Stopped on 7:30 on thurs night August. No wait. For drinks we had the cucumber lychee martini & Hendricks martini....both amazing. We ordered the Tuna Tartare....it was excellent! Chips with equal sized chunks of tuna and avocado. I had Ruby trout with side of wild mushrooms, hubs had salmon salad. Both were incredible. Trout had asparagus and potatoes and great flavor in the skin. Salmon salad had some sort of gain flavor mixed with sweet champagne dressing....almost addictive Also ordered the banana burrito dessert. We were so full....but cleaned this dessert plate. Really really good. Highly recommend

This is a fun spot to go to for happy hour! The service is great and so is the food. Their Moscow Mules are delicious and they definitely do not skimp on the ginger flavor. The small plates menu deals are great and very filling. I really like the mac and cheese, which has bacon in it. Also, the fries are great! It's a heaping portion and they add parmesan and truffle oil to it. If you're in the mood for seafood, their fish tacos are really good and has a great sauce. The tuna avocado poke is also delicious and tastes fresh.

Wonderful and intriguing menu. There were so many choices I had a tough time deciding. But I always love scallops and mushrooms so I had the scallop small plate and a side of wild mushroom sauté. My dining companions had short ribs, one had the small plate and one had the entrée. The food was top notch. The service was very friendly.

Came here tonight for dinner. Apparently, Wednesdays only have sushi for main courses, which was fine with me. I was considering a steak but they remove the normal menu items on sushi night. So, here's my rundown: Ambience: Decor was nice and I liked the woodburning stove. It adds a nice warm touch on a cold evening. That being said, my table was next to the stairs to the second floor. Apparently there was a private dinner party up there. I heard and felt every step they took, pounding up and down the stairs. I would not want to sit at that table again. Not terrible, just an annoyance. Wait staff: I was greeted and seated promptly. The hostess brought me a glass of icewater. That glass was not refilled, nor requested to be refilled until after I had finished dinner and the check had been brought. (minus 1 star). My order was taken quickly and my sushi was delivered quickly. Food: It was decent. I didn't order any raw fish since this is about as remote as it gets from the ocean. The rolls were decent quality but one of them was smothered in sauce. I'm a bit of it minimalist when it comes to sauces on sushi. I should have ordered it on the side. Just don't like the sauce masking the flavor when it is poured on thick. Value: A bit high priced. Most rolls were in the $10-12 range, with some being more expensive. Bottom Line: I would return to perhaps try a burger or steak. I was a bit disappointed that sushi was the only menu entree choice. The wait staff seemed extra busy with the private party going on. The score could improve with a more attentive wait staff and a more varied menu.

We stopped in around 10:15 on a Saturday night. We were a little dismayed when we realized that we had missed dinner and only the small bites menu was available. Little did we know we had nothing to worry about. I ordered the mahi tacos and the sliders. Both were excellent. My friend got the chicken nachos and left with a smile on his face. This is a lively restaurant and bar, with patronage that defies the demographics of Gunnison (lots of apparently female bodied persons). The drink menu was also excellent, as well as the service. Highly recommended!

We made an early dinner out of Blackstock's happy hour small plates and everything was very good. Mac and cheese, fries, sliders, nachos, fish tacos...everything met our expectations and then some. Service was also really good. We look forward to coming back!

The Burger with candied bacon is to die for! Their chicken wrapped bacon in Marsala sauce was on point too! We loved the ambience and definitely will come back. Too bad they don't open till supper time because their bloody mary would be a great way to start the day. *UPDATE We were able to indulge in the bloody Marys and it's all that and then some! The service is outstanding and I absolutely can't wait to come back!

I know it's not saying that much, but this is the best food in Gunnison, by far. It's probably also in the top tier of restaurants on the Western Slope of Colorado. The food is creative, fresh, seasonal, and beautifully prepared; prices are definitely reasonable for what you get; and the place isn't pretentious or snobby. The cocktails are lovely, too. If you're in the vicinity and want a great dinner, stop at the Blackstock.

Wanted a good meal while driving to Telluride from Denver. Stopped by and ordered the Ruby Trout for entree and banana egg roll for dessert. Both were incredibly delicious. Interesting flavor combinations. Someone in the kitchen likes to get creative, and I dig it! Very impressed! Atmosphere is decent as well. Highly recommended.

We went to Blackstock Bistro for our 21st anniversary. We had never been there before and it was highly recommended by our neighbors. Everything was excellent! The fillet mignon was perfectly cooked and seasoned, the Mojitos were very tasty and the banana wonton dessert, which I was extremely skeptical of, was to die for! The staff was extremely friendly and enjoyable! Thanks for the great time~we will be back!!

This is exactly what Gunnison needed! A touch of class to a great western town. Not only a wonderful renovation, but the food was the best I've had in this town! Can't wait to go back!

I am as new to Gunnison as Blackstock, but I am very pleased they're here! The atmosphere is very cool, it's definitely the sort of place that I feel comfortable hanging out at and having a few drinks. Their drink menu is pretty extensive and creative, and they do their own vodka infusions which is really nice and gives the drinks something special. I've had the Hawaiian Heat (pineapple and jalapeno flavors) and I can't wait to go back and try others. The food is also good quality; fresh, reasonably priced, and very well plated and tasty! The bistro fries are great, and I also recommend the beet salad (I like to order it with chicken and they always easily accommodate). I also recommend any of the desserts; we had the ice cream and the gluten free carrot cake. One of the waitresses makes the gluten free carrot cake herself, and it truly has a homemade tasty with a professional look. I can't say enough about how much I like this place, they've really got a good thing going!

I was totally impressed by the Blackstock Bistro. It has good service, great food, and a modern atmosphere. Don't be deterred because you can't find their website or an online menu. They don't have one, but their modern american food is great. They have original recipes that all looked amazing and it seems as though they have a rotating menu. This place is also moderately priced for the experience and food you are getting. If you're in Gunnison, go to the Blackstock Bistro.
