    I'm not sure what these negative reviewers chose to eat, but our items were fabulous! The boyfriend got a beer, while I had a glass of Riesling. The Riesling was one of the less pricey glasses of wine, but it was still $13. One con I will say is that we didn't see any appetizers that we were super excited about. Part of that may be that I am allergic to shellfish and couldn't have anything with crab or mussels. For our entrees, I had the lamb served with homemade pasta. It was DELICIOUS. I was not able to finish it and wished I could bring it home! Boyfriend had the ahi tuna, which he loved as well. For dessert, we split the fireball caramel apple tart. Our server Sam was attentive and knowledgeable. It was a quick walk to the restaurant from our hotel in the village and we were able to make reservations on a Sunday night. We loved it and would definitely be back!!

    My wife and I visited Beaver Creek in March 2015 and took a day off from skiing to shop and have lunch. We found 8100 on Yelp and decided to try it out. Great food and great service. My only issue is that for lunch we had to have a reservation to sit either outside or in the main dining area, even though there were open tables. So, we made a reservation on the spot and were seated 25 minutes later. Summary: good food, great service and great views. Recommend making a reservation.

    Note: breakfast review. My wife and I stayed recently and got the AAA breakfast rate, so all we had to pay was tax and gratuity for breakfast. As such, I really liked this place. (YMMV.) I agree with several reviewers about the portion sizes. IMO, there's a time to be fancy, but when you're serving a micro-eggs-Benedict, you have to wonder how your customers are going to feel for paying ~$20 for it. Note that the buffet was not yet available for our visit. I believe that starts on 11/26/14. What made up for this was the flavor. It was really excellent, and with some experimentation (over multiple visits), we found a few dishes that were actually filling. Coffee was good, service was consistently friendly. Tip: chicken waffle was awesome! Recommended dish!

    Three very good appetizers, some good wine, and decent desserts, but, strangely, the entrees were awful. Kobe beef with bechemal sauce? Inedible and disgusting. The driest, tasteless chicken I've ever had with undercooked Brussels sprouts. Artichoke bathed in sour lemon juice with mystery, bitter sides. Seriously, I cannot remember the last time our family of omnivores ever sent food back. Tonight, all four entrees remained uneaten. Nobody was willing to eat any of them. They were that bad. Service was screwed up as well. Failed to bring a course (which they eventually brought and comped), never brought silver ware for our late arriving fourth (granted, our late arrival provided a challenge, but that they totally failed to deal with), had to ask for a drink more than once. Props to our waiter, he tried and was knowledgeable, just overworked and no backup support.

    We selected this restaurant for a group dinner because of its location at our convention hotel at the Hyatt in Beaver Creek. We were seated at 7:15 with almost our entire party of 15. Our server was from Romainia and very pleasant. She took our drink orders and provided menus. As we settled into our conversation, the trailing members of our party arrived and were seated. Our server brought our beverages and then took the drink orders for the tardy guests. Whe she returned, she took our dinner orders from a somewhat limited menu and went on with her work. At about 8:00PM she came with our first course of salads and soups. I orderd French Onion soup that was served hot but lacked flavor despite the carmelized onions that were present in the soup. The wedge was served with butter lettuce and everyone was pleased. Then we waited. And we waited. And waited some more. Finally at 9PM I went into the kitchen and asked if someone could look into our order as we had not been served our entree. They sent out our server who explained that the kitchen was very busy and were trying to complete preparing our meal. (an obvious reply since we were a group of serveral groups in the restaurant) Finally at 9:30PM half our entrees were served and the other half came about 10 minutes later. A couple in or party did not wait until 9:30 PM and left without dinner. I will say the rib eye steaks were delicous and the salmon expertly prepared. The side dish of fried brussel sprouts were also very nice. In my mind two hours for a meal is a long time to wait in most cases but epecially when one has been in meeting sice 10AM.

    I gotta say I have been here half a dozen times over the last 2 years and it ALWAYS is good. The prices are high, but look where you are! At least the prices are not high and the drinks or food are terrible. I read some of the bad reviews, and I am not sure what happened there. My experiences have been strong! The bar has several craft cocktails... pricey, but fresh herbs and fruits makes a drink really pop. I always sit at the bar, so getting a server is never an issue.

    This will be a little bit unusual for my reviews as, most of the time, I can find both good and bad things to talk about when discussing a business. Not so this time. The poor performance at 8100 was so bad across the board of service, concept, food quality and pricing that I feel very comfortable giving them one of my rare 1 star ratings. For the sake of readability, I will break this out into specific categories: Concept - This restaurant is simultaneously trying to be 3 things - a high end steak house with entrees priced at $50/plate, a sports bar with rowdy fans and TVs everywhere, and a family restaurant with kid's menus. They are failing at all of them. If I am coming to a "nice" restaurant to have a meal, I do not want to have to dodge children in the aisles or have to yell to my wife over the NFL fans. I have no doubt that we high end restaurant folks irritate the other groups as much as they irritate us so my suggestion to the restaurant would be to pick a theme, just one theme, and go with it. That way at least people will know who you are and whether or not they want to be there. Food - Bland and confusing. Rather than go through the litany of things that we ordered, let me just say that all of the things that we ordered were combinations or derivations of foods that should not have been combined or modified. Lobster should not be combined with pumpkin. Spaetzel should not be fried nor should it be combined with sweet potatoes. When you filet and serve a trout, the skin should be taken off. Basic cooking 101. My belief is that whoever the chef of this establishment is, he is trying too hard to create unique items and he is creating a mess. Even if that were not the case, the food itself was prepared poorly. My elk tenderloin was bland and almost inedible as was the aforementioned spaetzel and pumpkin soup. Just make a few dishes well and serve them. Don't try to make every dish some sort of culinary masterpiece with unpronounceable accompaniments. Service - This was astonishingly bad. We were seated promptly with our reservation in a nice 2 person table. After something of a delay, a young lady came by to ask if we would like to order drinks at which point we ordered not only drinks but also an appetizer plate. That was the last we saw of this young lady or any service person for almost half an hour. I finally got up and spoke to a manager who apologized and informed me that the young lady had had a panic attack (I wish I were kidding but I am not) and had been sitting in his office for the last 20 minutes. While I felt sorry for her, I was baffled by the fact that the restaurant management had not chosen to do anything as regards covering her responsibilities while she was out of commission. The manager told us he would take care of us himself from that point on which mitigated the problem somewhat. What was really baffling was, towards the end of the meal, the young lady magically reappeared to present us our bill. I gave her my card to pay at which point she promptly rang up someone else's table and gave us the wrong tab. All of this with no apology from her or any recognition whatsoever of the mess she had made of things. Truly pathetic. Price Gouging - I have seen other folks on Yelp complain about pricess and I usually discount this as whining. Honestly, if you cannot afford a place or need a coupon of some kind to eat there, don't go. We can afford pretty much anyplace and if it costs a couple of hundred dollars for a meal, that does not usually bother me. For the first time in a long time, however, a specific pricing circumstance tonight bothered me. I am a fan of single malt scotch and specifically like the Oban brand which I can usually get in high end restaurants for anywhere from $12 to $20 a glass. I order my normal Oban tonight and was shocked when I received the bill and saw that I had been charged $46 for that one glass. This is absurd. I would chalk it up to resort pricing, but I had just had a glass at a very nice restaurant next door the night before for $20. Shame on you 8100. Our experience at this restaurant was so bad that her majesty and I were actually considering purchasing one of the units in the Park Hyatt where the restaurant is located but cannot go forward with any thoughts along those lines. Absolutely awful. Stay away at all costs.

    We headed straight for the Park Hyatt bar the Sunday evening we arrived in Beaver Creek. The setting was comfortable, casual, and not too crowded. Very creative food and cocktail menu. We tried to three different drinks, and loved everyone of them. We ordered the blistered shishito peppers and the bison shoulder poutine... both were delish! The bartender was friendly and helpful.

    I dined at 8100 Mountainside with my mother. We were staying at the resort for a night, and it being off season, this was the only restaurant open in the resort. The concierge told us they had a special going on, $20 for an entree and glass of wine, or $10 for a burger and a beer. The choices for the special price were limited, but it was a fair selection. My mother opted for the deal and got the roasted orange glazed chicken that came with a fingerling potato and leek hash. I opted for the filet mignon that came with yukon gold and cheddar mashed potatoes. Both dishes were very good, flavorful, cooked nicely and the sides complimented the dish well. My steak was cooked perfectly but could have been a tad bit juicier. The mashed potatoes were heavenly. Yes, this restaurant is pricey, but I can't knock it too much because it is in a resort town. I am sure the other places in Beaver Creek have comparable prices, but since it was off season none others were open so I can't speak to that. The staff were friendly enough, and the bread served prior to the meal was good also.

    Too bad this newly renovated space, formerly know as Bivans, is not a hit since it is a great Beaver Creek location. All we wanted were beers and snacks. We were ignored, had to do self service for our drinks and the appetizers never arrived. This was a peak ski week, sunny day, apres ski, and there should be no excuse for this. So, its a great location but be prepared to not be served if you arrive after lunchtime. I hope this can be fixed, but this is the 2nd time that the food outlets at the Hyatt have failed me.

    Had lunch and dinner here and I have to say 8100 is MY FAVORITE Beaver Creek/Vail restaurant. The menu is amazing and the service is spectacular! The salmon sandwich for lunch and the trout chowder - Highly suggest! The brussels sprouts and scallops were the best we had in Beaver Creek/Vail (and most restaurants we ate at had both and we sampled them). My husband had the elk and raved about it (I don't eat meat so can only by his word). You have to eat here when in Beaver Creek! Excellent food and service!

    Complimentary Prosecco as we were celebrating was a nice way to begin our meal! A nice table by the fire place and good company. We had a nice cheese and meat board, buffalo meat balls stuffed with goat cheese and cranberries (-also nuts so hubby had to sit that one out). We also had the shrimp appetizer wrapped in a thin string of potato with a white BBQ sauce. I could have stopped right there. Next up the main course - I went with the savory salmon - medium like I like it and hubby got the pork that was prepared perfectly for him. Our friends got the chicken topped with truffle roasted mushrooms - yummers. We were crying uncle by dessert but managed to squeeze down a scoop of ice cream - it's kind of like sorbet isn't it? The pricing is in line for Beaver Creek so we were not surprised by the bill. The one drawback was the TV behind my head - there was a rowdy table of 8 guys who kept turning around to check the score and it felt awkward as I was in their direct sights. It would have been nice if the TV was only in the bar.

    Great food and service, you get what you pay for. Wow, it seems a lot of people are bitching about the prices here. Did you miss the part where you're in Beaver Creek. You know, slopeside? 8100 is the redone bar and restaurant at the lovely Park Hyatt. There's a metric shit tonne of outdoor seating, at early evening they have a free s'mores bar where you can build your own marshmallowy treat in their fireplace. At the bar is a full selection of any liquor you want and a massive (and properly thought out) wine list, as well as bar sized eats and salty home-made chips. I've had both lunch and supper here, both were spot on. The menu changes regularly and focuses on freshly sourced ingredients, so it'd be pointless to go in to detail regarding my choices, but none have let me down.

    The atmosphere is outstanding. I am a HUGE fan of the Park Hyatt. The menu is a little small, but I felt like the food was better because of it. I had the pork chop with sage creamed corn and apple cherry slaw and my friend had the elk loin with the gritters. It was all really good. Nothing that stood out as a I MUST HAVE THIS NOW, but I would go back and try more of their entrees.

    I recently visited Beaver Creek with my husband and we stayed in the Park Hyatt - where 8100 is located. It is a beautiful restaurant with a cozy fireplace. I originally thought the food & service would be sub-par given that we were traveling in the off-season, but I was so wrong. The first time we went, we had lunch and it was such a wonderful experience. I had a chopped salad and my husband got the burger & beer special (for $12!) My salad was surprisingly good. The dressing was flavorful and included tiny bits of bacon. It was very evenly tossed, which I really appreciated. They also included fresh slices of avocado, which is my absolute favorite. My husband enjoyed his lunch as well, although I didn't have any. The second time we went, it was for dinner. I wasn't too hungry so I had their salad with fresh mozzarella and a bowl of their stew. It was good, but nothing too special. The salad was a little small in my opinion, and the stew had way too many beans in it. It was pretty much a bowl of beans with one chunk of beef. Nevertheless, it was still tasty. The real star of the evening, however, was my husband's dinner. He got the special of the day, which was 3 courses, with 3 pairings of beer, all for $35 including tax and gratuity. The courses were : sashimi-style yellowtail paired with a lychee ale, a pork chop with leek risotto and a cherry balsamic glaze paired with a beer I can't remember, and a chocolate torte with dulce de leche ice cream paired with a black ale. He was pretty much in heaven. I tried some of his dishes as well and they were all excellent. If we ever go back, we will definitely be coming here again.

    Had dinner here with a group of 7 people while skiing in Beaver Creek. First they told us that they only had reservations @ 5:30pm for a group of 7 people. Fine, although during our entire meal there were literally over 10 empty tables the entire time from 5:30-8pm, so I call BS. Second, they completely forgot to put in an order for one of our table members. They apologized and rushed the order once every other person meal was at the table. The waitress offered us a free dessert, but since the manager never came to apologize we forced the entire meal to be free. A visit from a manager should have been automatic. Even Outback of all places would do that. Sheesh Third, while the Elk Loin was decent, it was NOT $46 worthy. I've had stunning Elk in Jackson Hole and this was mediocre compared to that meal. On the plus side, the Buffalo meatballs were very good and the service for the rest of the table was great as well. Get the Chipotle Mashed Sweet Potato as a side. YUM! $88 for 3 pieces of Elk Loin(cooked pefectly but still not the succulent Elk I've had previously in Wyoming), 3 Buffalo meatballs, and 1 portion of Chipotle Sweet Potato Mash. Hmmmm, NOT worth that price at all. They get business mostly b/c they are at the resort and are conveniently inside the Park Hyatt.

    Came here apres ski for kid food and drinks. Won't go back to this restaurant. Very slow service. Server basically disappeared and we had to find another one. Apps were cold. Drinks were poorly made....way too strong or just not good....maybe they even forgot some ingredients? Surprisingly bad for a name brand hotel bar slopeside.

    Bad selection of beer. However, an overabundance of wine. Customer service for lunch was weak. Waiting staff favored large groups over small. Not kid friendly. The lunch $12 hamburger special is a joke. It looks more like a slider. Everything is way overpriced. Need to serve more than Bud and Fat Tire. Avoid this place.

    This review pertains to the BAR... After a long day of skiing, you can appreciate a place to sit, relax, and enjoy a drink. In a ski town, it's expected you will pay more for food. 8100 is no exception. At $14, you receive no more than 6 wings (they call them drummets) for an appetizer. The homemade fries are a steal at $7, although I highly doubt the smoked tomato ketchup is "homemade". That is, unless, Heinz himself works in the kitchen. As others have noted, the service is extremely slow. I don't blame the servers (there appeared to be plenty to serve customers in the bar area) or the cooks (I'm sure they work as diligently as they can). But when you're serving up $40 plates in the restaurant, those lowly bar folk can wait for their drummets. So, what saves this place? The draft selection is predominately local craft breweries. That's all I can think of.

    the view is awesome outdoors. We did breakfast buffet. The omelet made to order was pretty good. The breakfast pizza was tepid but delicious. The fruit bowl was a mix of perfectly ripened melon, berries, and pineapple. the breakfast potatoes with mushrooms, cheese and onions were tasty but room temperature. The biscuit and gravy dish: biscuits were flaky and tasty but cold better to make small batches. The gravy was not on a heated set up and so it thickened to a mass as it chilled. Many wonderful breads, muffins, croissants. Sure wish they could figure out a way to keep food hot. Previously I thought there were little cast iron skillets that kept food hot in individual portions. We did not do dinner here. Very expensive. The prix Fixe meal had no choices at all and lasted a week. It featured lamb which is not my favorite. The hostess guessed that the chef would be staying with lamb the next week. Too bad. There is TV in the bar, beautiful fall color from patio tables, and sometimes fox and not long ago a bear we hear. While on the property make time for the Allegria spa--lots to enjoy even without a treatment. There is a water journey to take that ends with the glorious warmed ceramic couches. All for a low day fee and free for hotel guests. I come every day.

    Our service was welcoming and prompt and the setting in the Beaver Creek hotel is lovely. Food was okay. Short ribs were tasty. Elk was more gamey than great. Given the prices, I hoped for a bit better.

    We were pretty excited to have dinner here since our friends at the concierge desk set this up as our final dinner....and it was named as one of the "15 Not to Miss" last year by Esquire....but that reviewer must have drank several bottles of free wine to write that..... In the end we were so disappointed. We got down to the restaurant a bit early and got a decent table next to the fireplace. Our waiter, Scott, was marginal at best....he would disappear for long stretches...and was definitely trained to up sell the most expensive wines that he could (he recommended a $175 bottle - NOT). The place was pretty full on a Friday night (not packed), but it took FOREVER to get a drink or app or entree...it was actually painful and was by far the worst dinner we had. Best thing about it was the Patron Margs.....even though it is STUPID that they are $20 a pop....no way Jose.... I had the Buffalo Strip and it was not that good, and Hot Mamma's trout was worse. Excellent waiters, and I think it was pretty expensive, over $20 a person, but "on the house" with Diamond status with Hyatt. The BAR is really fun after skiing, and the bartender was awesome!

    We live in Beaver Creek during the summer and this has become our favorite "go to" restaurant. Always fresh, consistent and the chef is creative with flavors and textures. For example, Gazpacho had almonds and ceviche. Garbanzo bean salad with mint as a side to rack of lamb. I'm more of a traditional consumer, but he has a way of making it work (traditional but new and exciting). His pork chop and Elk Loin recipes are to die. We're going back this Wednesday before the theater.

    This is probably my favorite place to eat in Beaver Creek. While the waitresses didn't seem to know the menu they tried to help. The layout is wonderful it just feels nice to eat there. The burger I had was near perfect with great side fries. If you go to Beaver Creek this Place is a must.

    Another unimpressive meal at beaver creek! Breakfast was just ok but the pastries on the breakfast bar were completely stale. Service was great but again food was mediocre. Wouldn't go again.

    We ate there expecting high quality food and service. We ordered the Flatbread pizza with pepperoni which was soggy and overly drenched in balsamic vinegar. Our salad with grilled chicken was overly loaded with onions and croutons; and we did not expect to pay double for the chicken. The beef stew was basically bean soup with a tiny clump of beef and served room at temperature. To top it off, the servers were whispering behind our backs whenever they thought we could not hear them. In summary, the food was bland, cold and overly priced. The service was poor and rude. We work and travel to the area frequently and will not recommend the place to anyone of our friends and coworkers.

    Scallops w/chestnut foam excellent, perfectly seared on the outside, tender inside. Shrimp and chorizo broth was unreal-so yum! Butternut soup w/crab cake the best I've ever had. The squash seeds in it were an amazing addition. By far the apps outdid the main meal. The elk was ok, the strip steak ok, both seemed a little charred on the outside.

    So we decided to go to 8100 for dinner in spite of the poor reviews on Yelp on the strength of the breakfast buffet, which was comped for Diamonds. Must say, we were very pleased with both the food and the experience. As with breakfast, dinner featured several less-common meats. We enjoyed both the Elk Loin and the Rabbit 2-Ways. The appetizer salads - Frisee and Roasted Beet - were both winners, as was the Bacon-wrapped asparagus side. I'm no fan of vegetables, but the asparagus itself was very tasty, and as with other meats at 8100, the bacon was excellent and complemented the asparagus well. The Fat Tire Beignet dessert was very nice, and a true addition to the meal. Cocktails were great and apparently have come down in price from last year - now a more palatable $12. I can recommend 8100 for both breakfast and dinner. Service at both meals was good-to-great depending on the day, though I agree with others that bar service was a bit lacking at apres-ski times. Lots of kids at both meals, which was unusual for such an expensive dinner, but all were well-behaved when we were there. Dress was a pretty broad mix, from suits to ski pants.

    We were staying at the Hyatt while vacationing at Beaver Creek and decided to have dinner at 8100. Food: 4 Stars Seared Scallops - absolutely amazing Filet Mignon - average, nothing to write home about Chicken 2 Ways - awful!! Chicken was dry and had absolutely no flavor Side of Brussels Sprouts - overly sweet, too much honey Side of Broccolini - good, a light al dente Service - absolutely awful! Our sever was completely absent the entire meal and we had to ask other wait staff for refills. Also, there are no refills on soda - because those syrup cases hooked to the fountain machine are SO expensive... Total Bill (two Fat Tire beers and two sodas) was $120 w/o tip. Average price for Beaver Creek and an average dinning experience.

    Agree with first reviewer. Horrible service, waited 20 minutes for drink then told to go to the bar when I asked for a second. A staggering $15 for a Margaretta and the drink was poorly made!! I miss the old bar at the Hyatt. Will not return.
