    First time eating here and was blown away... To begin, we were greeted by employees with smiles. They were actually in a good mood. That's rare these days. Gave us some suggestions since we hadn't eaten there before. My wife had an Alfredo's Alfredo and I had the Smokin BBQ. The Alfredo was good. Don't get me wrong, but that Smokin BBQ. Dude. Seriously some of my favorite pizza in Louisville. I mean, I shared some with my wife because we are married and all but I was stingy and didn't let her have too much. The crust is awesome. It's thin but not too thin. Has the right amount of crunch. Very flavorful. The place was very clean, too. No dirty tables just sitting around which is always a plus. They came around and asked how the food was. Nice to have friendly conversation when you aren't expecting it. Will definitely be back.

    Great place, to pop in, for a quick pizza. And, I love pizza. Lots of options, from white, wheat, and even gluten free crusts. Lots of cheeses and veggies and meats, to choose from, and even different sauce options. I would have been here all the time, when my kids were young. The crust was good, much like flatbread. Our pizza got a little soggy, which I do not care for. It was messy, which I am OK with, and I did pick the toppings. My husband and I shared one pizza and one salad, and each had a drink. It was more than enough food, for us. I teenage boy would probably want two pizzas, but most people could easily share. I am not sure, if they have kid sizes, but 3 small children could share one, I would think. I like the concept and will probably go back.

    Great concept! Now can someone please show these people how to make a pizza and how to take care of their customers? It really seems like this place is being operated by a totally clueless team with no leadership. I suggest you wait a few months before trying pieology to give them time to get their s--- together.

    We have been meaning to try out Pieology for a while now. We finally got a chance to go after enjoying a movie. Pieology is located in the strip plaza on Hurstbourne next to the Melting Pot. I was expecting something like Blaze on Shelbyville Rd. It was a very similar concept. I liked the options for pizza crusts- there was regular and whole wheat. I went with whole wheat. I ordered the Alfredo's Alfredo, but it turned into a custom pizza instead. There are a wide variety of options of cheese, veggies, and meat. I just wish there had been a copy of the menu above the counter, so I could use it as a reference since I almost forgot what I wanted to get by the time we got to the counter. The service was good, but definitely not as personalized as Blaze. My pizza was very tasty, and the crust was delicious. The atmosphere was good, and I really enjoyed the quote wall when you first come in. I would recommend if you go in the evenings to be aware, the location gets very hot with the sun beaming in through the windows and an a/c system that isn't adequate for the space. The fans placed in the middle of the place helped. All in all, good pizza, but I think I prefer Blaze.

    Imagine if Subway and Panera had a baby ... that was pizza. That seems to be Pieology. You enter the restaurant and go through a line where you tell the Pieology employee exactly what you want on your 11.5" pizza, and he/she puts it together right in front of you. They have some "Pieologist's Favorites," if you're not up for creating a pizza concept from scratch. I ended up choosing one of these for my first visit -- Alfredo's Alfredo, which included olive oil, alfredo sauce, garlic, mushrooms, artichokes and grape tomatoes. I punched it up a bit with some bacon as well. There are so many toppings to choose from that you could really get creative with it. You move down the line from sauce to toppings. And then, the pizza is put in the oven while you pay. You can also add some last minute flavors to it with an "After Bake" sauce, like BBQ. And at least on my first visit, my pizza was brought to me within just a few minutes of sitting down and waiting for my pie -- just long enough really for me to get my soda and find a table. And how did it taste? I was impressed. I liked that the crust held its own and actually allowed me to hold the slices, as opposed to eat them with a fork and knife. It was sturdy without being too thick. On the cheese-to-sauce ratio, the cheese definitely won out, which is how I like it. I know that at some other pizza establishments, sauce is king. Really, though, I felt like Pieology did not skimp in either of these two areas. And as far as this toppings combination, it was a nice blend of strong flavors, from the garlic to the artichokes and the tomatoes. The manager came around a couple times to each of the customers to make sure everyone was happy. This may be due to the restaurant just opening, but it was nice nonetheless. Pieology also has a gluten-free crust option, which is awesome considering I've heard some of my GF compatriots lament the fact that they've had to largely give up pizza with their dietary restriction. Really, a quick bite that isn't boring? I'm a fan.

    Pieology. Another go through the line & create your item place... but with pizza! It's hard not to compare this place to a few other create your own pizza places in town(my reviews of those places have yet to be posted), but I'll try. The immediate difference here when walking in is how nice the place is. It's definitely a step up from your typical fast food spot. The half in/half out outside patio is a very nice addition. I was surprised that there weren't more people sitting in that room. It will be perfect this summer! The restaurant also seemed larger than other similar businesses. No wait at all. I've skipped places like this because of long lines. On to the pizza. You can create your own with unlimited toppings or choose one of their signature options. I decided to create my own pizza this time. They weren't shy with the ingredients at all. They even asked me if I needed more cheese! A+! I loaded my pizza up. Regular crust, red sauce, mozzarella, feta, pepperoni, red onions, green peppers, tomatoes, pineapple, cilantro, & banana peppers. You can also add an "After Bake"/Flavor Blast. (More on this later) Unlike other food places like this, you receive a number for your table & they bring your pizza to you. Nice touch! It tasted great! Thin crust is usually a toss-up on how solid it will be. In this case, most of my ingredients stayed on while eating. Also crunchy without being too crunchy. The ingredients I chose were also evenly distributed to where 1 flavor didn't overpower another. It also left me feeling more satisfied compared to other create your own pizza places. I'll definitely visit in the future! Side notes: - It is loud. Most of the employees speak loud while some are soft spoken. That's one reason that I'm not sure about the "After Bake" option. I asked about it, but the combination of restaurant loudness & soft spoken employee... it just sounded like white noise. Instead of asking again, I decided to wait until next time. - All the employees were great including the manager. He was walking around to make sure customers were happy. That might be because it's a new place. That happens from time to time. At this location, the manager checked on people & kept moving along. He didn't hover which is fantastic! I've been to a few places where the manager wants to chat which is fine, but if I'm mid-slice... let me finish. - Like many other places like this... the test of quality will come with time. I think these places thrive with a full staff. If they try to cut down on the number of employees eventually, I think that will hurt places like this. - I'm so glad the pineapples here tasted great. In my opinion, pineapple is the essential pizza ingredient for pizza. I was let down by other establishments when their pineapple just didn't taste right.

    I had a great first experience! We ordered the BBQ chicken pizza and did a custom pizza, both in white crust. Custom pizza has garlic butter and herb sauce and marinara as a base, spinach, red onion, sausage, feta, Parmesan, and cherry tomatoes. Pizza came out hot and fresh; didn't have to wait long. 2 pizzas (about 11inches in diameter), a small salad, and 2 drinks was $25. I found the staff to be very friendly and the place to be clean, although the music was turned up very loud making it hard to hear. I'll go back!

    Decided to visit Pieology last night. My wife and I like Blaze and wanted to see how Pieology compared. First impression walking in last night at around 7 is where is everyone. When we visit Blaze, the place is pretty active. Pieology was like a ghost town. We went up and ordered our pizza. One thing Pieology has that Blaze doesn't is a whole wheat crust. So we ordered the pizza on that crust. They system is pretty much the same. Toppings were somewhat comparable, but Blaze has a lot more. The pizzas came out just as fast as at Blaze. But there was something about the taste. The red sauce at Pieology was kinda "meh". It was red and wet, but lacked the flavor profile that other red sauces have. The whole what crust added another flavor to the mix, and I think it overpowered some of the other flavors. Overall, the pizza was OK. But not something that I think we'll go back for. I prefer the flavor profile at Blaze. Together with toppings that Pieology doesn't have, I think we're going back to our favorite. We may have to stand in line just a bit longer, but we think it's worth it.

    This was a pretty cool little place. I liked the atmosphere, their little open patio was pretty cool and the line moved pretty fast. Unlike Blaze I feel like we were encouraged to make our own pizzas, the kustom option. They do have their specials but they're only listed on a menu placed mid line so we just picked our own toppings. They have a good section of toppings and sauces, and they don't go skimpy on the portions, which was great. It was really quick, and the staff bought out the pizza to the table instead of waiting to hear your name called. The pizza was decent, I wasn't a huge fan of the crust, I got the white crust, maybe their wheat would have more flavor. That being said it was a good experience and I might go back to try some of their other toppings, like their buffalo chicken pizza.

    Just left and didn't eat my pizza. I ordered the gluten free crust Margarita style. It was very bland. Zero flavor. I chose to try here since they offered the gluten free crust. I guess it was neither good nor bad since it had no flavor. The other person in my party had the regular crust and seemed to like it just fine. The staff behind the counter could also use some people skill training. They were brash and seemed as though we were annoying them.

    I have been anticipating the opening of this restaurant and when I heard it was finally open, I immediately went to try it out. Pieology allows you to get creative with your food in that you can create your own pizza or, if that isn't your style, you can choose one of the pizzas from the favorites menu. All of the pizzas are made in front of you to ensure that you get everything you want on your pizza and nothing you don't want. The seating is very open with an outdoor seating option, which is great choice for a nice spring day. There are many great drink options including water, soda, and a tea machine that allows you to choose between 4 different tea options. The pizza is cooked to perfection and is very flavorful. The staff members are both friendly and attentive to their customers needs, always making sure that your food is good and that you have everything you need. Overall, Pieology is a fantastic pizza restaurant and if you are looking for something delicious to eat then I would highly recommend trying it out.

    Food is great, love the option to make your own pizza. Customer service is lacking past the line. After being asked if everything was OK when we received the pizza never saw anyone else in the dinning room. Love the food just wish I saw more of the manager.

    Wonderful pizza. Create your own pizza, choose your sauce, type of crust, cheese and topics. They cook it in an oven in front of you then deliver it to your table. Service is as good as the food. Highly recommend.

    Before I reviewed Pieology, I wanted to make sure I tried Blaze so I could make a more accurate judgement. The verdict is in and I am in favor of Blaze, although Pieology is delicious in its own right. I would say that Pieology has better crust, as well as customer service/attention, and it is also cheaper (by about 50 cents). I ordered a pizza and got ricotta on it and they didn't put a lot on it but I probably should have specified how much I wanted. The pizza overall was delicious and I will definitely be returning.

    Had a great lunch here! The concept is awesome! My husband can get what he wants and I can get what I want for $7.50 a pizza for unlimited toppings! Will definitely go back!

    Fantastic place to eat. Great pizza with tons of options and excellent flavor. Think Subway, but for gourmet pizza- choose everything you want in line and get your pizza brought to your table. Great service, clean environment, reasonable prices. Will definitely visit again!

    This is a lot like Blaze but with a smaller selection of toppings. It's really hard to say which one is better. My wife prefers Blaze because she likes the crispier thin crust. I had a grilled chicken pizza with hot sauce - it was really good!

    I've been pretty excited about trying Pieology since I heard of it opening. Unfortunately, I was pretty disappointed with my first visit. I must say I really like the environment here. It is a very open concept and has a pretty neat wall of quotes. When I first got to the counter, it seemed as if the girl working was very unsure of what she was doing. Most of the employees were very young and it appeared as if it was most of their first jobs. They all seemed pretty nervous. When I received my personal custom pizza it was still cold. Most of the toppings weren't cooked thoroughly at all. The cheese wasn't melted in many places. My fiance loved his pizza and I could tell others around us enjoyed theirs as well. It must have just been mine. The management was very nice and attentive when I informed them of what I had experienced. I will probably give them a second chance. At this point though, I definitely prefer Blaze!

    I'm not a big fan of pizza, but I am a big fan of a bargain so when we got the BOGO coupon in the mail, I kept it to consider. We were nearby today and needed lunch so we stopped by. I can't judge the inside because my husband got carry-out, but the pizza was delicious. My gripe with pizza is usually the crust. I'm not a fan. Pieology's crust was so thin you could practically see through it. Perfect! He got two specialty pizzas instead of the make-your-own option and they were both delicious. I usually just eat the toppings and the cheese, but the crust, being so thin, disappeared along with the rest of it. If it has to be pizza, this is it!

    This pizza place is pretty decent. It's basically a Chipotle (or subway) for pizza. You pick a crust, a sauce, a type of cheese, and then whatever toppings you want. Unlimited toppings are included, however, I will add that they go easy on the toppings even if you tell them to pile them on (like I only got pepperoni & green pepper & it was sparse even though I asked the girl for extra). Very cute date place, especially since there is a book store & Cold Stone Creamery right next door (walking distance).

    I figured I would give this place a shot since I enjoy the concept and its competitor Blaze. I tried a build your own pizza and just wasn't very impressed. You can tell they have good quality toppings. The issue I had was that my pizza was undercooked. I didn't realize till I got home to eat. I might try them again but then again I could just go to Blaze like I usually do.

    We were very disappointed by this restaurant. The manager told us they had been open for 7 weeks but it seemed more like the first week. We placed our orders which was 3 custom pizzas. The manager was running the register and yelling instructions to the workers that were running the line. My pizza was the first one to go in the oven, a simple 3 ingredient pizza. We waited over 10 minutes then they brought my husband's pizza out which was burnt. Then a few minutes later my son's was brought to the table also a little overcooked. I sat there for five more minutes and still no pizza. My husband went to the register to inquire and the manager never apologized or anything. They found my pizza which was ice cold. We weren't the only ones in the line with the wrong or no pizza. I think the concept is great but I'll go to Blaze for a great delivery on the product.

    It's like a subway but for pizza and it was quite good. I love the concept. The toppings were plentiful and the pizza is huge for one person. With take out the pizza is 7.95 I believe which is more than fair for what you get. I loved the decor with all the quotes on the wall. This will be my go to spot for pizza.
