    We went here because they were participating in Earth Hour, so we dined by cnadlelight. We loved our dinner. While we chose the chef's special venison and duck, we are intrigued by the artisan cheeses, many of them from Colorado, and will come back to try that. The almond joy was a great dessert as well. The staff was charming, and we will be back. It's great to have a restaurant this interesting at this end of town.

    Toto we are not in colorado anymore. I felt judged from the very second I showed up and it only got worse. Sparing the details is what I would like to do but I would advise against patronizing this place... Ever...unless you are white as the light of day

    We vacationed in Colorado last week and enjoyed dinner at Baca's with another couple (local). Superb food! We shared appetizers: prawns, sauteed artichokes and bison empanadas (my fave). The men both had the bison ribeye and shared a bite... delicious. Our other entrees were the lamb and rainbow trout, also excellent. The only drawback was the slow service (and the restaurant was fairly empty) and a rather inexperienced server that did not know how to open a bottle of champagne. It's ok, we showed her so I'm sure she learned from the experience! I would definitely eat here again.

    Their service and staff are superb and will go the extra mile. The food was either too salty or too bland. It was ok food that was overpriced. WE had the tasting menu and i appreciate the fact that they were able to accomodate since they mentioned that it was usually doen for larger parties. Our first course was charcuterie (with smoked duck (delish), aged beef, made on site crackers, grapes, jams, and cheeses) This wasmy fave part of the meal. Next was a salad that whatever was sprinkled on it was salty, i mean way salty. This was followed by the main course both opted for filet of beef (medium well) w/ mashed potatoes, and greeb beans. the side sauce for the steak was like gravywith crunchy bits (garlic? onion?) and again that extra salty taste. Dessert for me was a cherry creme brulee topped with a rich choco cookie and the base was a cherry jam like substance (im thinkin the same as the jam the charcuterie had... needless to say it wasn't that awesome but as always the best part is the crystallized sugar crust. The other dessert was the chambord cream, berries, lemon custard and some foam all served in a martini glass. Presentation was great and the taste was ok kinda like a parfait. We had two drinks cucumber water (awesome!!!): cucumber vodka and a margarita super strong. The staff was attentive, friendly, and prompt but the food was eh. The service is what raised the rating for me or the food is what lowered the rating depending on which way you want to see it.

    Having gotten married at the Inverness 15 years ago we decided to celebrate our anniversary at Baca, which used to be the Swan - a wonderful fine dining establishment that we had enjoyed many times, so we were looking forward to this dinner for a long time. Since it was Valentines Day weekend, we were unfortunately presented with a special menu. I generally do not like being told what to eat, so I was already disappointed, but it was a pretty good deal so we went with it. First course, the hubby had the Colorado Pork Belly and Scallop and enjoyed it. I had the lobster bisque and while it was okay, it didn't hold a candle to my mother-in-laws which is the bomb! Second course was salads. Hubby had the Caesar which was fine and I had the winter greens, which was by far the best course - pancetta and poached pear - yum! We both had the Roasted Beef Tenderloin for our entree as the other choice was Salmon - my least favorite fish. Neither of us really enjoyed it because it sat on a bed of Gruyere Polenta which was so strong and rich that it destroyed the taste of the beef. Meh. Dessert was a Chocolate Tasting, which normally would thrill me, but the cake was dry and the mouse was hazelnut, which the hubby loved and ate mine, but I don't dig hazelnut. Bummer. Service was good - sometimes these fancy dinners can be hard to pace but this time was excellent - just enough time between courses and the server, Lorraine was friendly and helpful. Overall, an okay experience but not sure I'd race back.

    Great service and great food! I ate on a Monday at the moment it opened, so it wasn't crowded at that time. If you like pork, try the kurobuta pork belly and scallop. The pistachio chicken was also exquisite. For the price and service, the experience was worth it.

    My fellow cheap-o's and I stopped by this place as part of the 5280 restaurant week. Good thing we made a reservation because this place was swarming with our fellow wannabes and some conference attendees from the hotel trying to get a taste of fancy food at a good price. I dig the atmosphere. Dim lighting and classy decor give it a kind of cool-evening-spot-around-the-corner feel. The food was pretty good. It looked and tasted upscale, but there wasn't anything that blew me away. Lobster bisque and salads were good. Bison short ribs were tender and had a nice flavor. The paella was cooked well. Deserts were probably the best part - including a deconstructed banana split with a little shot of hot cocoa. Their overall plating and presentation will make you feel like you're at a classy joint. I tend not to hold it against a place for less than stellar service during restaurant week. Is a small hotel restaurant that's rarely busy supposed to hire more staff because half of Centennial is going to be there demanding gourmet service at a gas station price? I don't think so. It was pretty bad with long waits between contact, but the wait staff was doing the best they could, literally running back and forth between tables. Had a good time, and might go back, but not feeling it needs an automatic rematch clause.

    Ok so I might be a little bias to this because I used to work here but it is really a wonderful place to dine for a good steak. You can pretty much go here any day of the week and have a nice romantic dinner with no interruptions. It is one of Englewood's best kept secrets as far as I'm concerned. I recommend the Bison ribeye as I would even order this some nights for myself to take home. The staff is very knowledgeable of the wine list as we are train extensively on it. So they can recommend a good wine to go with your meal from all around the world. It is an ideal to impress your business partners or impress your girlfriend for a romantic dinner.
