Still under staffed, disorganized and out of food items. Eggs under cooked & didn't get order right. Staff must be taught to not make eye contact lest a customer ask for assistance like some of the coffee in the pot in your hand. Would like to make this my Sunday Brunch place but these problems persist.

This was ridiculously awesome! This is the second time we visited and this time was for dinner. I had the Stuffed Bass with a Crab Cake appetizer, dinner salad with Roasted Scallion vinaigrette and the Donut Bread Pudding for dessert. Chef Scott made this delicious food and will definitely go back. It's the best food we have had so far living in the whole of Colorado! Priced right and perfectly cooked and served.

Visited on 9/12/15 and they were nice to feed us since they technically closed at 8:00pm and we arrived with four others at 8:05pm. All info on Yelp, locals said 9:00pm so everyone in the area needs to be updated. HOWEVER.....the food was delicious!! My hubby had the flank steak and he loved it. I had the Porterhouse Pork that had the MOST delicious cream sauce! My appetizer was their cheese soup, also outstanding. Do not hesitate. Great restaurant in lovely Cuchara!

Fresh, flavorful, friendly... the alliteration alone should convince you enough to come to Timbers. :) I happened to be driving up CO-12 into the mountains, and I stumbled across the town of Cucharas, and Timbers. I just went in for a drink, as I was planning dinner at another spot that night later on. As it turned out, I came back to Timbers instead and dined there. So glad I did! Cup of Potato soup: I could pick out the individual flavors (potato, cheese, carrot, celery, herbs & spices), but the blend was a delicious mixture that was the perfect foil to the thunderstorm outside. Soup isn't on the menu, so be sure and ask your server what the daily offering is. Grilled avocado: This was essentially a deconstructed guacamole, but with a unique twist. The avocado is grilled, which adds a tasty and unique note to the dish. The chips were grilled, too, I think, at least they looked to be even if for a few seconds. This also brought out great flavor. The pico de gallo was fresh and bright, and the entire mix was perfect together. Beef burger: meant to order the game burger, but got tongue-tied unfortunately. Still, it was a very happy accident. Had this with cheddar, by the way, in case it matters. The bun, while not made in house, was very unique, and an often overlooked part of the burger equation. This one was delightful, well-toasted, and really tied the burger together. :) The beef itself was grass-fed, hormone-free, and I think organic, from a local source. And it showed. Oh wow... I haven't had a burger this juicy (medium-rare, too!), beefy, flavorful, fresh... it was just perfect all around. A huge pickle slice, fresh tomato and lettuce, and it's heaven. Oh, and the hand-cut fries? Winner! This was a great meal with wonderfully friendly staff, an amazing atmosphere, and high-quality ingredients. The entire bill with a drink? Less than $25! Are you kidding me? Yeah... totally coming back here someday, I hope. Well worth the visit. If you live nearby, or happen to be passing through, make your plans to go there, but be sure to check their calendar first! They close around new years until mother's day, I believe she said (the manager, I believe). During the fall, they will be closed during the week, but open on weekends, so again, check with them to see their schedule before going.

This place is great! I had the flank steak and my friend had an entree salad. The food was delicious and the staff was incredibly friendly. The atmosphere is a little cooky (mainly I'm thinking of the antler chandelier) but the staff was so pleasant and helpful that everything seemed to blend together into a really wonderful dining experience.

When I pass through the area, I always make a point of stopping at the Timbers, and I am happy to say the food is better than ever! The portabella stuffed with spinach ricotta was amazing! I will definitely be back.

The Timbers is our favorite restaurant in the area. The service, atmosphere, and food is fabulous! We felt the prices are very reasonable for the excellent food offered on the extensive menu. You won't be disappointed!
