Random chance landed me in Denison, and when in Texas, eat Que. This place came recommended by the locals I was visiting on business. As other reviews have covered the place nicely I'll just add my solid 3 stars.

We came to TX a few years ago to play golf and fish on Lake Texoma. A friend offered his place in Bonham as a free place to stay and we gratefully accepted. We needed a BBQ infusion and were told that Hickory in Bonham was a good place to go.....we got very good advice! We returned for he same trip this week, and returned to Hickory for a fix of BBQ....and this time brought a friend along with us...4 guys, eating piles of BBQ is about as pure a review as you can ask for. We did not speak often, but through the guttural noises and grunts you could ascertain that raving success was at hand. I have brisket each time I go and vary the second meat, this trip I had brisket and sausage, which were both great. The brisket was tender, but with a good toothsome bite to it. I always ask for the burnt ends and they were phenomenal! The sausage was really good too but needed to be spicier and the Texas Toast was the best I've had in eons! The sides are good, but I felt the pinto beans lacked flavor..short of this, I would rate Hickory very high!

Only BBQ in Bonham. Great ribs. Dry tasteless overcooked brisket with no smoke ring or flavor. Lady that answered phone was rude. Skip everything but the ribs.

We came in early (11:50) for lunch on a Wednesday. If our visit was representative this place is a lunch hotspot. I got the impression most of them were local regulars by the way they talked familiarly with the staff and settled into their meal. The line was over 10 diners long for much of the time we were there. This place is a self-service set up. The staff behind the counter were friendly. The atmosphere is what I call western eclectic: Lots of old western framed posters, hats, old chaps, etc... Our booth consisted of a formica covered table with church benches that were too large for the table. Places like this seem to be all about the food so I was encouraged that we were in for a treat. The Good: My wife and I enjoyed the hickory club: Smoked sausage, ham and sliced beef on a toasted hoagie roll. We had 2 sides each: The coleslaw and noodle salad were average with the potato salad being the standout on account of it being very creamy and light on the mustard. The Bad: My daughter didn't finish her chopped beef so I tried it and tasted an acidic aftertaste. I believe the cause was the house sauce which i didn't care for on her sandwich because of the an abundance of vinegar in it. But in low doses like on our hickory club, the sauce was complimentary, on the chopped beef it was overpowering. I would rank this place in the middle only because the chopped beef (a BBQ standard) was so unsavory. In lieu of 2 sides, my daughter had the brownie which was large but closer to cake in consistency.

Good BBQ in a small town joint. The staff is friendly and patient (important when you have three teenage girls trying to figure out what they want). The flavor of the brisket was great, they had a decent BBQ sauce, and the sides were tasty as well. I was a little disappointed with the "hot links" though. They weren't very hot and they tasted and looked almost like spicy hot dogs. It's an old location and has the inherent quirks that go along with that. The bathroom serves it's purpose but I'm glad that I pee standing up, it would have been super cramped if you had to sit down. Overall it's not a bad stop for a meal as you're passing through Bonham.

Being from Texas, it's a given that I try the BBQ places in the town where I work. However, being from Texas also means that I can be down right picky about my BBQ and what I find good or bad. Hickory falls slap in the middle on the quality scale. For the money, you get a ton of meat and the sides are usually alright. I can make it out of here for well under $10, even if I order a few side dishes. The typical side offerings are things like mashed potatoes, potato salad, corn, mac & cheese, etc. I usually stick to the sausage or brisket when I visit, but I hear good things of the ham and turkey, too. It's kind of an assembly line setup: you order, they make the sandwich or chop up the meat, then you get your plate & choose your sides yourself. Oh, and the BBQ sauce is alright, too. They have daily specials, so check those out when you arrive. Everyone that works there is nice & seem to work as quickly as possible. There is no waiter service here, so be prepared to help yourself to whatever you need. Not a bad little place, but it's not my favorite for tasty meat ;)
