My job takes me to Pocatello fairly regularly and when I am here I usually grab lunch at Costa Vida once or twice. I love this place; my only real issue with them is that they are closed on Sundays. Costa Vida is by far the best burrito-bar style restaurant I have ever eaten at. Chipotle is boring compared to Costa Vida. Cafe Rio, which is similar in many ways, just isn't nearly as good or as high in quality. The best thing on the menu by far is their sweet pork. If you haven't tried Costa Vida's sweet pork, then you haven't truly experienced Costa Vida! I used to always order their smothered burrito, but recently I have been hooked on their enchiladas. Both items are delicious and very similar (tortilla, rice, beans, cheese, meat & sauce with lettuce and pico de gallo on the side) but I find that I enjoy the different flavors of their sweet pork and cilantro lime rice more when I eat the enchiladas as the rice and beans are on the side instead of being mixed into the burrito. This weekend, on the way home from camping in Idaho, we stopped in Pocatello for lunch. We were craving Tex-Mex and we both agreed that we had a higher opinion of Costa Vida than Cafe Rio, so we headed to Costa Vida. When we got there, we found that the Pocatello Costa Vida was not open on Sunday, so we had lunch at the Cafe Rio. I was very disappointed with Cafe Rio's food; while it was similar to Costa Vida, it just wasn't nearly as good. Next time I am in Pocatello, hopefully it won't be on a Sunday so I can eat at Costa Vida.

Personally I really like costa vida! Anything with the sweet pork is really good. It's very similar to cafe rio, but I think that Costa Vida has better rice. The salads are great and they give more meat than cafe rio. Prices are reasonable and it's super quick!

Excellent choice. It's like Chipolte and Cafe Rio but I think better. The chicken was very moist and the sweet pork was Amazing!!! The hand made fresh tortillas tasted better than the other two places. The prices were very reasonable. Definitely go there again.

This place is awesome!! I am from way out of town & don't have this chain back in Oregon so I yelped it. Was a little skeptical from other reviews but it was a wonderful experience! Super delicious and fresh for "fast food." I had a chicken burrito with mango sauce. Yum!! So many options for the whole family at reasonable prices. Very unique, delicious, & fresh! Atmosphere was clean & relaxing. Easy access & parking for trailers. Would definitely go here again!

Love this place. Food is delicious, place is always clean, employees are amazingly nice, I am impressed they are always working, always cleaning. For "fast" Mexican food I love it. The sweet pork...(anything) is to die for.

I like Costa Vida. It's a good fresh alternative in fast food. Chicken taco salads, YUM! Also dig the fish tacos, with lime. I eat at the one in Bountiful, UT, the one in Pocatello was just as good. I was happy to see the consistency, sometimes chains give the familiar menu when your adventurous side is weary!

I go to Costa Vida a lot. Love their food. It's maybe not the most traditional Mexican I've ever had. But it's very fresh. They make everything including their beans. portions are generous and their rewards card helps save you some $, which is nice. Love their chicken nachos or chicken tacos. Also enjoy their fresh tortillas. Great place to eat . My only complaint is the music is a bit loud, so it's kinda hard to cary on a conversation.

I've eaten at Costa Vida twice now, and while I really want to like it due to its proximity to Costco and clean, modern atmosphere, the food just isn't that good. Between my wife and I in the two visits, we've tried 4 dishes. My favorite of these was the shrimp tacos, which included nicely cooked shrimp and were topped with a nice pineapple salsa. Even though this dish was tasty, the experience was ruined by tortillas that completely disintegrated before I even attempted to pick up the taco. The other 3 dishes were lacking in flavor and we're not exactly bad, but I could help but wish I was eating either at the now-closed Bajio or one of the fine authentic Mexican joints scattered throughout the area.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
