    Hanging out at the mall and desperate for something reasonably healthy and low carb to eat, I waded through the deep fried fast food sugary stuff and settled on Coyotes Express. It's a food court stand and is set up like Chipotle where you tell the guy behind the counter what you want in your burrito. I asked him to make mine bare style with no tortilla, rice or beans and with extra meat. The portions were a little on the skimpy side but I'm used to that since I don't load my meals up with cheap carbs like rice and beans. You'd think businesses would knock off a few bucks since I'm not getting a lot of food, but they never do. See my photo, that is what they call "double meat." I was surprised at how tasty my bare burrito was and the quality of ingredients was very good. The chicken was real chicken breast, for instance, and the shredded cheese was real cheese, not that processed cheese food stuff. The pico de gallo was very fresh and made with ripe tomatoes. As with most Mexican food in Utah, everything was very bland (but that's nothing a little hot sauce can't fix). Overall a good option for healthy eating at the mall.
