Everytime I've stopped in for a bite to eat my experience has been great! The food is remarkable and their own brand of Bar-B-Q is some good stuff. You won't be disappointed giving this place a try!

Disappointing menu. Over-priced entrees and domestic beers. Beware of the Chop Mix. The only saving grace was the venue; though it is small inside, parking and location are good.

Brisket sandwich and fried okra on the side. The place was 30 minutes from closing, but that didn't seem to phase the service at all. We were a party of 8 on a Friday night and they seated us quickly and got our orders to us rapidly. The brisket was well smoked and the flavor melded well with the BBQ sauce on the table. The buns were buttered and soft. The fried okra was a little greasy, but still edible. Other than the dead animals all over the room, the place has a nice log cabin vibe. It used to be pay at the counter, but they've recently changed that to pay the waitress. Just a heads up to anybody that's eaten here before, but not recently.

Had been recommended by someone, especially their cobbler. We stopped for dessert upon arriving in town and it didn't disappoint! Huge portion of cobbler and ice cream for less than $5, and both peach and apple were delicious! It's big enough to share. Hope to visit again to try the dinner items.

That was some gooooooooood BBQ!! Great dinner and dessert after a long day at the caverns. Service was terrific too, very friendly and attentive. These former Kansas City residents were not disappointed! You know we'll be back if we ever pass through this way again.

I had to skip town and get away for a few days so I headed down to Carlsbad and got myself checked in at the Super 8 motel. I was starving so I asked the Indian gentleman (dot not feathers) at the front desk if there was any good BBQ in town. Then I used my trusty Yelp app to find it and soon I was there. I thought about doing the take out deal at the window but then I noticed the beer sign yelp.com/biz_photos/red-… in the window and after a long day on the road a couple of cold ones to unwind with sounded pretty refreshing. Cool place too, kind of like an old hunting lodge with its wood interior and stuffed heads hanging from the walls. Country ketch with mountain man charm. Casual and laidback. The sweet server Jill? brought me the first of many cold Budweiser's as I went into unwind mode. Soon my brisket and ribs arrived with fries and my third beer. Cheers I toasted the waitress as my buzz was kicking in. I took a stab at the brisket first and it had a nice smoked flavor and was pretty tender too. Went so perfect with my beer that I was waiving for another in short order! The ribs were exactly how I like them, real smoked bones! None of the oven baked crap that some places try and sell you but the real deal with an honest to god smoke ring and some nice bark and a little tug to the bite. Add that sweet BBQ sauce and another beer and I'm in hog heaven. Didn't take me long to finish my plate. I ordered the apple cobbler and another beer for desert. " A beer the waitress asked?" Ok you better make it two! Love the family run charm this place has. Damm that was some TASTY cobbler, and the COLD beer here ain't too bad either I told the cashier as I settled up and stumbled out. At this point I was pretty buzzed, but by the time I made it back to motel I was drunk! They have a great pool at the motel for skinny dipping with the owners daughter but that's another review... I highly recommend The Red Chimney BBQ. Look for the pig in the window.

Dropped in after visiting the Caverns, and wanted to try something local. We arrived 2 minutes before closing lunch service and they were willing to serve us (not used to that, but a big plus). I am awfully picky when it comes to BBQ; I think good BBQ needs to have a smoked flavor, and taste great independently of sauce. Red Chimney did not disappoint. BBQ was delicious. We had the pork and brisket, both very good. The BBQ sauce was more of a mustard-base in the same vein as Carolina Gold BBQ (another big plus), tangy and sweet, and complemented the meat very well. Side dishes were so-so, but who cares? Waitresses were courteous and helpful, and the restaurant itself had a nice comfortable charm. In my opinion, they are doing everything right. Thumbs up from a Southern California Out-of-Towner.

Eh. The decor is really interesting! The food, ok, maybe it's my fault because I tried to be adventurous and get the mixed plate, which promises brisket, pork and turkey mixed together. I didn't know it would all ACTUALLY be ground together into one dog food-like scoop on my plate. And then it was held together with barbecue sauce. It just tasted kinda gross and I didn't like the texture. I should have just ordered brisket or turkey by itself. The hushpuppies were little finger-shaped things, not the delicious round balls of goodness I'm used to. Pinto beans, a Texas BBQ staple, were just....pinto beans. The fried okra was good. Sweet tea was good. I didn't want to give 1 star because maybe I would have liked one of the meats by itself, who knows? My bf didn't like his pulled pork much either; too fatty. :/

  • Randi M.

A big disappointment. Ordered the brisket, was served on the cold side. Meat was not meltingly tender. Pinto beans could also have been hotter. Flavor was a little bland. This was not nearly as good as Texas barbecue. service was good, server was attentive. I would not go back

Great Place! Everything is Homemade! Only bad thing about this place, if I have to say something bad would be that they are closed on the weekends. Owner stopped by our table to check on things...which is a class act move. Service Friendly. My guests had the Catfish, Ham & Hot Links...everyone enjoyed everything. Also we had Meomi Pinot Noir & Charles Krug Sauvignon Blanc which were both Fabulous!

We were on vacation and stopped here for dinner. This place was interesting. The decor is relaxing and was a mix of country with native wildlife. As you walk into the restaurant, the atmosphere reminded you of a home cooking. Service was good. Food was good but nothing extraordinary. It is OK food at fair prices.

Upon my arrival I was promptly seated and given a drink. Service was attentive and quick. I enjoyed my sweet tea while awaiting my 3 choice platter with brisket, sausage and ham. 10 minutes later my plate arrived with a side plate of toasted buns and bbq sauce. The meat seemed a bit dry at first glance, but a quick dosing of bbq cured it. The "sausage link" was a little small compared to other bbq places I have attended and was little more than a sausage dog rather than a true Link. The rest of the meal was quite good and if you are looking for bbq in Carlsbad, this appears to be the place.

I was surprised by the lack of dining options in Carlsbad overall. The Red Chimney had friendly table service and a charming, western atmosphere. I ordered the brisket platter with a Fat Tire beer, and my boyfriend ordered the sausage platter. I was hungry after a day of hiking, and the food was certainly OK. (I am from Texas and have fairly high standards for BBQ.) There was one piece of brisket that was inedible because it was raw inside, but in a strange way, almost looked like red dye. The side green salad with homemade ranch was crisp and fresh, and the rolls were good, too. We were a party of 2 on a weekend evening and were seated immediately. One larger party did walk in and had to wait for a table, but I noticed that the staff was very accommodating to everyone.

I am used to good old fashioned Texas barbecue so I may be a little biased. However, the Red Chimney was actually pretty good. I ordered the turkey plate and a side of sausage. The turkey was good and flavorful. Didn't really have a smoky flavor at all though. The sausage was actually two hot dog weenie type hot links. They were good though but not really what I was expecting coming from Texas where you get the best sausage in the country. All the sides were very good. The cole slaw and the beans were very tasty. I was a little disappointed with the dessert selection as all they had was cobbler. I'm not much of a cobbler guy. I was looking more for banana pudding or pecan pie (things you find in a Texas BBQ joint). All in all the food was pretty good and a sufficient barbecue fix. Will come back next time I'm in town.

The ribs, brisket and fried okra were very delicious. We waited 2 1/2 hours to eat here! Many eateries in Carlsbad have random hours. We missed the lunchtime window and came back when they opened for dinner. Worth the wait!

Everybody's experience is different, but went here on April 4th, 2014 for lunch and ordered the pork sandwich. At about midnight I was throwing my guts up all night as the pork was not cooked properly. I had not eaten anything else that day and you could easily tell it was the sandwich coming up. I haven't been so sick for as long as I can remember. Still a little nauseous today with a headache. I will not eat here again, I recommend Danny's place.

I stopped here with my wife and parents on our most recent road trip out to New Mexico. The food here was fantastic and I was impressed with their wait staff. Definitely a worthy option please consider.

This place was really busy last nite, waited over 30 minutes for brisket, wife had turkey, it finally came, it was cold. Asked for some hot French fries, brought some to the table, no excuse for cold BBQ -- won't be back to this place. Don't waste your$$$$$

Drove into town and just made it in time! Great food and friendly staff. The brisket was cooked perfect and it was very speedy service! Great place!!!

Stopped in here a couple of summers ago on a road trip. The little pig on the sign dared me......and I huffed and I puffed and I had a great meal. While not the best BBQ I've ever eaten it was a great find at the end of an exhausting day. The laid back atmosphere was most welcome. In my top ten for sure. Food: Beef Brisket was very tender with a nice smoke ring and smoked taste. Baby Back's weren't the fall off the bone variety, but rather a deep long smoked pig lovers chew. They had a nice tasting southern vinegar based sauce. Sides of beans & coleslaw were both great. Restaurant: Great hunting lodge decor, rustic and old school cool but then this place has been in business for 50+ years so old school rules apply. Clean and homey. Service was spot on. The waitress who served us was both informative about the food but clued me in to some other local stuff. Very attentive to our tables needs. Wish this place was closer.....I'd be doing it weekly... oh well got a T-shint to remember it.

Best bar-b-q in town. I never hesitate to eat here when I can. Friendly atmosphere and great service. Love the decor as well.

The dinner rolls used to be sliced in half and toasted, but I guess they don't have time for that anymore. One of the things we used to look forward to there. They also ran out of clean spoons and glasses. Our drinks came in to-go cups, which was okay. But when the waitress brought me my beans and said that there were no spoons!!! How do you eat beans without a spoon, because I like having the bean juice also.I guess we'll just have to start going to Danny's Place from now on.

  • Jessica S.

Very "meh." We had a green chili cheeseburger with fried okra, and a brisket sandwich with hushpuppies and some berry cobbler for dessert. The cheeseburger wasn't too bad. The brisket sandwich had little flavor, the hushpuppies were a strange cylindrical shape and bland, and the berry cobbler's cobbler chunks were the consistency and flavor of wet noodles - not very appetizing. The okra was deep fried and mediocre, much like the rest of the food. Service was good enough. If I were coming through Carlsbad again, this wouldn't be the place I'd pick to eat at.

From ABQ, down on a trial as an attorney. Thought this was the best BBQ in town by far.

    (4)
  • Jean M.

All the food had way too much salt, even for salt eaters. The homemade sourdough cobbler is horrible. Canned cherries dumped on their old bread. BBQ sauce nothing exciting. Will not be back!

  • Edwin C.

Found this place on Yelp... went here on our way North to ABQ. Recommendations: - Smoked Turkey salad, the addition of the smoked bbq turkey makes it VERY tasty. I think it was like $8.49 - Had the brisket... personally I felt that Danny's Place's brisket was better. But this one was decent. Overall, I gave them 3-stars, but really feel like it's a 3.5 star Price is a bit high and there's no outside seating, which for us would have been helpful. A lot of people did take out and were picking up from the take-out window and not even going inside. So if you're in a rush, that sounds like an option.

One of the first places we went when we moved into town because of the high reviews. It is good, but not the best BBQ in town. The limited hours make it difficult to enjoy. Take out is easy and is rare in this town. The sauce isn't as sweet as I like it, but the meat is smoked well. Always full of flavors. The coleslaw and macaroni salad are top notch. The chopped salad is my favorite. It holds well until the next day for leftovers too. I always ask for extra ranch dressing and they never charge me for it. My kids love the smoked ham. Service is quick enough and the setting is perfect for kids. They never blink when I show up with my two toddlers.

Carlsbad is a small town without much to offer in the way of fine dining. After a day at the caves and at the falls, we were quite famished. Our expectations weren't very high. We consulted Yelp and were quite surprised by how good everything was. The beef brisket, the chopped plate (mix of beef and pork in BBQ sauce) and the chicken were outstanding. The fried okra was excellent. The peach cobbler was home made. The milkshakes were huge (never had the kids not finish theirs before!) The setting is charming. If you have to eat in Carlsbad, you won't be disappointed here!

This restaurant received some rave reviews, so as a dedicated Yelper, I had to check it out. I am a fan of BBQ but by no means am I an expert. Got there around 7pm on a Friday evening at the tail end of a full house, server was busy and finally got to us and she mentioned that even though the menu does not state any combination was allowed except for the fish, thus I had the brisket and ribs plate. Ribs were good but not fall off the bone as another reviewer pointed out. As for the brisket, had to use a knife to cut through it. Brisket flavor was good but would have preferred it more tender. Wife had the turkey plate which was good with a nice smoky flavor. Since I am a fan of peach cobbler, I was really looking forward to their "homemade cobbler" - 2 thumbs down. The cobbler was a liquidy with a strong cinnamon flavor. Even the crust was underwhelming. All in all, a decent place to eat but definitely not the lofty standards some have proclaimed. Have to give them credit for having Shiner Bock beer which was a good pairing with BBQ.

  • R. L.

Service was good considering it was a Friday night and packed. Had the Brisket meal with potato salad and fried okra for my sides. The brisket could have been tenderer but the okra and potato salad were excellent. The pinto beans were rather bland needing some extra seasoning. It's been a little while since I was last here and prices have gone up noticeably. Over all the meal was good and filling.

What a great place to stop and grab some BBQ. I had the mixed chop sandwich with a salad and finished with some cherry cobbler. Every part of the meal was great. Staff was great and made it a point to drop by my table very often and make sure I had everything I needed which include a full drink all the time.

When my grandfather passed a few years ago, this restaurant stepped up and delivered food to my mothers house without us ordering any of it; so that has always struck me as something. Since then I have been back with my mother and best friend on a number of occasions; and the food is always top quality with rich flavors. One of the best parts is when they have their smokers running that whole end of town smells so good with the hickory - which you can taste in their food. I was born in the south, and honestly I can't remember a restaurant that was as good as Red Chimney back east.

This place is fantastic. i took a family of seven here and it was about 4 70.00. We had a little bit of everything, but I loved the sausage and brisket. I was glad this was near the Caverns because it was mostly locals in there for lunch and it did fill up really quick around lunch. It was such a good experience that we are planning this years trip to Carlsbad with this as the centerpiece for our noon meal.

Awesomely delicious. I had the "chop" dinner, which was a stead/pork combo. Came out looking a little like dog food, but tasting like heaven. The bread was grilled to perfection, and my friend's pork chops brought the serious flavor. The pork chops felt a touch dry, but I think this is by design because once you sauce them up with the delicious house BBQ sauce they are just right. The decor is like a giant wood-paneled cabin with various working man's fare decorating the place such as a John Wayne cardboard cutout, a neon pig in the window inviting you in and a littering "trophy" animals on the walls. Not to mention it appears a functional fireplace My only complaint is even though the staff seems very nice, the one waitress we had was abrupt and a little pushy. Not only this, but she vanished before we could order dessert, and then the place closed. We had our hearts set on the cobbler but looks like it wasn't in the cards! Go here!

Good local BBQ joint. Was there in April of 2009 I had the mixed dinner and the wife had the turkey, both meals were very good, and the service was great. I prefer my sauce sweet and spicy but the vinegar based sauce was good.

Wow, okay. Thought the BBQ was okay. Nothing special, certainly not the best. The restaurant is clean and inviting, and the staff is attentive. I got the hot link plate and it came with beans that were decent and a sad looking mixed salad that was basically lettuce. My hot links were warm and seemed more boiled than bbq'd. I just saw another review that said this is the best restaurant in town. This makes me so very sad since I have to work here 2-3 days a month. Where shall I go?

Good Bar-B-Q but be forewarned that some of the 'chopped & mixed' meals come with the sauce mixed in. If you aren't a fan of vinegar based sauces you may want to order one of the sliced meals. We had the sliced beef and sliced pork. Depending on how you order you get either the choice of 1 or 2 sides. You can't go wrong with fries and the beans & coleslaw were also good! Service was quick and friendly. The restaurant is also quite cute on the inside, someone has put some effort into making it feel homey. All and all a very good bar-b-q experience in a place you wouldn't expet to find it in!!

HOLY SMOKES - all puns intended. This place is the bomb. Who'd a thunk that I had to go to Carlsbad, NM to find one of THE BEST barbecue places in the west? Brisket - tender (melt-in-your-mouth), smokey (smoked for like a couple of weeks or something), moist (to die for), delicious (did I say to die for?) and INCREDIBLE. My wife's chicken was VERY tender, juicy and smokey. There was nothing on the menu that wasn't AT LEAST a 10 out of a possible 10. Even the potato salad was incredibly edible. Red Chimney has been around since the 50s, and is definitely worth the trip. It was soooo good that we ate there three times - and each time we were surprised and very pleased with our selections. They even make a great salad! Oh, man this place is a find. I'm almost contemplating flying back there just for the barbecue! If you are ever in Carlsbad, you absolutely have to try Red Chimney. Go there early, go there late - but go there often!

We stumbled upon this BBQ heaven after a weeks worth of car traveling to and from the Grand Canyon. being from Texas we were surprised to find this type of food here. There were many reviews about Red Chimney and we found out for ourselves how awesome it was. We had a bit of everything and you know a place has great food when they have a potato salad, macaroni salad and coleslaw that are ALL delicious. The main dishes, brisket, ham, pork, ribs were all very good. Our favorite was the ribs, macaroni salad and the COBBLER! Is was a crowded Friday and we were seated within 10 minutes. Our hostess and server were just wonderful and very down to earth . We met the owners Jill and her husband who were helping their staff throughout the night. Bottom line...great people, great food, great atmosphere!

I ordered chef salad with turkey..that had got to be some of the best turkey I've had, it was moist with a great smoked flavor.

On our way to Carlsbad Caverns and wanted to stop at a local eatery. Found this place on yelp, and barely got a parking spot. That's a good sign, we thought and made our way inside. The place smelled delicious! We sat at a cute picnic-like table and admired the decor. The waitress came by, sweet as can be, suggested her favorites and everything was cooked perfectly! The BBQ sauce was so good, we got some for home, and are quickly running out. This place is a must stop. Thanks Red Chimney!

Loved the ambiance, loved the food, loved the service. An excellent place to get a bite if you want to support a local restaurant while vacationing. The prices were a little on the high side, but the entire family enjoyed the meal. One note- they are not open on the weekend. We will definitely eat here again when we're back in the neighborhood.

Good BBQ that I've had in two separate visits to Carlsbad! Definitely enjoyed the meat but the beans could use a little flavor ;-)

Ate here while staying in Carlsbad. Carlsbad is such a small city but if you are not camping, its about your only lodging choice if you are visiting the caverns. The atmosphere was very homey and I noticed several patrons saying hello to each other. The food was just barely above average, however, its BBQ and BBQ is VERY hard to screw up too bad. I had the mixed chop dinner with fries and potato salad. The potato salad was very good as was the mixed pork and beef that made up the mixed chop part. The waitress we had was obviously not a career waitress. She didn't take our drink orders until she took our meal orders. Also, we sat, done with our food, for about 20 minutes waiting for a check. This didn't seem average however, looking around the restaurant the other waiters seemed to be very helpful. If you are looking for a good meal in Carlsbad that isn't a national chain, Red Chimney seems like a good place to go.

This is the only decent restaurant in Carlsbad, NM. Some pretty good BBQ with all the sides. Carlsbad is a nasty little backwater town with little to offer, but if you find yourself there, then go to the Red Chimney.

  • Randy B.

Average at best BBQ. My combo plate had my side salad (chopped bag lettuce), fries and the meat all on one warm plate. Ribs were ok. Turkey was not bad. Sauce kinda resembled a French salad dressing, not bad but also not my favorite sauce. Will not be going back.
