    Ever since Jaya's sushi chef left I've been on the hunt for good sushi in Evansville. While they don't have a lot of variety, it definitely hits the spot. I definitely cannot complain about a spicy crunchy tuna roll and a salad for $8 either. While the service is slow like some other reviewers said, the sushi is good and mildly worth the wait!

    I was visiting Evansville from out of town this weekend and went to Fuji Yama on Friday around 1pm for lunch based on good Yelp reviews. Unfortunately, my group was given the worst service any of us had ever experienced in a restaurant. We were pointed to a table upon arrival and couldn't even make eye contact with the server for 15 minutes. Once she finally came to the table, we placed food and drink orders together since we had been sitting staring at the menu for so long. Despite catching our server's attention twice and being told that our drinks were "on the way," we waited 45 minutes for waters. By the time our food finally arrived we were already late to the event we were attending, so we ate what we could in 5 minutes. Our soups and side salads came at the same time as the main meals. We weren't given any dishes for soy sauce, or chopsticks. Sides of rice we ordered never even arrived. We wrapped up the sushi we couldn't gobble down quickly in napkins to go, since we couldn't imagine how long we might have to wait if we asked for a to-go box. The restaurant wasn't particularly busy, with only 4 or 5 tables seated, but it appeared that they only had three employees in the building including the sushi chef! We watched several people walk in and wait to be seated for more than 10 minutes. Some left before they were ever greeted. I don't know if the food was good because I had to gulp it down so fast and left half my meal behind. The portions were definitely huge for the price. We had planned on getting separate checks (told the server beforehand to make it easier) but were so late that we had someone put it all on the same card to save time. The employee who checked us out was angry at the slow server and seemed to be aware of the problem, but didn't even offer an apology.

    Lin roll and treasure salad are always awesome, decor could use an update but service is great... owners are good people . 5 stars for the food.

    Absolutley amazing.........white tuna and salmon was some of the best ive ever had. Found my sushi spot in Evansville!

    I love Fujiyama. Yes it's a bit pricey (you expect that with Hibachi grills), but it's cheaper than some of the other Hibachi places in Evansville. I also like that there's not a huge wait. It's a very nice little place on the north side that has great food and you don't have to venture out to the east or west sides of town.

    Pros: Sushi is good. Always fresh, moderately priced, decent serving sizes, convenient if you're on Northside of town, never crowded. Cons: Takes FOREVER for orders to come out. Given that I've never seen more than 2 or 3 tables at a time in the restaurant, you'd think service would right on top of things. Even when ordering sushi for pickup, if they tell you "20 minutes", give them at least 35 minutes.

    Horrible! Just had dinner there for Valentine's Day, and we were seated right away (we had a reservation). However, there was only 1 hibachi chef on duty for the four tables. It took an hour before he ever made it to our table, then he cooked on two tables at the same time for 17 people. Salads were served within 15 minutes, but we were told there would be a little wait on the soup as they had run out and were making more. The chef was NOT entertaining at all; the kiddos always look forward to that fun part of the meal. He ran out of food several times while trying to serve both tables. Those who ordered steak received it well, well done.....no matter how they ordered it. Everyone was done eating by the time I received my chicken. When the chef realized it was supposed to be teriyaki chicken, he just squirted some teriyaki sauce on my plate and stirred it around. Awful experience! There are so many other great Hibachi grills in Evansville, I see no reason to ever take my business back to Fugiyama. I think I'll spend my money at Zuki!

    I have eaten here a few times and the quality has gone seriously downhill. As most of you know, the whole appeal to eating out at a hibachi grill is to have your food cooked in front of you. When we arrived there was already a family sitting at the table across from us, no big deal, you usually sit with strangers at a place like this. However there are 2 grills and since they got there first, the chef cooked their and our food facing the other party and we got to watch his back the entire time. My 2.5 year old was very upset by this. Hibachi is usually a great was to guarantee that my toddler sits in her chair for most of the meal, because she is being entertained the whole time by onion volcanoes and flying knifes and spatulas, but she was bored, and so was I. To add insult to injury the family who got to watch the food being cooked didn't seem to be enjoying themselves one bit. When we used to go there we would always have an abundance of leftovers, enough for a big lunch the next day, but the portions have gotten so small that even my tiny 100 lb mother-in-law ate every morsel on her plate. They didn't even have bean sprouts. What kind of Japanese restaurant doesn't have bean sprouts on a Monday? My husband ordered a sashimi plate and they never brought his rice, and I'm sorry, cooked crap and shrimp do no belong on a sashimi plate. Not to mention his salmon was smoked Nova Lox. This is sushi people, not bagels! Our sodas were very watered down also, when we told the waitress she just asked if we wanted refills instead of, i don't know, fixing the problem. If you want Hibachi, i suggest you try one of the other places in town.
