    I gave One Two Three Sushi another try, this time finally having the California roll made fresh, and think it is a pretty good improvement over the premade roll (or the inclusion of soy sauce really made a big difference - I am not sure). The Edemame was very good, and the selection for making your own roll was pretty impressive. Thankfully there is a menu of specialty rolls for we indecisive patrons.

    For "skyway" sushi, this is place is great. The fish is fresh and the fish portion of the roll is generous. I had brown rice, while my coworkers had white. We all agreed that the rice in the roll was fluffy and delightful. None of the rice-glob that plagues pre-made rolls. Having someone make your roll right before your eyes is a treat. The selection of ingredients is large, and everything looked really fresh. The seaweed salad was light and tasty, not over vinegary or "fishy" like some places. We also tried the pork belly steamed bun was fantastic too. The ramen looks amazing. There are some kinks that need to be worked out as far as how the line works, where to pay and where to pick up pre-packaged stuff. I thought the host should have been working the line (which was well out the door) by telling people where to order, how things worked, or just making conversation, instead of standing behind the cashier like a creeper.

    Updating my review after I finally got to eat their grub. Looks like the buzz has died down slightly after not having to wait in line out the door. Pork Belly Ramen: This was pretty darn tasty. The pork belly was flavorful, the shredded pork was also tender and juicy, and I enjoyed the soft boiled egg, tough to pull off during a lunch crowd. The noodles were decent, although a little over cooked. The packaging was nice, having the noodles separate was key. Pork tonkatsu: This one needs work. I've had tonkatsu ramen before and this pork was just dry and tough, even after soaking in the broth. Custom Roll: I think we had soft shell crab. It was still ehh. Once again, fast casual sushi doesn't have high expectations but if you're going to offer it, you're going to have to live up to expectations uno dos tres. Overall, not a bad showing and would definitely go if I was craving ramen.

    Good if you are in a rush and don't want to wait. Never been here before, there was a small line but I wanted to catch a bus so I grabbed one of the pre-made California rolls in a box in the cooler to the left. They say all the pre-made rolls are made fresh same-day. Guy at the cash register was friendly. $7.99 for an 8-piece California roll made with imitation crab, plus dab of wasabi, ginger, and soy sauce packet feels a little steep to me but maybe that is reasonable for downtown? May not fill you up if you have a big appetite (though I don't think people get sushi at lunchtime if they're looking to stuff themselves) but it was a perfect size for me. Tasted fresh though a bit bland, and the tempura pieces sprinkled on top were soft at 2:30 pm. Overall impression: okay. Fine for quick lunch or snack.

    Working downtown, I can say that I welcome the options and creativity One Two Three brings. There are a couple of good sandwich shops, but it gets tiring after awhile, so something new is great. I was very hungry last Friday so I decided to make my own roll and the green tea chicken steam buns. I was thoroughly suprised at the size of the roll, to a point that I didn't want to, but reluctantly gave 2 of the buns to a co-worker. My only gripe is that the line was somewhat long and the space is tiny. They could benefit from having more space but they keep the line moving. My co-worker and I will be back.

    Well surprisingly, the buns (Bao), while I disagree with how they are put together, were quite delicious. Nice steamed buns, pork belly :O , lettuce, some fresh pickled vegetables - carrots, japanese pickles, jicama maybe - and hoison rolled up together. Yummy. And most surprising the portion turned out to be good. I wasn't starving when I finished as I fully expected to be. It did look clean, cloths were in their appropriate places. Of course, no Japanese chefs were in sight but everyone was appropriately attired and ready to prepare a freshly made meal. $6.46 for 3 buns, they want you to buy the combo which adds pop or bottled water and edamame for $1.99 which I didn't do. I went very early in the morning and bought buns for a bit later. No one was waiting in line so that was great. But if you want a quick lunch over the noon hour, it's just not going to happen. I've seen scores of people lined up and as others have already stated, there is only one cash register at the end of all the lines so it's going to bottleneck right there. Not quite ready to try sushi there yet.

    I approached this place for the second time with some apprehension after it took approximately 25 minutes to get a gross sushi roll when they first opened. I was thoroughly unimpressed, but forgiving. So, today, I decide to give the ramen a try. It's been months...I think - surely the "system" behind the counter is fleshed out by now. And how could ramen noodle soup get screwed up, especially when it comes with a poached egg? How? Well who knew, but turns out with boogers. Yes. Boogers. Not only was the behind the counter "system" as bad as it was when they opened, there was an employee who was responsible for putting tops on the ramen soup orders, and while this person milled about behind the counter, waiting for my order to be ready, I first saw him/her touching their greasy hair (gross, but ok, I'm not going to freak out); second, put their fingers in their teeth (at which point I turn to my friend, "ah, do I ask for a refund now?" Friend: "Not sure, I think it's warranted, but umm..."), and finally, yes, finally, as I turn back around from my friend to decide what to do, I see, yes, I see fingers in nose. Just before, they put the top on my steamy soup. Fingers, whole time, are ungloved, p.s. And refund.

    Round 2. I tried it for a second time in two weeks. Service was better. Line was a bit longer, but still got my food in about 5 minutes from the time I got in line. It's JUST. SO. BLAND. I couldn't taste fish in either roll - a custom-made one this time, and then the spicy tuna. They use a lot of sauce, which is good, and makes it slightly more flavorful, but it'll never be on my "list" of sushi places....

    Review is for sushi only. As most people have stated, this place gets busy, and the set up is not the best, so the ordering process can be tricky and feel disorganized. Once you do get up to order though, they have a nice selection of choices for custom rolls. I went with brown rice with salmon, avocado, and cucumber topped with tempura and unagi sauce. All of the ingredients tasted super fresh and the roll was absolutely delicious. I will say, and I know this is downtown so everything is more expensive, but $10 for one roll without a side of edamame or drink or anything, felt a little expensive. But, I suppose you get what you pay for. Because of the cost, I won't be back a lot, but this is a great option to satisfy your skyway sushi cravings.

    ***Updated - I decided to give this another chance. I might have persuaded by the manager of this establishment to give it another try per their compliments. The gesture was extremely nice. Great job on the customer service aspect. As far as the food, I moderately enjoyed the sushi and the many options/flavors available. However, all of my rolls crumbled apart making the sushi very difficult to eat. I like that they have a "make-your-own" sushi bar - it is a brilliant idea. The kinks in execution just need a little more work.

    I'm not a huge sushi fan, but enjoy a roll every so often. Stopped in today at around 1:30 and there was no line. I ordered a tempura shrimp roll and the pork belly buns because I thought I was really hungry and I wanted to try out a few items. I couldn't eat the pork belly in the buns, maybe it's just me but it was just not what I was hoping for. As for the roll, I ate about two pieces, it just didn't taste good although I can't pin point what was wrong. As another reviewer described, the rice was gummy. I won't be going back.
