    I just got back from Guadalajara on Sat 04-25-15 for my brunch buffet, i started out with the manudos soup it was pretty good i had the second cup, but after that i've tried the rest of the buffet, yes, it was a lot to choose, but mostly quick cooking , not as fresh, some dishes were very salty, mostly sloppy, i had a soda with my lunch and the bill was 19$, OuCH!!, THAT WAS TOO MUCH, I NEVER GO BACK...

    I was very impressed with my first experience at Guadalajara! I went with a large group of coworkers (about 30) and they did a great job handling all of us. The restaurant itself was very clean and had a nice "authentic Mexican" vibe to it. They have great, reasonably priced lunch specials so I highly recommend coming at that time. I got the Spinach Quesadilla - it came with rice, beans, coleslaw, guacamole and sour cream - for only $9. It wasn't the best Mexican meal I've ever had, but I really enjoyed it and would order it again! All my coworkers seemed to enjoy their meals as well. The chips and salsa were tasty. The best part had to be the service though! Everyone was very friendly and our waiter handled all the orders and checks to perfection.

    Meh. The location in Castle Rock is better. Ok tasting food, slow service at the Aurora location. Not impressed and won't be back. There are other places in Aurora that are way better for Mexican food.

    You've gotta love this place! The service I receive is better than any service I've received at a restaurant. Live music. Awesome margaritas! I always get the Seafood Enchilada, so good! Comes with shrimp and scallops and they're very good at giving a good amount of both. The service is quick even on a busy day (sunday).

    Terrible, terrible, terrible....I tried two different times to eat at this place and the food from the fajitas to the carnitas just plain bad. The wait staff is friendly enough, but the time to get food from the kitchen to the plate is not good. There is no seasoning on the food and came out lukewarm which did not make me happy. Will pass on this place now and the future.

    I was a bit scared to go to a restaurant in this area but it was delicious. Although the salsa was a bit watery, the service was prompt and our waiter was nice. They have a large menu and I got a combination plate with a taco, chili relleno and enchilada which was about two meals for me for about $12. I have to say the Chile relleno was the best I've ever had! (Crispy). The prices are worth the amount of food you get. I would definitely come here again.

    As I nosh on seafood enchiladas from Guadalajara's in Aurora/Denver Colorado I am writing this review. I had to take a rest...this is sooo good. Oft times a restaurant claims to be "authentic", well this is. Really great beans and rice and superb guacamole! Wish I had dined in for a margarita! (Shoot I forgot to take a pic) $#&&/@

    Given that there are so many excellent options for Mexican food around my house, it took almost a year for me to get around to trying Guadalajara. I came for lunch on Sunday and it was pretty busy - lots of families speaking Spanish, seemed like a good sign. The interior is nice decorated and better lit than other Mexican restaurants in the area. The menu is about five pages long so there are plenty of options to choose from. The lunch specials didn't do much for me so I decided to do a big combo off the dinner menu to get a taste for this place. I ordered the relleno, enchilada, and tamale combo. At almost $12, the price seemed high, but the I saw the HUGE plate of food come out and it suddenly seemed like a much better deal. Salsa was a nice mix of onions and cilantro and Guadalajara did something most restaurants should do - they warmed up their chips! The tamale was one of the best I've had - a good mix of juicy, marinated pork and soft, moist masa. The enchilada and relleno were also tasty, though pretty standard fare. The rice was also good but plain. The beans though were really yummy - you can tell they use real lard! Overall I'd say this is one of the best Mexican restaurants I've tried in Aurora and I'll definitely be back to try more.

    We have never had a bad meal here. The service is always great, they are fast and friendly. The restaurant is clean and vibrant in festive decor. The food is always sizzling hot and fresh out of the kitchen. There are a ton of options to choose from and I think everything has been awesome so far. The sopapillas are great too.... I could have licked the plate.

    This place is freaking delish!!! Stayed at Best Western and was given a discount of 15%. We had some margaritas that were very good .. better than I've had in years! Got a decent buzz off 1 each! We ate the carne asada which tastes like a flavourful Ribeye steak.. and the shrimp enchiladas with creme sauce. Yum yum yummmmy! Chips and salsa were good but ive had better. The salsa bowl is tiny and frustrating to share with someone.... thats my only complaint. Saturday night at 8pm it was busy but not bad at all. No wait. Nice comfy booth. Great young waiter. Lots of hispanics eating here which is always a good sign that the mexican food is great .. and it was!! Coming from California I have been spoiled for years with the most amazing mexican and baja food. This place hit the spot and reminded me of home! 2 people ate off the dinner menu with large portions and each had top shelf margaritas and after the hotel discount it was right at $41. Nice clean decor.. will definitely come here again if I pass through Colorado! Thanks Best Western for the referral to go eat here!!

    Stopped in for lunch. Good prices especially for the lunch specials. It was pretty authentic. The Guac was good and tasted home made. The chips were yummy too. I ordered the arroz con pollo and unfortunately it was more on the ok side. It wasn't too spiced or flavorful. I would go back again and try something different.

    The wait staff is extremely friendly! The portions are huge, which evens out for the price. The menu is quite large. The Camarones Mexicanos was tasty, but not spectacular. The chips and salsa is free, which is nice, but the salsa tastes like tomato juice and has no kick. Ordered the sopapillas for desert. They came with honey and strawberries drizzled over the top and it was delicious!! Overall, the food was ok, and the desert was great.

    Guadalajara has good food and good service at good prices, the menudo really hits the spot when you are hung over and their carne asada truly has a great taste! the only thing I didn't like about this place is that they didn't tell me that asking for extra lemons was going to be and extra charge, trust me Im not cheap when it comes to food, but I did serve before and its good to let the customers know when something has an extra charge I ended up paying $6 for two extra sides of lime, its just a surprise you can avoid..

    I had a wonderful experience at Guadalajara on Abilene in Aurora. There was strolling singer. The service was absolutely fabulous. Very attentive servers; iced tea was never empty. Avacado tostada and Mexican hamburger meals were great. Sopapillas with honey, strawberry, and cinnamon were too good!

    Food was alright, although I won't return. Service was bad, and chips were stale. No free refills on horchata that already costs $3.25. The only thing that saved it was the nice bus boy who brought a box and a container for my guac. He took our plates and ran our card. If it wasn't for him we would still be sitting there.

    Great food, fast, and they're open late on a Saturday night (till 11:00). I got take-out in a pinch, and I didn't have a menu, and the girl on the phone was helpful getting my order together. Maybe next time I'll actually sit in and eat there.

    Overall, I'd have to say this is one of the best Mexican restaurants I've ever been too. The food never disappoints. Make sure to try one of their specialty dishes. Although their burritos and tacos are fantastic, their specialty dishes are amazing! The service is always great, and some nights they have a mariachi band or roaming guitar player, which is always fun

    Went for dinner last night with my wife and baby. The service was fast (which was great because our daughter was hangry). The unlimited chips and salsa are yummy and the kid plate was giant. My wife got the deluxe burrito with the shredded beef. It was tender and packed with flavor. I has a combo plate with a cheese enchilada and soft chilli relleno. The sauce on the relleno was delicious and well spiced. The enchilada was bland. In the past we've also had the guacamole and it was creamy and delicious! We'll probably go again but we're not in huge rush. We'd rather keep looking to see if we can find something a bit better.

    This is my favorite mexican place in the Aurora area, and I still have to drive about 20 minutes to get here. I have liked everything I have tried, and I really like their chili rellanos and the flavor of their mexican rice. It is similar to me to the flavor of 3 Margaritas/Las Margaritas if you have ever been there. The location in Parker was just as good, too bad it looks like that one closed. Their service is friendly and quick. I also like the colorful interior and chairs they have. Also if you ever get it to go they make their food quickly, if you go there and order you only have to wait about five minutes.

    Been going here for years. Best margarita in town. Love the unique dishes that are more authentic. They have your typical fare but branch out and try something new, it's worth it. The chicken culichi & chicken a la creama are my favorites.

    I'm from Phoenix & we're snobs about our Mexican food. As gringos who eat Mexican food 1-2 times per week, I hate to admit this was some of the best Mexican food I've had in a really long time. Chips & salsa were great. I had seafood enchiladas that were delicious. The beans were wonderful! The parking lot was full for a Sun. night & there were a lot of Hispanics eating there which was a very good sign of authentic food. The service was excellent. I wish I could find a duplicate restaurant in the Phoenix area.

    My plate came out as a pile of mush. You could tell what item was what. I also got home and threw up 2 times. Fucking sick. Also, the guy asking if you want him to sing you a song is irritating. As if paying for overpriced Mexican food isn't enough.... Barf.

    I'm of two minds about Guadalajara: My many luncheons here have been stellar. However, a recent dinner was underwhelming at best. Perhaps a future update after another dinner is in order. I've been a long time fan of Guadalajara, having been many times for lunch, and recommending their offerings to both colleagues and customers alike. My favorite lunch dish is the Camarones Crema, a wonderful mix of Shrimp in a delectable creamy sauce replete with onions, peppers and mushrooms. This dish never ceases to amaze. Dinner this week was a major disappointment. I had their forgettable Tacos Al Pastor, and my companion tried the Relleno & Enchilada combo. Both were delivered too quickly from the kitchen, and luke warm. Next, we had to wait for utensils before being able to dig in. The combo was awash in oil, and nothing had any taste. Perhaps it a Monday night dinner, but things were off. Perhaps I should stick with mid-week lunch at Guadalajara.

    "Let's get the chicken fajitas... they can't screw those up." Long story short, they CAN screw up chicken fajitas. Which is a pretty spectacular feat when you think about it. How can anyone screw up grilled chicken over onions & peppers? I went here for a late dinner with some friends who recommended the place. We had fajitas, chile relleno, and nachos. All were subpar. Chips were practically inedible. Beer wasn't cold. Definitely the worst Mexican food experience I've had in the area... but maybe I've just been going to the right places. ;)

    I must say that in the three times I have been here, I have never been disappointed. The portion sizes are huge, the kids portion is suitable for an adult. The menu selection is quite large as well. They offer some yummy margaritas and sports on TV. I loved their arroz con pollo, it was not traditional in it's appearance but, man, was it amazing. The chile relleno are great. I have yet to make it to dessert since the meal is always so large. If you have not given Guadalajara a try you simply must go.

    Great food and place! All of my co-worker's favorite place!! We go on lunch most of the time and it's quick and great food, lot's of choices all over the menu...I'd say this is semi-authentic Mexican food, given I am from Mexico and we don't smother things there like they do in U.S. My favorite meat is the shredded beef and it's always great! I'd definitely recommend this place if you're in Aurora.

    My husband and I decided to stop here on our way to DIA knowing nothing about it besides reading the Yelp reviews. We loved it, and will probably make it a regular stop on our way to the airport. The chips and salsa were great - the salsa was super fresh and tasty. I ordered the black bean soup as a light lunch only to be surprised by the biggest bowl of soup I have ever seen. It also came with a plate of toppings - cilantro, cheese, tomatoes, etc. - and tortillas, so it actually made quite a filling meal. The service was great even though we were there at an off hour. The restaurant had a nice ambiance and was very clean. Highly recommended.

    If you want ginormous helpings of Mexican food in a fun vibrant atmosphere for less than $20 a plate for dinner come on over to Guadalajara. The benches are very tall and cozy and although they sometimes make the servers forget about you you'll be still working on that mountain of food you receive with whatever you order. I loved the colorful chairs but we didn't get to sit in them. The regular plates of dinner are served on large oval plates or in my case, the salad on a plate 2x as big as my face (well probably 1.5 cuz my head is large). I had the salad vallarta which is a grilled tilapia on a bed of chopped romaine, corn, tomatoes, red onions with a size of grilled asparagus, mango, and avocado slices. Their salads are the way to go if you're trying to be healthy but still want to enjoy something with a Mexican touch. This by no means is authentic but it tasted great in a light mango type dressing. My mom had the salad tapatia which is served with some charbroiled carne asada (or as they put it azada). I thought the carne was delicious and seasoned just right. The other dishes I sampled were the burrito colorado and another burrito that my sister ordered with green chile sauce and pollo. I liked the colorado carne inside that burrito and my dad polished off a good amount of that beast. My sister also managed to eat half of her burrito which was swimming in green chile sauce. I thought the burrito was kind of weak in that the rice wasn't really Mexican style and the flavor was sort of bland but she enjoyed it. The beginning of the meal is of course started with a complimentary basket of tortilla chips and salsa. Their salsa is more watery than chunky and cilantro'd. The chips are more solid than thin. They made sure we had enough salsa and chips constantly. If you ask for small plates for sharing they'll bring you your standard dinner plate. There are NO small plates here.

    Being from California, it's tough to find good Mexican food in other states, but Guadalajara was delish! They serve ground beef, which is a minus, but they also have shredded beef and carne asada, so I guess that evens out. You can get your chile rellenos fried or soft...OMG, fried chile rellenos are awesome! Great food, super nice staff, and pretty cheap considering the portions.

    I've eaten here several times. I love this place. Ok, the green chili is good not great, same with the chili rellenos. However, their salads are wonderful! I especially like the chicken salad, but the beef is also great. I don't know what they marinate their meat in, but it's delicious. The dressing is light, not overpowering. It comes with asparagus, wonderful. I love their refried beans and usually get some to go. On my last two visits, I had the carne asada. It was OMG good. I went with a friend and split a full serving both times. Lunches are great here. I love their decorations, the colorful chairs, and the staff has always been wonderful.

    Until this past week, I would have told you that any Mexican restaurant is merely a cut-and-paste, duplication, duplication of any other south-of-the-boarder joint. What changed my thinking on this was trying Guadalajara. More specifically, trying their crispy chile relleno. Unbelievable; they changed my life and consequently, every future relleno experience I may have. I found their service to be slightly above average, while the environment was pleasant, being prolifically decorated with familiar brick and stucco, mini palms, macaws, and scenes of farmers dressed in white linen and sombreros, and plump, dark-skinned women pounding tortillas. While I wouldn't necessarily go far out of my way to return, being within walking distance from my hotel made it way more enjoyable. I could actually burn off a few of the many calories I just consumed by walking back to my room. When I'm back in the area, I'll certainly be back for another crispy chile.

    We stopped by for a quick lunch and order a couple dish to share. We liked the Carne Asada along with the grilled scallion. The chile relleno however was old and the green chile was bland and cold. Service was ok, we weren't offered chip & salsa refill even though that was our favorite! Meh!

    I really love this place but don't get to Aurora very often. Was out mattress shopping nearby and we decided to pop in for a late lunch. Great lunch specials served until 3 pm. It's a cute place, plenty of parking, friendly bi-lingual staff - I get to practice my Spanish, lots of Latin families who wouldn't be eating here if the food wasn't pretty damn good. I grew up in New Mexico and spend a lot of time in Mexico, so I'm pretty picky about my Mexican food. Is this the best in Denver? Maybe not, but I think it's pretty darn tasty. I'm pretty much stuck on a couple of favorite items. They do what they call a cheese crispy - large flat flour tortilla covered in melted cheese. Just break off a piece a dunk it in their spicy salsa and enjoy with a very competent (if somewhat pricy) margarita. I always have the soft chile relleno because it is almost identical to the ones I get in Puerto Vallarta. A nicely roasted poblano pepper, dipped in an eggy batter and fried until golden on a light tomato salsa - yum. And, it comes with rice, beans and a little cabbage slaw all of which are usually throw aways elsewhere but quite good here. I should really explore more of the huge menu. I see a lot of good looking fajitas go sizzling by. Never made it to dessert. The star off is because the double gold margaritas are like $8 - a little high but it keeps me from thinking about a second one. If you happen to be in this part of Aurora, I'd highly recommend you give them a try.

    One of my favorite Mexican restaurants close to home. The service is always very good. I've never had a bad experience here or a bad dish. Try the roasted jalapenos and the Mexican trio dish. Mmmmmm

    I've been coming here since I was in 5th grade. I am now a junior in college and I will remain to come here until they close. I get the same thing everytime; the expresso burrito. It is fantastic. Over the years, I believe the red sauce on it has changed somewhat, but the taste is still quite unbelievable. The portion is very good for the price you pay and the free chips and salsa are very good. One thing I would say they could improve is the consistency of good service throughout the restaurant. It is either hit or miss with some servers, however, a server named Wes has been my family and I's favorite by far. If you eat here, REQUEST his section, you will get good food, great service, and will leave happy.

    Stayed at the La Quinta Inn which shares a parking lot with this Mexican Restaurant. Walked over and placed a to go order for the Azzoz Con Pollo. This was a terrific dish and I highly recommend it.

    Whoa boy...lemme tell you. Even for people that know nothing about mexican food you would shake your head. I have never, ever...EVER seen celery used in green chili. Right there tells you that this place needs help. I ordered a chimichanga and the tortilla that was not covered in what I'm going to call avacado green paste with an overwhelming raw onion flavor was just so very greasy with no crispness to it at all. They set a tomato slice on the top for what I can only imagine was garnish and covered it in the avacado green paste and some sour cream. I dug in only to find big chunks of bell pepper and big chunks of chicken. This restaurant used to be good...very good in fact and they need to get their head cook back. Badly.

    The other half (Mexican native) and I have been coming here since it opened. Very close to home for us, so it's a bi-weekly ritual, more or less. The food here is more authentic than the majority of Mexican restaurants in town, and the staff is always very friendly and eager to please. If you just like Americanized burritos, tacos and chiles rellenos found everywhere in Colorado, there are better choices; this place does beef (steak) and fish dishes well at a very good pricepoint for what you get. Try the excellent Tacos El Carbon or Steak Torrero, or maybe the Hauchinango or shimp. The beans and rice are always fresh and good. The chips and salsa are good (we always get a side of pico de gallo along with them at no additional cost) to make a good thing better. If you like flan, they do have a good one here. I'd say the clientelle is usually 50% latino (good sign) and no shortage of lower-middle class "gringos" all ordering smothered burritos...which wouldn't be the best choice of menu items here, but seemingly very popular. Friendly smiles and good "no nonsense" inexpensive Mexican fare are the draws at Guadalajara.

    This my third visit to Guadalajara. My first time was great, everything was very fresh and tasty, the second visit was a complete 180, in which everything was horrible. So tonight I was having a major craving for fajitas, so I decided to give Guadalajara another shot. I ordered chicken nachos for an appetizer first, the chicken on the nachos was unseasoned and had that weird nasty boiled flavor. Then my fajitas came out, they looked good, that is until I tasted them, they had this unappetizing marinade which wasn't good at all. It's too bad, I really wanted some good fajitas.

    Went here today with some friends from work for lunch. I only work in Aurora so am not too familiar with all the places to eat around my area so trekked a bit and upon walking in definitely reminds one of 3 Margaritas...not sure why the décor is so similar?? Anyways I was told the chili rellanoes were the bomb and these babies are my FAVORITE Mexican treat! Took a bit to get served but got the rellano plate was hot and huge. As I have had many rellanoes in my life I have to say this one was pretty good and the prices very very affordable. Was cheaper than the strip mall place we hit last week and it was definitely one to try. The salsa was pretty good as well. Very cilantro tasting! Will go back again for a lunch soon. The only downfall was the service was subpar and they weren't extremely busy but the food spoke for itself! I wasn't wild about the guacamole but to be honest there was so much food I barely ate any as there was no more room in the inn!!! I recommend to give it a try if you are in the area!

    First off... shredded tacos means that you're meat is... er... SHREDDED? I ordered 2 and got 2 ground beef. I asked for a replacement and they said they didn't serve them. Ugh. My husband ordered chicken and it was GROSS! Their enchilada sauce tastes like what I would think that butt tastes like. Real mature I know. I thought maybe it was a fluke, so I tried again on a different night. No luck. The service was much better this time, but the food unfortunately was not. This time I tried the nachos and they were alright but still missed the mark. I got a mountain of chips but barely the top was covered and the chicken was bland. Like another poster said, there was no seasoning on it what-so-ever and it tasted like it was boiled. Most of the toppings didn't reach the bottom chips and so after removing the chicken there wasn't really enough to cover the chips, so I had chips. Yum. The salsa they serve is watery and lacks flavor - so that wasn't much help either. The sauce they put on my husbands food was more like glop. It was thick and orange? It looked like snot. Gross. So not going back.

    My sweetheart took me here for dinner. I must say, that I have had great Mexican food...homemade is the best...like someone's grandmother taught them, which is how I have learned to cook....stealing the secrets of friends who were taught first-hand. I am always dissapointed when I order a chicken dish and the chicken isn't simmered in cumin and chicken broth until it falls off the bone and is shredded with a fork I am greatly dissapointed.....well, I ordered the flautas here, and it was like Grandma would make them. The beans and rice were delicious too. And noted was the fact that there were hispanic families here too...always a good indication that the food is authentic. I have never tried Mole', but the next time I come here I think I will try the chicken mole'....I have the feeling it will be great !

    Just went here for lunch on Cinco de Mayo. The menu had so many options, the service was superfast (we got our lunches in less than 5 minutes), and the food was really good. I had the enchilada and tostada combo, my friend had the enchilada and taco combo, and another friend had the avocado tostada plate. I'll definitely go back to this place for lunch or dinner whenever I'm in the area.

    I had to try this place based on other reviews. The menu was so overwhelming! There had to be hundreds of choices and I sat with my menu for a good 20 minutes before I could figure out what to order. After much deliberation, I remembered an earlier review mentioning the Chile Rellenos. Funny thing? I had never really liked them before. I decided to go with that and the waitress asked if I wanted it soft or crispy and I asked her how she would have it. She reccommended crispy. I have to tell you I almost cried it was so good. Even though it was smothered in green chile and cheese and shared a plate with beans and rice, it was SO crispy! The inside was heavenly! I cannot wait to go back with my husband and try some other stuff (but have to get another one of these as well). The service was pretty great too and as far as I noticed, I was the only English as a first lanuguage speaker in the entire restaurant. So good! You must go there:)

    Has been our first choice for a Mexican restaurant for a couple of years now. The variety and out of the ordinary selections are excellently prepared. Some dishes make use of moles and pumpkin seeds. Some must tries are: "Molcajete", "Mexican Trio", "Mole Enchiladas", "Polo Culichi", "Tacos Al Pastor", "Mar y Tierra", "Chicken Pippian" and "Pollo Poblano". Most of the time you will need to take the rest home. There are also the usual Mexican restaurant items as well. We haven't tried the seafood selections as we keep getting drawn to our favorites, so check out the other reviewers regarding those. Wide variety of margharitas with excellent preparation. Service is prompt and attentive, atmosphere appropriately decorated and clean.

    I always come back for the chicken mole at Guadalajara. I haven't been able to find any other mole dish that rivals this one...anywhere. They also have awesome lunch deals and you can get half orders (still a ton of food) on the cheap!

    Worst food ever. They called dried microwaved meat authentic there. Dishes all look like Tex Mex dog food. Asked server if he would serve it to his family and he did not reply. If you have the tastebuds of a midwesterner, this is for you. Otherwise, skip this joint. Aurora has better ethnic food to offer than this garbage heap.

    I'm assuming the two naysayers went on off days. Went back the other day and was met yet again with delicious food, great service and technicolor decor. I am SO happy to see that they now offer arroz con prawns (weird that they call them prawns but whatev) so I could again taste the deliciousness that is. For lunch they offer a half plate which is still gigantic but much more affordable and easier to eat midday. I still highly recommend this place to any one looking for great food.

    I just moved to Aurora in November. The night I closed on my house we drove around looking for Mexican because the group I was with was craving it. Upon walking in the door, it looked just like the inside of a 3 Margaritas (another Mexican restaurant chain here in Colorado!). We were seated and handed menus... again, replicas of 3 Margaritas. Everything on it was the same. Everything even tasted like 3 Margaritas. I like 3 Margaritas, so it was good. But it seemed to be just a notch below 3 Margaritas. As a food connoisseur, eating at a copy cat restaurant was odd. I was hoping for something new, I got something I have had (and enjoyed) many times before. I would give the 3 Margaritas chain in general a 4 star rating. However a slightly below par copy? Only 3 stars. 2/26/09 - Alright, I've changed my mind. After sampling a few other Mexican places by the new house and visiting Guadalajara a few more times I've bumped it from 3 stars to 4. It's delicious, consistent and the service is fantastic. Even if it is a knock-off, I dig it and will continue to eat here! So far, it's the best Mexican I've found in Aurora.

    I have been on the prowl for a good mexican restaurant since moving to Denver a year ago and I finally found one on Cinco De Mayo - thanks to the reviews of fellow yelpers. I ordered a burrito with grilled steak and it was the best I have ever had. My husband ordered a chimichanga and he finished it so fast that I was only halfway done with my meal when he was done. The service is good, our waiter checked on us regularly but was not too overbearing. Their green chile is good and the banana margarita is tasty.

    My family and i "were" very regular guest at this restaurant for the past 15 years! That all ended Saturday night! Went in with my son, he gets the same thing everytime espresso burrito. I tried something new "their most popular burrito" the Deluxe! Shredded chicken & Smothered in green chili. Since Sunday AM i have been on the toilet and throwing up. Now i have a bad fever! Something was not done right. Definately food borne illness. I did the right thing and called the owner Miguel. He could care less of my situation, very sad that he doesn't know how to handle a call like this. I usually NEVER WRITE A BAD REVIEW esp on a small biz. But after this they leave me no choice. I have missed 2 days of work and still feel horible. I believe it was the shredded chicken because he told me they dont sell much chicken . I guess it should not be part of their most"Most popular burrito" then!? They have now lost a very long time and loyal guest. I will take my Mexican food nights to Real de Minas from now on!!! This place lost all my families business forever. Miguel, take management 101 & learn the basics at least. This is the reason you guys are not as packed as you used to be on Friday and Sat nights. Very dissappointing.

    Huge selection of food so it took forever to decided what to get, I ended up getting a burrito that was filled full of extremely tender chunks of pork, rice and beans and I paid the extra to have them smother it in green chili and cheese. Definitely worth the extra $1.50 or whatever it cost. Food was very tasty, prices weren't bad and the service was pretty good. Definitely going to be back, and soon.

    well well well here we are again in the search for mexican food here in Colorado. So we sit down and do the usual of looking at the menu, we order our food now the chips and salsa are some of the best i've had in Colorado. now the bad parts, there was a crying baby for over 20 minutes c'mon people I know you want to bring your kids out but a baby crying for more than 5 minutes bring them outside. Now what i ordered literally ended being fajitas or something close to that it was ok but fajitas are literally a dime a dozen. If i wanted fajitas I would have ordered them. So I wont be going here again and the search continues for mexican food

    If I could give this place 3.5 stars, I would. The chips and salsa at this Mexican restaurant are really good. Usually this is an indication that the restaurant is going to have excellent food (based on my experience), but I've had both really great and mediocre meals here. The Salad Vallarta is my favorite dish on the menu. It's a big salad with a generous piece of grilled fish (tilapia maybe?), avocados, mangoes, and asparagus, with a citrusy dressing. Everything just tastes so fresh on the salad. On the flip-side, I've also had the chile rellenos, and let me tell you, I was not a fan. I guess I don't like chiles that are wrapped in a corn tortilla and fried, I prefer an actual batter. The servers are always very attentive, and this is also a great place to come during the afternoon because they have a pretty good lunch menu with very reasonable prices.

    Yelpers, you've steered me wrong! I went here due to the positive reviews and I was sorely disappointed. The food was bland and lacked taste. Dumping 4 cups of salsa on our food didn't help. The salsa itself was just OK with just a little bit of spice. I don't see how you can call this anything close to authentic. The service was spotty. Sometimes it was very good, but at the end it got slooow. I decided to skip out on the sopapillas I was craving. I grew up on my family's authentic Mexican cooking, including those that live in Mexico. I say skip this place. The only thing I can say is that it wasn't terrible, so it still gets 2 stars.

    Seriously, I dont understand why everyone likes this place so much! I went while craving mexican food one night to get some takeout and since it was close to home, I figured, why the hell not? I saw on yelp all these positive reviews. Um, no. I had this burrito that was drowning in some watery sauce and soggy tortilla. It was filled with "grilled vegetables" which looked like they were nuked slugs. I couldnt even eat more than a few bites. The sopapillas were alright I guess but I work at a place that has the best fricken sopapillas ever so I am a little biased. Also, while I was waiting for my takeout order, I asked if they had a bar I could sit at and have a little drinky drinky. They said they didnt have a bar. WTF!? And they had a margarita list. And a beer list. Did they just have a keg in back? And make their margaritas in back? How does that work? Anyways, just drive a few extra minutes to la cueva. Much better and they actually have (gasp) a bar.

    We moved here about 5 years ago and accidentally discovered this place. We've been regulars since, but I have to say that in the last year it has really declined. Both the service and food have taken a big dip which is very depressing. The owners apparently have several others in the metro area, so hopefully things will improve. In the meantime, we've been forced to start looking for an alternative.

    I tried Guadalajara at the recommendation of several Yelpers. i am sure glad I did! Good mexican food is something of a rarity in the Denver area, so I was very pleasantly surprised when we ate at this little gem. The portions are quite large, so go hungry or share entrees. I found that their chile relleno was fantastic--great crisp pepper, with perfectly cooked breading and the cheese on the inside was fantastic. I also enjoyed their enchilidas. My daughter liked the quesadillas and ate them all! I recomend Guadalajara. The staff is helpful and fun.

    Very, very good food, excellent service: really fast! Beautiful decoration, cute waitresses, and the location is unbeatable if you're travelling to beautiful Colorado: Close to I-225 and the Airport. I really had a good time here and I'm planning to go back.

    The first time I went to Guadalajara I was overwhelmed by the decor. The restaurant is bright and cheery and the chairs, holy cow, they are all carved and painted in bright, tropical themes like parrots. I was expecting a chain restaurant quality to the food, sometime like Chilis or Bennigans, but Mexican. Boy was I surprised. The food was fantastic. You wouldn't think to expect this quality of Mexican food behind a hotel on I225 and Mississippi. I have had something different every time I've gone here and it has always been a delightful experience. From the standard fare such as Fajitas and the Carne Asada, excellent. I've had the bacon wrapped prawns, delightful. The chicken with pipian sauce, made from pumpkin seeds, wow. Look for the bright yellow building, you won't be disappointed.

    OK, I'm mexican (gasp, and i speak engrish!) growing up and eating at relatives houses so for a LONG time I have cringed when eating out at mexican restaurants, because they're mostly tex-mex and smothered with chile sauce that bad cooks use to cover up mediocre ingredients and preparation. So discovering Guadalajara's was a godsend. Do they do everything to perfection? The answer would be "no", but they do most of the things I remember eating VERY well, they could improve their beans and most people misunderstand the chips and "salsa" they serve to start things out, it's NOT salsa. it's chile meant to be spooned onto your food to flavor it with heat the way you like, because most mexican family food is not doused in chile - there was always a small bowl of freshly prepared chile on the table at grandma's. I dont think I actually ate what people call "salsa" until my twenties. You can (and should) ask for some pico de gallo (made there) if you want something closer to salsa. I'd recommend something, but I dont have a specific favorite - they do beef very well and their albondigas soup is always good. If you have a problem with every dish in a mexican restaurant being spiced, then go here.
