    Ordered #9 Well done, meatballs, and brisket; spring rolls; and Banh Mi. By the way, I'm a Pho Snob. The broth wasn't good. It had waaaaayyy too much cilantro. At the end of my meal my soup was strewn full of cilantro. I eventually had to fish it out to get to the rest of the noodles. The broth tasted earthy. Too peppery. It just didn't sit right. The meat tasted like it been cooked for way too long. Not that much meat. They didn't have fatty flank or rare meat combos. The menu was limited. Didn't give a meaty action packed bowl. No fat on my brisket was sadness. The spring rolls weren't tasty. It was kind of hard. Banh Mi was made with steak instead of the normal meats you would normally see. It was really good though! (+)'s fresh lime, good jalapenos, friendly service, reasonably priced. Bottom line: I would not come here again. There are better Pho places in the area.

    Bottom Line - Noodles were fine, but the broth was pretty lacking. I've definitely experienced better (definition of 2-stars). If you're in Lacey/Olympia, check out Pho Vy. Came for dinner on Monday, 29 August 2011. Got a large bowl of pho with tendons, tripe and brisket. This is more expensive than the pho places in Seattle, and with broth that isn't as flavourful. If you have a pho craving, give it a shot. If you can wait, I suggest you wait for better pho. Total came to $8.00 after tax + 2.00 tip = $10.00 total for just me. Service was pretty good. Star rating is solely on the bowl of pho I had.

    Always good service and good food. This place has never failed me and best Pho restaurant I've been to. However, I give it a four overall because of service. I find myself asking for extra refills for my water constantly- Even had to refill it from the main counter once. But definitely recommended !

    I don't know why it took so long to try this place but glad we finally did. There's nothing standout about Pho Sai Gon but there doesn't need to be. The pho was just as delicious as the pho at our other favorites spots. Therefore a solid 4 star rating is in order. However, i knocked off one star for a cramped parking lot.

    I come here about two times a week to get the Chicken Pho. It is the best I've found so far in the Oly/Lacey area. It is across the street from Jack in the Box towards Target if you are having a hard time finding it. Decent service, fast preparation, and tasty soup.

    Good. Very good. Had #41, the House Special Bowl-Bun Dac Biet. Rice noodles mixed with eggrolls and grilled pork on top of a big bowl of lettuce, bean sprouts, julienned cucumber, carrot, and rice vermicelli, Thai Basil, and a touch of cilantro. It is served cool with a light savory-salty-sweet sauce you pour over the top, mix it all up and eat, eat, eat. It's my all time Vietnamese favorite and they did it very well. Can't say they do my favorite Vietnamese eggroll but not everyone has the same taste. Unassuming from the outside, very pleasant and comfortable inside. Like a Dr. Who Tardis, it seems larger on the inside than out. Service was a little slow. Didn't get a water refill and had to go to the counter without a ticket and point at the menu to indicate what I had ordered but that's o.k. I'll go back. Really want to try their fresh rolls and Brisket & Meatball Pho-Pho Chin Bo Vien!

    I don't think I have to say much about this place except for recommending you to try it out. Especially during a cold day. I've been going here since the last couple of months and I can't get sick of it. It has multiple dishes that you can try out, you don't have to eat just Pho.

    Best Pho in town, they also got great rice dishes with Pork chop, best vermicelli bowls. I love this place. Oh yeah the sandwich in the appetizers is awesome. Everything is clean.

    Coming from San Diego, where the asian food is plentiful and cheap, I recently moved to the area in search of some delish Pho on a cold rainy day. This was my second choice, as the other restaurant down the street is closed for remodeling. Anyway, the parking here is a bit odd so we had to park in the back. We walk in and are seated at the table. The decor is your typical pho restaurant, but the annoying music was kinda loud. There were the typical condiments: Sracha sauce, soy sauce, chili sauce, and Morton's Salt and pepper grinders WHAT!? This was my first red flag. We read the menu, and the Pho section is all in English, without the Vietnamese names, which are the only things I'm used to ordering (Tai Gau please!!) The short lists of Pho didn't even have the best combo: brisket and flank steak AND they didn't have the yummy ginger sauce that I'm accustomed to in ALL Pho places in SoCal. Second red flag. When the large bowls came ($7 and some change for each bowl, which is on the expensive side for SOUP!!) we had to ask for the sides (sprouts, basil, and lime) which was a bit annoying. I know there isn't a lot of diversity in the area, however, I expect things to be authentic! The Pho tasted a bit weird...almost like soapy dirty dish water. They must have put some weird spices in it, or this wasn't homemade. Either way, it wasn't that great. The service was slow and the food was eh, so I'm still in search of a good Pho place in the area!! Help!

    I think this place is great! I have ordered quite of few items off the menu and I have been happy with all of them. My wife wasnt too happy as we were with my 2 year old and there was not much for him to order, but she enjoyed her food anyways. When I come into town I try and make it here every time. I love the noodles and the broth is the best. The menu is a little confusing is you have not been to this type of restaraunt as you might not really know what you are ordering, but they are happy to answer any questions you might have and also give you recomendations that they think you might like. Great Prices! Parking is kinda weird in the back. They share the lot with a bunch of other little places, but its not really that big af a deal. Be careful as it can get really busy during high traffic times (lunch, dinner) if you are in a hurry, but I must say that its worth the wait. ;) Good food! Cant wait to eat there again!

    I'll admit I've only been here once but that one time has me thinking that this place has potentially the best Pho in the Olympia area. Broth was very good. The quantity of meat and noodles was plenty. The price was perfect. I had spring rolls. They came out like 2 minutes after I ordered them and then the Pho came out a minute or 2 after that! I came at lunch time so I figured there would be some waiting but everything was perfect and prompt! Will be back asap!

    This is the best pho I have found in the Tacoma/Olympia area so far. The flavor of the broth is wonderful and is probably what differentiates this pho from the rest, though the chicken is also very moist and the veggies are fresh. Good prices and service, and I've already been back for more.

    I am giving them 4 stars for now, because they currently make the best Vietnamese sandwiches in the Oly/Lacey area (in my opinion only; your opinion may vary!). To be fair, I have not tried all the Vietnamese restaurants though. Other dishes I've tried here were good too, I had a fried noodle dish the other day that was quite tasty. The sandwiches ($2.99) are good size, and made on a crispy french roll. They are made with a fair amount pork, which is oozing with flavor. They are full of fresh veg including thin-sliced jalapeno - hot but not overpowering. The only flaw in my opinion is there was too much mayo used. If this were cut back maybe 50%, it would be the best ever. Overall, a perfect balance of bread to filling in the sandwich.

    I didn't think the trend of improving soup could continue indefinitely, but it has gone as far as it needs to! Today I stopped in a bit after lunch time and ordered the Bun Bo Hue after much waffling as to whether I thought it could actually get any better. Well, I ordered and stressed that I wanted it extra strong and extra spicy and that I surely wanted tendon. I was preparing myself for disappointment when the waiter came back from the kitchen and told me they had pig's feet and pig blood and asked if I wanted either. Swoon! As it happens, I wasn't in a porkish mood today, so I went without, but the soup that arrived had a thick layer and a heavy musk of fermented fish and whatever else it is that makes Bun Bo Hue great. And it was really, truly great. The soft, gooey tendon was unstoppably-wonderful. The noodles still are not what I'm used to, unlike at Pho VY, but the soup is after much cajoling everything I'd hoped for. Tempted to dock a star since it took so much effort to get them to give me what I wanted, but the results really make up for it. I am a puddle of contentedness!

    Driving through town from Seattle, we stopped here for lunch based on the reviews by fellow yelpers. Ordered spring rolls and a Banh mi for apps. Then a chicken papaya salad and the steak pho soup for our main courses. The service was attentive; however, we were a bit disappointed with the lack of flavor in the soup and overly salted papaya salad. The salad rolls were just OK, as we have had much better, and the banh mi ended up being the best of our picks, but nothing more than average. Maybe we have been spoiled by the excellent Vietnamese restaurants the Portland metro area, but I can venture to say we will not go back.

    Now twice as large! This is the perfect place for lunch. Nine bucks, maybe ten or eleven, you get a banh mi, and a large PHO and you're DONE. Nine million times better than that other MALL PHO place.

    Ah what a plesent surprise to see on the menu as not too many places around Tacoma/Olympia with Papaya Salad. We ordered with shrimp and it was refreshing, next time I'll request few more peppers (hotter) and little less sugar. Serving portion was good. Pho broth was excellent. And the Banh-Mi was delicious. Another item to note is that, more than half of the customers were Vietnamese.

    This is the only Pho joint Ive been to that plays country music... What the "Pho" up with that? Small towns.. But for small towns Pho Sai Gon has a big taste, great broth and just the right amount of onions! This is hands down the best Vietnamese restaurant in the Oly/Lacey area.. Keep my Pho Ga with an added vegi coming! Great price.

    This is a very small restaurant with a lot of pow. I would say it has one of the best broths in the Pho soup around town. I haven't been disappointed in anything I've ordered. The service is great. They are very quick to get you seated and beverages to you. The only downfall is they do take a little longer to get the food out. But not that bad. Another item I've been impressed with is the Vietnamese sandwiches. They are great. I only know three places in Olympia to get them and this is one of them. Will continue to be a patron.

    I go here for lunch all the time. I almost always order the Vermicelli bowl. Delicious, filling, healthy - consistently very good. Service is good but can be a little on the slow side when they are really busy. Pho is good - not great, but good. There are a lot of offerings in the Lacey area for Vietnamese food but most of them aren't very good. I've found this place to be the exception to that. Glad they expanded into the nail shop next door - no more fumes and more seating to boot. Self proclaimed "pho snobs" may not love it but this is Lacey folks, ratings should be in context for the area they serve. IMHO there are very few restaurants worth their salt in the area and this is one of them. I'll continue eating lunch here, happily, a couple of times a month.

    Their Pho is great but most Pho is. However, their Bahn Mi and Vermicelli Bowls are the best ever in my opinion. I don't care for their Springrolls very much but the eggrolls are great. The people there are really nice as well so overall it's the best place for Pho/Vermicelli Bowls in Oly.

    I am starting to think that the city founders of Lacey sold each and every one of its inhabitants' souls to the devil in exchange for tasty Vietnamese food. Would you blame them? Pho Sai Gon 8 is yet another pretty good Vietnamese restaurant in Lacey. Pho Sai Gon 8 is focused on pho and various other soups, but there's a reasonable selection of standard noodle and rice dishes if pho isn't your thing (it isn't mine). The papaya and mango salads are great and the egg noodles have an excellent rich flavor, but overall the food seems to be extra bland for american palates; it's not very spicy or pungent. There seems to be a higher-than-usual chance of getting a completely different dish than you ordered, and it's particularly surreal as the waiter's English is pretty good. I ordered something with egg noodles and tofu and got rice noodles and beef. I guess selling your soul has occasional repercussions in the form of spontaneous malevolent food transformation. The food here is fine, but with Pho VY and Thuan Thien in the neighborhood, I don't think I'll be back very much.

    Speedy service with amazing good Pho what more can a girl ask for? My son and I shared a large bowl of the Chicken Pho a few weeks ago, left overs were a big bonus! Nice clean place. It was busy but service did not fail! I have been looking for a Pho place for over a year since I left the San Diego area and I finally found my Pho love in Washington state!

    The service was a little slow, but that's usual with a small family owned place with one waiter. But, if you're coming just for the pho it's the best in this general area! The broth was rich and flavorful without being fatty, and the portions were perfect. I used to go to Pho Hua on cooper point, but their food seems cafeteria-like and flat after having the pho at Saigon 8. This is absolutely my new pho spot!

    After trying most of the Viet places on the east side of the Olympia/Lacey area, this is the one I keep going back to. (Edit: 5 stars is a reflection of the Olympia area scene, deduct a star if comparing with elsewhere, and perhaps 2 if comparing with S. Cali.) I make my own pho, cha gio (fried rolls,) and goi cuon (fresh rolls) at home. While homemade is always better, sometimes I don't want to deal with my huge stock pot, all the bones, etc for just two people. I'm also a bit too lazy to do my own Vietnamese coffee, it takes ages to drip. This place has the best, most real tasting Vietnamese I've had so far in this area. Garnishes are really important, and they've so far always given me a decent amount of thai basil, with my pho (I like southern style) which most restaurants skimp on. I didn't get vermicelli, lettuce and mint with my cha gio, but most places don't do that either, so it's bonus points if they do. Garnishes have always been fresh, and so far have never had them slip in lemon instead of lime. Hate it when that happens. The pho broth isn't an obvious packet mix one, either, which seems to be a problem in the area. They do serve the skinnier noodles, which all the restaurants up here seem to do, which I'm not used to. I like the fact I can hear Vietnamese being spoken in the kitchen. Makes me feel at home, and adds to the authenticity. Service upon entering has always been immediate, and friendly by non-American standards. I was even given iced water while I waited for my takeaway. As a half-Viet, this is the place I recommend for the area.

    I was excited to try this place because it has some of the highest ratings for pho restaurants in the Lacey area, but I didn't walk away super impressed. The meal hit the spot, but I was looking for something more. Part of the reason could have been that this was the first time I tried a cold vermicelli noodle bowl (in my mind, it would be pho sans the broth) and although i was not completely disappointed, my meat was slightly dry. Underwhelming flavoring on the meat and I would have loved more veggies. Still the cold noodles were refreshing, especially after sitting in the summer heat outside, and there was more than a generous heap of noodles in my large bowl - I could barely get through 1/3 of the noodles in my bowl! I also tried their iced tea* - a bit too sweet for my taste. The BF had beef cubes with rice**, one of his favorites, and he devoured it...so I'm pretty sure it was good :). We also had some fresh spring rolls that were on point. I'm not fully counting out Pho Sai Gon. I think the next time though, I will opt for their pho bowl and come back to let you know what I think then. ===== *and by tea, i mean coffee...doh! **correct menu item is the Grilled Beef. BF always gets beef cubes with rice here in NY and said that's what he would order here. When his order came out it had beef on it so i assumed it was all the same, not knowing it was a different order/menu item. Thanks Su N. and Dean W. for the catch!

    I agree with the other reviewers who say their broth is the best. Beef and chicken are both superb. I have not even tried very many other Vietnamese restaurants in Washington because Pho Sai Gon 8 is as good as some of the best California pho restaurants. I only wish they made better spring rolls. Theirs are decent but would be so much better with mint, basil, and romaine lettuce instead of iceberg. Restaurant has good ambience and cleanliness. Service has always been friendly for me, whether takeout or dine-in. One of my favorite places in Olympia.

    Is there something special about this place that I don't know about? Or are people overrating this average pho restaurant? Probably the latter. My chicken pho and egg rolls came to $13.00. This seems a bit much. $7.00 for a bowl and $4.00 for egg rolls sounds about right. The price should have been closer to $10.00. I don't understand why Pho Sai Gon 8 has a 4.5 star rating. The service was decent, but nobody ever returned to refill my water glass. I was using a lot of hot sauce and REALLY WANTED SOME MORE FREAKING WATER, but didn't want to stand up and educate these people on customer service. Yes, the egg rolls are good. It is possible to make bad egg rolls because I have had them, but fortunately these were pretty damn tasty. The pho, however, was bland. I spiced it up with some hot sauce, which backfired on me because I needed to ration my water supply. Otherwise, it wasn't bad at all. It had nice, white pieces of chicken and plenty of noodles. I realize that these restaurants love to dump green stuff into your bowls, like, cilantro. I hate this stuff, but it's fine. I have learned to eat around them. Pho Sai Gon 8 seems to throw an abnormally large number of "green things" in their bowls. Not sure why. Overall, this was an exceptionally average experience. No surprises and no real serious criticisms...other than the water issue. Feel free to visit Pho Sai Gon 8, but don't expect to have a teeth-shattering pho'gasm.

    I've eaten at a lot of Vietnamese restaurants on the West Coast, and this is by far the best that I've been to. Seafood Pho was fresh and flavorful. The spring rolls were very fresh. The rice paper was neither dry nor too chewy, and the vegetables inside were crunchy and refreshing. The peanut dipping sauce was just the right combination of sweet and salty. Atmosphere of the restaurant was pleasant and cleanly. Service was friendly and prompt. I will definitely be eating here more often!

    I've tried their Pho Tai (raw steak) and Pho chin (brisket) .. You can't get both meats unless you add tendon and or meatballs. I thought the broth had funky, unpleasant flavor. Also, there are no vegetarian pho options - all pho is served with that beef broth including the chicken or tofu/veg option. But they also serve something called Southern noodle soup which is chicken broth based which i haven't tried. So next I tried their Bun (rice noodle salad). The Bun Bo Nuong (grilled beef bowl) was pretty good and that's what i get now when i stop here. Prices are pretty reasonable 6.89 for small pho, 7.36 for the beef salad The restaurant itself is pretty basic, could be cleaner..with individual tables but also shared communal tables. Not somewhere to take a date you want to impress.. I usually get takeout. Not the best, not the worst. I'm giving a 3 star because of the funky pho and weird parking and basic semi clean restaurant space, but the benefit of the doubt because they have a big menu and I've only tried a few things.

    service again was good, the staff even made sure we know wat sauce was wat on our table.. very kind, sir but we're not novices another guy who sat behind me was leaving n saw us eating our shrimp n bbq spring rolls n said 2 us, "good, ha?".. that, I don't think so.. the shrimp spring rolls were not good @ all, they need 2 stick 2 the traditional roots.. shredded lettuce is not acceptable, nor pickled veggies man.. need full leaf, basil, bean sprouts, mint, cilantro.. come on.. u don't need me 2 tell u! most of all, this app got no flavor.. poorly executed egg rolls were not that big n they were ok but these next 2 items will make me come back.. the iced coffee (was strong and good) and the vermicelli (was good, I got the 1 that came w/ egg rolls n pork chop that was shredded in2 smaller strips.. I guess 2 save $$$$$? who knows, but that was good along w/ the fish sauce) my wife had their pho n thought it was ok, once everything was mixed in.. I tasted her broth n thought it was decent b4 she added n mixed everything in restrooms were decent good Viet place in Olympia, but not 4 pho or appetizers

    Despite the food being good they are never open at times a normal restaurant would be. Closed on Saturday and early on Friday..insane. We will not be back and if i were you I wouldn't risk the drive to be disappointed.

    So far best vietnamese restaurant in the olympia/lacy/tumwater area. My favorite is Bun Bo Hue, Grill pork vermicelli is also good. The second best would go to Pho Hoa but their pho is bland, i recommend the beef stew with noodle over pho.

    When it comes to pho in Thurston County this place has the best broth. The parking outside it's kind of funky and tough to navigate. Inside there is a lovely fountain and I it's nice to listen to the flowing water in the background. I'm also really fond of the picture of the lighthouse and the geese and it's three-dimensional which makes it even better. The food is great! The service is good. I like the spring rolls the soup and eggrolls. I have yet to try the bánh mì but I will soon.

    this is my favorite vietnamese resturant in town...and I have tried them all! delicious food, friendly service, and a pleasant atmosphere. I have eaten a number of dishes and have never been dissapointed. My favorites are the pho in winter and during the summer, the house special (cold noodle salad with egg rolls and grilled pork). yummy, yummy, yummy!!

    I've been getting Pho here since around 2009, when the restaurant was half the size and much more "humble". It's easily the best place in Thurston County for Pho, and probably beyond that as far as I know. The banh mi is just insanely good. You won't bother eating them elsewhere in town after having one of theirs. I've been glad to see them be successful, as they've expanded the restaurant and spruced it up. Very nice family that owns it.

    Oh mah gawd. So I don't know it has taken me so long to get to Pho Saigon. My friend told me it was good, but boy....its majorly good. So delicious and fast. Broth was good and it tasted....clean. I got the veggie pho and there were a large amount of veggies in the bowl. The noodles weren't all clumpy or anything. I didn't have to to search for anything in the bowl. I got just what I wanted every time I went in for more. It came out of the kitchen super hot. Super hot!!! It came with the usual accompaniments (lime, bean sprouts, Thai basil) I didn't see any jalapeños though. That's fine because I never use them anyway. The restaurant itself is moderate in size. The do have a large table that can sit at least 10-16 people if you've got a large group. I'm sure they can also push some tables together for you too. I will also say that surprisingly their small is actually a large if you were to get it at other places. Oh! Did I mention it was fast, not but 5 mins after I ordered my veggie pho, it came out of the kitchen. I will definitely be back! I love my PhoMania but I think Pho Saigon has taken over my heart and taste buds. I'm not even going to take off one star for the terrible parking situation because when I went it wasn't super busy, so I didn't have a major time getting a spot. But the parking is weird. You'll see if you go.

    The rice dishes and spring rolls are fine, nothing special. So what makes this place stands out from your other Pho joints? The top quality of the beef - tender, well-marbled cuts that won't curl up from overcooking. The broth is somewhat inconsistent. It can be a little bland, or very flavorful when all goes well in the kitchen.

    Who does not like Pho that taste so good without bunch of msg in soup, good quality meats, and LARGE amount of food??? Well, I loved it and so did my friends :) I love to go out and eat pho at least once a week and this place have became my favorite place to go!! Other pho restaurants often have shabby pho meats but not this place. I can't believe that even meatball tastes good here!(I NEVER eat meatballs in other restaurants) Anyways good quality of pho, huge quantity, and good service. Just sad they are not open on Saturday and Friday. Oh and yes, bad parking-lot.

    Excellent food and value! Very clean friendly place for a wide variety of Pho and noodle bowls. I always get the Chicken Phone and it's the best around. Hubby had a House Special Bowl #41. Big yums! Definitely worth the try.

    This is by far the BEST pho within the Lacey/Olympia area! Every time I go there I get fast service and they are always so friendly! I usually go on my lunch which means I get one hour. I don't ever rush anyone so the first time I went in, I didn't tell them how much time I had, I sat down and was immediately greeted and asked if I knew what I wanted. I ordered and within ten minutes I had my food. This place is great and I recommend anyone I know to come here for a great experience!! Since I have found this place I go here at least twice and sometimes even three times a week! YUMMY!

    Got large chicken pho to-go. The bad: Eating utensils on the table are set up to make it easy for someone to put their flu germs on them and make you sick. I will not be eating in. Broth was in a container meant for cold food. These means that getting it home still in the container is chancy, and getting it home hot is not possible Chicken appears to be steamed, and has little flavor Did not find any hot peppers to mix into my soup, only sriracha. The Good: Broth is great Lots of chicken Service is fast Service is friendly Price is very good for what you get. Four stars because most of the pho in this town is not very good, most of the service is not very good, and because hopefully using the wrong container was a short term out of stock issue.

    My search is over!!! Seriously, don't even bother with another restaurant. This is the best Pho place in OLY/Lacey period. Stopped by around noon on a Thursday and it was packed. That was the first good sign. No one spoke very good English, so now I was getting really hopeful! The food was as good as can be. I ordered my typical Dac Biet. I could tell the quality was very good. I could smell the star anise very prominently. The broth had the typical oily splotches of a good bone marrow broth. The meat didn't have a rainbow sheen and the vegetables all came out crisp and fresh. The egg rolls were good and the fish sauce wasn't watered down. It had that very distinct smell and tasted potent. Overall, I'm very happy I found this place. For all the people that think PHo Mania or Pho Vy are good, please do yourself a favor and visit Pho Saigon 8.

    Authentic and tasty Vietnamese food! Whenever I come down from Seattle to visit my parents, we will invariably come here for a weekend lunch. My mom is a bit of a pho snob and she loves the pho here. The broth is flavorful and savory with the right balance of spices, the cuts of meat tender, and the generous plate of basil and sprouts always impeccably fresh. Today, we decided to branch out and try some other dishes. I had the egg roll and barbecue pork bun (vermicelli) and my mom ordered the bun bo Hue (spicy beef noodle soup). They were both very well done! My dish was overflowing with fresh lettuce, carrots, and herbs, the bun noodles chewy and delightful, the pork very flavorful. The egg rolls had good crunch but the filling was a bit mealy, and the accompanying fish sauce was a touch too sweet. My mom's bun bo Hue was superb! The broth was rich and spicy, satisfying and fiery. I love the slightly larger round rice noodles used in this dish, and they were cooked to al dente perfection. There seemed to be an endless amount of the tender beef slices in the bowl. The restaurant is clean with actual effort made to the decor, and service is always friendly.

    This is THE pho spot for me in olympia/ Lacey. Great service, well priced, broth full of flavor. I always a get the veggie. Their spring rolls and peanut sauce are very yummy as well. Been coming here since 2006, still my fave. Give em a try!

    My husband and I both got pho. I'd say the broth was around average. It's not bad, it's not great. I generally prefer a very clear broth, but the broth here was a little muddy in color. That said, the service was friendly, and the portion for the bean sprouts, basil, jalapenos and lime were good. I also liked that they offered a kid sized pho. My daughter loved it. We'll probably be back since I think this is probably one of the better pho places in the Lacey/Olympia area.

    Food: pho is good. Fresh ingredients. A little more generous in the ingredients than pho tai. Banh mi was good with the right amount of dressing. service: ok but it's expected for pho places (sad but true). Decor: mish mash of decorations. At least the place seems clean. Will return and try some other stuff since I feel this is as good as it gets in Olympia.

    Pho is always delicious. The broth is perfectly seasoned and not overdosed with fish sauce. Beef broth tastes like beef, chicken like chicken and so on. So many places get too squirrely with the nuk-mam in the broth. Huge plate of fresh sprouts, basil, jalapenos and lime on the side. Also, get the pork bahn mi sandwich on the app menu. Just great with a crispy roll that will rock the roof of your mouth. Never had a bad bowl of soup here.

    Tried to go here another time but they are closed on saturdays, so my wife and I made another trip out to this quaint place. I had the combination pho and shared spring rolls with my wife. The pho was really good. The soup was very good and there was plenty of beef in the soup, but I also love tendon in my Pho and this time around I only got one piece which was disappointing... The place is clean and the owner is friendly, we will definitely be going back.

    Best Pho in Western Washington by far. Bun Bo Hue was PERFECT. The Pho is VERY AUTHENTIC. To bad we moved to Tukwila we will definitely make the trip every now and then to eat some real PHO. Miss it!!!

    A no go for vegetarians who want a vegetarian pho. They don't make vegetarian broth for their pho's. Waitress didn't even know what vegetarian broth based pho meant. So sad. Tofu and vegetable bún was good if you don't mind eating it without any dressing/fish sauce. I ate mine with si racha sauce . Note to waitstaff: please do not give vegetarians fish sauce. Unless they call themselves vegetarians but eat fish. Um. Hello. Pescatarian.

    This is a review for vegetarians curious about Pho Sai Gon 8 Restaurant. This establishment is for meat eaters, plain and simple. There are exactly two items on the menu that can be made vegetarian: fresh rolls with tofu, bahn mi sandwich with tofu. I ordered the latter, and it was bland. The tofu didn't have any marinaded flavor, and there wasn't enough pickled veggies to add zip. I kept squirting on more sriracha to get some flavor happening. I checked with the waiter as well as read the menu carefully, and those are the only vegetarian options (the other dishes all have beef broth or animal meat in them). If you want a tastier tofu bahn mi, I prefer the one at Saigon Rendezvous in downtown Olympia or at Pho Tai on College St in Lacey.

    Impressed so far. First visit. Will be coming back to check for consistency. Pho is good, spring rolls were awesome and service was spot on, even with it being busy. Portion sizes were larger than other places for the price. Plenty of seating and good atmosphere. Parking is the only issue. Go behind the new Subway from Slater Kinney and park there. Easiest way to get back into two way traffic.

    Meh. I stopped by here on the way home from Seattle because of the good reviews & because it's literally right off the freeway. I was underwhelmed. It does have good points - The service was friendly & the wait to-go was not long. However, the tofu banh mi was bland, dry & skimpy on ingredients (except tofu). Not much cucumber, carrot , daikon & only 2 jalapeños! Sniff. The mayo spread was not spicy at all & there wasn't much of it. It was heavy on cilantro. I also ordered spring rolls - I was confused at first because I always called that type of roll a "salad roll" as opposed to the spring roll, which is generally fried where I'm from. Anyway they were ok but heavy on rice noodles & lettuce. They would taste better & more flavorful if they were made with basil leaves which these did not have. They came with a dipping sauce which was ok but it was not peanut or plum. Overall I was not particularly impressed & probably won't go out of my way to stop here again.

    Don't let the 3 stars fool you...their pho is some, if not the best in the area. But when you mess up an order in back-to-back visits, you lose a star. Another star is lost due to staff and cleanliness, it is hit or miss for me, but when I'm not checked on after my food is brought out, its not good, and the tables arent always wiped down, or sticky, chairs are a bit worn as well..but they do have good food, if you're craving pho..

    There are many places for Pho here in the Oly/Lacey/Tumwater area, but this place is as good as you can get. Not to mention the other great food that they make and the large selection of their menu. This is a must stop Pho shop.

    I have been going to this place since it was under a different owner and called "I love pho" the food was good then and it is most excellent now. I am somewhat of a pho snob I suppose and I can quite honestly say that I would personally prefer the pho and banh mi that I have had here over any other place I've been. Ingredients are always extremely fresh, the service is exactly what I like. It is family owned and operated so it is consistent and delicious. I cannot say enough good things. Solid 5 stars!

    Pho Saigon 8 has made living here a little bit easier with their amazing food. I've sampled many pho restaurants from Olympia to Seattle and haven't found one that reminds me of my favorite pho restaurant in Honolulu besides this place and thankfully it is close to home. So far what I can recommend are spring rolls, pho, the rice dishes (pork and beef), spicy soup (cannot spell it and I prefer the pho noodle with it), korean short ribs, and beef stew! Besides the food the owners are friendly and awesome.

    Really Olympia?! 4 stars?! That is how I know most of the people who have rated this place have never had real pho. Here's the thing, I'm a pho snob. And coming from So Cal, the pho capital of the U.S., I can be. I should have known I was in for a disappointing bowl of pho when even the waiter, who was Vietnamese, called the soup "pho," as "fo." It's not "fo," it's "fa." The soup base itself was salty yet tasted watered-down, as though they had stuck a ton of ice cubes in it. There was a strange aftertaste... from what, I do not know, but it was NOT good. The meat was okay, but I think I had a total of five slices?! The noodles were mushy and tasted like glue, which tells me that had been sitting in the soup too long! The sides (bean sprouts and basil) seemed fresh, but really, what's the point if the soup itself is gross?! The spring rolls were pretty good; however, at $5 I wouldn't order them again as they should only cost between $3-$3.50! Down in So Cal, I could get them for $2.50! All in all, I do not plan on coming back here... and am starting to think I'm going to have to head to Tacoma or even Seattle to get good authentic pho!!

    I don't know why this place has two different places to review (one with 4 stars, the other with 5 stars?) anyways, consistently good food. Their pho broth has good flavor. Their banh mi is to die for with fresh, crusty break and yummy meat and veggies and their spring rolls are delish! Sometimes the service lacks, but it's never been that terrible! Recommended!
