is so different from cafe rio/ costa vida. I hope this location stays open because I love coming here! The staff is always so friendly and the location is always so clean.

    Why Bajio?! Why are your only two locations on opposite sides of the FRIGGIN' state!? Why have you slowly died away while Costa Via have thrived? It makes no sense. Sure, I think it's rather ridiculous that you don't offer your Carne asada salad in the half side, and true, your guacamole scoop is so small it's laughable, but still, you far outshine those other two joints. Where else can I get refried beans instead of the rock hard black and pinto of the other places? Where else can I get grilled corn and onions right on my salad? Rio can keep its soda pork, I want Utah to bring back Bajio! And not so far that I have to drive an hour in either direction in order to get to one! Sincerely, Me

    I thought Bajio had gone out of business until I saw there was one in Layton. The food is my favorite, so much better than Cafe Rio or Costa Vida. I love their sweet rice!

    I eat here once a week with friends. We get the lime chicken salad special and it's fantastic-- especially the size. The small is the perfect amount of food, where as other similar type restaurants only offer one size-- jumbo. The side order of chips and guac is super tasty but a little steep in price. We've also tried the sweet pork, the nachos and smothered burrito-- all are quite good. The restaurant is steady, but never overly busy which lends itself nicely to conversation.

    Bajio was a place that I went to a bit when it was new, but now it is not a place I visit a lot. The daily specials are a decent deal as they are $5 plus tax. I had the Friday special which is a fish taco with two sides and a 22oz drink. The taco was average and the sides were not that great. They do have some special Mexican drinks as well as the normal soda. It is not the worst place I have been to but definitely not the best either. The food is pre-cooked and just reheated for your meal. The kids meals are small and a little overpriced in my opinion. Overall it is about a 1.5 star place so a 2 for rounding. I liked this place better when it was first around in 2005-2006 time period.

    Poor excuse for Mexican food, they had everything you could want to build but ugh lacking in. Flavor their missing a lot of on point things that make a Mexican restaurant what it is. Beans were okay, meats were bland and dry, rice was okay the sweet one was awesome. Costa vida too is sad. Smh* I prefer my own and I'm not even Mexican. But have learned from real hardworking ones. Drinks are the best you get the choice of horchata which is my fav. Along with Jamaica

    I've always liked Bajio, either in Centerville or here in Layton. I had read that Costa Vida (which I don't care for, except for their DEE-licious Key Lime pie) had bought out the Bajio chain - so I assumed this one was in the history libros. Not so. Because there's a Costa Vida by the theatres, this one is still on its own. Thank goodness. Today, i had one of the best meals that I've had any where, at any price. The lunch specials as Andrea pointed out, were always a good value They're now $6 - and Friday's is a meat quesadilla. No more fish anything on the menu. But there are shrimp. Anyway, i reluctantly settled for what I thought was a boring quesadilla and - Oh, my - i loved it! They use a big burrito-size grilled tortilla and melt some cheese in the warmer, then add grilled marinated chicken, fold it in half and cut in triangles. then more cheese, shredded romaine, fresh pico and sour cream. But it's the green dressing that makes it all go. I'd dip the the Quuesadilla in the side of dressing, then give my taste buds a fiesta. Oh, it was good! Especiallly when chased by the delicious whipped & foamy orange drink, over their finely crushed and chewy ice. enjoyed it so much, I almost went back for dinner. Who knew, a lowly chicken quesadilla could be the culinary highlight of my year, so far. My co-workker loved her shrimp taco cooked in honey butter, and served with mango salsa and sides of flavored rice and refried beans. Thanks, Bajio. See you next Friday!

    I have been to this Bahio three times and two out of three have been good. I love the pineapple shrimp salad. It gets five stars! It is in my opinion, the best thing on the menu. They have delicious dressings and their salads are fresh. I don't have a lot of experience with their burritos but they are not very traditional mexican. They have a couple of kids meals options which I like when restaurants offer kids meals!
