    Travis, the chef, changed the menu recently and it is awesome. He has reinvigorated his restaurant!!; We ate here tonight and had the cheese plate, salads, veg pasta and crab cakes and it was awesome! I am veg and my wife eats chicken and seafood. Everything we had was excellent! We also have eat brunch here and again, awesome. Try a 'table' french toast with your eggs bene or omelet...wow! I eat at restaurants all over the world and this one is really very good. Something you would not expect in a little mountain town. Enjoy!

    We tried this restaurant out on a whim after driving by several times, and we are so glad we did! The atmosphere was very pleasant and quiet, and the food was absolutely wonderful. The beer and wine selection was ample and showcased a wide variety as well. Our server was polite and attentive. All in all, it was a great meal. We had the jumbo crab cake, the quinoa-vegetable medley, and the chicken with pasta and tomato/caper sauce. The chicken and pasta dish was also available with Alfredo sauce, but we opted for the tomato/caper sauce, which turned out to be a much lighter option with a very interesting tang and saltiness to it. All three dishes were wonderful, and we would all happily return and eat any of the three choices again. The portions were perfect - maybe slightly on the small side versus many of the other restaurants in Evergreen, but we all left feeling full and comfortable. The menu at first seemed a little pricy, but the quality of the dishes made it well worth it. In comparison with other restaurants in the Evergreen area that have similarly priced menus, we felt the quality here was equal if not higher. If you're at all hesitant to go here because Yelp has this The Bistro Colorado labeled as "gluten free" and "vegetarian," don't be! It provides plenty of options for both of those diets, but is in no way restricted to them. We were offered gluten free pasta as an option, but chose regular pasta instead. We absolutely plan to return here soon, and will probably bring friends when we do!

    I don't know who "Mr. Kelly" is, but Travis S., you seem to deny what others find obvious. Do not take your frustrations out on customers by sending them nasty messages. You have many substandard reviews and that's not our fault. I am sorry my guests and I did not enjoy the experience. YELPERS BEWARE

    Amazing Jewel to eat Breakfast Brunch Lunch or Dinner World class food with farm to table fresh ingredients. The chef is amazing the experience is above and beyond. If you are on your way in or out of the Colorado Mountains this place is a must.

    I will start of by saying that the food and service are FANTASTIC. Really, the food is out of this world. The service has been nothing short of exceptional. I've been two times for breakfast and once for dinner. My critique lies in the ambiance. This may sound terrible, but I'd rather have dinner in a place that has a "cooler" atmosphere with food that's ok, than in a place that's kind of "grandma" and "trying to be formal". I hate to be blunt, but it's just sort of sterile. The lighting is wrong. At dinner it was really bright. There are way too many tables. The music is just wrong. I feel like I'm being lulled to sleep (at both breakfast and dinner). I know they are trying to project an air of formality and that's fine. I just think there's another way to approach it. I hope the criticism helps, because I really want them to succeed. I really want them to stick around and I just fear that because the atmosphere is lacking nobody's going to want to go. :( I'll definitely be back because the food and service are good, and will definitely change my review if changes are made. ________________________ After posting my review I got a really "sweet and friendly" (insert sarcasm) response from the owner.     I'm not the kind of person who has one questionable experience and then bashes an entire restaurant, so I've visited this restaurant a number of times now, trying different dishes and times of day with friends. I have to say I'm super-pleased with how responsive they are to feedback. There were comments about ambience, being cramped etc., and they opened up a spacious new room that feels great. The prices were too high for some, so they launched a whole new section of the menu that caters to people who want to spend less (although the quality of the food is still top-notch). No wine? Oh wait, now there is. To anyone who visited before, I'd suggest giving it another try, because it's changed in really pleasing ways. VIsited them for lunch again today, and wow. How can anyone take something as pedestrian as a bacon/lettuce/avocado/tomato sandwich and make it something for which I have to resist the urge to go back and get a second one for dinner? Perfect local bacon with gorgeous flavor, heirloom tomato (none of that mealy pink s*** most restaurants call tomatoes) roasted garlic aioli, toasted sourdough bread, a perfect side of vegetarian chili with fantastic balance of flavors and heat, SUPER fresh tasting.... I won't lie: I love this place.

    We had a wonderful 5 course dinner last night! We listened to Chef Smith's recommendations and would also recommend letting the chef guide you for an enjoyable evening. The atmosphere is very relaxing, liked the table lamps throughout, it makes it feel comfortable and homey. We started our meal with a nice fresh bruschetta, followed with a beautiful salad with the perfect amount of dressing, not too much, which I often find. Next was a really yummy spring potato vichyssoise. Chef Smith next brought us the best scallops with a mustard burr blanc sauce and the fish of the day, Scottish salmon with capers and artichokes with a hollandaise sauce. Both dishes had organic spinach, asparagus, and mushrooms lightly sautéed. For desert we had Bananas Foster. The portions were scaled down because we had the 5 course, which I really appreciated. Chef also had us try different wines throughout the meal and gave us some great history on Bananas Foster and wine in Colorado. We really enjoyed the food and having the opportunity to chat with Chef Smith. Ask him about competing in the Culinary Olympics! We will be back, and look forward to introducing family and friends to our great find!

    I hired Bistro Colorado to serve at my wedding. We specifically hired them because they could offer a food truck AND flatware and china. This was discussed multiple times throughout the process and we were charged for it. On my wedding day food was served with plastic ware and on "fancy" Chinet paper plates. I was so embarrassed and upset since this was agreed upon early on in the process. Chef Travis even told us he would simply take the plates from his restaurant and that it would be no problem. On the day of our wedding Chef Travis did not run food service so we were dealing with employees we had never met. The food was described as great by all guests, however my meal was just okay. The chicken avocado sandwich we chose was served in tiny slider form (very different from what we saw and ate at the restaurant) with tiny slivers of chicken and avocado. The bun was huge compared to the contents so it was mostly bun. We did order sliders as well so I thought maybe they got confused and fixed everything on sliders. I was a bit frustrated but unsurprised by it all. Our experience leading up to the wedding was very unorganized on BC's part. I had to email back and forth several times to clarify our order and the cost. We actually had an email ON THE DAY OF from Travis asking us a question. We of course did not get the message since we were a bit busy, but the question was asking WHAT TIME SHOULD DINNER SERVICE START. I would say if you want to hand hold them through your event, this could be a great food option. The price is pretty close to other food vendors...if you want plastic ware. For me, I regret not being more attentive leading up to my wedding. Somehow I thought they were professionals and could handle taking notes on the contract and moving forward as discussed.

    Quite possibly the best food in Evergreen, Presentation and ambience are lovely. I don't agree with the reviewer who thought it was too loud. i would call it vibrant and fun. Prices are reasonable for the area and food quality. I had Steak Au Poivre and it was amazingly tender and full of flavor. The bread pudding is perfection. Update: I have been back many times now and my new favorite is duck confit and eggs. I consistently get a great meal here and my guests always rave as well.

    I was really hoping to like this place. We went for Valentine's Day, first they did not tell us that it was a plated dinner 3 meal course and we had to pay 75.00 each and for what we received it was not worth it at all. I recommend telling guests when that is the case for an event in the future, was not on website either. Scallops not cooked well (for what we paid) and I have lived on the coast. Chart House actually much better for great scallops. I just was super unimpressed with food and ambiance and I truly overlooked negative reviews and went anyway. I really feel that I want to let others know. Maybe on regular nights food is better but just was not great. And I had a bright light in my face, they could not dim the bright lights on a night like Valentines day? They said the lights did not do that but we all know that it would take some money and they could be changed to dim. So I do wish them well as I never wish anyone unwell but I was not impressed and would not return. I truly was hoping to. My take (I do coaching with leaders in organizations) is that maybe the chef is trying to do too much (from other reviews I read as well) and should allow someone else to assist with some of the details and management, because I do believe he came out to look at the lights. They were able to shut one set off but not dim or take away the spotlight effect. Again, wish them the best but I think a few things need to change.

    I really want to like this place but frankly, it's just not working for me. No wow factor and inconsitent... My partner and I went there for brunch and then lunch with some friends and while the food was decent, the bacon on my BLT was tough and chewy. I understand they make their own bacon and while impressive, the quality is not as good as I've had from Albertsons. The first time we went we had a nice salad withy beets, good flavors but really heavy on the dressing, sopping wet. This time I ordered the dressing to be on the side to avoid that and they forgot it completely! The waitress seemed new and unfamiliar with the menu. The benedict my partner had was good and had a good amount of salmon on it. The menu says the juice is fresh squeezed but I saw the waitress pour it out of a store container, for almost 5 bucks for a tiny glass you'd think it would be fresh like the menu said. Yes they were busy but the service was slow and we overheard another table complaining to each other. We asked them and they said that the service has been suffering lately, guess they lost some of their good staff and the new hires are still learning. I'll give it another try when my dad comes into town next month and see if things get better. For me though, that will be the third and final try..

    The best restaurant in Evergreen, hands down. It is not cheap, but I have never walked out thinking it wasn't worth the price. Tremendous quality food prepared by an incredible chef/staff. Not sure what the complaints are about the ambience. It is an open dining room, but it is quieter than many restaurants.

    Wow! This place inspired my first yelp review. I just had their brunch, and it is incredible! I will definitely be back to try lunch and dinner. As a vegetarian with a boyfriend who doesn't eat gluten, it's rare to find places that can satisfy both of us. This place had a huge variety and was very very delicious.

    Food was good. Ambiance almost killed the experience. business is small with a bright yellow paint on the walls. Tables very close together. High ceilings & hard walls make all ambient noise really stand out. Maybe somebody didn't show up for work (Saturday evening) , but service was incredibly slow and the one waiter on the floor was overwhelmed. They served water in what looked like old wine bottles with the labels soaked off. Other restaurants in this price range have the waiter refill your water glass as needed. Didn't have the same experience others reviewers raved about, so maybe this was off night

    I've eaten here several times lately. Terrific food- soups are amazing, and the menus are incredible. 5 star food without a doubt. Service is very knowledgeable and continues to get better with time. I always look forward to the "compliments of the chef" bites before and after we eat. Superb! That said- I do agree with some of the other posters, that the ambiance has room for improvement. I'm sure it will continue to evolve with community feedback, it's always nice to see honest local reviews are posted with the intention of helping an owner improve! It's clear locals love this place and want it to thrive. I appreciate how Chef Travis makes an effort to use locally sourced ingredients when possible! Awesome! However, It did bum me out to see foie gras on the menu- when I think of fresh, sustainable, "all natural whole food" foods, foie gras seems like a contradiction. I understand the Bistro has French roots, but personally, I think he would still pull off 5-star French cuisine even if he dropped the foie gras from the menu.     We've been excited about driving up to Evergreen to try this restaurant since I first found it in my search for good brunch on the west side of town. Then I saw the Croque Madame on the menu and we knew we had to go. Ambience - Expansive. It's funny that old reviews said it felt too cramped, I felt like it was huge! Great for a larger party or if you want privacy. I prefer a little cozier, but whatever. Food - Well, like I said, the croque was what we went for. I fell in love with this sandwich in France and have hoped to find somewhere doing a decent one in the area since. Sadly, Bistro Colorado goes down as another poor execution. Price was extremely high for what is supposed to be a cheap sandwich and we almost shied away based on that. The whole sandwich was ruined from the get go though with the use of sourdough bread. The bechamel and gruyere weren't even tasted as the sourdough overpowered it. It was like someone read about a croque but never had one before. Smoked ham, no gruyere melted on top, poached egg instead of sunnyside fried and the worst as I mentioned, sourdough bread. The redeeming aspect was the price and quality of the kids french toast. There were other items on the menu that looked good and probably are but I doubt I can convince my wife to make the drive up there again to give it a second shot. The service was mediocre. Though I attributed that to possibly a new waiter and with how busy it wasn't (we were one of three tables at a time that most brunch places have 30-45 minute waits), I doubt they are able to recruit decent waitstaff.

    The food and service are always excellent. This restaurant is a gem in our mountain community. Soups and quiche are creative and delicious. I would definitely recommend Colorado Bistro for lunch and dinner.

    We stopped in for lunch on the way to Cortez on the strength of the Yelp reviews and a look at their menu. We're so glad we did. From my gluten free chicken & mushroom crepe to my wife's goat cheese omelette; our 17 year-old's breakfast burrito; the bread pudding and complimentary truffles, the food was exemplary. Fresh, nuanced, appropriately portioned - truly a wonderful exploration, capped by lovely service. We understand they only opened this past October. If our experience is any measure, they deserve to succeed. Top marks!

    Interesting place. I guess it is french. Menu is complex. Staff is nice. The chef brought a complimentary corn and cheese dip with some bread. We both ordered spinach and mushroom eggs Benedict and they were over the top amazing. By far the BEST eggs benedict I have ever had anywhere. Had a side of bacon that was also amazing!

    We are discerning foodies and we could not have been more impressed with this wonderful find. The food is creative, balanced, and very well prepared. The ambiance is nothing special but the warmth of the chef and staff is palpable and generous. It is very rare to find a restaurant this good tucked away in such a small mountain town. We go every time we are in evergreen. It sounds as if someone is spreading nonsense on yelp about this place and that's just a shame. We felt we had to speak up. Anyone who is in evergreen and misses Colorado bistro is missing out.

    What a lovely surprise! We enjoyed our breakfast 100% and the ambiance is just perfect. I had the BICO Bowl and he had the Farm Eggs. We will be back and will bring friends to share in this gastro experience.

    It's hard to believe the favorable reviews after eating here. At first glance, a nice clean dining area, well lit and simply appointed. Does not live up to the hyped menu. Their "signature soup de jour" was a burnt tomato bisque and had a motor oil after-taste, they served powdered/dehydrated mashed potatoes with the 6 OZ. grass-fed steak au poivre, commercial pasta was overcooked in their totally bland "To Die For truffled mac and cheese" topped with sea scallops, crab? and mussels, tasteless tomato paste salsa, inedibly over-salted house-smoked salmon with greasy baguette toast, thick-sliced, over-cooked "seared Ahi", and custom-blended mixed wines that were more suited to a vinaigrette. The kitchen staff does not provide the quality of food suggested by the menu. The waiter was overwhelmed and incompetent as well. He tried to suggest a suitable wine "blend" and was at first amicable. He chuffed when asked when the fish and meat were delivered and after three polite requests replied gruffly. We arrived at 7 PM and were served at 8:30! The food and service were terrible! But as always, don't take my word alone, see for yourself.

    I stopped by for a take out sandwich. The decor is nicely done and I'd like to sit down one day when I have more time. I was greeted by the friendly staff and selected a Chicken Sandwich with a side salad. Sorry, I do not recall the more elaborate name of the Sandwich although they pride themselves on sustainable cuisine by Chef Travis who has more credentials than many of the IT people I know. Chef Travis Smith greeted me as well, offered me a seat and was very pleasant. Although a bit on the spendy side for me, I took the box home and the sandwich was fantastic! It was a generously portioned, tender and seasoned chicken breast with thick bacon strips, a nice sauce that blended well with the other flavors and ingredients on a nicely light brioche bread. To me the bread makes the difference and this was great! I had the side salad, nice fresh greens, uniquely cut and flavorful beets(?) in a unique and lite house vinigarette. This was definitely stepping up a notch for lunch and I noticed handcrafted details in the food preparation. It's great so, go check it out!

    This place is really great! The food was prepared expertly and with lots of care. I asked for a meal that had no animal products or animal byproducts and the chef made me an amazing breakfast burrito with peppers, a chile, onions, spinach, and this savory salsa on top.     Completely unexpected treat. Having had the good fortune of not finding parking in the melee that is Main Street Evergreen, we happened upon Bistro Colorado. The menu left us in angst over one thing that looked better than the next. The portions were generous and the flavors well balanced and beautifully prepared. My new favorite restaurant in Evergreen.

    I've been in a number of times over the past few months, not as often as I would like - but a few times, mostly for business lunches. The food is still absolutely outstanding. The service at lunch has also been very good lately. I struggled with whether to knock a star off of my previous review, because I do love this place, but for me the service at dinner has become a bit of an issue. The last couple of times I have been in the service was slow and somewhat error prone. The waitstaff seems to disappear for long periods of time into the kitchen (all of them) and there doesn't seem to be anyone that can pick up the slack. Chef T. certainly tries, but it's obvious he has work to do elsewhere. I think that if Bistro hired a busboy and/or a bartender (Yes, I know, I drink fast!), that would drastically improve the service situation. But man, the food is out of this world. Truly. I really haven't ever had anything there that wasn't simply outstanding.

    Made reservations well over a month in advance. When we arrived, there was a party of at least 30, but only one server. The party was very loud, and we could barely hear each other at our own table. I ordered the "BLT" Benedict. I asked for the eggs to be poached med well. They came out barely cooked at all. Not to mention that it took 30 minutes to get our meal. The server never checked on us after she served us our food (not really her fault due to the large group). They should have had at least one more person to serve the larger party, so that the rest of the tables didn't suffer. We had to get up and ask the server for the check. Don't think I will be back.

    I was highly anticipating my Mother's Day visit to Bistro Coloardo as I thought the food was Farm to Table fresh as the ad stated that I received in the mail. It was not. The items on the buffet were over done as they had been sitting quite awhile. I am in the dining and hospitality industry so I know that buffet food must be rotated. The food was not flavorful. The only thing that was fresh was my husband's omelette and that was very mediocre. There were no labels on the buffet items, so I did not know what anything was. It was highly overpriced at $35 per person. The buffet was definitely not worth that price. The owner or manager needs to get on the ball right away or this place will be just one more Evergreen restaurant casualty. Upon arrival, we were not greeted in a welcoming manner. It was almost as if the chef? in a white outfit at the door was put out when we arrived. It was 2:30 and he did not appear to want to deal with people any longer. The first thing I saw was a very dirty and messy cheese and dessert table. Could the tablecloth at least have been changed to make it look more appetizing? The employees were eating at a big table right inside the door which was not inviting. We sat down and even though at that time it was not busy any longer, no one greeted us for quite awhile or asked us what we would like to drink. The shrimp on ice was different. We couldn't figure out what the strange yellow sauce was on it. However, when it melted on our plate, we realized it was butter, but did not look good when it frozen and coagulated on the ice. Our waiter had to be beckoned for more water, plates to be cleared, as well as our check. There seemed to be enough staff around, but they did not seem to care about good service. They were mainly busy very noisily putting away tables, silverware and glassware. Needless to say, not the ambiance I was looking for to create a relaxing Mother's Day. There was no music at all, at least that would have covered the din of thire clean up process a bit. Ambiance was non-existent. My friend had attended a brunch and had the same experience, however, I thought I would give it a try. Definitely not a Mother's Day I will remember.

    This place could easily be a five star but seems to always fall short as people have mentioned in reviews. The main reasons my wife and I came here were for the locally sourced quality ingredients and gluten free options. Our experience started with us being the first customers of the evening. The waiter seemed socially awkward but warmed up with time and advised us they were out of two types of burgers. We started with a very good salad made with very fresh ingredients and had a lemon honey vinaigrette. Other customers arrived including two women with their three young out of control children. The kids were screaming and running around the dining area. Another couple was sat very near us and we all looked back at the mothers who couldn't care less. The waiter became tied up with them and the other couple left. I think it was a combination of the kids and the delay in service which caused them to walk out. Our meals were delivered, I was pleasantly surprised by the portion sizes and they were both very good. I ordered the chicken fettuccine alfredo but it was served with spaghetti instead. The chef visited our table and was nice. The waiter made dessert recommendations when he advised that anything with ice cream came with vanilla bean but they had other flavors available. I went with the chocolate cookies with vanilla ice cream. The waiter later returned to tell me they were out of vanilla ice cream. The desert was huge, very sweet and I couldn't finish it, which is very unusual and I wanted to. Upon brining the check, the waiter brought us each a handmade chocolate truffle which was amazing. If I had known, I wouldn't have ordered a dessert. We really enjoyed the food and feel this place could easily be a five star but on our visit, the awkward waiter, out of control patrons and being out of several basic menu items caused me to rate it lower. I do recommend the food here.

    We stopped in for an after hike bite, lured by the promise of good local vegetarian cuisine. (There are lots of local meat options for non-veggies) Although I was a bit under dressed, the service was friendly, knowledgeable, and prompt. The food was delicious and original, the chef brought it out to our table himself. I was impressed with the variety of dishes with locally sourced ingredients without being overpriced. This place is a great find! Will be back.

    I love this place! No more driving to Denver or Boulder for a great meal. This sweet spot near Genesee is better than any restaurant I've been to in the last two years of dining in Colorado across all price points. Fresh ingredients, often organic, locally sourced with a seasonal menu to suit any tastes. The care that goes into each preparation really shines on the plate and palate. The best vegetarian and gluten free options of any fine dining restaurant that I've experienced. Very friendly service with just the right balance between attentive and allowing space to enjoy the meal. Even the music was great: Classic jazz standards at just the right volume.

    Well, my partner and I read many of the reviews, good and bad alike, and decided to check the place out. The skinny is this: I couldn't find one reason to not give it 5 stars. Granted, every restaurant has good and bad days (yet consistency is key in this business), but it seemed quite on point to us. (Review as follows: chef, food, service, atmosphere) The CHEF: I must address this first, however, chefs can be divas! It's not common knowledge to people who have never worked this industry but it's often the case. They are passionate about their work, but I don't think it can excuse being salty and defensive to paying customers (that take their time to post a review). An artist must understand the subjectivity of her craft, even embrace criticism and individuality. It can really turn off would be customers to hear that customers are treated as wrong, and since a percentage of every restaurant's profit comes from new customers, not only the returning ones, care must be taken to not scare em off. All that said, I could care less how much someone hates me behind my back, assuming it doesn't affect my experience, and ours was fantastic! The FOOD: A BLT, elk burger, salads, and wine. All of it was really amazing, in freshness, ingredient pairing, and the plating. I think the only thing we did was ask for onion with our salad, which she brought out promptly (partner is onion addict). Although the chips were made out of house, they were good and made a great contrast to my sandwich (texture and flavor). All i drink is water and it tasted filtered, not out the tap. Not too highly priced for quality and appearance either, and certainly worth the money we paid. SERVICE: Almost the best part, I'm surprised to hear anything bad about the service here. Help comes and goes, and I don't remember our waitress's name but we were both quite impressed. We went during 3pm, non rush hour, so I don't know about how their ticket times run but our entrees were out in about 15 minutes (fine because of our salads). The girl serving was friendly, and seemed very accommodating, and while her knowledge of wine wasn't great (self admitted) she made a recommendation that we both ended up loving. Never was away for more than 5 minutes checking up on us and was all smiles (so much more important than people give credit for). ATMOSPHERE: Clean and cozy we thought. Music was up tempo contemporary jazz and a classy type interior with a surprisingly large space to boot. SUMMARY: Worth a visit. We will try again and if our experience is different I'll update post. I feel bad for those who had bad experiences, and to recipients of the chef's scorn. Most people are just not willing to complain about their food chef, instead, they just won't return. It's a statistical truth. Yelp may seem passive aggressive, but is a democratic process. Yes, there are trolls, any restaurant will have a bad review but remember, people don't like supporting someone they feel is a total grouch ( I don't care) and us publicly snippy with customers. Bake a humble pie and this place will have my 100% support.

    Darn. This was the first and last visit I will have to Bistro Colorado. We came here for Mother's Day brunch this morning. We were greeted by a rude hostess and a very crowded, chaotic room. One of the reasons we chose to eat at Bistro Colorado is because they were one of the restaurants that I was under the impression wasn't doing a buffet. Much to our surprise, the ONLY thing they were doing was buffet. There was nothing on their website about this, which was really disappointing. But, we took it in stride and sat down to eat. They had set up plastic tables and folding chairs for the larger parties. When my mom sat down, her chair almost caved in, as it was broken. We saw another person have the same issue with another flimsy folding chair. After about a 10 minute wait, someone finally came over to get our drink orders. We finally got to the buffet part, which I will say, the food was okay. The beef tips were really tough, but other than that, I can't really complain about the food- not great selection, though, especially for my vegetarian boyfriend. They kept running out of plates at every table. We had to hunt down a server multiple times to restock plates (by this point, they weren't even busy). Our water glasses and coffee mugs sat empty for much of our meal. They had a lot of staff on hand, and it's a buffet, how is the service this slow? Literally the only responsibility of the servers is to clear plates and fill drinks. Next, a server dropped a whole plate of glasses right behind my brother and a shard of glass flew up and hit him in the back. I totally understand that accidents happen and people drop dishes. I worked in restaurants for years and can't even count how many times I dropped dishes. But no one cleaned it up for like 10 minutes and there were multiple children running rampant, what if one slipped and fell on the glass..? The worst part was getting the tab. $35 for one person for a buffet with little selection, poor service and flimsy folding chairs with no ambience. This price would make sense if the experience hadn't been so horrific. It was hard to hand over over $200 with tip for the experience we had. Sorry Bistro Colorado, but maybe next year stick to your normal menu and don't try and do a buffet if you can't handle it.

    What a fantastic experience! The service was great! Our server was friendly and attentive. The food was absolutely delicious! The food is not too rich, but filled with flavor and high quality ingredients. I had the garden omelette and my mom had the quiche. We both loved our meals and found them to be just the right amount of flavor. They were certainly healthy and delicious. Then we splurged and got champagne and cake, which were also fantastic. We also ate the most delicious chocolate truffles I have ever had! (And that says a lot because I am a big chocolate fan, so I have tried lots of chocolate desserts, but I am also picky and a healthy eater). The atmosphere is also very calming, and we had a very relaxing brunch. I highly recommend Bistro Colorado. Also check out their cooking classes every Wednesday from 4 to 4:30.

    My food was great my wife's food was not cooked our son's kids meal was a $24 plate of mac and cheese. After our order was messed up and my wife was given a food that we told them she had an allergy to we got our dessert to go and called it a night. This should be a $$$ restaurant. I loved my food and I wish my wife could say the same.

    We went to Bistro Colorado for dinner. We walked in on a Thursday night, the place was calming. The decor is very Colorado, with paintings of beautiful Aspen trees and mountains. We were sat by our server. He was friendly and polite. We were presented with our menus. The menu represent Colorado with the best of their abilities, Colorado favorite ingredients from field/farm to table. Menu had.Colorado lamb to elk steak, and fresh catch of the day such as scallops, salmon, and more. I am a vegetarian, I ordered gluten free pasta with porcini mushrooms and vegetable medley. My partner had the scallops with mash potatoes and vegetable medley. The food were cooked perfectly! The scallops were seared perfectly, brown on the outside and soft as butter on the inside. The vegetables were fresh and season well. My gluten free pasta were al dente, the mushrooms had so much flavor, every bite of mushroom the umami taste burst into my mouth. We had Colorado palisade pear and ice cream for dessert. Flambe pear with cinnamon and vanilla ice cream it was a sweet endind for the evening. I know some people said that the menu is a little outdated. I don't care of the menu is outdated. For me when the good is cooked perfectly that's all it matters. Sometimes with all the culinary innovations, we forgot the basics. Sometimes I prefer simple, perfectly cook meal.

    This place has the best food in Evergreen. The food is farm to table, consistent, and fresh. It's a great place for weekend brunch. The steak and eggs and the salmon eggs benedict are delicious. At the end of the meal, you get homemade truffles :)

    This place was terrible. Went for brunch on a Sunday afternoon. The service was poor, I ran out of water and coffee several times and no one check on me. I was very unhappy with my meal, could barley eat it, and if took the server forever to check on. I had the duck confit hash. It was more like a soup, the plate was full of liquid from what I don't know. The duck was very salty, the potatoes and onions where not cook all the way. When I think of a hash and poached eggs for breakfast, I think of crunchy potatoes that soak up the egg, not a salty watered down soup. Overall it was an awful experience. Would not recommend. The worst part of it all is that after I placed this review, the chef or owner or whoever comment on it right way. He took the review so personally that he attacked me and tried to make me feel bad for saying anything. What a poor sport, didn't think he would be so low as to personally insult me like that. But guess it's easier to blame someone else than except the criticism, pretty immature. He even tried to use my poor review to talk about all the awards he has and how great his restaurant is. What a piece of work. Did give it two stars because they comped my meal cause I didn't eat it and was unhappy with the service.

    Brunch: very good. The menu is a little bit different than traditional breakfast/ brunch items...in a good way. Chef Travis has put his own special twist on everything. Our group had a barnyard omelette (ham and cheddar), cinnamon French toast, huevos, and eggs + bacon. Super delicious bacon and ham, definitely not run of the mill. Great place to hang out for brunch.

    I wasn't going to waste my time posting a review of this place, but after reading the arrogant reply of the chef to one of his customers, I had to. After all: the reviewer took time to go and pay this chef for his food. The long and short of it is that the place is lazy. The salt and pepper shakers are half full. The tables wobble and there are "order takers" not waiters and waitresses. We enjoyed the first course of a salad with goat cheese and butternut squash soup. It caused me to reflect upon the nineties, I thought "how old and dated". I ordered duck breast and was served the duck confeit in error, no big deal. Said I would wait, and we were in no hurry, the waitress had made a small mistake, not the end of the world. Then after a short time she asked how I'd like the duck breast, med rare was my reply. The duck arrived, the fat had not been rendered and the skin was not crispy in the least and it was medium well. The waitress was kind enough to ask me how my meal was and I told her about it being cooked incorrectly. It's not a big deal, but by now it was later and we had been there long enough to realize the quality is poor and the execution belongs in an army chow hall. They cannot even cook meat properly! My wife's beef tenderloins (2) 1 was med rare and 1 was medium. Rookie move all the way around. Then the chef came out! What a wonderful gesture, but his comments blamed others and he refused to take responsibility for the food exiting his kitchen. He blamed the waitress, poor dear. He blamed the cook who cooked the duck and he then blamed us for being in a hurry. Which, is completely wrong, we sat and enjoyed a cocktail before dinner. He made my wife and I feel bad about saying anything to him. He actually pointed to the ill prepared duck breast and told me he had won an award for it. His arrogance is laughable and so undeserved! My back ground was in the hospitality industry for 25 years. I know a lazy place when j see it. This is a lazy place. By the way, the side dishes were right out of the 90's. Truffle oil mashed potato? I was literally making those in 1995! In my home kitchen! They weren't sent through a ricer and were cold when served. This chef seems to be resting on his accolades. This was demonstrated when he told me about the award he won for his duck breast. I can't eat an award chef. I wanted to enjoy your award winning duck breast chef! I wish you didn't let me down with a bistro that was lazy. I fully expect him to cut me down in his reply. I hope he keeps it classy, but I doubt he will.

    Excellent lunch/brunch. Been coming here since they first opened, lunch/brunch/breakfast and Thanksgiving dinner. Service was impeccable, great attention to detail. We've lived in Evergreen for 30 years and have endured some really bad restaurants--B/C is definitely the exception. Wine list has some great depth and isn't overpriced. This is a place where locals should go more often.
