I must admit the green chile is pretty good. Definitely better than average. But the menu is confusing. The staff is either stupid or lazy, can't figure out which, but regardless, unhelpful may be the polite way of putting it. Once you do decipher the complicated menu (which list categories, then have a separate list to describe what is meant by the categories... the lists don't even match... huh???) you will quickly figure out that you can get the same burrito all over town at 30%-50% cheaper, and is still missing the rice and beans here. Wanna watch how stupid and unhelpful the staff is? Ask them if it was rung up correctly... ha ha ha, you might as well asked him to explain quantum physics and its relationship to string theory... another subject he is clueless about (as is most of us, but he should know about how things are priced) All in all, if you could separate the green chile from the rest of their food, there would be no reason for Bubba Chino's to exist at all.

Inconsistant food, rude service from owners. For a Chubby's spinoff I expected better.

Great tasting food. The chili has good heat and the service has always been good. Stop in early before your movie or late on Friday or Saturday nights for some good eats.

alot better than i thought it would be....got a smothered (which means green chile and cheese) deluxe (which means tomato and lettuce) egg and potato burrito....the green chile sauce is pretty good and has some heat to it....officially 3.5 stars

The "Chubby's" of the Northeast! Bubba Chinos is a fantastic, fast, friendly Mexican restaurant in the heart of Brighton, CO. It has amazing food, served fresh and fast with a good attitude. And it won't set you back more than $5 a person - great way to feed a family on a budget! They have a great menu with inexpensive food and lots of options. The burritos are grilled and make a nice, easy meal if you're in a rush. If you have a bit more time, get yours smothered deluxe with green chile, cheese, tomato and lettuce - then settle back and get your drink ready... the "standard" green chile absolutely kicked my butt, it's so hot and spicy - and I'm not a total gringo either. HIGHLY RECOMMENDED!!

The thing is the food here is actually really good..but it would have been better if my order had actually been correct. I had been wanting to try this place out for awhile so stopped in and ordered a mexican hamburger smothered and chile cheese fries to go. So I sat and waited and waited until someone came out of the kitchen and said "Are you waiting for something?" Keep in mind too that I was the only customer there. Then the girl at the counter was like "What did you order again?" She actually asked me that 3 more times before my food finally came out. She opened both containers then put them in the bag. I guess it's my own fault for not checking them myself before I drove the 15 minutes home. So I opened up the burrito first and had a few bites and it was really good. Then I open up the fries..and that's all it was, just fries, no chile and no cheese. I was rather ticked. I specfically went there pretty much because I heard the chile cheese fries were so good. I thought about driving back but really didn't want to haul back there so I just ate my burrito and had a few fries. I probably won't go back to this one again but I may try one of the other ones, if only so I can finally try those chile cheese fries.

Bubba Chino's IS Chubby's, plain and simple. I've heard the story before, but I don't know and don't care about what happened with the family, why the company split, or who the hell Bubba Chino is. Doesn't even matter. I've been going to Chubby's on 38th since back when people were afraid to go to Chubby's on 38th, so I grew up and know this food. This is Chubby's food, and that's not a bad thing. As far as I can tell, the only difference in the menus is that you have the option to 'grill' your burrito here, which actually works out pretty good with a smothered beef & bean. Gives a little crunch under the gooey. The green chili is the same as it's been since we used to park in the back lot on 38th eating smothered fries off the hood of someone's car on a Saturday night back in high school. The salsa that comes in the little plastic cups is the same salsa I remember from back when I was a kid and would smash my taco up in the little paper pouch it comes in and eat it with a fork. (They still put the tacos in those little paper pouches.) I hate to say it, but the food isn't great. It's just good. But it's consistent. It's familiar and comfortable. It's something you just get a craving for, and nothing else can replace it. But let's face it...this food, whether you get it from B.C. or Chubby's, is drunk food. It tastes best at 2am with the taste of Coors Light and cheap tequila shots still lingering in your mouth. So what pisses me off the most is driving to this Brighton location at what SEEMS like a reasonable time, only to find them with the lights out. There's no less than THREE bars within stumbling distance from their front door, so why the hell would they EVER close as early as 8pm?? That's pretty much all I would change about this place. That, and the fact that they sometimes feel like charging me $1.25 for the taco that's clearly listed on the menu for $.99. I needed that quarter for the antacid tablet from the machine in the bathroom at the bar down the street. :(

I preface this with one thing: they do have some decent to average burritos that are great after a long night. But it does not excuse the owners & affiliates behavior towards their young female employees. You may have heard rumors that the owner is something of a sexual predator. These would be very true. In one sitting I cannot count the number of times the young female cashier was absolutely verbally harassed by not the owner, but one of his old "business partners" who comes in to "keep an eye on" new hires. The way he treated her still makes my skin crawl and this was not the first time I had seen this type of behavior at the Brighton Bubba Chinos. I don't think this guy runs the other locations? I'm not sure. But I'm taking my business to anywhere but here.

We all had a burrito of some sort with green chili. It was just ok. The green chili is just ok too. I was expecting more since it's supposed to be chubby's. Really small place, only about four tables. Probably good if you need a late night fix.

Food is awesome!! Green chile is the bomb!!! Yes, this is Chubby's but even better! But.....food gets a 5 star, service gets a 1 star! Don't know if the older, grumpy, man that sits at the register is the owner, but he is never happy or friendly! It's okay to smile!!! Really!! Prices are not great, but we pay it cause it's so dang good! .99 for a bean tostada which is great, but then $2 to add a spoon full of green chile to it. $18 for a quart of green chile versus $8 at Santiago's which is almost as good. It's a small establishment that always smells like Pinesol....and the t.v. is always blaring. Dang it for the food being so good cause that's the only thing that brings us back. Also, don't trust the hours of operation. They close whenever they want, not when the sign says....which is a real bummer when you need you Bubba Chinos fix!!!

The food is very good. Got the smothered chicken burrito. Chicken was very well cooked with good flavor. Very filling. The green chili cheese fries are also amazing. Highly recommend to get the steak on top of them. Not a lot of seating inside, but the service is quick.

Let's get this straight ...Bubba Chinos is grub food. I had both the beef and bean and smothered shredded beef burritos. The B&B was meh and the SB burrito was pretty darn good. The green chili does pack a little heat but it's nothing overly spicy unless you're sensitive to medium spicy foods. The service was straight forward and a non nonsense type of deal which is fine by me. The menu is a little confusing when it comes to defining the different types of ways you can get your burrito. I read the menu as special and smoothed options both having green chili but the special did not come with chili in the end. I wasn't aware that you can grill the burrito for an extra .50 which I would have loved. I also thought the chili fries were not promoted enough since it seems everyone loves them. I'd go back again ... especially if I'm looking for hangover food.

I love their burritos! And chili cheese fries as well. The menu is a little different and may take some getting used to but it is great food and generous portions!

Great food, Great prices, like the .99 kid options & LOVE THE GREEN CHILI. I deducted a point for the girl at the counter that was not happy/professional/helpful....no worries though well be back for the food!

I am addicted to the chile cheese fries. I have eaten here every week for the past four months. The green chile is not extremely hot which is great for me. I love their steak grilled burritos too. They know me by name which is embarrassing. I picked up a few pounds so I am taking a break from Bubba Chinos but I will be back in March :).

The Chili fries were alright. I thought the green chili could have been a little bit hotter. I'm not sure what was missing but it just didn't hit the spot, but dang the grilled burrito was the BOMB! We actually ordered several burritos and were waiting for the orders when Chino him self came out and asked us if we tried the grilled burritos. We told him no, he hooked us up with one on the house. First of all, who does that now days?! He earned our business right off the bat! But when we ate the grilled burrito, omg'sh, that was one of the best burrito EVER! We are hooked! Thanks Chino for schooling us! We'll be back real soon!

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
