This place is getting five stars because it is by far the best Mexican food I've ever had outside of Southern California. The prices are good for the size and the chips are free and come with okay salsa and refried bean dip. Service was outstanding as well.

It is mexican yes but as far as the best. No The beef was a bit greasy for me and the rice did not say you need more. I believe the beans were almost there but still lacked in flavor. I was impressed with the crispy chili relleno, smothering with green chile. I would come back again only too se if I just caught this place at a bad time.

Hands down, with out question, the WORST Mexican food I've ever eaten. Honestly, Taco Johns and Taco Bell is about 3 steps up from here. In fact, I feel like I'm insulting these 2 fast food chains by mentioning them in this review. My wife and I recently moved to Casper from Houston. Always looking out for good restaurants and big fans of authentic Mexican food, we thought we were on the right path, but only found disappointment. The canned cheese topping (sauce) is so runny and synthetic tasting, I'd question its origin. Pork and chicken were both poorly cooked, chicken was super rubbery and the pork was so dry it needed rehydrating. Avoid and thank me later.

Did not get to eat there... We waited for about 10 minutes a lady came and we ordered our drinks..chips and salsa arrived chips, were super greasy salsa had no flavor and yes they served some kind of beans to eat with chips. Ordered aguas of jamaica .etc they where in our opinion made from powder. .it took a good 10 minutes to arrive..another 15 minutes went by and nobody ever took our order...we were ignored since there was a party on the middle of the restaurant . At that point we left ...nobody said thanks or good bye And yes we paid x the drinks we did not drink a decision we now regret. Avoid this place...a total waste of time and your money...

Food was ok, but the waiter Jose sucked. After he brought the food he never came back to the table. Both kids were thirsty had to flag down a random waitress not assigned to our table. Then had to ask for more drinks and boxes. Never saw that Jose dude again. WTF

We stopped by Guadalajara while traveling through Casper. I ordered the Deluxe Chicken Burrito and only had about two bites. It was so bland and dry. Luckily we had also ordered the Tostada de Ceviche de Camarones (Shrimp Ceviches on a tostada), which was delicious! It is seriously some of the best ceviche I have ever had and I ended up eating that instead of my burrito. Large portions, but stay away from the deluxe burritos.

My friend and I visited here just last week for some afternoon margaritas, overall the experience was enjoyable but the service was a bit shady. They were very pushy that we order food even though we said we just wanted margaritas. We ordered the tropical pitcher (which had pineapple juice in it) but were later charged $28 for the Cadillac pitcher (which had premium spirits). Totally different margaritas but when we asked to speak to a manager about it they were "out"... But that the price was the same since the juice was the same cost as the premium liquors, but I remain unconvinced. The waitress also told us we needed to pay since she was leaving, I found this rude. I wait on tables and I would never tell guests that they need to pay so I can leave.... Anyway we paid and chatted a little longer and a half hour later our server was still walking around serving tables... So she told us to pay because she had to leave but she had more tables? Hmmm. I will say that we enjoyed the margaritas and the ladies that checked on us (not our server mind you) were awesome. I would give this place one more try about six months from now but not for margaritas.

I have eaten here on two seperate visits to Casper and both times the food was good. It's typical Mexican food but good quality and made fresh. Service was also excellent

Wow! This place is the best Mexican food I have ever had! Their margaritas are delicious, the service is great, and the food has amazing flavor. If you happen to be going through Casper make sure to stop here.

Our regular place for fast, always consistant savory mexican food. Not the fresh mex type but the smokey rich enchalada sauce type. One waitress has a crush on my 4yr old I think cos she always comes to see with him :) he has a crush on her too

A Mexican restaurant in wy, this is fantastic. I came from San Diego so I know my Mexican food. Food was good, hot, awsome environment. I don't eat meat and can always find something yummy here. Never had a bad meal here. Will continue to return.

Food is still good, but the service has gone from consistently excellent to always crap in the last six months. I go there with my fiancée, probably 1-2 times a month. At least we used to. When we moved to Casper after I got out of the Navy, we were thrilled to find this place. She is vegetarian and is allergic to gluten. Does not leave us a lot of options for food where she can eat something other than a salad, Mexican food is one of those options. Food used to be plentiful, and good. Service was 5 star 90% of the time, and even when it was slow.. It was not that bad in all honesty. Restaurant service is Casper is iffy as it stands, as many of the usual people who would work there are in the oil field here. Last THREE times we went, we get seated right away.. And WAIT. 5+ minutes for the waiter to even come by. Larger parties seated after us have appetizers before we even get our chips and a drink. Two of the last three times, she has specified no beans. Waiter repeats it back, so we know he heard us. Food comes with beans. Gets sent back. They just scrape it off the plate. Good thing it's just a "don't like beans" and not a "I will die if I eat them" sort of thing. Every place has off nights, but this place has gone downhill. And most of the recent reviews show it. The food is still good, but the service is so bad, that I cannot justify the cost of going there.

We pick our restaurants when traveling based on online reviews. We also like local restaurants that are frequented by locals. Guadalajara seemed to be full of locals. They bring both salsa and a very good bean dip with their tortilla chips and their chips are some of the best I've ever had. The bean dip was exceptional. We got our food very quickly and it was good. I had the chicken taco salad and it was generous, but I thought the salad was a little dry since I didn't get guacamole. I ordered more salsa and used it for dressing. Overall, the food and service were good. I would recommend this restaurant.

We have ate here several times and usually the food and service is great. We have even ate here during the busy lunch hour and been able to be in and out quickly. However... one Sunday this September we braved the after church crowd who were toting all their "kids who eat free" on Sunday's...and oh, that was a MISTAKE. We got seated at a booth. Waited, and waited, and waited for chips and salsa and even a hint at who our server might be. We saw no one. Certainly plenty of service people were running around but they did not make eye contact with us. Finally my husband told the hostess that we had not been waited on and she looked at him and said, "Ok" and walked off. Uh? Not "Oh no, I'm sorry I will get someone for you!" Really? About 5 minutes later the chip guy brings out bowls of chips and starts serving them to tables that had been seated AFTER us. We said something to him and he apologized and brought over chips right away. We told him we still had not seen our server and he said he would find someone. He did offer to take our drink order at least! FINALLY, our waitress appeared- no apology just showed up and wanted to know our order. Sigh, ok at this point we realized this eating out thing was just not going to work today. I just wanted food and wanted to get home. I ordered the beef and shrimp combo fajitas. When our food showed up, I was served only BEEF fajitas. Another sigh.... When the check came, we were charged for the shrimp and the beef. Not thrilled, not impressed, and we won't be back on a Sunday EVER again. Gimmicks of free food for kids is great and all, but when your company lacks in service to customers and is losing customers over having too many people to serve- I think the gimmick is a poor choice. Sorry Guadalajara, you messed up!

We ordered the Texican Fajitas. There was nothing Texas about them or Mexican. DO NOT order them, they were awful. There is mushrooms in them and some type of red sauce. Other food may be ok but the fajitas were terrible! Unlike the other comments though the service was great. That is the only reason they got one star.

The BEST mexican in casper. Amazing, and expansive menu. Really good Habanero sauce upon request! ASK! so goooood. The friendliest, loving, caring, beautiful staff. Margaritas to die for- try a DOUBLE Cadillac. Has a splash of Grand Marnier. omg. Shrimp Cullichi. Gooooood Go here great authentic atmosphere. Oh, Mexican Coke. and they are open all day

Certainly four stars. Great ceviche and salads. Offers the usual Mexican restaurant fare, but try the more authentic dishes and you'll be pleasantly surprised. Ask for some of the habanero hot sauce if you like it with a kick. My favorite Mexican restaurant in Casper.

We dine at this west side eatery about once a month and always enjoy our experience. The decor is wonderful. .. the owners completed an addition last year which includes a large indoor fountain. The dinnerware is colorful talavera from Mexico. They have an extensive cocktail menu of many kinds of flavored Margaritas, my favorite is the coconut margarita. Food servings are large.. or maybe I should say LARGE. The food is average to good, not as great as say, a upscale Sonoran style restaurant in Arizona, but totally adequate, especially considering it's Wyoming. I really enjoy the Menudo soup, very authentic. Wait staff are personable and friendly. Excellent Value. 4 solid stars for sure!

I would hesitate to give this place the 2 dollar sign rating for price. It's much closer to a 3. Got steak fajitas and they were solid. Same for the complimentary chips and salsa. I've heard from 3 locals now this place is good but La Cocina is better.

Thanks to Yelp for suggesting this one! They serve excellent Mexican food at a steal of a price! I had the "Garden Burrito" which was not only absolutely delicious, but it filled the entire plate! Top that off with the fact that it was less than $7.00, the service was FAST, and the atmosphere inviting, and Guadalajara is a WIN in my book! I will definitely be patronizing them on a regular basis from now on when I am in Casper!

Awesome!! Great service, great food. The carne azada is delicious, pico de gallo, guacamole, and asada were all delicious. Portion vs price was perfect. I got a half order of the azada and it was more than enough. The best part was that after our meal, the waitress came by with the check but also gave us complimentary sopapillas with whipped cream and srawberry sauce (actually strawberry puree and not that syrupy crap). Score! Pros: excellent and fast service, food was wonderful Cons: chips and tortillas are not made in house.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
