    Living in Chicago, I've sampled enough sushi places, but glad to see Southern IL has one. This was my second visit here on 12/26. I got two different vegetable sushis which were good, but nothing to rave about. For something different than the "meat and potatoes" fare of SI, this is a good spot. Now if they would just fix their sign out front...

    I know what Fujiyama is going for having come from CA - the Benihana's experience. And though the chefs are entertaining, the food just isn't as good. Maybe I'm spoiled from having Benihana's most of my life, but the food quality just isn't quite there, though they charge the same type of prices they would at Benihana's. My husband felt the same way. It's the only place of its kind here though, so if you are looking for a different kind of sit down experience - not the typical Applebee's or Chili's type dinner - it'll do.

    I only had the sushi when I was here so this review is solely based on that and not the hibachi area. Sushi in Carbondale IL... I should have known. Well, I did know, but I wanted to be wrong since I am an avid sushi lover. Tiny pathetic rolls filled with barely any fish and a high price tag. The taste wasn't awful but it's not worth it. Maybe I will return for the hibachi, but it looks like I'm going to have to do some traveling if I need a sushi fix.

    We visited (12/16) to celebrate an SIU graduation. The place was packed! Our party of 12 was seated in 20 mins. Our server was great-she provided beverage refills w/o being asked. The chef was friendly, his grill presentation exciting i.e. flames shooting out of an onion before being grilled. The steak was tender. A delicious meal all around.

    This isn't a Japanese restaurant. First, the kanji they use says Fujisan not Fujiyama (and since Fujisan is the most famous and the tallest mountain in Japan, they really shouldn't have made a such a mistake). Second, tempura is batter fried, not deep fried food, and isn't based on the sauce that is used, like the uninformed waitress so knowingly tried to say. Third, just trying to have some Asian staff around the place to make it seem "authentic" was almost offensive; all Asians are not the same. Besides this, the chef from Indonesia did a great job entertaining us at the hibachi grill and the stir fry (not even remotely Japanese) was tasty. The onion volcano and fire was fun for the kids. I would recommend this as a fun place to go for kiddies interested in a new dining experience. I would not recommend this as a Japanese restaurant, as there was practically nothing Japanese about the place. At least give out oshibori and train the servers about Japanese cuisine and culture if you're going to say you're a Japanese restaurant! Change the name to some kind of mixed Asian cuisine and it'll be more spot on.

    This was one of our family favorites. We visited Fujiyamas for every birthday, anniversary, etc. HOWEVER, we went two nights ago to celebrate a birthday, and the experience was disappointing. First, the air conditioning was broken. It was 97 degrees outside, and miserable inside. If it weren't for my 7 year old wanting to celebrate her bday, we would have left. Next, the floor was slipppery and greasy. The hostess warned us to be careful, but we had one kid go down. Next, the table was sticky and disgusting. We had the same chef we have had numerous times. He was extremely boring, which prob comes with performing the same routine day in and day out. The food was ok, not as good as in the past. Won't go back.

    Delicious and sometimes the hiabachi is fun, sometimes not. Disappointing that the marion one offers a half off happy hour for their rolls and Cdale doesn't. On the outside Fuji's look sketchy but inside it is okay. Just wish they weren't so high priced. The service has always been great though and the deep fried cheesecake is so good.

    Had a great night out with friends. Sat in the hibachi grille and had an awesome time. Tried sushi and saki bomb for the first time and both were great. Chef did a great job keeping us entertained and waitress keep us well taken care of. Looking forward to going back!

    I came Sunday night for dinner and was very disappointed by the lack of service (there was none). They were very busy, so we sat at the bar. We were there for ten minutes and no one spoke to us so we got up and left. I usually love Fujiyama, but this lack of service will not be forgotten easily.

    In a regular at Fijuyama, normally going for lunch and partaking in their sushi lunch specials. It's normally pretty quiet with fast and prompt service. The servers are fairly attentive as well. The sushi is good - for Southern Illinois. Since we're not near the coast, we can't really be picky. But the quality is always consistent and it tastes very fresh. My favorite is the spicy salmon roll, if anyone is looking for something to try. I have gone quite a bit for their hibachi dinners. It's nice to have a show with dinner every once in a while, but not something I'd partake in every time. The hibachi dinner prices are fairly pricey, but you do get a great amount of food. I almost always have a significant portion of leftovers to take home. During the weekends, they can be SUPER busy so be prepared to wait. Also note there isn't really anywhere to wait, you're lined up next to the door so it can get congested. And if you're getting hibachi, you may have to wait until the right number of people show up to fill your table. Overall, it's a pretty good place but I recommend lunch over dinner.

    Outside is NOT impressive. Inside IS. Great food. Great staff. Entertainment factor is high and the beer is cold. Very nice.

    Tasty but expensive sushi. The rolls are not overly large which you would expect for the price. The food is always good though. The best deal is the bento box for lunch. A ton of food at a great value, they do not allow substitutions though.

    One star because the service was TERRIBLE! We were waiting for over an hour (it was graduation night completely acceptable) and the hostess didn't tell us we needed our whole party present. Nor did she write our name down on the list so we were skipped. Only 4 of us were sat and right after that the rest of my party arrived and we asked can we be sat together at the open table. They refused us saying we would have to wait another hour for an available table. And a couple of the girls who worked there were extremely rude and mouthy and every time we asked for a manager they refused to go get one. Never going there and I wouldn't recommend them as a place to eat.

    The sushi is fresh and delicious most of the time. I would say 9 out of the 10 times I've been there it has been great. There have been a few occasions where the sushi was not fresh and had that distinct fishy taste to it. It is the only sushi restaurant in Carbondale I would recommend to a friend or would take someone to. I was a server at a sushi restaurant in STL for two years and have experienced sushi from Seattle all the way to New York. This place definitely ranks up there when you hit it on a good day.

    Good place to get vegetarian suschi in Southern IL. I've recently started eating sushi and discovered that this is a great place to go. I've been there twice and our server recognized us. We didn't even have to tell her of what "extras" we wanted. Great Service. The sushi could be priced better but realizing that this is the only Japanese restaurant for miles, I can somewhat understand.

    Hibachi is always okay- tough to screw that up. The sushi? Very overpriced and the rolls and sashimi are SMALL. They have a monopoly on sushi in carbondale and they're exploiting that- big time! I would eat sushi for every meal if I could, but even I have a hard time justifying ordering theirs. And if you get a to go order- check it! $50 later I was missing 2 rolls and they did not refund or credit me when I called- because I had already left the restaurant. I've heard they are pretty hard on their employees too...and always seem to have "servers wanted" signs posted

    The food here is very good and prepared right in front of you given you take the hibachi option. Sure, the preparation is part gimmick that mostly only kids enjoy (I have seen some adults laughing and smiling maniacally, yeah I know) but at least you know that your food is being prepared fresh. The portion sizes with the hibachi option are massive and come with a side salad (at least for lunch). I always go for the shrimp fried rice and noodles because that is my favorite and it has always been consistently tasty. Since I've only tried the hibachi, I'm not sure how the menu food tastes, but I can say that the hibachi is very much worth the money, especially on the lunch menu. If you've never been, the preparation and tricks the chefs perform will probably seem cool to you, but when you've seen it five or six times it tends to wear out it's welcome.

    Choice of hibachi grill (communal, table-side preparation) and standard sitting (with option to order from hibachi menu). Food is consistently pretty good, if a bit pricey for the area. Wide variety of sushi options are available; I have sampled fairly widely on sushi menu and have been very favorably impressed. Sushi is probably the high-point of the menu. Service on the hibachi grill side is consistently good - chefs are amusing and engaging. I've found service to be a bit spottier on the standard-seating section. On most recent visit, sushi was delivered about 5 minutes after the entrees arrived -- odd indeed... Bottled beer (from premium end of their menu was brought without a glass. Sushi was also delivered without individual plates or soy-boats. Server was friendly, but perhaps some guidance from management would help !

    This is hands down my favorite hibachi grill. The chefs are good and the food is excellent. I've never had the sushi, but I've gone with groups on multiple occasions where people have ordered the sushi and they always love it.

    Easter Sunday lunch with a good friend. .I think Ashley was the girls name that was our server. .dark hair. Short. I've been here a lot. Always a good experience but this girl made it great. I've been in the service industry for years. And she made this a great Easter lunch. Thanks ashley..or whatever her name was

    Great job. Highly recommend. One of the better tasting restaurants in Carbondale. The Hibachi steak and shrimp just melts in your mouth. Update: inconsistent- some chefs are good others are awful. ~FYI Ur don't get Ur money back if the food is disgusting #gamble

    Best restaurant in carbondale with the most beautiful waitresses. The chefs are wonderful and Irwin makes the best sushi I've ever had. Try the Nebayaki Udon or the hibachi shrimp and scallops. Its delicious. The casablanca sushi roll is the best.

    Such a disappointment. People here obviously haven't had the opportunity to eat good food. Should have gone to Burger King... at least we would have gotten what we paid for.

    Overpriced and boring, but decent. Since they are the only Japanese restaurant around these parts, they can charge a lot more for the sushi. Rolls can start from 13 dollars and up and they aren't even very amazing or pretty. I have a high expectation for sushi and this place is average at best, but I really can't complain because like I said before, it's the only sushi place around. They have teppenyaki, hibachi, and a bar. The chow mein or stir fry noodles they had were blah and tasteless. Had to add a lot of soy sauce. I shouldn't be too ungrateful beause this place is probably the only one that serves green tea ice cream. I just won't come here as often.

    i have always recieved great service hete. Im a fan of the sushi but the rolls are on the small side in my opinion. I tried some hot food this evening and was less than impressed. The steak was tender but lacking wow factor in the flavor department. I recommend sticking to sushi if you are eating on the dining side.

    I went last night with my bf to celebrate our 3 yr anniversary. Three stars because the service was excellent, the hibachi tasted good and the cook was entertaining. However, I took a star off because they have VERY limited vegetarian options for sushi rolls. Also, the sushi rolls are really small but very expensive. With that being said, the vegetarian hibachi was a large amount with lots of fresh delicious veggie. I quite enjoyed it and would go back for it. Parents be warned: the couple that had a child at our grill was frightened because of how loud it was.
