Don't expect a big city, fancy restaurant. This is small town, family run place, and don't be surprised if they let you seat yourself. The food is good and inexpensive. This is our "must stop" place on the way back from the Wild Animal Sanctuary.

We stopped here for a quick bite to eat after a long day at the wildlife sanctuary and that was a horrible mistake. There were more flies than people in there and after getting our food I could tell why. The margaritas were overly sugary, the chili cheese fries were barely cooked and drenched in chili, and the rice was barely cooked. My enchiladas were terrible, my boyfriend said his stuffed sopapilla was tolerable and the onion rings were decent. Take the time to drive else where, unless you want explosive diarrhea.

We went to the wildlife sanctuary in Kingsburg in stopped at fargo on the way back to Arvada. As a tradition we love to stop at places we've never been to and just go in and eat. The three chili rellaño plate was delicious but my wife had the nachos she did not care for the chips. The kids got chicken enchiladas. I have had much better Mexican food but the price was good and the location was easy to find.

We stopped here on a road trip hoping for mediocre but passable Mexican food for lunch. Though the atmosphere could not have been more depressing I didn't let that discourage me since I was so hungry. The chips and salsa were not terrible, which got my hopes up. However our dishes were almost inedibly bad. The meat was so dry and tasteless and seemed as if it had been frozen for years. There was no hint of spice in the "hot sauce." The cheese was ultra processed shredded wax. If you're rolling through on 76 and wondering where to stop for a decent meal, keep on rolling past Hudson.

Eat there yesterday after spending the morning at the Wildlife Sanctuary and the food was very good and reasonably priced also the young woman who waited on us was friendly and helpful. We'll stop there again when we return to the Wildlife Sanctuary!

If you want the worst service ever, followed up by a swift trip to the toilet, eat here. Food poisoning galore.

My friend and I saw this restaurant in Hudson, Colorado, on our way to the animal sanctuary in Keenesberg. On our way back, we stopped in for a beer and a bite. We were asked to seat ourselves. We sat at a booth. The server appeared to be overworked, yet she was tending all the tables in a timely fashion. Turns out, she is the granddaughter of the owner and had just had a new hire quit. She was personable and professional as she took our order and provided service to our table. The chimighanga was not deep fried, but it was filled with flavorful shredded beef and smothered in delicious green chili. My friend's carnitas were tender, tasty, served in nice chunks, and swimming in that lovely green chili. The grand daughter was on the spot and, accommodating. The food was tasty and a good value. I will be back.

This was a good find on our way home from the animal sanctuary. From a past Yelp review we stopped in for a late lunch. There was only a few people in the bar area when we arrived so we were a bit apprehensive but I am glad we stayed and ate. Both dishes we had were really good and their green chili that they serve half mild/half hot is delicious. The decor is fun to look at-looks like maybe it was an old seafood restaurant turned Mexican since there are lighthouses next to sombreros. I think it was a great little find though and service was spot on.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
