    Amazing tacos all around. Chicken, steak, shrimp & fish are all great. Cabbage replaces lettuce with a creamy white sauce & choice of salsa. Cajun seasoning mixed with the hot salsa is HOT & I'm from the south so I can handle hot!! Grab a PBR on tap for $1.50. Service is impeccable. Enjoyed going later in the day & our purveyors spent some time chatting with us. Local spot that makes you wanna come back again & again.....

    Both my boyfriend and I got the garlic grilled shrimp burrito. I like how they cook the shrimp right there on the skillet made to order. The girl that made my burrito was nice. They have flavored sour cream sauce that was a nice delicious touch. So we really enjoyed our burrito while eating it for dinner. However, the next morning we both had stomach aches and rushed to the bathroom. Definitely caused by our burritos. It tasted good going in, but not coming out. So...I dunno. Maybe our shrimp wasn't cooked all the way? I'm kind of torn because our burritos did taste good but the fact it made was sick is unfortunate.

    Its good if you are craving some tacos or burritos. The multiple chefs are friendly and helpful with suggestions. The food is good not fantastic. Breaded fish is bland but you can spice it up with hot sauce. Seemed pretty hygielinic, which is a consideration when planning to do outdoor activities all day. Large servings, but line moves slow.

    Good cross between Chipotle and Qdoba, but one in wish offers more of a variety of choices, including: fish, shrimp, chili relleno. Also a great selection of tortilla's, and a few veggie options. Great queso as well.

    After snowboarding all day, we were starving to death. We decided to go to Chimayo because the reviews were great, and the price was really good as a place in summit county. We were so glad we chose Chimayo. Their Fish taco is amazing!! They fry them right in front of you. The tartar sauce on top complements the fish so well. They give you 3, but I was stuffed with 2. My husband loved their burrito, too. We will definitely come back next season!

    I see my son already Yelped this place. I'm giving it an extra star because I picked up the food and the service at the establishment was great. The place was bustling. We had a busy day after a cross-country move. We saw the great reviews on Yelp and decided to place an order to go. There were six of us and they messed up most the orders. I had the ono tacos and ordered them garlic style. I got cajun and they were cooked to death. So dry! I put yogurt on them, but still didn't save them. No one enjoyed their meal and there were other complaints of the food being cooked to the point of being dry. Maybe we hit it on an off night, but we wont' be back. Too bad.

    This is a fast-casual burrito and taco place (kind of like Chipotle, but with more and better choices). You won't find better fish tacos anywhere in the mountains... or in the whole state for that matter. There isn't a lot of seating, but the staff are always friendly and quick to get you through the line.

    For what ever reason the local press raves about this place. Me...not so much. The fish tacos are dry & the fish quantity could be improved. I am not sure what I expected, but it's basically Qdoba style with servers that could use more experience and probably less dank. (And yes Heather, I have worked in the service industry. I'll skip the emoticon.) All in all the experience left me flat. There are plenty of other places to eat in Summit County, though not so many close to my house in Dillon.

    The Baja fish tacos are worthy of all the reviews - the fish is cooked per order so expect to wait a few minutes. The fresh salsa, cilantro, and jalapenos are awesome.

    Chipotle like. Came after 7:00, the food is good. I Had shrimp burrito. My wife had fish tacos. Service was ok. it cost $35, but for a mountain town, prices are what you'd expect.

    Tacos are not legit. Thank god they serve beer. You need the beer to mask the tacos. I had the beef plus the famous Baja. The Baja had the right ingredients just a bit stale. The grill was frightening. They must of had an inch of sludge scraped to the back. My friend got the grilled fish. There was maybe 2oz of fish between his three tacos. And lastly .... I ordered the BEEF tacos. Don't put chicken on my tacos then tell me "you said chicken". Want to know how I know I didn't say chicken? Because I NEVER order chicken tacos homeboy. P. S. You should have fresh white chopped onions with cilantro mixed in. This is common taco knowledge 101.

    This place is incredibly cold inside. All patrons are wearing their coats. Now I'm not normally one to complain about the cold. I ski when it's subzero out, frequently skip a coat in the winter, etc. The real problem is your food gets cold fast. If I wanted cold food I would have gotten froyo. The food station is very very messy. Food scraps and drippings cover nearly everything. Can't be sanitary. Staff seems disorganized and unconcerned with quality service. Aside from the food getting cold fast it was good.

    Fish tacos with corn salsa is awesome. Shrimp tacos good too. Service a little lacking as we have a child that is gluten free and the gluten free menu says French fries and corn chips are two items gluten free. I ordered fries and they said they are fried in same oil as everything else. When I told them their menu was then incorrect an employee said "well most people that say they are gluten free are just on a diet anyways." Um no....

    Was looking for a place that wouldn't break the bank but would satisfy. Yelp directed me here, and glad it did! I ordered the Baja shrimp tacos and they did not disappoint. I also had the strawberry marg... Not bad for $4. The staff was friendly and overall comfortable environment. I'll be back, and would love to support the local business!

    Perfect post skiing/riding lunch. An entire Yelp star added for yummy food in a resort town (usually hard to find). The nachos are kickin. The salsas are fresh. The burritos are fully-loaded. The fish burrito is kickin'.

    The shrimp tacos were incredible, would be 5 stars but the service is terrible. The burrito/taco assemblers are rude and incompetent. My order was messed up multiple times because of the disorganization but the leprechaun behind the counter acted like it was my fault.

    Really good food all around. Particularly tasty burritos. Would recommend getting the green chile. Unfortunately some of the staff seem to act as if the customers are just an inconvenience. In addition to the sometimes moody staff, the burrito sizes can be quite inconsistent. Some of the staff really hook it up, others not so much. All in all really good food but maybe not worth the risk of bad service.

    My husband and I both ordered one of each chicken, beef, and carnitas tacos. Out of those three, I enjoyed the beef the most. Overall, I thought they were a little bland. I had the mild corn salsa, so I asked for some of the pico and that livened them up a little bit. I didn't like that the crema was extra. If I went back, I think I would spend the extra couple bucks and get the shrimp tacos. I wish they all came with chips and salsa. I didn't feel like it was a great deal.

    Very disappointing. We had "best" fish tacos and a burrito. The fish is deep fried, not grilled. The sauce and the "salsa" was just ok, but they're the worst fish tacos I've ever had, by far. The burrito was average at best, but the portion was big. I'd much rather go to the chain Mexican grill down the street in Silverthorne. The cook was not that friendly when we asked him a question about the tacos, but they seem to be friendly, nice guys otherwise, judging by their interaction with other customers.

    I will never go back to this place again... I basically got harassed by some douche working there for asking for a side of sour cream because I guess I thought their white sauce wasn't "good" enough. Also, I assumed you could get a refill from the soda fountain that is right by where you sit.. But when I filled it up I heard some bullshit smirks from the same guy. When I tried to apologize and ask if it was wrong to do that he just wouldn't look at me and ignored it like a little girl. Sucks because the food was pretty good but the people working there can suck one.

    CHIMAYO ROCKS! Nothing better than shredding and stopping in for chipotle style mexican. I say style because overall this place is superior. Green chili and queso are just some of the upgrades over its fast food chain cousin. Prices are agreeable for being in/near two ski towns. If you just ripped the backcountry do yourself and your stomach a favor and grab some chimayo.

    Have been eating here for years, always consistently good food and friendly service. Everything tastes SO much better than Chipotle or Qdoba, the meat doesn't taste burned, and they have great refried beans, instead of just black or pinto. Highly recommend! Support a local business!

    We were here a year ago and was sadly disappointed. There was so much hype regarding their fish tacos, but they were a flop. This stop was so much better! We had a young man (don't recall his name) suggest his favorite toppings for our fish tacos and he nailed it. Glad we decided to give them another shot! Baja fish tacos are great!

    If I wanted punk attitude from teenagers, I would have just gone home for dinner. (Ok, for the record, I am neither a father, nor have any teenagers in my house). But that's not stretching the truth on my opinion of Chimayo. Burritos were not terrible, but I'd rather go to Chipotle.

    This place is almost exactly like Chipotle, but with the addition of fish and shrimp options, and it is locally owned. If you like Chipotle, give this place a try. The quality is very similar. And it's better, IMHO, to support local places when possible. I am rating this place for what it is. Not comparing it to real Mexican food (which it isn't), or to quasi-real Mexican food, or to any sort of fine dining standard. For what it is, it is decent. We likely will return again if we're in the area and want some fast-ish, freshly-prepared food. The carnitas burrito was very nice. The meat was well-cooked and seasoned, and the rest of the filling ingredients complemented the pork nicely. Definitely would order it again. (And a patron can choose from a variety of tortillas, including regular, whole wheat, spinach, and, if I'm remembering correctly, sun-dried tomato.) A couple of quibbles. The fish tacos were fine, but could have been better. The problem? All of the other taco filling ingredients were put on the tortillas first, and then the (freshly-fried) fish was put on top. I understand that, for efficiency's sake, the other ingredients were put in the tortillas while the fish was frying, but the fish kept popping up over the top while we were trying to eat. Also, the other ingredients were cold, so the cheese didn't melt and the fish cooled down immediately. Turned out to be somewhat awkward to eat. The tacos didn't seem like coherent wholes. The prices are a little high. I very much support business making a profit, but $10+ dollars for a fish burrito (all inclusive) seems a little high for a fast food, order-at-the-counter kind of place, and the shrimp is even higher.

    Woo hoo, as good as it gets! This is hands down the best Mexican joint in Summit County. Not only is their food great and plentiful, but their service is top-notch. All-around friendly people behind the counter. I highly recommend their baja fish tacos/burritos!

    This is a great place for authentic tasting Baja style fish tacos! Unfortunately during my visit today I found a long strand of black hair in one of my three tacos. I showed an employee and he was kind enough to offer me a replacement taco, but I declined due to an understandable lack of appetite.

    I had the Baja shrimp burrito and it was amazing!!!! Prob one of the best burritos I've ever had. Every bite was amazing. I would have given this place five stars but what bothered me was that their was extremely loud rap music playing. Now I don't hate rap but I don't like it when every other word is the "n" word and lots of cussing. If u don't get offended easily by music like that then u will be ok. I just hope they either turn it down so customers don't hear it, or change it to something more acceptable.

    This place came recommended by a friend. Unfortunately, this is where Yelp can be a detriment because I've overlooked this place several times due to the average rating. I'm a huge fan of fish tacos and living in SoCal over the past decade I've been to the best of the best. In this visit, I opted to pass the Baja style fried fish for the grilled option. I wanted to mix it up with shrimp but they were too slammed to accommodate my request. For the ingredients of the taco, I think they nailed it. The fish was also fresh and hot off the grill. I was willing to wait a couple minutes to get that in my taco. The big failure here was the fact that all the tortillas were cold. Come on guys! Arguably the main part of a taco and you dropped the ball! This would have been an amazing fish taco in a hot tortilla but would have been lights out in a homemade tortilla. It's amazing how many places become complacent with factory made tortillas. It's night and day. I digress (but hope they improve on these things). I like the casual dining feel for a quick bite (and go). Over all the service was good and friendly. Just remember the customer is always right. If you accommodate them they will be willing to be repeat customers.

    I really like this place and come often, the baja shrimp taco's and burrito are SO good! My only issue with the place is the total inconsistency of the staff, you never know if you're going to get super nice stoned guy, surly as f@#k guy that hates you and every other customer that has ever stepped foot in the place, or the completely complacent employee that is barely aware that you're there. The character that makes your meal seems to affect the end product as well. It's a bummer because the food really is good.

    Excellent, fresh Mexican food. Get the chile relleno burrito and thank yourself later. The chiles are bite sized, deep fried and the dressed in a great sauce! Just make sure you make wise salsa choices, especially if you are looking for something a little spicy. Great stuff and friendly folks!

    4.5 Stars! This place is awesome, the day we were there they had $1.50 pint PBRs on draft... *rubbing my eyes* Yes! $1.50!! So we're driving back from our weekend getaway to Aspen and got hungry halfway driving on Independence Pass coming back to Denver. Looked up reviews as soon as I had cell service and narrowed it down to 2 places. I'm so glad we picked this place because the other place had cold fries... and there is no way I was about to go check out a place that can't even make their fries right. Like Fletcher mentioned in the review, the sign outside said Best Fish Tacos.. but now they added a new one on their sign. Best fish AND SHRIMP tacos in town. (I think they can even claim best fish and shrimp tacos in the mountains since they are maybe the only taco place in Dillon... lol.) We decided we're going to get an order of Shrimp Tacos, soft corn tortillas of course @ $8.25 and an order of Fish Tacos, soft shells as well @ $8.00 before taxes and tips and PBRs. An order comes with 3 tacos. They were plenty! I could only have 2 and the bf smiled and ate the extra tacos I had left over. Even though both were amazing, I must say I prefer the shrimp over the fish any day if I HAD to pick one. I guess Chimayo has just outdone themselves with beating their best with a new best! I think that they have the best shrimp tacos I've ever had... granted I haven't had that many but still... they were jaw-dropping delicious. The difference in the shrimp compared to the fish was that you can taste the shrimp flavor and a bit more chewiness that I love. The fish was really good as well but I could only taste the fried batter and soft meat.. It didn't feel like I was eating fish... The batter was tasty, crunchy, light and airy on the outside of the seafood. I will make a point to stop here when I drive through the mountains again. I truly enjoyed every bite. They found out that I couldn't have dairy and they were very accommodating... even thinking ahead. Their creamy white sauce for the fish taco and shrimp taco is sour cream based and one of the gentleman working there said right before he was about to slather the sauce all over our tacos, "I wouldn't recommend this sauce if you're lactose intolerant, it's sour cream based." Since we are sharing, I asked for it on the side so the bf can try how it's intended to be. I was offered, by the same guy, additional salsas to try at no additional cost. Their hot charred habanero salsa was amazing and their mild salsa that had a lot of corn was equally delicious. We didn't get to try the medium salsa. Took away half a star because on my way to the bathroom I felt like I was on a slip-n-slide, it was very greasy to walk on but the floor looked rather clean. *shrugs* Even though this is pretty much a 'fast-food' place, the service was great and so were the prices. Most of all, the food was delicious. If you're really super hungry, ask for the Catastrophe. :)

    We were passing by Silverthorne and had a craving for Mexican food. Yelped it and decided to try Chimayo. Never regretted it! It is not much to see once you're inside - you order at the counter and take the food to the table yourself - but it's what's inside and how it tastes what matters. The soup of the day was very hearty and fulfilling and came with some chips and salsa. The beef quesadilla was one of the best I tried anywhere and that's my prime pick at Mexican restaurants so I'm picky when it comes to it. For under $20 we were full and had some of quesadilla to go - made a very nice late night snack later on. Everything tasted very fresh and we'll definitely be back if we're in the area.

    Love this place!! As a summit county local, this is the best place for fish tacos and burritos. Definitely get the Chimayo sauce on whatever you get. It is a bit expensive but worth it.

    Tucked away in a strip mall opposite City Market and Sports Authority, at first I feared that Google Maps had led me astray. After a day of flailing on skis (I am a long-time snowboarder) I needed some comfort food and the Baja fish burrito did the trick. These are no run-of-the-mill fishsticks; they were well seasoned crispy bits of heaven. Their toppings were fresh and plentiful. Chimayo is a far better option than the usual chains that flood the area and well worth the few extra minutes off the freeway.

    We wanted to try something new and different when we passed through Dillon near dinnertime last night. WOW!!! Super experience!! Fresh, Great Food, Fast! I ordered a carnitas burrito and pointed at the veggies I wanted added (grilled red peppers and anaheim peppers and onions), my husband had shrimp tacos. All of the food was fresh, high quality ingrediants, prepared after we ordered. We loved the food, medium and hot salsas both get two thumb up! Wonderful, friendly, personal service, and Thanks SO Much for having cilantro as an option to add - so my husband could get it and I did Not! :-D We will definitely go back if we are in the area!

    I can only speak for my experience but this place sucked! We're moving today so we got to go order for the whole gang. They messed up 5 of the 6 orders. The fish was dry and over-cooked. The shrimp was deep-fry junk. I Will never ever eat here again.

    One of the best burrito places in Summit. The fish burrito is the thing to get here. Make sure you get them to add the "white" sauce to your burrito. The monster burrito will fill you up for hours and fuel you up for any outdoor activity you plan on doing that day. Staff is always cool and the ingredients and salsas are always fresh tasting.

    Best fish tacos and fresh salsa. This place is our favorite north of Cabo San Lucas and they have great beer. Try the Cajun grilled mahi mahi and you won't go back to Denver. Best in the mountains.

    We were hoping for relatively authentic Mexican, but didn't find it here. The food wasn't bad, per se, just weird. The cheese dip for chips tasted like my mom's cream of broccoli soup. Again - not bad, just weird. I went for the steak burrito - totally flavorless. I drowned it in salt and hot sauce to make it worth eating. The fish tacos were average. The beer was cheap (yes - $1.50!), though it seems their practice not to fill it to the top. The dudes working the counter were nice guys, but didn't seem too concerned about keeping the front of the house tidy - there were only two of them. We'll try Jalisco next time - seems more authentic from the outside.

    I really enjoyed this place. Plus it's locally owned and operated. My wife and I both got a "classic burrito" and we were both very pleased/satisfied. The options on the menu all looked good, but I love burritos so I'm glad I went with that option. There's a QDOBA just down the street, but this is better, and it feels good to know you're supporting a local entrepreneur.

    I eat here as often as I can on my way home after a day of skiing. When I go it's for one thing in particular: the chile relleno burrito. It's not usually on the menu board, you have to ask for it. The chile is deep fried and crispy, and they chop them up before adding them to your burrito. That along with things like fresh lime wedges and fresh cilantro make your burrito so much better than chain places. They frequently run out of chiles, though, so if you go past lunchtime they may be out.

    My go to place for burritos in Summit County. The fish burritos and tacos are the best in the county. The staff is super nice and I always have a great experience. Don't go to the corporate chains (one in the same shopping center) eat here instead where you can get great food and make a couple friends!!

    i love this place. great fresh food, friendly people behind the counter. good prices. what more can i ask for. we stopped here not once, but twice during our vacation and took our tacos to go for a quick picnic on lake dillon. definately go for the habenero sauce. they are known for their burritos, but i was unimpressed. but the fish tacos. so awesome.

    This place is another Qdoba/Chipotle clone. Place order at front, pick ingredients, etc. I ordered this salad (can't remember the exact name) that the menu said had olives and avocados. Well, basically it was just a bowless burrito. They didn't have olives, and when I asked about the avocado, he said guacomole is extra. I pointed out it was on the menu so he put guacomole on it for free, but I had to feel guilty about it [despite choosing that menu item partially because it was advertised with those things]. The overall taste was good but rather generic compared to other burrito places; they put a lime wedge on top that was so slim it would barely freshen a drink and made it seem special. They also really skimped on the meat (I ordered steak). I like Chipotle better. More flavor and more turn around. But, I was there only once and late at night, so it's possible they can be better.

    After snowboarding all day, we were starving to death. We decided to go to Chimayo because the reviews were great, and the price was really good as a place in summit county. We were so glad we chose Chimayo. Their Fish taco is amazing!! They fry them right in front of you. The tartar sauce on top complements the fish so well. They give you 3, but I was stuffed with 2. My husband loved their burrito, too. We will definitely come back next season!

    I see my son already Yelped this place. I'm giving it an extra star because I picked up the food and the service at the establishment was great. The place was bustling. We had a busy day after a cross-country move. We saw the great reviews on Yelp and decided to place an order to go. There were six of us and they messed up most the orders. I had the ono tacos and ordered them garlic style. I got cajun and they were cooked to death. So dry! I put yogurt on them, but still didn't save them. No one enjoyed their meal and there were other complaints of the food being cooked to the point of being dry. Maybe we hit it on an off night, but we wont' be back. Too bad.

    We were passing by Silverthorne and had a craving for Mexican food. Yelped it and decided to try Chimayo. Never regretted it! It is not much to see once you're inside - you order at the counter and take the food to the table yourself - but it's what's inside and how it tastes what matters. The soup of the day was very hearty and fulfilling and came with some chips and salsa. The beef quesadilla was one of the best I tried anywhere and that's my prime pick at Mexican restaurants so I'm picky when it comes to it. For under $20 we were full and had some of quesadilla to go - made a very nice late night snack later on. Everything tasted very fresh and we'll definitely be back if we're in the area.

    Tucked away in a strip mall opposite City Market and Sports Authority, at first I feared that Google Maps had led me astray. After a day of flailing on skis (I am a long-time snowboarder) I needed some comfort food and the Baja fish burrito did the trick. These are no run-of-the-mill fishsticks; they were well seasoned crispy bits of heaven. Their toppings were fresh and plentiful. Chimayo is a far better option than the usual chains that flood the area and well worth the few extra minutes off the freeway.

    This place is almost exactly like Chipotle, but with the addition of fish and shrimp options, and it is locally owned. If you like Chipotle, give this place a try. The quality is very similar. And it's better, IMHO, to support local places when possible. I am rating this place for what it is. Not comparing it to real Mexican food (which it isn't), or to quasi-real Mexican food, or to any sort of fine dining standard. For what it is, it is decent. We likely will return again if we're in the area and want some fast-ish, freshly-prepared food. The carnitas burrito was very nice. The meat was well-cooked and seasoned, and the rest of the filling ingredients complemented the pork nicely. Definitely would order it again. (And a patron can choose from a variety of tortillas, including regular, whole wheat, spinach, and, if I'm remembering correctly, sun-dried tomato.) A couple of quibbles. The fish tacos were fine, but could have been better. The problem? All of the other taco filling ingredients were put on the tortillas first, and then the (freshly-fried) fish was put on top. I understand that, for efficiency's sake, the other ingredients were put in the tortillas while the fish was frying, but the fish kept popping up over the top while we were trying to eat. Also, the other ingredients were cold, so the cheese didn't melt and the fish cooled down immediately. Turned out to be somewhat awkward to eat. The tacos didn't seem like coherent wholes. The prices are a little high. I very much support business making a profit, but $10+ dollars for a fish burrito (all inclusive) seems a little high for a fast food, order-at-the-counter kind of place, and the shrimp is even higher.

    I had the Baja shrimp burrito and it was amazing!!!! Prob one of the best burritos I've ever had. Every bite was amazing. I would have given this place five stars but what bothered me was that their was extremely loud rap music playing. Now I don't hate rap but I don't like it when every other word is the "n" word and lots of cussing. If u don't get offended easily by music like that then u will be ok. I just hope they either turn it down so customers don't hear it, or change it to something more acceptable.

    I really like this place and come often, the baja shrimp taco's and burrito are SO good! My only issue with the place is the total inconsistency of the staff, you never know if you're going to get super nice stoned guy, surly as f@#k guy that hates you and every other customer that has ever stepped foot in the place, or the completely complacent employee that is barely aware that you're there. The character that makes your meal seems to affect the end product as well. It's a bummer because the food really is good.

    Excellent, fresh Mexican food. Get the chile relleno burrito and thank yourself later. The chiles are bite sized, deep fried and the dressed in a great sauce! Just make sure you make wise salsa choices, especially if you are looking for something a little spicy. Great stuff and friendly folks!

    Fish tacos with corn salsa is awesome. Shrimp tacos good too. Service a little lacking as we have a child that is gluten free and the gluten free menu says French fries and corn chips are two items gluten free. I ordered fries and they said they are fried in same oil as everything else. When I told them their menu was then incorrect an employee said "well most people that say they are gluten free are just on a diet anyways." Um no....

    I can only speak for my experience but this place sucked! We're moving today so we got to go order for the whole gang. They messed up 5 of the 6 orders. The fish was dry and over-cooked. The shrimp was deep-fry junk. I Will never ever eat here again.

    One of the best burrito places in Summit. The fish burrito is the thing to get here. Make sure you get them to add the "white" sauce to your burrito. The monster burrito will fill you up for hours and fuel you up for any outdoor activity you plan on doing that day. Staff is always cool and the ingredients and salsas are always fresh tasting.

    I really enjoyed this place. Plus it's locally owned and operated. My wife and I both got a "classic burrito" and we were both very pleased/satisfied. The options on the menu all looked good, but I love burritos so I'm glad I went with that option. There's a QDOBA just down the street, but this is better, and it feels good to know you're supporting a local entrepreneur.

    I eat here as often as I can on my way home after a day of skiing. When I go it's for one thing in particular: the chile relleno burrito. It's not usually on the menu board, you have to ask for it. The chile is deep fried and crispy, and they chop them up before adding them to your burrito. That along with things like fresh lime wedges and fresh cilantro make your burrito so much better than chain places. They frequently run out of chiles, though, so if you go past lunchtime they may be out.

    I will never go back to this place again... I basically got harassed by some douche working there for asking for a side of sour cream because I guess I thought their white sauce wasn't "good" enough. Also, I assumed you could get a refill from the soda fountain that is right by where you sit.. But when I filled it up I heard some bullshit smirks from the same guy. When I tried to apologize and ask if it was wrong to do that he just wouldn't look at me and ignored it like a little girl. Sucks because the food was pretty good but the people working there can suck one.

    CHIMAYO ROCKS! Nothing better than shredding and stopping in for chipotle style mexican. I say style because overall this place is superior. Green chili and queso are just some of the upgrades over its fast food chain cousin. Prices are agreeable for being in/near two ski towns. If you just ripped the backcountry do yourself and your stomach a favor and grab some chimayo.

    Really good food all around. Particularly tasty burritos. Would recommend getting the green chile. Unfortunately some of the staff seem to act as if the customers are just an inconvenience. In addition to the sometimes moody staff, the burrito sizes can be quite inconsistent. Some of the staff really hook it up, others not so much. All in all really good food but maybe not worth the risk of bad service.

    My husband and I both ordered one of each chicken, beef, and carnitas tacos. Out of those three, I enjoyed the beef the most. Overall, I thought they were a little bland. I had the mild corn salsa, so I asked for some of the pico and that livened them up a little bit. I didn't like that the crema was extra. If I went back, I think I would spend the extra couple bucks and get the shrimp tacos. I wish they all came with chips and salsa. I didn't feel like it was a great deal.

    Very disappointing. We had "best" fish tacos and a burrito. The fish is deep fried, not grilled. The sauce and the "salsa" was just ok, but they're the worst fish tacos I've ever had, by far. The burrito was average at best, but the portion was big. I'd much rather go to the chain Mexican grill down the street in Silverthorne. The cook was not that friendly when we asked him a question about the tacos, but they seem to be friendly, nice guys otherwise, judging by their interaction with other customers.

    Amazing tacos all around. Chicken, steak, shrimp & fish are all great. Cabbage replaces lettuce with a creamy white sauce & choice of salsa. Cajun seasoning mixed with the hot salsa is HOT & I'm from the south so I can handle hot!! Grab a PBR on tap for $1.50. Service is impeccable. Enjoyed going later in the day & our purveyors spent some time chatting with us. Local spot that makes you wanna come back again & again.....

    Both my boyfriend and I got the garlic grilled shrimp burrito. I like how they cook the shrimp right there on the skillet made to order. The girl that made my burrito was nice. They have flavored sour cream sauce that was a nice delicious touch. So we really enjoyed our burrito while eating it for dinner. However, the next morning we both had stomach aches and rushed to the bathroom. Definitely caused by our burritos. It tasted good going in, but not coming out. So...I dunno. Maybe our shrimp wasn't cooked all the way? I'm kind of torn because our burritos did taste good but the fact it made was sick is unfortunate.

    This place came recommended by a friend. Unfortunately, this is where Yelp can be a detriment because I've overlooked this place several times due to the average rating. I'm a huge fan of fish tacos and living in SoCal over the past decade I've been to the best of the best. In this visit, I opted to pass the Baja style fried fish for the grilled option. I wanted to mix it up with shrimp but they were too slammed to accommodate my request. For the ingredients of the taco, I think they nailed it. The fish was also fresh and hot off the grill. I was willing to wait a couple minutes to get that in my taco. The big failure here was the fact that all the tortillas were cold. Come on guys! Arguably the main part of a taco and you dropped the ball! This would have been an amazing fish taco in a hot tortilla but would have been lights out in a homemade tortilla. It's amazing how many places become complacent with factory made tortillas. It's night and day. I digress (but hope they improve on these things). I like the casual dining feel for a quick bite (and go). Over all the service was good and friendly. Just remember the customer is always right. If you accommodate them they will be willing to be repeat customers.

    We were hoping for relatively authentic Mexican, but didn't find it here. The food wasn't bad, per se, just weird. The cheese dip for chips tasted like my mom's cream of broccoli soup. Again - not bad, just weird. I went for the steak burrito - totally flavorless. I drowned it in salt and hot sauce to make it worth eating. The fish tacos were average. The beer was cheap (yes - $1.50!), though it seems their practice not to fill it to the top. The dudes working the counter were nice guys, but didn't seem too concerned about keeping the front of the house tidy - there were only two of them. We'll try Jalisco next time - seems more authentic from the outside.

    This is a fast-casual burrito and taco place (kind of like Chipotle, but with more and better choices). You won't find better fish tacos anywhere in the mountains... or in the whole state for that matter. There isn't a lot of seating, but the staff are always friendly and quick to get you through the line.

    For what ever reason the local press raves about this place. Me...not so much. The fish tacos are dry & the fish quantity could be improved. I am not sure what I expected, but it's basically Qdoba style with servers that could use more experience and probably less dank. (And yes Heather, I have worked in the service industry. I'll skip the emoticon.) All in all the experience left me flat. There are plenty of other places to eat in Summit County, though not so many close to my house in Dillon.

    Tacos are not legit. Thank god they serve beer. You need the beer to mask the tacos. I had the beef plus the famous Baja. The Baja had the right ingredients just a bit stale. The grill was frightening. They must of had an inch of sludge scraped to the back. My friend got the grilled fish. There was maybe 2oz of fish between his three tacos. And lastly .... I ordered the BEEF tacos. Don't put chicken on my tacos then tell me "you said chicken". Want to know how I know I didn't say chicken? Because I NEVER order chicken tacos homeboy. P. S. You should have fresh white chopped onions with cilantro mixed in. This is common taco knowledge 101.

    This place is incredibly cold inside. All patrons are wearing their coats. Now I'm not normally one to complain about the cold. I ski when it's subzero out, frequently skip a coat in the winter, etc. The real problem is your food gets cold fast. If I wanted cold food I would have gotten froyo. The food station is very very messy. Food scraps and drippings cover nearly everything. Can't be sanitary. Staff seems disorganized and unconcerned with quality service. Aside from the food getting cold fast it was good.

    We wanted to try something new and different when we passed through Dillon near dinnertime last night. WOW!!! Super experience!! Fresh, Great Food, Fast! I ordered a carnitas burrito and pointed at the veggies I wanted added (grilled red peppers and anaheim peppers and onions), my husband had shrimp tacos. All of the food was fresh, high quality ingrediants, prepared after we ordered. We loved the food, medium and hot salsas both get two thumb up! Wonderful, friendly, personal service, and Thanks SO Much for having cilantro as an option to add - so my husband could get it and I did Not! :-D We will definitely go back if we are in the area!

    Its good if you are craving some tacos or burritos. The multiple chefs are friendly and helpful with suggestions. The food is good not fantastic. Breaded fish is bland but you can spice it up with hot sauce. Seemed pretty hygielinic, which is a consideration when planning to do outdoor activities all day. Large servings, but line moves slow.

    4.5 Stars! This place is awesome, the day we were there they had $1.50 pint PBRs on draft... *rubbing my eyes* Yes! $1.50!! So we're driving back from our weekend getaway to Aspen and got hungry halfway driving on Independence Pass coming back to Denver. Looked up reviews as soon as I had cell service and narrowed it down to 2 places. I'm so glad we picked this place because the other place had cold fries... and there is no way I was about to go check out a place that can't even make their fries right. Like Fletcher mentioned in the review, the sign outside said Best Fish Tacos.. but now they added a new one on their sign. Best fish AND SHRIMP tacos in town. (I think they can even claim best fish and shrimp tacos in the mountains since they are maybe the only taco place in Dillon... lol.) We decided we're going to get an order of Shrimp Tacos, soft corn tortillas of course @ $8.25 and an order of Fish Tacos, soft shells as well @ $8.00 before taxes and tips and PBRs. An order comes with 3 tacos. They were plenty! I could only have 2 and the bf smiled and ate the extra tacos I had left over. Even though both were amazing, I must say I prefer the shrimp over the fish any day if I HAD to pick one. I guess Chimayo has just outdone themselves with beating their best with a new best! I think that they have the best shrimp tacos I've ever had... granted I haven't had that many but still... they were jaw-dropping delicious. The difference in the shrimp compared to the fish was that you can taste the shrimp flavor and a bit more chewiness that I love. The fish was really good as well but I could only taste the fried batter and soft meat.. It didn't feel like I was eating fish... The batter was tasty, crunchy, light and airy on the outside of the seafood. I will make a point to stop here when I drive through the mountains again. I truly enjoyed every bite. They found out that I couldn't have dairy and they were very accommodating... even thinking ahead. Their creamy white sauce for the fish taco and shrimp taco is sour cream based and one of the gentleman working there said right before he was about to slather the sauce all over our tacos, "I wouldn't recommend this sauce if you're lactose intolerant, it's sour cream based." Since we are sharing, I asked for it on the side so the bf can try how it's intended to be. I was offered, by the same guy, additional salsas to try at no additional cost. Their hot charred habanero salsa was amazing and their mild salsa that had a lot of corn was equally delicious. We didn't get to try the medium salsa. Took away half a star because on my way to the bathroom I felt like I was on a slip-n-slide, it was very greasy to walk on but the floor looked rather clean. *shrugs* Even though this is pretty much a 'fast-food' place, the service was great and so were the prices. Most of all, the food was delicious. If you're really super hungry, ask for the Catastrophe. :)

    Fish tacos are to die for. Only there stars for the impatient staff that were not very helpful to my elderly grandmother. They acted as if she was not worth their time to slow down and explain anything to. Bummer.
