    An unoriginal Chipotle carbon copy with decent thin crust and an unpleasant staff. I'm a pizza connoisseur. I've spent years perfecting my own at home Neapolitan pizza, traveled to Italy and Chicago mainly for pizza and tried about every pie shop in Minnesota. I'll tell you right off the bat I favor Neapolitan pizza first and thin crust about last - but I still love anything that is pizza. Pieology comes to us from Southern California, this location in Mankato is the third in the state. The franchise could not have copied Chipotle any closer, from the cup design to the tables, garbage cans, and wall art. They have a Chipotle style fast casual assembly line where you can either select their custom pizzas or build your own. They offer lots of variety, with 3 crusts, 7 sauces, 5 cheeses, 7 meats, and about a dozen other toppings. The great part about a model such as this is that you can get exactly what you want on your pizza, the downside is that you can easily wreck it by creating bad combinations or by adding too many toppings. Most people would probably be more safe by choosing a pre-selected pizza and adding or substituting a topping of their choice. The pizza itself has cardboard thin, somewhat chewy crust that has a heavy dose of sugar in it. I didn't find much flavor other then the added sugar, but it isn't a terribly bad crust. I much prefer something closer to sourdough or focaccia bread based pizza which you aren't going to find here. It reminds me a great deal of what American bars now offer as "Flatbread" vs what any Italian would consider a proper pizza pie. If you like thin crust, you will probably be happy. The toppings were good, but nothing stood out as unique nor particularly high quality. The sausage tasted identical to anything you could get at Pizza Hut or Dominos, nearly tasteless. The sauce wasn't particularly memorable either so you might want to try one of the other 6 sauces vs the standard red sauce. The location itself is right in the middle of the popular MSUM campus and is surely to be popular just by grace of its location to poor college students. Speaking of which the prices are excellent, at just under $8 for anything you could possibly come up with. I usually spent upwards of $8 just on decent cheese to make my own pizzas so you do get a good value here. The interior is fine, it is cold and industrial but serves its purpose just fine with big enough tables for groups or singles. One very unfortunate architectural feature is that they have a pillar situated right where you are greeted by the first staff member. It feels awkward to begin your order stuffed between the line behind you, the glass window, and the pillar. The staff reminded me of going to Cold Stone Creamery. They are primarily 16 year olds that are either angry they have to try and earn a dime or don't know how to look a customer in the face and smile. Even 16 year olds have to start somewhere, but the lack of friendliness is quite obvious here. They are baking custom to order pies right in front of the customer, they should be a bit lively and engaging if you ask me. The most glaring issue I had with this shop was the "Spicy Chicken". The paper menu(and website) simply refer to it as "Spicy All Natural Chicken". I had my mind set while browsing the paper menu that I wanted that meat topping. Upon ordering it, I saw a big scoop of what was obviously buffalo chicken with vinegar based hot sauce. I'm not a fan of buffalo chicken at all, so I quickly called an audible. My assumption that an Italian pizza place offers spicy chicken similar to spicy italian sausage(red pepper flakes/no sauce/no vinegar) is apparently wrong unfortunately. The General Manager was working the cash register so I asked him if I could offer feedback on his restaurant. He didn't respond really but I told him that I didn't think spicy chicken was buffalo chicken; he just basically told me off("spicy chicken IS buffalo chicken") and was annoyed that I even was eating lunch at his establishment. All in all, the staff didn't do anything to impress and did plenty to detract. This concept is here to stay. The Buffalo Wild Wings group has started to spin off a nearly identical pizza shop "PizzaRev" and I can see the two going head to head in the Minneapolis/St Paul market. Immediately when you walk into PizzaRev(Hopkins) EVERY TIME you are greeted by a very warm staff member who walks you through the process; quite the opposite of this Pieology. Overall, those who love thin crust pizza, want it in a fast causal dining establishment, and only have $8 to spare - will certainly be amazed by Pieology. For the rest of us, we have other options.

    Great concept and friendly portions (especially for one person). The pizza ingredients tasted fresh and the crust had good taste overall. Definitely would visit again in the future!

    Delicious pizza! I love that you can get any toppings. My family can go and get there own pizza how they want it. And don't forget the ranch or buffalo sauce on the top after its cooked!! It is also very fast. We will be back soon!

    Was interested in checking this place out. Glad I did! Best new pizza in town in my opinion. Thin crust, but not too crunchy. I got to choose whatever toppings I wanted for no additional charge. Very upbeat staff, and the atmosphere was fun as well as clean. Definitely worthy giving a try if you're in the Mankato area.

    I am a 32 year old man sitting in a restaurant with all college age people, I feel very old. The pizza crust is the same as a frozen pizza, but the toppings are much better. Big-ups for having diet Dr. Pepper.

    Been there once. It is good pizza. It is different than all the big chains. It ia kind of like an independent pizza place as far as taste. The walk up and order is kind of like Subway but for pizza. I think its a bit prices but not to far out there. We will be going back. We liked the staff too.

    I will choose pieology over any other pizza after eating there. Their prices could be a little better but you get to customize and add as many toppings as you want so take advantage of that! Great friendly staff! If the line looks long you could be in for a bit of a wait but it's totally worth it in the end
