    It's finally winter!! (yes, I know it's September, but the true essence of #pdxwinter is chilly drizzle from now until May. AND I LOVE IT.) So we're walking through the Pearl on a slightly drizzly evening last week and come across this unassuming, nondescript place that I'm sure I've walked by a hundred times. It's like a fast casual pho joint. Chi-Pho-Tle. There's uncovered outdoor seating, which will have to do, as we're dragging a dog around. My boyfriend orders inside, and our pho is delivered promptly. We wait a few more minutes to get some utensils, but no biggie. As we wait, I read that the restaurant name has changed several times in the past couple of years. No wonder I didn't recognize it. My tofu/veggie pho didn't disappoint. Very flavorful and fresh. Even better with tiny drops of acid rain that are gentle plinking into the surface of my soup. Delightful (no, really). My boyfriend got some kind of meaty pho and, judging by his excessive slurping, apparently liked it. So did the dog. I'll be back next time I have a pho craving. Two thumbs and one paw up.

    Great food, good prices, but one piece of advice: Ditch Daniel, the host/register guy. I eat in and out at Pho Van Fresh a few times a month. Daniel has never once made a good impression: He complains about his day, he once told me "you're going to die for as much as you eat here!" and today chastised me and a coworker for placing an order together by phone but wanting to pay separately at pickup. Why this guy is essentially the face of Pho Van - at least the primary interaction of most customers - is a mystery!

    We were staying a few blocks away from this spot and ended up eating here four times during our three weeks in Portland. Dined in twice and got take out twice. Our favorites were the crazy noodles with tofu and the sandwiches. The veggie spring rolls were also good. I was not a fan of the curry, which I got over noodles. Just didn't have a lot of flavor. All the other dishes were really good. It's casual here. Stand in line, place your order and grab a table. They deliver the food to your table. They get really busy around lunch time, but still manage to get things out pretty quickly. A good bet if you are in the Pearl and want a fast and tasty lunch.

    We went here again and we definitely to get the same vegetarian pho flavors as last time. Much blander an a lack of vegetables in the vegetarian pho. The white onions were bland, the broth itself looked like water and there was one baby bok choy and no mushrooms in the coup like the last time that we ate here. I should have said something, but I just didn't care at this point. My child was hungry...but I knew that something was up with the soup when she only ate a few bites and called it quits...for a kid who is obsessed with pho. We ordered: -Vegetarian Pho ($8.50) -A Diet Coke (12 ounce bottle/only comes in a glass bottle) -Ninkasi (Had to be AT LEAST $6.50) Our total was $16.50. Our receipt didn't list the prices for the drinks. I thought the price was a little steep for 2 drinks and a soup. Overall, we were incredibly disappointed in the service and the quality of the food for the price...which I am still trying to decipher in my mind. ALTERNATIVE PHO RECOMMENDATION: ---Bambuza in the s. waterfront district. Much, much better pho for the same price.

    I'm liking the new counter service atmosphere. A quick fresh lunch is way more convenient now. I enjoyed the curry banh mi, but asked for jalapeños on the side which somehow turned into SEEDY JALAPENOS HIDING BEHIND CILANTRO FACE PUNCH. Yeah, I'm a wimp.

    We stopped in for a quick lunch while shopping and kicking around portland. You place your order at the counter, then take a seat and your lunch will be delivered. The broth was very nice, not too salty. The chicken was nice cuts of meat. I thought the pricing was fair as well.

    Silk was unapproachable. Pho Van Fresh is hip, friendly, and makes me want to stop in every time I pass. Not only is the counter service quick and easy, but the whole block now smells amazing with the food they're pumping out of the kitchen. I went once on a rainy day this summer, but can't wait to make more trips this fall/winter as the temperature drops and hot bowls of pho and ramen become my go-to craving. The format is very simple: walk in, order, take your number and everything is brought out to you. The Vietnamese coffee reminded me of a "Cafe Bomba" I had in Spain, and packs a punch (but is still sweet and delicious). I also had a vermicelli bowl, which was a good vegetarian option and very filling, but I wish the noodles had been warm too. It was a little pricier compared to the food carts downtown, but still better than a formal sit-down place. I'll definitely be back soon!

    Before it was Silk, it was just Pho--I think! Now it's Pho Van Fresh! No matter what the owner calls it, all the dishes we've tried are really good for lunch, dinner and happy hour. Every time! Yes, we have been there, counting today--31 times according to my comprehensive restaurant log, which I was rating restaurants years before joining Yelp. Same owners. The food has not changed. Love the Pho bowls! Always good. The rustic & casual decor is all new. At lunch today, very busy and lively. No more table serving. Walk up to the counter and order. Food--this is not fast food--is hearty and delicious. I had a large bowl, heaping full! Chicken curry with noodles and lots of mixed veggies, i.e., cooked carrots & sweet potato. Onion, lettuce, cucumber, broccoli with a touch of mint. Yummy curry! A Pearl "fav." Chopsticks optional.

    Major points: weak broth, chili sauce is like ketchup. As somewhat of a pho fanatic, I was excited for my first Pho Van bowl. But this sterile, hipster-infested spot was a major disappointment. The broth has no aroma, no complexity. The chili sauce doesn't even help; its like Ragu. The noodles are thin, but they're probably the best part. And the service was terrible. This is probably why they have you pay first! We finished our bottle of water (one on every table for God knows how long) and it remained empty until we left. Nothing like the traditional Vietnamese efficiency I'm used to. I guess if you're starving or want to impress your American Apparel clad friends with your "knowledge" of exotic cuisine, Pho Van is okay. I mean, its cheap and its pho!

    Love love love the new Pho Van Fresh concept! I used to live here and loved Silk, so decided to come in here with my family on our walk through the Pearl district on the hottest day in Portland. Ordered the Iced Green Tea with Chia seeds and I swear it was the best green tea I've ever had and saved me from heat stroke!! I've never had Thai Green tea - only Matcha powdered green tea so was really surprised when the cute friendly guy behind the counter told me it was made fresh with leaves! So cool, so fragrant, so refreshing - I ordered 2 in a row!! We had just had breakfast so just really came in to duck out of the heat and to check out the new concept, but we had to try a Banh Mi as that was something one of my friends recommended to try first here. Have to say, the Classic (the traditional combo) with Homemade Pate, Vietnamese ham and homemade pork belly was OUT OF THIS WORLD! For $6.95, it was a steal! We also Decided to try the "Sloppy Joe" - a buttery-carmelly smooth concoction of ground beef, Red curry spices topped with pickled red onions and thin slices of fresh green mango (genius!) and finished off with sprigs of fresh basil. The 4 of us were stuffed for under $20, but I wanted to try some of the other dishes which kept passing by us so I will def. be back before we leave!!

    Darling sweet guy at the counter. Friendly and effiicient. Other than that, slow service. It took forever for us to receive our vegetable rolls, chicken dumplings, and papaya salad. My daughter iced tea drink was serviced right away by the sweet cashier. The vegetable rolls were fine, but the skin was a little tough to chew. The papaya salad was a little too spicy for us and had fish chips in it, which took away from the fresh not too tasty papaya. We've had better. The chicken dumplings were very good. My sort of vegetarian daughter agree they were the best of the 3 dishes. They were small, but had a nice sauce and a couple mushroom slices. It was nice and busy, so I hope they make it. We were sort of surprised at how expensive it turned out to be for a quick order at the counter lunch.

    This place just opened-ish. A total revamp of Silk before it. Today was my second visit and I'm surprised at the number of stars for this place on Yelp. I've eaten here two times now, always in the bar, and the food is excellent! And, Jimmy in the bar seems legit. I think you should come here. Do this.

    Formerly known as Silk - a restaurant with overpriced Pho... I undoubtedly hesitated to give this place a go. My friend lives in the Pearl and he desperately wanted to try this. The decor is great, hipster, and very Portland. I feel like they're trying to be Luc Lac though. You order as you come in and they give you a number so they find you after you've found a table. I ordered the Chicken Curry with noodles at 1 pm. My friend unfortunately showed up late (about 1:20 pm) and ordered just a regular bowl of pho. He arrived and ordered later than me and still got his food before I did. What were they doing for a good 30 minutes with my order? Horrible service with no notice of when my food was coming out. The cashier bringing out my friend's pho didn't even apologize for any delay on my food. It came to the point that I asked for my food to go because I didn't receive my food til about 1:40 pm and had to walk back downtown for a work meeting at 2 pm. Unbelievable. I will not return to this location. A revamp in name and decor hasn't done any good. I can see right through it all and sure your prices may be slightly cheaper from Silk's, but I take so much appreciation in an establishment that shines in customer service. Pho Van Fresh does not have that.

    Good pho but not my favorite. Please, hotter (temperature) broth and not so sweet. Spendy for pho but it's The Pearl, I understand......I know what our taxes are here. Need more meat options like other pho joints. Small and large would be nice and large isn't so large. And yes I will be back. Lots of potential here. If it were as good as Toast and Pho we would be there twice a week! Very friendly staff and nice atmosphere.

    Best lunch spot in the Pearl. If you're looking for good Vietnamese food in the Pearl, this is the only choice. Their banh mi is one of the best I've eaten. Their noodle bowls are good and legit. For a healthier version, they'll substitute noodles with brown rice. My personal favorite touch is their egg rolls are made with rice paper instead of won ton wrappers. Their bao beats Boke Bowl (especially at a bit over $3). Skip the curry. Do try the soy milk. It's Vietnamese style, as is their coffee. They also serve beer.

    This place is great for lunch during the week. We come in all the time since the office is just a few blocks away. The food comes out fast and is consistently delicious. Even my Vietnamese girlfriend likes it when we come here- her only criticism is that the portion sizes are a little smaller than a typical Vietnamese restaurant would serve. In my opinion for business lunch that is actually ideal so you're not falling asleep at your desk in the afternoon... The interior of the restaurant is also very cool and feels like a good fit within the district. Overall everything about it is far superior to the previous incarnation Silk, which was a lackluster lunch spot at best.

    The food is better than most in the genre, but pray that you get good service. Nothing rankles more than watching other people get served out of turn after you've ordered - and the observed lack of communication between staff means this is surely an experience not exclusive to my visit. Service notes: I asked for ice, never got it, had to ask someone else. Said I was sitting out front, server was never notified. Self serviced for all utensils, water, napkins. I get that this is a pretty no frills place - more like a deli than a restaurant, but these are just basics, especially when it wasn't even all that busy. Food notes: decent Vietnamese cafe fare, better than some of the well reviewed hole-in-the-wall places in SE Portland. Worth a trip? No. But good if you're in the neighborhood visiting Powell's, etc.

    It's not Silk any more. Ambience, etc., has been downgraded. If you go in the evening you can sit at the bar and have your dinner there. So that's one way to circumvent most of the changes in what used to be SILK. Note: Lemongrass chicken banh mi is still available, but I think it got left off the menu. Also, their wonton noodle soup is quite good. B-u-t, I'm not sure if the portions are the same as in the past. The young lady bartender is good and cheerful and enthusiastic. She used to be a server in the dining room.

    The taste was not up to par and the guy at the counter was a bit douchey. The only reason I am giving 2 stars is because the seat was comfortable and the food came out kind of fast, even though it lacked in flavor. We were there for 35 minutes and the water bottle at our table was never filled. Will not be going here again as I have had much better pho at more accommodating places in Portland.

    This place looked nice and clean and their cashier was friendly. There was very few choices of pho and I ordered the beef pho without the brisket. The portion was smaller than most places with only a half filled bowl of broth, but it was tasty. The quality of the meat was ok, but a little tough. Service was very slow (20 minute wait) at 3pm with only 6 other tables eating.

    I had a hankering for some Pho so I decided to check this place out because it just opened downtown. After giving the menu a once over I saw Ramen with 5 spice Beef Cheek so how could I not order that? The ramen noodles were done well. They were dense and spongy with good flavor. The beef cheeks were mostly tender with some chewy tendon bits in there. The broth was really good but there just wasn't very much of it. The flavors in this dish were all good to great but the portion size was very underwhelming. I'd like to come back and try their pho and while the flavors of the ramen were good I probably wouldn't order it again unless I just wanted a snack.

    Today was my second trip to this establishment. Both times were equally as amazing! I've tried the fried veggie rolls, papaya salad, wings, and the lemongrass chicken bowl (one time with jasmine rice & one time with rice noodles). My favorite cocktail is the pineapple mojito. It's on point! I sat in the bar during both visits and received great service from Jimmy. Maybe pho isn't their best dish (I've gathered from previous reviews, but not from experience.), but the food I had was pretty damn tasty! Try it!!!

    Serviceable and quick pho and Thai iced tea. I think they should shut down one entrance as it is not table service and a bit confusing if you come off of 11th Ave. They didn't give me anything to slurp up my broth with sadly. The side accoutrements were not that fresh and they almost forgot my tea, and I didn't get the weird yogurt pictures on the wall and outside. Will try again though!

    I'm just going to start this review by saying that If you're looking pho, go to Lúc Lác instead. You'll have a much better time and a much better meal. It's an odd space because it still is laid out like Silk (its previous name before the remodel), and not really set up for the type of counter service they do. The food we had was beyond mediocre. The broth was bland as can be, the meat was alright, and it just wasn't enjoyable. The cashiers were kind of rude and awkward, just making weird jokes to each other the whole time. We ordered food for takeout and it took far too long for it to come out. It turned out that they had it ready for a long time, but failed to notice that it was done and let us know even though we were sitting right in front of them holding our number. We certainly won't be back, it's a much better experience at Lúc Lác downtown, and the food is much better there too.

    I wish I'd had the opportunity to try the food here, but after waiting 15 minutes for a bowl of noodles -- at 2:30 in the afternoon with no other pending orders -- I finally gave up. They did cheerfully refund my money, but the overall experience gave me the impression they don't really give a damn.

    Had a late lunch here today. It was pretty vacant which makes sense for the time of day. I ordered a ban mi and after 30 min got my sandwich & had to beat cheeks back to work! I peel it open and force my teeth through rock hard day old burnt bread only for that joyous texture on the inside of cartilage, gristle and ligament mixed with a "this meat is possibly turned" flavor. This was my 2nd try at Pho Van and I'm over it. Slow service with terrible food both times. I miss Silk!!!

    The iced green tea with Chia seeds is pretty darn good and very green tea-y. It gets pretty busy here and there was a lie at the counter to order, but it moves very quickly. I'll be trying the Thai tea w/Chia sometime soon, and maybe grab something to eat...the food looked good and the bowls contained huge portions.

    Love the new true Vietnamese fast food concept. I had the catfish banh mi and that the flavors were fantastic. My mother had the eggplant sandwich and loved it too. The thai iced tea with chia is addictive and sadly i live in another state. Cant wait to come back! Thanks!

    I absolutely love pho and since Pho Van Fresh is close to where I live, I've been at least five times...but can't remember a time I finished my meal feeling satisfied. I get the chicken pho, pretty simple, but the meat is just gross. First off you have to love dark meat if you eat here and be okay with veiny meat... I don't hate dark meat, but half of the meat is always so gross looking or it's chewy from veins or w/e - so I don't end up eating nearly half the chicken. And I've noticed more than once that some pieces taste kind of soapy. I have tried a few other dishes and they weren't bad. But I think I've given the place too many chances...I won't be going there again. Instead of walking to the restaurant, I'll take the short car ride to Luc Lac to get pho with some of the best quality chicken I've ever been served. I actually don't think I have ever been served worse chicken than at Pho Van Fresh/Silk. Try them both for yourself, you'll taste the difference immediately. Oh, and Luc Lac is cheaper somehow...imagine that.

    Much needed quick and fresh Asian food in the pearl. I love the new approach and great for take out. Those folks wanting the old silk need to get with the times. Pearl has enough stuffy sit down restaurants. We need these type of restaurants that serve folks that need good, quick, tasty food. I can eat there everyday of the week. Thank you pho van!!

    I've always been a fan the Pho Van restaurants...and this one is no different! Pho Van introduces their newest concept-- counter service and casual style dining at Pho Van Fresh. If you think you're going to miss the flavors from their other Pho Van joints, think again because Fresh has it all... they've got a section on the menu that preserves what we've come to love and keeps us coming back for more with the slightly different play on traditional favorites. Working close by I find myself always looking for a quick lunch. Oh, you too you say? Well, let me make a quick suggestion to the Saigon rolls and the Chicken Curry Banh Mi!! Got time for dessert? Housemade yogurt! They kept their bar and still do their happy hour as well... one of my favorite spots. This place is refreshingly fresh (sorry, couldn't resist!).

    I only have one complaint about the food and that pertains to the salmon rolls. The salmon wasn't fresh and we are all just a tad worried we will get sick tonight. I can say though that the rest of the meal was really good and no I don't have any other complaints about the food. The service, though, it was not only poor service it was genuinely disrespectful and made us leave feeling upset more than anything. When our order was taken everything was correct and we were all off to a good start. As the food arrived we were missing an appetizer and my father in laws entree. We all sat awkwardly not yet eating so as not to rub it in his face that we got our yummy food first and then 5 minutes passed. A waiter came out to let us know that they forgot to charge us for the chicken pho we ordered and thus it was not prepared and they are working on it now. Not a big deal in normal circumstances but why did we have to wait 5 minutes to find out you weren't even working on the food. Now another 10 minutes passed and the food arrives. My father in law is the only person without food in front of them and the waiter slops a tray down, spills food onto my father in law and then proceeds to ask "who is this for", I guess it wasn't obvious that it was for the person that's sat without food the last 25 minutes. At this point we have completely forgotten about our appetizer, but after the scowl from the kitchen staff, who cares at this point. About half way through our meal comes the, very nearly rotten, salmon rolls. Whatever we take a bite, it was gross and we move on. The main problem was that during our meal the only time the staff would come to the table was to remind us to stop and pay for the chicken bowl they forgot to charge us for originally. "Got it no big deal, but, um, excuse me can we have some more water" we say the only response we received was a scowl and an eye roll. You have to remember that at this point we have one stained shirt thanks to the rude kitchen staff that threw down food, rotten salmon rolls and no water. Then as we ask for assistance they walk by, but not like they're in a hurry, they stop at the booth behind and in front of us and ask them the same questions we just asked. "Would you like some more water, do you guys need a napkin" asks the waiter to the other tables while glancing over to our table multiple times. I would say that is just a little f'd up, but who am I to judge right, it's not like I just wanted to take my family from out of town to some good food. I imagine every restaurant would do that to its customers or maybe it's just that this place doesn't really give a damn once you've paid. This is just our story though, hope it helps you decide where to take your friends and family when there are literally tons of better restaurants in the Pearl, let alone Portland.

    The store looked quite cute from the outside so I decided to give it a try. After a trip to Powell books I was quite hungry, dragging around a dozen heavy books was quite the exercise. I ordered the beef pho noodles and the chicken dumplings on the suggestion of the kind lady at the front desk. I also ordered the lemonade because it looked interesting. I got a number and sat down at my table. The pho came and was ok. The broth wasn't anything spectacular, just typical pho. Tasted a bit sweet and likely full of msg. The lemonade was the highlight of the meal, it was salty, sour, and sweet in just the right way. It reminded me of the pickled fruits I enjoyed in China as a kid. The really turn off was the chicken dumpling. The flavour wasn't bad, although the dumplings tasted store bought. I took a bite and touched something hard. Surprise! A piece of plastic from god knows where was inside my dumpling. I bought this to the attention of the serving staff and they immediately took the piece of plastic into the kitchen. After many long minutes, a staff was kind enough to change my plate of dumplings for new ones. However, I never heard an apology from kitchen staff, nor an explanation. The meal wasn't very appetizing after this. I don't think I will ever come back.

    This place used to be really good when it was called "Silk," but unfortunately not anymore! Today, the female cashier with big thighs was rude and completely mistook our order, charging us more without any explanation. And the meal itself was so small considering the price. I could have just tried to enjoy the meal if their unpleasantness just ended here. However, while I was eating the noodles, I started to recognize the strange sensation of a soapy, peppermint taste in my mouth. I tried several times more to be sure and it was definitely soap. This use-to-be-a-good-place turned into something horrible. Please find some other vietnamese restaurants, people!
