Chicken Mole to die for. Hubby had an equally impressive chile relleno. And to top it off our friends devoured their perfectly spiced kung pao chicken. As the name implies, Infusion has an ethnically eclectic menu that serves up the best of many cultures. Go!

This is our go to place. We know the service will be good and the food will be great. Even though we have moved from the area, every time we visit this is on our list of places to dine.

Well, what a pleasant surprise! Stopped here for a late lunch. We had the Orange Chicken and Kung Pao Chicken and both were OUTSTANDING! Very very flavorful! The service is also very good, and the chef/owner came out to check on us. We will definitely be back!

We have been here twice, and both times the food was delicious! As a family of 6 with varied tastes it's great to have a place we can go where everyone can get what they want. The ingredients are very fresh, expertly prepared and plated with care. Last time we visited, two of my girls shared Chicken Alfredo, which they devoured, and said was "awesome!!", this time they had the teriyaki chicken and were equally as impressed. My two other kids chose from the kids meals and enjoyed the cheese burger and chicken tenders. They were above average for kids meals and the portions large enough to fill an older child. I had the Chile Relleno last time, it was perfectly cooked, my only criticism is that it was so very mild, but they do offer a spicy hot sauce that helped give it some kick. It's really a good thing that it's mild, now I know my kids could even eat it. This time I had the orange chicken, but asked if they could make it with tofu, which the happily did. It was superb! The tofu was cooked to light golden brown perfection and the orange sauce had just the right amount of kick, balancing out the sweet and sour of the orange. My husband had the fajita plate which he also enjoyed. I'm already looking forward to our next meal there!

We have been several times and have absolutely loved each and every dish we've tried. Ingredients are fresh, and the presentation is stellar. Eduardo, the chef, apparently has trained with the best for several years, and you can tell he absolutely loves to cook. From the Carne Asada to the Orange Chicken (my husband's favorite) to the lunchtime Cheeseburger (dripping with cheese and flavor), we can't get enough!! The spanish rice is like mama used to make, Eduardo's wife's Tortilla soup is chock full of veggies, chicken and avocadoes, and you can get just about any condiment on the side, served on its own little plate. Another reviewer said Infusion Cuisine is like a 5 star restaurant without the high prices, and I would have to agree wholeheartedly. We also love the atmosphere; the staff is friendly and very accommodating, and the little details, from the beautiful flowers on the counters, to the little jars full of water and seashells on the table are divinely appointed without a hint of being overbearing. I love meeting friends here, taking family here, and even going for a bite by myself when I feel the need for pampering. What a wonderful addition to the corner at Hannegan and Pole!

Had fantastic Oysters Rockefeller (special order) at Infusion the other evening. Eduardo's preparation was absolutely perfect. We enjoyed them together with the Seafood Bowl which they are now featuriing on weekends. It is filled with great local seafood served over pasta and a terrific broth. Chef Eduardo is the best around! Highly recommended.

I've only gone here twice but I plan on coming here as much as I can before I move in two months. The food is amazingly good. You can tell the chef is passionate about what he does as it shows in the presentation and taste of the food. The setting is nice and calming, almost a "beachy" feeling and I love it! The waitress is so nice and sweet, too. I HIGHLY recommend this place!

Fantastic food, we really enjoyed the curious mashup of Asian, Mexican and Italian dishes. We had the Kung Pao Tofu (yum!), Panang Curry Tofu, and 3 orders of their veggie rolls (drool!). Worth the 10 minute drive out of Bellingham downtown. Recommended!

We were amazed. It was an unlikely setting for elegant food. We took a friend for his birthday and chose 3 different Mexican dishes. They were expertly prepared and wonderfully presented. The food and service made the celebration. AND it didn't cost as much as we thought it would.

After a poor experience elsewhere, husband and I stopped by to see what was good here. It's relatively new on the Hannegan, where Cassoulet used to be. I had eaten a quick lunch (burger and fries) here before and had liked it, and it was close. Decor is simple, elegant, but homey. Don't be fooled by the home-made, widely varied menu. Usually when a restaurant advertises three different regional cuisines, I get leery, but this place delivers beyond its promise. We ordered Teriyaki chicken and the Pistachio Pesto penne, both of which came plated beautifully, all components were fresh, cooked just right, and sauces obviously made from scratch. Good timing by the waitress (Jessie, married to Eduardo, the chef.) as well. Charming couple. We liked the food so well, we ordered a dinner for 15 for Christmas, and Jessie and Eduardo were very accommodating. We look forward to trying more dishes here!

I've eaten there 3 times so far & enjoyed each time even more! All 3 different dishes I've had I've liked & would get again. The people I've gone there with would go back also. Service is great. Can't wait to go back to again!

I can honestly tell you that the Pistachio Pesto Linguine was just about the best pasta dish that I've ever had! My wife and I had an extremely pleasant experiences here and have returned several times. The owners are the sweetest people and really love their customers.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Italian Cuisine

The immense popularity of Italian cuisine globally isn't unknown. You can find an Italian Pizzeria around every corner of almost every city in the United States. Not to forget that in every house, people enjoy mac and cheese as comfort food. But it would be wrong to believe that Italian food starts with pizza and ends with good pasta as this Mediterranean country has much more to offer other than these two dishes. In Italian Cuisine, there is a high use of fresh tomatoes, all kinds of herbs, great quality of cheese, all types of meat, seafood and fresh handmade pasta. Many find it hard to believe that Italians have been making noodles long back.

Italian and Greek cuisines are always mistaken to be same, but they are poles apart. The primary difference between the two cuisines is the use of cheese in most of the Italian dishes. Italians love to cultivate their own cheese and process them as per their food requirement. It is believed that some cheese is so expensive that cheese producers secure them in lockers.

If you are bored eating the same old pasta or pizza, you can try some of the authentic Italian dishes like Risotto, Polenta, Ribollita, Lasagna, Fiorentina Steak, Bottarga, Ossobuco, Carbonara, Focaccia, Arancini and Supplì. Another item which Italians love to relish every morning is a good cup of Italian Coffee. Once you taste a freshly brewed cup of Italian Coffee, you might not visit Starbucks ever again. Authentic Italian food is made with heart and soul, so go find a restaurant where you can relish Italian cuisine in your city.
