    This place is an utter delight! From the decor and ambiance, to the pour overs and mochas, Quills is worth every penny! The baristas are knowledgeable and friendly and they pour some very pretty drinks! Definitely the best coffee shop, in the Highlands area!

    We were looking for a different coffee house that unexpectedly was close. I wanted to stay in the older neighborhood and not go to a strip center by the college. Went there anyway. Love it. Friendly young man helped us. Great cafe au lait. Husband loved his coffee. I'm not sorry our original destination was closed. It is obvious the owners want to serve great coffee in a relaxing atmosphere.

    On vacay but still in need for my java (we haven't gone to the grocery store yet to get some), we took a trip in the morning to grab a nice espresso and other things. Why here? Well, it is known to have the best in Louisville, that is why. The girls on duty Sunday morning greeted us with huge smiles, and although it could have to do with the adorable baby we had with us, as they immediately started flirting with him, it was a great way to get greeted. I am not used to "nice" on a Sunday morning. The city I used to live in never was nice, much less on a Sunday morning so this was a huge plus. I asked the nice girl that what was the biggest espresso they had and she said a double shot, so I ordered two. For me. My sis had her iced latte and her hubby an iced tea with a scone. I had a bite of the scone and it was really, really, really delish. Known for having local artists work, it is always a pleasure to have cool artwork to look at while imbibing a tasty beverage. I especially loved the vintage stereo console by the bathrooms. Very awesome.

    My favorite coffee shop in L'ville. Everything you want in a cafe (in particular, great service!), plus it's the only place I've found around here that serves red espresso. Plus they taught me how to properly use an aeropress, and encouraged me to buy one (best purchase I've made in a while).

    Accopiato... what a perfect way to start the day. I read about Quill's Coffee in Imbibe magazine a little over a year ago, and was pleased with the Cafe miel I got on my first visit. Now with Louisville as a semi-regular destination, I'm happy to know that I can count on Quills for yummy coffee in a cute little shop, every time.

    Had my first Quill's experience today and I couldn't be more pleased. The second I walked in I was greeted by a friendly face (and awesome beard). The man explained their special "coffee sodas" that all sounded very intriguing. I chose a cold brew coffee, which is not for the faint of heart! What a kick, but definitely what coffee drinkers are after. The employees were all knowledgable and friendly. I'd say this place gives Heine Bros a run for their money.

    Post up way early on a holiday or make sure your laptop is charged before you go. Space is competitive. Coffee is roasted on site so the smells are phenomenal. If you can snag an outlet for your laptop for the FREE WIFI, then you could probably move-in here. The seats are solid though, so maybe you might still need a pillow, or an extra muffin that you could likely just glue to your tush, because there is no way that it's healthy, but speaking of the food... I had a blackberry-banana-chocolate-gooey delicious muffin this morning accompanying an Americano (which I've surprisingly never had before) in a mug because I love trees. It was soft and the chocolate was very surprising. There is something about bittershweet (yes SHWEET) dark chocolate that makes me so satisfied, maybe because I'm female, but also it tastes just great with a dark bittersweet drink, enter- Americano. The other point of interest is, wait for it...the wooden floor. It sounds like a hipster catwalk up in here and though they hate it when you look at their damn shnazzyness and uber thrift-shop fashionableness, it's fun to watch. You may also find a few people actually studying hard or working, but during the days when I go there are mostly suit-wearing folks talking a lot with their hands and your occasional John Steinbeck wannabe. The real question is, should you where headphones or not? Today they're playing an awesome CD- I think it's Kings of Leon. Just mainstream enough for me to tune it out and still enjoy. Busy weekends- earbuds/phones (I prefer the fine coverage of the headphone so you don't have to blast your drum with waves just to tune out annoying conversations about meaningless though tantalizingly distracting things) are a must. Again, the coffee/espresso is really, really, good. Some outdoor seating (didn't check to see if outlets out there) and the staff is super helpful in making decisions for me before I've been revived by their delicious, nutritious, bowel regulating, coffee. There is an upstairs too! Now that it's warm out I don't think they keep it closed, but check back with me on that one... or just go check it out yourself. Why not 5? I need MORE. I want MORE (comfortable) seating. More outlets. MORE coffee...nah it's great just the way it is. Oh I can hear them pouring the beans now ready for them to be freshly ground- here come the free smells. yea, I'm that nerd who wrote the review while they were there, but let's just say I loved every minute of it.

    Somewhere in the long list of reviews, you'll find my enthusiastic five-star writeup. I bet that was more than a year ago. But a lot of time has passed, and I've had too many lukewarm lattes to keep my original assessment. I still think the coffee beans are fantastic, but if my coffee isn't hot...what's the point?

    This is my least favorite coffee shop in Louisville. The coffee can sometimes be room temperature and just average when it comes to flavor/depth. I've tried the Americana, a french press several times, and even the tea service. I've tried about 6, perhaps 7 times in the last 2 years and they just have never impressed me. There's also something about the atmosphere that I don't enjoy. Maybe it's the high ceilings and bright, active colors. It seems to be more appropriately set up for students and not for lounging, or networking. Nothing there says to me 'stay a while and hang out'. Perhaps this is intentional? But the energy is not what I prefer for my coffee shop experience. That said, the baristas have always been attentive, kind, professional, and helpful. I had an excellent blueberry scone, lovingly heated up for me on a chilly day. :) The tea service comes on the cutest little tray and, if you're there to study or for a study group, it's probably a fine place to go.

    The barista took her time to explain several of their coffee creations to me. She was very sweet and on top of that I had two patrons also help explain things by offering more information and their take on some of the drinks. I like that it is a pretty big space and lots of tables. I thought my coffee was great. I got the Cafe Mele and found it DELICIOUS. I had not had that before and didn't think I liked honey in my coffee but I DO! I will have to go back for a Chai Latte which is my favorite and judge them on that ;) I am also looking forward to a celebration drink of the Chemex or the V60 Pour-over. Both sound good. I also drink my coffee black if it is good coffee and I'm pretty dern sure I can have it both ways at this super coffee shop! NOTE: The only thing that may be a pain is parking. Don't get a ticket because the traffic cops are Serious!

    I love coffee, and I love owls. Normally the two wouldn't be interconnected, but here at Quills it works. Cute little coffee shop in Louisville. Nice laid back vibe. Good coffee. I opted for a Miele Latte. Quite tasty, I was very satisfied. If I am in Louisville, I will be back.

    This place is rad. Some of the shirts for the place have a cobra on it which shows you how they mean business when it comes to cool. Everyone who works here is really nice and tries their best to help you out, which is unheard of in most coffee houses I've been at. There's also some local art on the walls so they're really into the location and community.

    The house coffee at quills is the best coffee in town, hands down. If you want a treat, the cafe miele is pretty special and they also make a mean dirty chai. If you are vegan, they usually have a decent selection of vegan pastries in addition to the regular kind. If you come later in the day, they are often significantly marked down in price so you can get a deal. Cellar Door chocolates are also sold, including the tasty chocolate covered coffee beans. Outdoor seating is limited to just a few tables. Actually, indoor seating ends up being limited as so many people just hang out in there for long periods of time, so keep that in mind. The staff is friendly and reasonably fast (they can get backed up like any coffee shop). Actually, the times they have taken a little bit longer than normal, I have routinely been offered coupons for free coffees or other drinks for future visits. Not a lot to complain about. It's a good place. I miss it.

    Ever had an espresso and macchiato side by side, just to compare the same beans w/ and w/out the softening influence of foamed milk? What a great idea. Now maybe you can put it on the menu and serve it on a little plate or something. And then offer a single-origin organic pour-over to ruminate with while reading, texting, talking, or simply drifting off into blissful contemplation. Sorta like a 21C opium den, just without all that annoyingly acrid smoke to mess things up. Very little about this location (there are two more in the works) is messed up, I would say. Great refurb of an old building keeping the warm wood surfaces intact; a cute hook to keep things visually interesting: lots of owls in all shapes and sizes hidden in various locations; an inviting stairway leading to a second floor meeting space; accessible art and coffee making instructions literally painted on the walls; and a choice selection of teas, chocolates, pastries, and small items to round out the experience. It's a winning formula, executed well. What's not to like about that? The Brothers Quillo may bring a world of coffee making (and drinking) experience to this spot, but it's all Louisville, if you ask me (but what would I know about that). It's a great Baxter Avenue landmark for the new city. Sit back, sip that espresso, switch to macchiato, then finish with a pour-over. A wining combination if ever there were one. Let it sink in for a while, slow it down a bit, and look for the owls. They are everywhere.

    Not sure what it is about this place, it's just never been good for me. They have the ambiance down, but not the coffee. Both the coffee and espresso taste like the beans are very under-roasted to me. However I realize that a good portion of what makes a coffee shop good is the atmosphere, and they definitely have this down. The music is good, it's usually quiet, and the staff is very friendly. If I need a quiet place to talk or do homework Quills isn't a bad choice, but if I want good coffee drinks then it's just about last on the list.

    Just arrived in Louisville for a show we're playing tonight and happily stumbled upon this cafe. I asked the barista about the various beans they serve, and brewing methods, and received a thorough, courteous, and well-informed answer, along with an offer to sample their drip blend. I went with a pour over of their Columbian beans and was quite impressed. The music is also chill and the vibe clean and friendly. I'd highly recommend this place.

    From Yelp this appears to be the flagship of a Louisville coffeeshop chain. It's on a relatively hip restaurant row in the Original Highlands neighborhood. The ambiance is good. It's just hipster enough to be cool, but it's clean and relatively quiet, making it work and conversation friendly. They were evidently awaiting a fresh batch of bad art for display. See Portlandia. It may have been an off day, but the cold brew coffee was bad. I think bitter was the word for it, though it wasn't especially dark. Also, the pastry selection was pitiful. The few items they had, like health bars and sad looking brownies, were ominously wrapped in plastic.

    Favorite coffee shop ever. And that is really saying something. This isn't a place to just order "a coffee"-- you have to know what method of brew you'd prefer. For espresso drinks, they list actual measurements of espresso-to-milk/foam. I'm sure the menu is daunting to some, but the guys are friendly enough to talk about brewing methods, and if you're too shy they also have a ton of info up on the chalkboard in the back. M started with a cold brew iced coffee-- perfectly smooth... and I had a skim latte-- probably one of the best I've ever had. The latte art was flawless as well... I did my best to not ruin it until the very end. We lived here for the entire day and ended up also trying the yummy cheddar scones and yet another skim latte. They made an announcement a few minutes before 4 for anyone parked on Baxter to move their car, which was a great reminder because we definitely would have forgotten. We were both sad to move out at the end of the day. If we could have stayed overnight, we would have.

    I love coffee shops. It is an addiction of mine because I love coffee and I like to work while drinking it. I've gone to Quills many times because it's in a good location, they have a meeting room, and I like expanding my coffee shop options. The only reason I don't love Quills is because of thier coffee- lattes and cappacinos are good, but their standard black coffee is horrible. Ive tried all of their locations multiple times and their coffee just sucks. So I recomend thier fancy drinks, but black coffee drinkers stay away.

    So far, Quills Coffee is my favorite coffee shop in Louisville. It is a great place to hang out with friends or simply to study. The baristas are very well trained; always quick to help and always have pleasant attitudes. I've heard that it is somewhat difficult to get a job as a barista here, and that all of them are very well trained and experienced. During my first visit, I told the barista that I wanted to try Chemex brewed coffee and he told me about every coffee and what flavors each one had. I chose the Finca La Bolsa from Guatemala, and was very much pleased. The barista said that as it cooled down that there would be a fruity taste, and he was spot it. Fantastic coffee. While I do love this place, I am surprised at how early they close their doors. Considering the location and the great coffee, it seems that it would be a great idea to stay open later.

    Quills baristas are the masters of latte art. If I go there too often they might make a latte drinker out of me. I peer over at my neighboring coffee shop junkies and see their rosettas holding strong until the bottoms of their cups. Beautiful. But me? I prefer my caffeine in its strongest form, plain old black coffee. Preferably a light roast, again, more caffeine :) Anyway, I don't know if its something about the actual beans or just the slightly pretentious atmosphere of Quills, but something about drinking it just tastes rich and velvety. If 50% of the reason you go to coffee shops is for the snacks like me, you won't be disappointed here. In addition to some sweet pastries that I don't pay attention to in the morning hours, they've usually got TWO options of savory scones, muffins, vegan bars. Yum! I just wish they had some hot food options.

    I visited Louisville for a weekend this past April and my host introduced me to Quills. I somehow made it back three more times the same weekend. They do espresso drinks, french press and pour over coffee. They have lots of seating upstairs and down. Every barista I've ever talked to has been friendly, knowledgable, and eager to answer any questions. My standard order is an americano and theirs is perfect. The crema is velvety and the espresso has a rich, nutty flavor. Do yourself a favor. Skip Starbucks and hit up Quills.

    I was once a certified barista. I love me some good coffee. The espresso is stellar. Regular coffee is French press or hand poured (i.e. coffee beans ground and brewed by the cup to order - so fresh and so clean!). Good selection of hot teas. If you like chai but want coffee, try the cafe miel = espresso, honey, cinnamon, and steamed milk. Baked goods are average. Cellar door chocolates are great. I like the espresso dark chocolate owls. Free wifi, a large variety of seating with lots of outlets. This is a great place to post up for some serious studying.

    If you are aware of the 3rd wave of coffee, you will learn to appreciate what Quills does. Awesome espresso and many cool espresso creations! But if you like your coffee drinks piping hot and beans roasted real dark, you might not like it here. I would say, BEST COFFEE IN TOWN!

    I visited Quills while at a conference at Louisville this weekend. My usual coffee is locally roasted in Cincinnati and I have to say this coffee is equally awesome to what I have at home. The coffee tastes fresh (as in freshly roasted) and its complexity reflects its origin. The baristas were very friendly and knowledgeable (they were able to tell me the components of the espresso). My hot latte was made beautifully and I was quite impressed with the skill of the barista. I took coffee and espresso home with me and will definitely look for this coffee next time I am in Louisville and perhaps will pick some up at Whole Foods in Cincinnati every now and then

    I truly want to hate this place, and every time I pass through the doors every fiber in my being screams to me to start overturning tables and peeing all over the floors, but I simply can't do it. This place makes the best coffee drinks in our city. It also has really nice art on the walls most of the time, which is very rare in coffee joints. Most coffee places in this town have stuff hanging on the walls that looks like it was created by really demented and untalented middle-school students, but not this place. This alone is a great reason for me to go in there because I'm always pleasantly surprised by every new batch of stuff hanging on the walls. The staff is amazingly well-mannered, patient and polite. In fact, they are so lacking in snobbery, nastiness and regular young-person angst that it sometimes feels like I am in some sort of Archie Comics nightmare. So many smiling faces! It gives a hateful and nasty person like me the willies, but you, oh gentle reader will certainly not mind in the least. On to the drinks- which are so good that no other establishment in the entire Metro area can top them. Their lattes and mochas are simply unbelievable, but I warn you that if you want your coffee hot when you get it you need to mention it; the drinks here are served warm and frothy, the temperature so slurp-perfect that it's tempting to bang the whole thing back in one gigantic orgasmic gulp. Nice atmosphere, warm colors, amazingly polite employees and drinks that will make your head spin counter-clockwise. What more do you want, you over-demanding ingrate, you?

    The top coffee shop in Louisville serving one of the three best coffees in Louisville (Sunergos and Argo Sons are the other two). Richly-textured velvety lattes with perfect tulips, hearts, and rosettas on the surface. Coffee beans with multiple layers of flavor. Quirky atmosphere and clientele. A record store in back. Simply an amazing spot, not to be missed when you visit The Ville. Best drink: cafe miele. Want something a bit more distinct? Try a smokehouse espresso (think, What if someone brought together the best of coffee with the best flavors in a beef brisket?) or a red miele (tea-based, milder and more rounded than cafe miele).

    This is definitely one of my favorite coffee joints in town. The crowd is always pretty chill, where if you want to sit and read or work, no one will disturb you, but at the same time if you want to catch up with a friend in a corner on cozy chairs, no one will be offended. I love all the random local art on the wall. And the chalk mural on wall breaking down why it is important to do coffee the slow way. Though not so slow that is is annoying, and man the flavor is worth it. I looove the little vanilla coffee shot (you literally shoot it). Also love the new caramel Apple cider. It is sweet but not too sweet but very flavorful, and perfectly hot. Also nice to sit out on the patio and watch everyone wandering about Baxter.

    Stopped in here to get a drink and go to the bathroom the other and boy was I in for a treat. The barista was really nice and helpful and, most importantly, the drinks were amazing. My friend and I both said it was the best mocha and chai latte we'd ever had! I really liked that it was at a drinkable temperature when served and the creative latte art. Only wish I lived closer.

    When it comes to coffee let's be honest there is not much one can get to overly excited about after all it not something one chews and while doing so savor each bite, but Quill's Miele is where one sips and savors. It is a latte but improved upon with a dose of honey and dash or so of cinnamon resulting in a very tasty and yum yum for the tum tum beverage. Hot or iced it is definitely one of the best brews of coffee my taste buds have encountered. The only drag is I do not know of a place in Chicagoland's western burbs close or far that offers the miele, but that may be a good thing as I could easily consume daily 2 or 3 of this awesome drink

    This is my favorite coffee shop in Louisville. I might have said that about Sunergos, bc it too is very good, but if Quills were right down the street from me as well, then I would pick it every time. The ambience is beautifully minimalistic. Tasteful art, nothing too loud. A well thought out color palette with dark wooden tables and exposed brick and wooden beams. Chill music to keep you relaxed yet intrigued. All ambiance accompanied with a layered floor plan make it a feng shui dream seating everyone at different heights with a pleasant view where ever you're facing. Added bonus, if you sit outside you can enjoy the celtic music from Molly O'sheas across the street during the daytime before they get the dance music bumpin'. On to the coffee. Consistent and delicious, I'm actually enjoying a cup right now. It's thick and full almost chocolatey, no acidity or tummy churning burnt flavor like crappy Heine Bros. I only drink plain ole coffee, no bells whistles or cream, so I can't talk much about their specialty drinks, but as far as the basic cup-o-joe, delish. They give you an option for just a cup, or a bottomless mug for $1 more, which is nice for sitting down and writing yelp reviews for a couple hours :)

    Very cool atmosphere and friendly service. Their drip coffee is very good and the cappuccino was excellent. My girlfriend had the cafe Miele ( honey and cinnamon latte) and really enjoyed it. These people take great care in crafting quality coffee and espresso drinks and their attention to detail shows. Although I've only been once and didn't spend too long in the shop, it seamed to be a great place to hang out.

    After reading all of Quills' rave reviews here on Yelp, I made it a point to grab a cup of coffee while I was in town. I enjoyed the ambiance and the barista I spoke with was very polite. However, my coffee was flat-out gross. I'm not sure whether Quills over-roasted their beans or if their drip coffee had just been sitting around for too long but either way I don't appreciate having to drink burnt coffee. It's a shame I felt that way because the rest of my experience was great. Hopefully this was just a one-off experience. I'll give Quills another try the next time I'm in town, partly because I really, really want to buy one of their amazing t-shirts!

    This place will make coffee for you in more ways than you thought imaginable. (Who knew my friend Alex had a cafe in Louisville.) A great place to grab some coffee and do some mobile computational work. The fact that it's only an alleyway away doesn't hurt for me either. The staff is friendly and very willing to talk coffee with you (and pretty much anything like cool place to bike in Louisville). The only bad thing is they ran out of cold brew by 4pm on Saturday. How dare they.

    Social media is a great marketing tool, and necessary for any business these days. But social media cannot take the place of good old-fashioned customer contact. I have had the same beverage prepared by six different bariste at two different Quills locations. With in-house roasting, and a refined effort, it has been spot on, except for the efforts of one employee at Baxter, who is their best personality and customer connection person I've seen because of his pleasant nature and willingness to greet customers. He actually makes an effort to talk. Ironically, he is over-extracting the espresso in my orders every time. I had four drinks from him, each time questioning why he is missing the mark with his technique when surrounded by a staff of individuals who are getting it right. Each time, I get the friendly make the customer happy thing, but no explanation or engagement about what is going on with his technique. Meanwhile, the coworker who makes the re-do sets a beverage on the pickup counter that is like night and day compared to the mistake. All good. Spot on, I tell them. As a frequent customer since the opening of the location, I had to walk away for over a year before seeing the extraction "philosophy" change from that of a prior review . . . that aside, in this phase, from this employee, I got literally sick after having what became the one and only over-extracted beverage I chose to consume from this nice employee because there was no other employee in sight to make the order. This is a technical problem, a training issue, and involves the volatility curve in espresso extraction where over-extraction produces a visible fault, a "smellable" fault, and a taste fault. This is from a chemical fault - the volatile organic compounds become excessive to the point that even a novice can notice the difference. When over-extracted, the espresso is perfused with these volatile compounds. When the rest of a staff is trained and executing well, any individual having an issue should confer with co-workers, or better yet, management, to work out the problem. If I want "customer is right" without an explanation for undrinkable coffee, then I'll go to Starbucks right down the street and save the $2 in gas it takes to get to Quills. This is a craft coffee industry, and over-extraction was a big issue here two years ago because of the whims of a few egotistical individuals no longer present, and I overheard many people in the local industry agree in discussing how obviously bad the product became. Some shops in the industry hire a barista who creates an ego bubble about their "special technique" or "maximum extractions" or "3-bar extraction pre-infusion espresso", or "Italians come here and say this is the best they've ever had . . ." as if Italians know anything about Third Wave Coffee . . . etc. Those are usually the people who create the bad espresso, yet when confronted, they get defensive and protect their baristatude ego. Not the case at Quills these days, but it was the case in the past. The point is why does this happen? I am reluctant to continue going to Quills, or to bring my friends there because I don't want to have to hand-select a barista every time and go through the talk and explanation and effort just so a young guy trying to do his job doesn't get offended. I can go to other shops who at least attempt consistency among their staff. Particularly an ongoing observation I make at Quills is the lack of management and ownership. During two of these extraction talks with the employee and with his co-worker present as well, I have seen one owner standing at the coffee bar just five feet away, and then watch him walk away upstairs or somewhere in the back. Social media is great, but it is not a substitute for face-to-face customer interaction and problem solving. Ridiculous, really, when a customer is engaging employees about their technical errors to simply stand there, or walk off. What a blown opportunity! It isn't about eavesdropping, it's about noticing and being effective by nature instead of putting all the energy into a blog or twitter, etc. Who cares? Get it right face to face or lose customers. Meanwhile, people in the coffee community take notice as consumers willing to support other businesses discuss such a problem among themselves, both at competitor shops and in general. If Lewisvul had a better coffee scene, and better alternatives, I would never have bothered going back to Quills because of the above issues. There can be many reasons for over-extraction, but when an employee refuses to engage in a conversation about those reasons, there is present either a barista ego bubble, or just a lack of desire to learn properly. Either one bothers customers, let's say minimally those who know the techniques and standards. Side to side, any customer can tell the difference immediately between correct extraction and improper extraction. (Owner comment below is from 2 years ago, not now)

    There is a tiny drink, I forget the name, but it is fantastic. There is a cold layer, a layer of what I think is vanilla flavour, and then the hot espresso on top. You drink it like a shot, and all the temperatures and tastes all meld together in your mouth. It is fascinatingly delicious and unique. Sadly that is not enough caffeine for me, so I also ordered a bottomless cup of regular coffee. The regular coffee is just not to my liking at all. It tasted weak, watery and too earthy. But that's OK! They have such a comprehensive menu of options I plan on coming back and trying everything until I have found "my" drink. Interior is very comfy and while the guys behind the counter have a bit of a coffee snob attitude (well, lets face it, so do I) they are very informative about their products. Plus they are a fan of my favourite roaster, Metropolis in Chicago, that I cant HELP but like these guys. Yay for coffee snobs! :)

    I spend most mornings at Quills in New Albany, but one particular day, I had an early morning appointment in Louisville and decided to stop by Quills on Baxter. I really like this place. The atmosphere is pleasant, and it has a lovely little record store in the back. I saw a bunch of familiar faces - several friends apparently frequent this location - so that was a nice surprise. I always get the tea service and usually a scone; I make a lunch out of the yogurt parfaits several days a week. What a pleasant place, and what great people who run this local group of coffee shops. Please don't ever change.

    Great coffee, staff is very knowledgeable. This is a 3rd wave coffee shop: manual brews, good espresso, latte art, hipster friendly. They re-opened a few years ago on Baxter, and have since opened a few more shops in Kentuckiana. The one on Baxter is always packed on a Saturday.

    I have a feeling I'll be abusing the free wi-fi once the fall semester gets underway. Having a locally-owned coffee shop right around the corner is great. I like to keep things local when possible, and it's usually cheaper. Starbucks is just down the street, but I haven't been since discovering Quills. Not only is it cheaper, but the espresso is deliiiicious. I'm fairly simple with my coffee beverages: iced Americano + vanilla, no need for cream or sugar. They have a case full of tasty-looking baked goods, though I have yet to nom. Bonus: vegan selections! I myself am not vegan, though I have a friend coming to visit soon who is and so far, this is the only place I know to take her where she can eat. Hope she likes muffins.

Weird how everyone there seems to always be lined up on the walls and on computers, but it is a good place to get work done... ignore that, do it for the coffee. Also, see if they have the fresh choc chip cookies from Please and Thank you- those are AMAZING. but not if they're stale or squashed. You've been warned...

    The coffee here is so good-may be the best coffee I have ever had, it is just amazing. I highly suggest the cafe miele-I wish someone could make this concoction in DC as well as they did here-actually I know of no where else that makes this drink! Their specialty drinks also looked great-it was good enough to stop by twice in one week when we were in town. The atmosphere inside the place is also nice. They also have some great looking baked goods which I didn't get to try on either visit but their sweet and savory scones and cookies and pastries and breads all looked tempting. Yum.

    Awesome quality and great ambiance. Several cool items on the menu that are unique to quills. Be aware that there is a minimum your required to spend before they will accept a credit or debit card. I wanted a small coffee and had to borrow the cash from a friend because it was not expensive enough for them to take the card. This would have been a 5 star review if not for this inconvenience.

    Really super nice employees. I'd want to work here if I lived in Louisville. A few of the guys talked to me about what bars to check out, what streets/neighborhoods to wander - really helpful choices. Had a memorable Americano to keep the exploring going and was very pleased. Wonderful feeling after leaving this place, and seems a peaceful place to get work done in the daytime. Look forward to checking out some live music here in the future.

    Great place to chill with a cup or get on your laptop and Yelp. The baristas are quite talented and passionate. I had the black and white. Espresso coffee with chocolate and white chocolate syrup. Just a bit too sweet for my taste but hell, I knew what it was when I ordered it. Wasn't overly crowded when I was there.

    Best coffee joint in town!! Hands down! If you are a coffee enthusiast you have to try the coffee that is provided at Quills on Baxter Ave. (I have not been a patron of any other location but I would venture to guess that they carry the same selections.) The coffee that they carry, both for immediate consumption as well as for carry out to brew at home is among the best blend and roast I have experienced in Louisville to date. My favorite is the Burundi roast. This bean has hints of floral tones and a grapefruit note that is clear from the first sip. Being a grapefruit lover, I naturally gravitated to this blend. It is amazing!! The other blends/roasts are of equal quality and tastiness, so you can never go wrong with getting a bottom-less cup and nestling in for a cozy morning or afternoon at this place. The interior is what would be expected of any inviting neighborhood coffee shop. It has a rich feel about it due to their use and emphasis of the wood that appears to be original to the space. A nice line up of wooded pews along one wall that features a revolving display of local art; which is always a plus in my book - local companies supporting local artists. Community at its best. There is also plenty of seating around the rest of the place and provides an intimate feel. I do know there is an upstairs to the place, but a sign stating "CLOSED" is located on the stairs leading upward; which has always peaked my curiosity. Perhaps someday I will either ask, or get to venture up for a gander. Appropriately the establishment has taken on the Owl as a mascot of sorts as can be described on their chalk board on the back wall and be seen by various owl statues, figures, pictures and other knick-knacks located around the place. I know from personal experience that they are appreciative to have new additions to their ever growing collection of mascots. If you are coming here to work or to study there are an ample amount of electrical outlets to plug in your laptop or cell phone for charging. This is always appreciated and is a sign of a shop that encourages you to sit and stay awhile, much unlike a lot of the chain stores that are less "comfy-cozy" and tend to treat their patrons like cattle. The staff has always been very pleasant and accommodating. They pay attention to details and if you tend to frequent the place often and are a creature of habit, like myself, they know what you want when you walk in. Another sign of good customer service and staffing. Along the lines of snack foods and breakfast items they have a selection of pastries, muffins, and breads that will cure any grumbling tummy, however, I suggest you go for the bowl of granola. They top this canning jar that is already filled half way up with granola with yogurt, honey and dried cranberries. Just stir and enjoy! It always hits the morning spot! And since they do not serve lunch sandwiches or the likes, they made a great recommendation for a pizza place across the street and said I could bring it back in to eat. Talk about keeping your customers happy! Once again an example of the top notch service and business model mentality that can be expected from Quills. While I do go to other locally owned, non franchised coffee shops in the neighborhood, I consider Quills my Go-To place for my coffee and granola fix. It's the friendly "Cheers"-esk establishment that makes me feel a part of the neighborhood and community and that is another reason why I return here time and time again. That and (ultimately) the superb selection of coffee and brew methods offered here. This place knows a good cup of coffee, so check it out!

Located in the highlands, notorious for amazing food, shopping and culture - Quills has what every coffee lover is looking for.     So, I've been going to Quills for a while now, and I've seen it grow. They now do pour-over drip coffee, which is good. They have also changed up the pastries again, which is good. The Please and Thank You pastries are great, even the vegan ones. I usually avoid vegan desserts, but the carrot bread (basically like a slice of carrot cake) is yum. The chocolate chip cookies are much improved. The espresso drinks are still pretty inconsistent. Sometimes there is no foam in my drink when I ask for foam, sometimes it is perfect. The shots are typically pretty good though. This place is a hangout for TONS of young Christian people... we're talking Bibles being read at every table sometimes. This can be kinda strange for me, not that there is anything wrong with it, but it's something that really stands out.

    Start your day with an escape from the ordinary when you grab your morning Java at Quills. This is my new favorite place for an AM latte, adding just a little something special to my morning routine. Quills blends right into the Baxter Ave landscape, with a recessed vestibule off the sidewalk that includes a high top table and seating for 4. While there's also a cafe table along the sidewalk, the little enclave allows for outdoor people watching even on a drizzly morning. Inside, it has a rustic elegance that highlights the original architecture. High ceilings are adorned with a tin tile finish in the front of the store. Hardwood floors provide a cozy environment and the natural finish is echoed with solid wood tables throughout the inside. I like to think of the lattes here as being made with love, because the barista always finishes them off with a little heart-shaped drizzle in the foam. It's a local joint, which warms my heart to visit, and it's really hard not to fall in love with this particular location. But don't take my word for it! Visit for yourself and discover what there is to love at Quills.

    I appreciate good coffee, and after four years, Quills has yet to disappoint. I would recommend an iced mocha, but that's just my usual. You really can't go wrong with any of the drinks. The Blacksmith espresso is out of this world... These guys are coffee roasting wizards. The shop also has a really nice atmosphere. Very relaxing & nicely decorated. They have some really cool art on rotation. My one complaint is that it can get quite crowded during peak hours; but I guess that's what happens when your product is so stellar. Anyhow, check this place out if you're in the area. It is second to none (besides maybe Sunergos on a really bad day)!

The atmosphere is exactly what you think of when you think of a contemporary modern coffee shop. The best part is that they have a lot of seating, which is great when I'm coming here to change up my "office". The only reason I gave 4 stars is because of their internet - it's very spotty and it has always cut off right in the middle for me. Really disappointing when I'm trying to get work done. But overall, worth the visit for sure!

    Modern, industrial shoppe. I appreciated the decor and the knowledgeable baristas. Would have bought a shirt, but only had XS size. Was traveling thru and I liked that this was close to the highway, easy on and off. The area is Art Deco and so vintage. Very glad I stopped and will stop again, hopefully they will have a larger size selection in the t shirts.

    Overall it's a beautiful place, with a nice ambiance to chat over a drink, or do some work. When I went, it was packed with people do just that. The minus -1 star is because throughout the whole time there, the wi-fi was very spotty... and the pumpkin bread tasted a little bit old/hard, compared to the same exact one I had a day ago at Sunergos (wrapped kind). The wifi messing up definitely was a bit of a damper to my first visit, but if it's not usually like that - i'd go visit again if in the area. Lots of outlets, lots of seating~ Great people working there, too!

    First time here. This place MIGHT top Sunergos as my go-to coffee place. The setting is nicer and cleaner. The coffee is really about the same as Sunergos, in my opinion. I'm giving it 5 stars, because I'm giving them the benefit of the doubt. They were very slow this morning. I couldn't tell if it was because they are just really slow, or if it was because people are ordering really random drinks that take forever to make. I'm guessing that's it, because I watched this poor woman behind the counter stand there and hand make this tea/coffee/thing, and I couldn't help but thinking, "That is so unnecessary." Good place. My new favorite.

    Came in on quills' 5th year anniversary, and so had the chance to try some really awesome coffee. The espresso (had a cortado) is wonderful and caramelly sweet, and the drink was made very well. They were pouring free V60 samples, so we tried the El Eden and the Sopacdi. The Eden is wonderfully juicy and fruity right off the front, and the Sopacdi is a great, approachable, chocolatey light roast. I ended up getting a bag of the Sopacdi for home and the baristas were great with recommendations and brewing tips. They have some delicious baked goods from all around town, and the ambiance is awesome. Definitely a must have!

    Ah, Quills. I need you in my life. It's too bad we're far apart from each other, but maybe this could be a long distance relationship? Yes? Okay, I just love coffee. I love the street this place is on and the overall location in the neighborhood. The layout is open with plenty of seating and there is even some room to sit outside, which is always a plus for me especially when it's nice outside. It felt homey and like a place where I could sit for a few hours to get work done. It was pretty quiet when we came in and most people had their faces in their laptops or cell phones. The barista behind the counter was to the point in a nice way. I ordered a vanilla latte and a scone, which I kind of wished was heated up since it was chilly outside. I wasn't offered that option so I just took it how it was. It was still good, of course. My vanilla latte was good as well though not as strong as I thought it would in terms of espresso and flavor. I barely tasted any vanilla. It gave me the slight jolt I needed to get back on the road so it did its job and I was happy with that. I would definitely come back here if I was in town and browse the menu a bit more.

Also I was curious about the calories and sugar in their latte's and couldn't find anything online or in the store. Despite the noise and hard seats the chai latte's ensure I will return.

    This is the cutest coffee shop. I don't know what it is about it but if I was living in the neighborhood, this would defintely be a spot I'd frequent. Unsure of what to get, I went with the Autumn Latte to go along with the weather. It was delicious and tasted like Fall without the pumpkin. I may even stumble here again tomorrow and try The Alchemist, which I was told tasted like a mexican hot chocolate, before I skedaddle out of town.

    I was not a coffee addict....until I discovered Quills. and now.....I'm a believer! Talk about the perfect balance of a shot of espresso and steamed milk. MMMM..I can almost taste it now. Let me tell you. A cappuccino from Quills and my homemade Swedish pancakes on a quiet Sunday morning...Heaven! As with any successful business "consistency is key" and Quills delivers. I have never had a bad drink. Even their newer baristas are incredible. The service is always a pleasure to deal with. Good people. They have got this down to a science. The beans are roasted perfectly (never too dark and bitter). An impeccable balance. The ambiance is just right. Plenty of seating for large groups and single loners (the window bars face Baxter Ave.) can people watch. They have good music playing in the background and some limited seating outside. I have used the WiFi there before and it works very well. No problems. It can get crowded and loud sometimes just so you know, but nothing out of control. 5% off your drink if you bring your own thermos. One flaw is that they charge $1.00 extra for almond milk...booo...but I'm willing to overlook that....because... It. Is. Just. That. Good. ((DROOLS))

    Wow, I'm really disappointed in myself that I've lived in Louisville for SIX YEARS and have just gotten around to trying Quills. What stands out most to me about Quills is the passion for coffee. While I like coffee, I also appreciate some cream and sugar in mine, so I don't think anyone could call me a coffee aficionado. Doesn't mean I can't appreciate those with more passion than myself. I just opted for the cafe au lait, but my husband wanted to try one of the pour overs. We both liked our coffee, but the best part was the atmosphere. This isn't a place I'd just grab coffee on my way to work as I did on my initial visit. I'd rather come back to savor a few hours on a weekend morning (and I bet it would be even more appealing during the fall and winter!). I'll be back. And who knows...maybe they'll make a coffee maven out of me as well!

    Strictly based on coffee I purchased. Service was fine, great because they ground the beans for me. The flavor is Mexican something. Thought it might be good. Horrible. I'm a coffee snob and so sorry I spent $20 on this bag. Bummer. From Chicago was staying the weekend.

    On a recent trip to Louisville my husband and I were looking for a place to get some grading and lesson planning done before returning to Cincinnati. We turned to yelp (as always) and we were not disappointed! Quills had a great vibe - I could tell it is definitely a place where people often go to work. The drinks were delicious and the atmosphere was exactly what we were looking for: ample seating, quiet (but not library-quiet), and busy but not crowded.

    I learned quickly during my visit to Louisville that it is not as caffeinated as other cities. In Seattle/Tacoma and Portland where I spend most of my time, it's easy to find numerous coffee places that are pretty great nearly anywhere you go...and no, I don't mean Starbucks. I went to several places in Louisville before coming here and was not impressed by any of them. I found Quills by accident after wandering around Cave Hill Cemetery one afternoon. I thought I could kill two birds and grab a latte and some lunch but unfortunately, they don't have much in the way of food, just fruit, bagels, scones, etc...typical grab and go type items. No prob, I just opted for a bagel and asked for a recommendation of one of their signature drinks. The gentleman at the register suggested the Cafe Miele which I got iced because it was an extremely warm day. The Cafe Miele is a latte "with a special blend of honey and cinnamon". Special is right. Maybe I was suffering from the seeming lack of really great coffee in Louisville, but I thought this drink was perfection. That paired with the hipster-y vibe made me feel like I was back at home. Great place!

    Quills Coffee is my go-to place if I want to purchase a good coffee drink or tea, plug in my laptop and just get lost in writing or surfing the Web. I rarely have to fight for an outlet, which is key considering my lappie does not like holding a charge. Almost all the seats -- and definitely the small tables designed for one or two people -- have ample access to outlets. And in terms of the food and drink, the iced red tea latte is my favorite. In winter months, I can get lost in their bottomless cups of coffee and tea as well. I do wish they had more food options beyond a few pastries, but I must say that those are top notch as well. Considering the bountiful coffee shop options in Louisville -- and in the Highlands, especially -- Quills stands outs.

    I love both locations of Quills Coffee but I prefer the Bardstown location hands down. The space is great and very condusive for productive work meetings. I love the quality of coffee and the baristas are very knowledgeable. They always take the time to ansnwer my questions, give reccomendations, or just offer a friendly chat. If you are looking for a study location or meeting space I highly reccomend this place. While you are there - grab a muffin and a Chimex - you won't regreat it.

    Great place, lots of room, high ceiling, a comfortable, chill vibe - lots of students, lots of hipsters, lots of professors it seemed. The environment merits going back in itself, but the drinks were great too. My husband has been getting their coffee, which he liked the second time better than the first. I've had their mochas, which are much better than other coffee shops in the area - they're actually sweet (but not too much), where with others, you can hardly tell it's flavored. Also, we had their lemon poppy seed muffin with lemon glaze, and it was soo good. I definitely recommend trying it.

    Good little coffee shop with good latte's and other options. My favorite part of their coffee sales is that they offer those little taster packet with 3 different bags of 4 ounces offering different coffees. We have bought one each of the past two times we went there and have not been disappointed. The customer service is good and helpful, and I like the stores setup, it is really nice.

    I've been to Quills many times and I've never written a review! I really like Quills, don't hate me but, better than Heine Brothers. Their beans are just top notch! You need to know, I only drink espresso. So, I cannot comment on the coffee, however they do offer hand poured, which I need to try. I always get an Iced Soy Latte and it needs nothing else. It's smooth and flavorful and great until the last sip. They seem to be pretty consistent with their latte, no surprises and no need to chuck it on your way out...Which I've done at other places. This particular location is always clean as a whistle. Their menu is huge, so surely there is something for everyone!

    I get my daily cappuccino from Quills frequently. After a going to a different Highland neighborhood coffee shop each morning for awhile Quills shook out to be the best tasting and most consistent. Also, even though I was semi-regular at many places Quills was the first place that a barista asked my name and remembered my drink order. Great espresso, friendly faces and good musical choices make this my fav Louisville coffee shop.

    Very nice! The shop was great in layout and decor. They had some pastries for sale (choc chip cookie was good) & offered the typical range of espresso drinks, slow pours, etc. the "downfall," per say, for me was the latte itself. It was decent, but mine had minimal art and quite a bit of foam on top. Wanting art in my coffee may seem pretentious, but good art is a sign of perfect consistency! Instead, my first 10 sips or so were straight foam, which may be good for cappuccino but not latte :/ I would definitely return to give them another try. Love the name & the space!

    Start your day with an escape from the ordinary when you grab your morning Java at Quills. This is my new favorite place for an AM latte, adding just a little something special to my morning routine. Quills blends right into the Baxter Ave landscape, with a recessed vestibule off the sidewalk that includes a high top table and seating for 4. While there's also a cafe table along the sidewalk, the little enclave allows for outdoor people watching even on a drizzly morning. Inside, it has a rustic elegance that highlights the original architecture. High ceilings are adorned with a tin tile finish in the front of the store. Hardwood floors provide a cozy environment and the natural finish is echoed with solid wood tables throughout the inside. I like to think of the lattes here as being made with love, because the barista always finishes them off with a little heart-shaped drizzle in the foam. It's a local joint, which warms my heart to visit, and it's really hard not to fall in love with this particular location. But don't take my word for it! Visit for yourself and discover what there is to love at Quills.

    I appreciate good coffee, and after four years, Quills has yet to disappoint. I would recommend an iced mocha, but that's just my usual. You really can't go wrong with any of the drinks. The Blacksmith espresso is out of this world... These guys are coffee roasting wizards. The shop also has a really nice atmosphere. Very relaxing & nicely decorated. They have some really cool art on rotation. My one complaint is that it can get quite crowded during peak hours; but I guess that's what happens when your product is so stellar. Anyhow, check this place out if you're in the area. It is second to none (besides maybe Sunergos on a really bad day)!

    Awesome coffee and great service. Their staff is so nice and totally deserving of tips! I always have the vanilla latte, because if it's not broken why fix it? Love the lattes! The atmosphere is exactly what you think of when you think of a contemporary modern coffee shop. The best part is that they have a lot of seating, which is great when I'm coming here to change up my "office". The only reason I gave 4 stars is because of their internet - it's very spotty and it has always cut off right in the middle for me. Really disappointing when I'm trying to get work done. But overall, worth the visit for sure!

    Modern, industrial shoppe. I appreciated the decor and the knowledgeable baristas. Would have bought a shirt, but only had XS size. Was traveling thru and I liked that this was close to the highway, easy on and off. The area is Art Deco and so vintage. Very glad I stopped and will stop again, hopefully they will have a larger size selection in the t shirts.

    Overall it's a beautiful place, with a nice ambiance to chat over a drink, or do some work. When I went, it was packed with people do just that. The minus -1 star is because throughout the whole time there, the wi-fi was very spotty... and the pumpkin bread tasted a little bit old/hard, compared to the same exact one I had a day ago at Sunergos (wrapped kind). The wifi messing up definitely was a bit of a damper to my first visit, but if it's not usually like that - i'd go visit again if in the area. Lots of outlets, lots of seating~ Great people working there, too!

    First time here. This place MIGHT top Sunergos as my go-to coffee place. The setting is nicer and cleaner. The coffee is really about the same as Sunergos, in my opinion. I'm giving it 5 stars, because I'm giving them the benefit of the doubt. They were very slow this morning. I couldn't tell if it was because they are just really slow, or if it was because people are ordering really random drinks that take forever to make. I'm guessing that's it, because I watched this poor woman behind the counter stand there and hand make this tea/coffee/thing, and I couldn't help but thinking, "That is so unnecessary." Good place. My new favorite.

    Came in on quills' 5th year anniversary, and so had the chance to try some really awesome coffee. The espresso (had a cortado) is wonderful and caramelly sweet, and the drink was made very well. They were pouring free V60 samples, so we tried the El Eden and the Sopacdi. The Eden is wonderfully juicy and fruity right off the front, and the Sopacdi is a great, approachable, chocolatey light roast. I ended up getting a bag of the Sopacdi for home and the baristas were great with recommendations and brewing tips. They have some delicious baked goods from all around town, and the ambiance is awesome. Definitely a must have!

    Ah, Quills. I need you in my life. It's too bad we're far apart from each other, but maybe this could be a long distance relationship? Yes? Okay, I just love coffee. I love the street this place is on and the overall location in the neighborhood. The layout is open with plenty of seating and there is even some room to sit outside, which is always a plus for me especially when it's nice outside. It felt homey and like a place where I could sit for a few hours to get work done. It was pretty quiet when we came in and most people had their faces in their laptops or cell phones. The barista behind the counter was to the point in a nice way. I ordered a vanilla latte and a scone, which I kind of wished was heated up since it was chilly outside. I wasn't offered that option so I just took it how it was. It was still good, of course. My vanilla latte was good as well though not as strong as I thought it would in terms of espresso and flavor. I barely tasted any vanilla. It gave me the slight jolt I needed to get back on the road so it did its job and I was happy with that. I would definitely come back here if I was in town and browse the menu a bit more.

    Seats could use a little padding but their chai latte's are the best I've ever had. Friendly staff. Leans a little more to being social than work-friendly. Also I was curious about the calories and sugar in their latte's and couldn't find anything online or in the store. Despite the noise and hard seats the chai latte's ensure I will return.

    My husband and I took a road trip with major stops in Chattanooga, Nashville, Louisville, Indianapolis, and Chicago. This latte was probably the one I remembered the most. It was so great! The guy behind the counter was incredibly nice and really was helpful!

    This is the cutest coffee shop. I don't know what it is about it but if I was living in the neighborhood, this would defintely be a spot I'd frequent. Unsure of what to get, I went with the Autumn Latte to go along with the weather. It was delicious and tasted like Fall without the pumpkin. I may even stumble here again tomorrow and try The Alchemist, which I was told tasted like a mexican hot chocolate, before I skedaddle out of town.

    I was not a coffee addict....until I discovered Quills. and now.....I'm a believer! Talk about the perfect balance of a shot of espresso and steamed milk. MMMM..I can almost taste it now. Let me tell you. A cappuccino from Quills and my homemade Swedish pancakes on a quiet Sunday morning...Heaven! As with any successful business "consistency is key" and Quills delivers. I have never had a bad drink. Even their newer baristas are incredible. The service is always a pleasure to deal with. Good people. They have got this down to a science. The beans are roasted perfectly (never too dark and bitter). An impeccable balance. The ambiance is just right. Plenty of seating for large groups and single loners (the window bars face Baxter Ave.) can people watch. They have good music playing in the background and some limited seating outside.     We were looking for a different coffee house that unexpectedly was close. I wanted to stay in the older neighborhood and not go to a strip center by the college. Went there anyway. Love it. Friendly young man helped us. Great cafe au lait. Husband loved his coffee. I'm not sorry our original destination was closed. It is obvious the owners want to serve great coffee in a relaxing atmosphere.

    On vacay but still in need for my java (we haven't gone to the grocery store yet to get some), we took a trip in the morning to grab a nice espresso and other things. Why here? Well, it is known to have the best in Louisville, that is why. The girls on duty Sunday morning greeted us with huge smiles, and although it could have to do with the adorable baby we had with us, as they immediately started flirting with him, it was a great way to get greeted. I am not used to "nice" on a Sunday morning. The city I used to live in never was nice, much less on a Sunday morning so this was a huge plus. I asked the nice girl that what was the biggest espresso they had and she said a double shot, so I ordered two. For me. My sis had her iced latte and her hubby an iced tea with a scone. I had a bite of the scone and it was really, really, really delish. Known for having local artists work, it is always a pleasure to have cool artwork to look at while imbibing a tasty beverage. I especially loved the vintage stereo console by the bathrooms. Very awesome.

    My favorite coffee shop in L'ville. Everything you want in a cafe (in particular, great service!), plus it's the only place I've found around here that serves red espresso. Plus they taught me how to properly use an aeropress, and encouraged me to buy one (best purchase I've made in a while).

    Accopiato... what a perfect way to start the day. I read about Quill's Coffee in Imbibe magazine a little over a year ago, and was pleased with the Cafe miel I got on my first visit. Now with Louisville as a semi-regular destination, I'm happy to know that I can count on Quills for yummy coffee in a cute little shop, every time.

    Post up way early on a holiday or make sure your laptop is charged before you go. Space is competitive. Coffee is roasted on site so the smells are phenomenal. If you can snag an outlet for your laptop for the FREE WIFI, then you could probably move-in here. The seats are solid though, so maybe you might still need a pillow, or an extra muffin that you could likely just glue to your tush, because there is no way that it's healthy, but speaking of the food... I had a blackberry-banana-chocolate-gooey delicious muffin this morning accompanying an Americano (which I've surprisingly never had before) in a mug because I love trees. It was soft and the chocolate was very surprising. There is something about bittershweet (yes SHWEET) dark chocolate that makes me so satisfied, maybe because I'm female, but also it tastes just great with a dark bittersweet drink, enter- Americano. The other point of interest is, wait for it...the wooden floor. It sounds like a hipster catwalk up in here and though they hate it when you look at their damn shnazzyness and uber thrift-shop fashionableness, it's fun to watch. You may also find a few people actually studying hard or working, but during the days when I go there are mostly suit-wearing folks talking a lot with their hands and your occasional John Steinbeck wannabe. The real question is, should you where headphones or not? Today they're playing an awesome CD- I think it's Kings of Leon. Just mainstream enough for me to tune it out and still enjoy. Busy weekends- earbuds/phones (I prefer the fine coverage of the headphone so you don't have to blast your drum with waves just to tune out annoying conversations about meaningless though tantalizingly distracting things) are a must. Again, the coffee/espresso is really, really, good. Some outdoor seating (didn't check to see if outlets out there) and the staff is super helpful in making decisions for me before I've been revived by their delicious, nutritious, bowel regulating, coffee. There is an upstairs too! Now that it's warm out I don't think they keep it closed, but check back with me on that one... or just go check it out yourself. Why not 5? I need MORE. I want MORE (comfortable) seating. More outlets. MORE coffee...nah it's great just the way it is. But a lot of time has passed, and I've had too many lukewarm lattes to keep my original assessment. I still think the coffee beans are fantastic, but if my coffee isn't hot...what's the point?

    This is my least favorite coffee shop in Louisville. The coffee can sometimes be room temperature and just average when it comes to flavor/depth. I've tried the Americana, a french press several times, and even the tea service. I've tried about 6, perhaps 7 times in the last 2 years and they just have never impressed me. There's also something about the atmosphere that I don't enjoy. Maybe it's the high ceilings and bright, active colors. It seems to be more appropriately set up for students and not for lounging, or networking. Nothing there says to me 'stay a while and hang out'. Perhaps this is intentional? But the energy is not what I prefer for my coffee shop experience. That said, the baristas have always been attentive, kind, professional, and helpful. I had an excellent blueberry scone, lovingly heated up for me on a chilly day. :) The tea service comes on the cutest little tray and, if you're there to study or for a study group, it's probably a fine place to go.

    The barista took her time to explain several of their coffee creations to me. She was very sweet and on top of that I had two patrons also help explain things by offering more information and their take on some of the drinks. I like that it is a pretty big space and lots of tables. I thought my coffee was great. I got the Cafe Mele and found it DELICIOUS. I had not had that before and didn't think I liked honey in my coffee but I DO! I will have to go back for a Chai Latte which is my favorite and judge them on that ;) I am also looking forward to a celebration drink of the Chemex or the V60 Pour-over. Both sound good. I also drink my coffee black if it is good coffee and I'm pretty dern sure I can have it both ways at this super coffee shop! NOTE: The only thing that may be a pain is parking. Don't get a ticket because the traffic cops are Serious!

    I love coffee, and I love owls. Normally the two wouldn't be interconnected, but here at Quills it works. Cute little coffee shop in Louisville. Nice laid back vibe. Good coffee. I opted for a Miele Latte. Quite tasty, I was very satisfied. If I am in Louisville, I will be back.

    Had my first Quill's experience today and I couldn't be more pleased. The second I walked in I was greeted by a friendly face (and awesome beard). The man explained their special "coffee sodas" that all sounded very intriguing. I chose a cold brew coffee, which is not for the faint of heart! What a kick, but definitely what coffee drinkers are after. The employees were all knowledgable and friendly. I'd say this place gives Heine Bros a run for their money.

    This place is rad. Some of the shirts for the place have a cobra on it which shows you how they mean business when it comes to cool. Everyone who works here is really nice and tries their best to help you out, which is unheard of in most coffee houses I've been at. There's also some local art on the walls so they're really into the location and community.

    The house coffee at quills is the best coffee in town, hands down. If you want a treat, the cafe miele is pretty special and they also make a mean dirty chai. If you are vegan, they usually have a decent selection of vegan pastries in addition to the regular kind. If you come later in the day, they are often significantly marked down in price so you can get a deal. Cellar Door chocolates are also sold, including the tasty chocolate covered coffee beans. Outdoor seating is limited to just a few tables. Actually, indoor seating ends up being limited as so many people just hang out in there for long periods of time, so keep that in mind. The staff is friendly and reasonably fast (they can get backed up like any coffee shop). Actually, the times they have taken a little bit longer than normal, I have routinely been offered coupons for free coffees or other drinks for future visits. Not a lot to complain about. It's a good place. I miss it.

    Ever had an espresso and macchiato side by side, just to compare the same beans w/ and w/out the softening influence of foamed milk? What a great idea. Now maybe you can put it on the menu and serve it on a little plate or something. And then offer a single-origin organic pour-over to ruminate with while reading, texting, talking, or simply drifting off into blissful contemplation. Sorta like a 21C opium den, just without all that annoyingly acrid smoke to mess things up. Very little about this location (there are two more in the works) is messed up, I would say. Great refurb of an old building keeping the warm wood surfaces intact; a cute hook to keep things visually interesting: lots of owls in all shapes and sizes hidden in various locations; an inviting stairway leading to a second floor meeting space; accessible art and coffee making instructions literally painted on the walls; and a choice selection of teas, chocolates, pastries, and small items to round out the experience. It's a winning formula, executed well. What's not to like about that? The Brothers Quillo may bring a world of coffee making (and drinking) experience to this spot, but it's all Louisville, if you ask me (but what would I know about that). It's a great Baxter Avenue landmark for the new city. Sit back, sip that espresso, switch to macchiato, then finish with a pour-over. A wining combination if ever there were one. Let it sink in for a while, slow it down a bit, and look for the owls. They are everywhere.

    Not sure what it is about this place, it's just never been good for me. They have the ambiance down, but not the coffee. Both the coffee and espresso taste like the beans are very under-roasted to me. However I realize that a good portion of what makes a coffee shop good is the atmosphere, and they definitely have this down. The music is good, it's usually quiet, and the staff is very friendly. If I need a quiet place to talk or do homework Quills isn't a bad choice, but if I want good coffee drinks then it's just about last on the list.

    Just arrived in Louisville for a show we're playing tonight and happily stumbled upon this cafe. I asked the barista about the various beans they serve, and brewing methods, and received a thorough, courteous, and well-informed answer, along with an offer to sample their drip blend. I went with a pour over of their Columbian beans and was quite impressed. The music is also chill and the vibe clean and friendly. I'd highly recommend this place.

    From Yelp this appears to be the flagship of a Louisville coffeeshop chain. It's on a relatively hip restaurant row in the Original Highlands neighborhood. The ambiance is good. It's just hipster enough to be cool, but it's clean and relatively quiet, making it work and conversation friendly. They were evidently awaiting a fresh batch of bad art for display. See Portlandia. It may have been an off day, but the cold brew coffee was bad. I think bitter was the word for it, though it wasn't especially dark. Also, the pastry selection was pitiful. The few items they had, like health bars and sad looking brownies, were ominously wrapped in plastic.

    Favorite coffee shop ever. And that is really saying something. This isn't a place to just order "a coffee"-- you have to know what method of brew you'd prefer. For espresso drinks, they list actual measurements of espresso-to-milk/foam. I'm sure the menu is daunting to some, but the guys are friendly enough to talk about brewing methods, and if you're too shy they also have a ton of info up on the chalkboard in the back. M started with a cold brew iced coffee-- perfectly smooth... and I had a skim latte-- probably one of the best I've ever had. The latte art was flawless as well... I did my best to not ruin it until the very end. We lived here for the entire day and ended up also trying the yummy cheddar scones and yet another skim latte. They made an announcement a few minutes before 4 for anyone parked on Baxter to move their car, which was a great reminder because we definitely would have forgotten. We were both sad to move out at the end of the day. If we could have stayed overnight, we would have.

    I love coffee shops. It is an addiction of mine because I love coffee and I like to work while drinking it. I've gone to Quills many times because it's in a good location, they have a meeting room, and I like expanding my coffee shop options. The only reason I don't love Quills is because of thier coffee- lattes and cappacinos are good, but their standard black coffee is horrible. Ive tried all of their locations multiple times and their coffee just sucks. So I recomend thier fancy drinks, but black coffee drinkers stay away.

    So far, Quills Coffee is my favorite coffee shop in Louisville. It is a great place to hang out with friends or simply to study. The baristas are very well trained; always quick to help and always have pleasant attitudes. I've heard that it is somewhat difficult to get a job as a barista here, and that all of them are very well trained and experienced. During my first visit, I told the barista that I wanted to try Chemex brewed coffee and he told me about every coffee and what flavors each one had. I chose the Finca La Bolsa from Guatemala, and was very much pleased. The barista said that as it cooled down that there would be a fruity taste, and he was spot it. Fantastic coffee. While I do love this place, I am surprised at how early they close their doors. Considering the location and the great coffee, it seems that it would be a great idea to stay open later.

    Quills baristas are the masters of latte art. If I go there too often they might make a latte drinker out of me. I peer over at my neighboring coffee shop junkies and see their rosettas holding strong until the bottoms of their cups. Beautiful. But me? I prefer my caffeine in its strongest form, plain old black coffee. Preferably a light roast, again, more caffeine :) Anyway, I don't know if its something about the actual beans or just the slightly pretentious atmosphere of Quills, but something about drinking it just tastes rich and velvety. If 50% of the reason you go to coffee shops is for the snacks like me, you won't be disappointed here. In addition to some sweet pastries that I don't pay attention to in the morning hours, they've usually got TWO options of savory scones, muffins, vegan bars. Yum! I just wish they had some hot food options.

    I visited Louisville for a weekend this past April and my host introduced me to Quills. I somehow made it back three more times the same weekend. They do espresso drinks, french press and pour over coffee. They have lots of seating upstairs and down. Every barista I've ever talked to has been friendly, knowledgable, and eager to answer any questions. My standard order is an americano and theirs is perfect. The crema is velvety and the espresso has a rich, nutty flavor. Do yourself a favor. Skip Starbucks and hit up Quills.

    I was once a certified barista. I love me some good coffee. The espresso is stellar. Regular coffee is French press or hand poured (i.e. coffee beans ground and brewed by the cup to order - so fresh and so clean!). Good selection of hot teas. If you like chai but want coffee, try the cafe miel = espresso, honey, cinnamon, and steamed milk. Baked goods are average. Cellar door chocolates are great. I like the espresso dark chocolate owls. Free wifi, a large variety of seating with lots of outlets. This is a great place to post up for some serious studying.

    If you are aware of the 3rd wave of coffee, you will learn to appreciate what Quills does. Awesome espresso and many cool espresso creations! But if you like your coffee drinks piping hot and beans roasted real dark, you might not like it here. I would say, BEST COFFEE IN TOWN!

    I visited Quills while at a conference at Louisville this weekend. My usual coffee is locally roasted in Cincinnati and I have to say this coffee is equally awesome to what I have at home. The coffee tastes fresh (as in freshly roasted) and its complexity reflects its origin. The baristas were very friendly and knowledgeable (they were able to tell me the components of the espresso). My hot latte was made beautifully and I was quite impressed with the skill of the barista. I took coffee and espresso home with me and will definitely look for this coffee next time I am in Louisville and perhaps will pick some up at Whole Foods in Cincinnati every now and then

    I truly want to hate this place, and every time I pass through the doors every fiber in my being screams to me to start overturning tables and peeing all over the floors, but I simply can't do it. This place makes the best coffee drinks in our city. It also has really nice art on the walls most of the time, which is very rare in coffee joints. Most coffee places in this town have stuff hanging on the walls that looks like it was created by really demented and untalented middle-school students, but not this place. This alone is a great reason for me to go in there because I'm always pleasantly surprised by every new batch of stuff hanging on the walls. The staff is amazingly well-mannered, patient and polite. In fact, they are so lacking in snobbery, nastiness and regular young-person angst that it sometimes feels like I am in some sort of Archie Comics nightmare. So many smiling faces! It gives a hateful and nasty person like me the willies, but you, oh gentle reader will certainly not mind in the least. On to the drinks- which are so good that no other establishment in the entire Metro area can top them. Their lattes and mochas are simply unbelievable, but I warn you that if you want your coffee hot when you get it you need to mention it; the drinks here are served warm and frothy, the temperature so slurp-perfect that it's tempting to bang the whole thing back in one gigantic orgasmic gulp. Nice atmosphere, warm colors, amazingly polite employees and drinks that will make your head spin counter-clockwise. What more do you want, you over-demanding ingrate, you?

    The top coffee shop in Louisville serving one of the three best coffees in Louisville (Sunergos and Argo Sons are the other two). Richly-textured velvety lattes with perfect tulips, hearts, and rosettas on the surface. Coffee beans with multiple layers of flavor. Quirky atmosphere and clientele. A record store in back. Simply an amazing spot, not to be missed when you visit The Ville. Best drink: cafe miele. Want something a bit more distinct? Try a smokehouse espresso (think, What if someone brought together the best of coffee with the best flavors in a beef brisket?) or a red miele (tea-based, milder and more rounded than cafe miele).

    This is definitely one of my favorite coffee joints in town. The crowd is always pretty chill, where if you want to sit and read or work, no one will disturb you, but at the same time if you want to catch up with a friend in a corner on cozy chairs, no one will be offended. I love all the random local art on the wall. And the chalk mural on wall breaking down why it is important to do coffee the slow way. Though not so slow that is is annoying, and man the flavor is worth it. I looove the little vanilla coffee shot (you literally shoot it). Also love the new caramel Apple cider. It is sweet but not too sweet but very flavorful, and perfectly hot. Also nice to sit out on the patio and watch everyone wandering about Baxter.

    Stopped in here to get a drink and go to the bathroom the other and boy was I in for a treat. The barista was really nice and helpful and, most importantly, the drinks were amazing. My friend and I both said it was the best mocha and chai latte we'd ever had! I really liked that it was at a drinkable temperature when served and the creative latte art. Only wish I lived closer.

    When it comes to coffee let's be honest there is not much one can get to overly excited about after all it not something one chews and while doing so savor each bite, but Quill's Miele is where one sips and savors. It is a latte but improved upon with a dose of honey and dash or so of cinnamon resulting in a very tasty and yum yum for the tum tum beverage. Hot or iced it is definitely one of the best brews of coffee my taste buds have encountered. The only drag is I do not know of a place in Chicagoland's western burbs close or far that offers the miele, but that may be a good thing as I could easily consume daily 2 or 3 of this awesome drink

    This is my favorite coffee shop in Louisville. I might have said that about Sunergos, bc it too is very good, but if Quills were right down the street from me as well, then I would pick it every time. The ambience is beautifully minimalistic. Tasteful art, nothing too loud. A well thought out color palette with dark wooden tables and exposed brick and wooden beams. Chill music to keep you relaxed yet intrigued. All ambiance accompanied with a layered floor plan make it a feng shui dream seating everyone at different heights with a pleasant view where ever you're facing. Added bonus, if you sit outside you can enjoy the celtic music from Molly O'sheas across the street during the daytime before they get the dance music bumpin'. On to the coffee. Consistent and delicious, I'm actually enjoying a cup right now. It's thick and full almost chocolatey, no acidity or tummy churning burnt flavor like crappy Heine Bros. I only drink plain ole coffee, no bells whistles or cream, so I can't talk much about their specialty drinks, but as far as the basic cup-o-joe, delish. They give you an option for just a cup, or a bottomless mug for $1 more, which is nice for sitting down and writing yelp reviews for a couple hours :)

    Very cool atmosphere and friendly service. Their drip coffee is very good and the cappuccino was excellent. My girlfriend had the cafe Miele ( honey and cinnamon latte) and really enjoyed it. These people take great care in crafting quality coffee and espresso drinks and their attention to detail shows. Although I've only been once and didn't spend too long in the shop, it seamed to be a great place to hang out.

    After reading all of Quills' rave reviews here on Yelp, I made it a point to grab a cup of coffee while I was in town. I enjoyed the ambiance and the barista I spoke with was very polite. However, my coffee was flat-out gross. I'm not sure whether Quills over-roasted their beans or if their drip coffee had just been sitting around for too long but either way I don't appreciate having to drink burnt coffee. It's a shame I felt that way because the rest of my experience was great. Hopefully this was just a one-off experience. I'll give Quills another try the next time I'm in town, partly because I really, really want to buy one of their amazing t-shirts!

    This place will make coffee for you in more ways than you thought imaginable. (Who knew my friend Alex had a cafe in Louisville.) A great place to grab some coffee and do some mobile computational work. The fact that it's only an alleyway away doesn't hurt for me either. The staff is friendly and very willing to talk coffee with you (and pretty much anything like cool place to bike in Louisville). The only bad thing is they ran out of cold brew by 4pm on Saturday. How dare they.

    Social media is a great marketing tool, and necessary for any business these days. But social media cannot take the place of good old-fashioned customer contact. I have had the same beverage prepared by six different bariste at two different Quills locations. With in-house roasting, and a refined effort, it has been spot on, except for the efforts of one employee at Baxter, who is their best personality and customer connection person I've seen because of his pleasant nature and willingness to greet customers. He actually makes an effort to talk. Ironically, he is over-extracting the espresso in my orders every time. I had four drinks from him, each time questioning why he is missing the mark with his technique when surrounded by a staff of individuals who are getting it right. Each time, I get the friendly make the customer happy thing, but no explanation or engagement about what is going on with his technique. Meanwhile, the coworker who makes the re-do sets a beverage on the pickup counter that is like night and day compared to the mistake. All good. Spot on, I tell them. As a frequent customer since the opening of the location, I had to walk away for over a year before seeing the extraction "philosophy" change from that of a prior review . . . that aside, in this phase, from this employee, I got literally sick after having what became the one and only over-extracted beverage I chose to consume from this nice employee because there was no other employee in sight to make the order. This is a technical problem, a training issue, and involves the volatility curve in espresso extraction where over-extraction produces a visible fault, a "smellable" fault, and a taste fault. This is from a chemical fault - the volatile organic compounds become excessive to the point that even a novice can notice the difference. When over-extracted, the espresso is perfused with these volatile compounds. When the rest of a staff is trained and executing well, any individual having an issue should confer with co-workers, or better yet, management, to work out the problem. If I want "customer is right" without an explanation for undrinkable coffee, then I'll go to Starbucks right down the street and save the $2 in gas it takes to get to Quills. This is a craft coffee industry, and over-extraction was a big issue here two years ago because of the whims of a few egotistical individuals no longer present, and I overheard many people in the local industry agree in discussing how obviously bad the product became. Some shops in the industry hire a barista who creates an ego bubble about their "special technique" or "maximum extractions" or "3-bar extraction pre-infusion espresso", or "Italians come here and say this is the best they've ever had . . ." as if Italians know anything about Third Wave Coffee . . . etc. Those are usually the people who create the bad espresso, yet when confronted, they get defensive and protect their baristatude ego. Not the case at Quills these days, but it was the case in the past. The point is why does this happen? I am reluctant to continue going to Quills, or to bring my friends there because I don't want to have to hand-select a barista every time and go through the talk and explanation and effort just so a young guy trying to do his job doesn't get offended. I can go to other shops who at least attempt consistency among their staff. Particularly an ongoing observation I make at Quills is the lack of management and ownership. During two of these extraction talks with the employee and with his co-worker present as well, I have seen one owner standing at the coffee bar just five feet away, and then watch him walk away upstairs or somewhere in the back. Social media is great, but it is not a substitute for face-to-face customer interaction and problem solving. Ridiculous, really, when a customer is engaging employees about their technical errors to simply stand there, or walk off. What a blown opportunity! It isn't about eavesdropping, it's about noticing and being effective by nature instead of putting all the energy into a blog or twitter, etc. Who cares? Get it right face to face or lose customers. Meanwhile, people in the coffee community take notice as consumers willing to support other businesses discuss such a problem among themselves, both at competitor shops and in general. If Lewisvul had a better coffee scene, and better alternatives, I would never have bothered going back to Quills because of the above issues. There can be many reasons for over-extraction, but when an employee refuses to engage in a conversation about those reasons, there is present either a barista ego bubble, or just a lack of desire to learn properly. Either one bothers customers, let's say minimally those who know the techniques and standards. Side to side, any customer can tell the difference immediately between correct extraction and improper extraction. (Owner comment below is from 2 years ago, not now)

    There is a tiny drink, I forget the name, but it is fantastic. There is a cold layer, a layer of what I think is vanilla flavour, and then the hot espresso on top. You drink it like a shot, and all the temperatures and tastes all meld together in your mouth. It is fascinatingly delicious and unique. Sadly that is not enough caffeine for me, so I also ordered a bottomless cup of regular coffee. The regular coffee is just not to my liking at all. It tasted weak, watery and too earthy. But that's OK! They have such a comprehensive menu of options I plan on coming back and trying everything until I have found "my" drink. Interior is very comfy and while the guys behind the counter have a bit of a coffee snob attitude (well, lets face it, so do I) they are very informative about their products. Plus they are a fan of my favourite roaster, Metropolis in Chicago, that I cant HELP but like these guys. Yay for coffee snobs! :)

    I spend most mornings at Quills in New Albany, but one particular day, I had an early morning appointment in Louisville and decided to stop by Quills on Baxter. I really like this place. The atmosphere is pleasant, and it has a lovely little record store in the back. I saw a bunch of familiar faces - several friends apparently frequent this location - so that was a nice surprise. I always get the tea service and usually a scone; I make a lunch out of the yogurt parfaits several days a week. What a pleasant place, and what great people who run this local group of coffee shops. Please don't ever change.

    Great coffee, staff is very knowledgeable. This is a 3rd wave coffee shop: manual brews, good espresso, latte art, hipster friendly. They re-opened a few years ago on Baxter, and have since opened a few more shops in Kentuckiana. The one on Baxter is always packed on a Saturday.

    I have a feeling I'll be abusing the free wi-fi once the fall semester gets underway. Having a locally-owned coffee shop right around the corner is great. I like to keep things local when possible, and it's usually cheaper. Starbucks is just down the street, but I haven't been since discovering Quills. Not only is it cheaper, but the espresso is deliiiicious. I'm fairly simple with my coffee beverages: iced Americano + vanilla, no need for cream or sugar. They have a case full of tasty-looking baked goods, though I have yet to nom. Bonus: vegan selections! I myself am not vegan, though I have a friend coming to visit soon who is and so far, this is the only place I know to take her where she can eat. Hope she likes muffins.

    I don't get over here too often, as it's a few neighborhoods over from mine, but the environment is nice. Large space, good tables & chairs with plenty of outlets around for weak laptop batteries. The coffee is good, and prices very reasonable.

    Yep. The best coffee in town. Need to write a novel today? Try the pour-over coffee. Weird how everyone there seems to always be lined up on the walls and on computers, but it is a good place to get work done... ignore that, do it for the coffee. Also, see if they have the fresh choc chip cookies from Please and Thank you- those are AMAZING. but not if they're stale or squashed. You've been warned...

    The coffee here is so good-may be the best coffee I have ever had, it is just amazing. I highly suggest the cafe miele-I wish someone could make this concoction in DC as well as they did here-actually I know of no where else that makes this drink! Their specialty drinks also looked great-it was good enough to stop by twice in one week when we were in town. The atmosphere inside the place is also nice. They also have some great looking baked goods which I didn't get to try on either visit but their sweet and savory scones and cookies and pastries and breads all looked tempting. Yum.

    Awesome quality and great ambiance. Several cool items on the menu that are unique to quills. Be aware that there is a minimum your required to spend before they will accept a credit or debit card. I wanted a small coffee and had to borrow the cash from a friend because it was not expensive enough for them to take the card. This would have been a 5 star review if not for this inconvenience.

    This is the first coffee house I've tried since moving to Louisville from Los Angeles. I love the atmosphere of this place. I had a latte (which was great) and a cookie (pretty decent). Great selection of music while I was there as well. I'll definitely be back.

    Really super nice employees. I'd want to work here if I lived in Louisville. A few of the guys talked to me about what bars to check out, what streets/neighborhoods to wander - really helpful choices. Had a memorable Americano to keep the exploring going and was very pleased. Wonderful feeling after leaving this place, and seems a peaceful place to get work done in the daytime. Look forward to checking out some live music here in the future.

    Great place to chill with a cup or get on your laptop and Yelp. The baristas are quite talented and passionate. I had the black and white. Espresso coffee with chocolate and white chocolate syrup. Just a bit too sweet for my taste but hell, I knew what it was when I ordered it. Wasn't overly crowded when I was there.

    Excellent coffee and tea. Great interior, work space and service. Way too crowded 75% of the time. They did alot of pain staking work to make the place restored, which I more then comend them. Also they have amazing chocolate made by a former worker.

    The atmosphere is fabulous. My friends loved their coffee drinks with the designs in the foam. The milk in my latte was steamed too long losing its flavor somewhat. But in sum, it was a very enjoyable night. The live entertainment was fun.

    Best coffee joint in town!! Hands down! If you are a coffee enthusiast you have to try the coffee that is provided at Quills on Baxter Ave. (I have not been a patron of any other location but I would venture to guess that they carry the same selections.) The coffee that they carry, both for immediate consumption as well as for carry out to brew at home is among the best blend and roast I have experienced in Louisville to date. My favorite is the Burundi roast. This bean has hints of floral tones and a grapefruit note that is clear from the first sip. Being a grapefruit lover, I naturally gravitated to this blend. It is amazing!! The other blends/roasts are of equal quality and tastiness, so you can never go wrong with getting a bottom-less cup and nestling in for a cozy morning or afternoon at this place. The interior is what would be expected of any inviting neighborhood coffee shop. It has a rich feel about it due to their use and emphasis of the wood that appears to be original to the space. A nice line up of wooded pews along one wall that features a revolving display of local art; which is always a plus in my book - local companies supporting local artists. Community at its best. There is also plenty of seating around the rest of the place and provides an intimate feel. I do know there is an upstairs to the place, but a sign stating "CLOSED" is located on the stairs leading upward; which has always peaked my curiosity. Perhaps someday I will either ask, or get to venture up for a gander. Appropriately the establishment has taken on the Owl as a mascot of sorts as can be described on their chalk board on the back wall and be seen by various owl statues, figures, pictures and other knick-knacks located around the place. I know from personal experience that they are appreciative to have new additions to their ever growing collection of mascots. If you are coming here to work or to study there are an ample amount of electrical outlets to plug in your laptop or cell phone for charging. This is always appreciated and is a sign of a shop that encourages you to sit and stay awhile, much unlike a lot of the chain stores that are less "comfy-cozy" and tend to treat their patrons like cattle. The staff has always been very pleasant and accommodating. They pay attention to details and if you tend to frequent the place often and are a creature of habit, like myself, they know what you want when you walk in. Another sign of good customer service and staffing. Along the lines of snack foods and breakfast items they have a selection of pastries, muffins, and breads that will cure any grumbling tummy, however, I suggest you go for the bowl of granola. They top this canning jar that is already filled half way up with granola with yogurt, honey and dried cranberries. Just stir and enjoy! It always hits the morning spot! And since they do not serve lunch sandwiches or the likes, they made a great recommendation for a pizza place across the street and said I could bring it back in to eat. Talk about keeping your customers happy! Once again an example of the top notch service and business model mentality that can be expected from Quills. While I do go to other locally owned, non franchised coffee shops in the neighborhood, I consider Quills my Go-To place for my coffee and granola fix. It's the friendly "Cheers"-esk establishment that makes me feel a part of the neighborhood and community and that is another reason why I return here time and time again. That and (ultimately) the superb selection of coffee and brew methods offered here. This place knows a good cup of coffee, so check it out!

    I'll keep this short and concise. Quills is one of the best locally owned and operated coffee shops in Louisville. Located in the highlands, notorious for amazing food, shopping and culture - Quills has what every coffee lover is looking for. Friendly and knowledgeable baristas, quality coffee/espresso and ample space to relax and be productive anytime of day. There's not much more you can ask for.

    So, I've been going to Quills for a while now, and I've seen it grow. They now do pour-over drip coffee, which is good. They have also changed up the pastries again, which is good. The Please and Thank You pastries are great, even the vegan ones. I usually avoid vegan desserts, but the carrot bread (basically like a slice of carrot cake) is yum. The chocolate chip cookies are much improved. The espresso drinks are still pretty inconsistent. Sometimes there is no foam in my drink when I ask for foam, sometimes it is perfect. The shots are typically pretty good though. This place is a hangout for TONS of young Christian people... we're talking Bibles being read at every table sometimes. This can be kinda strange for me, not that there is anything wrong with it, but it's something that really stands out.
