Authentic Mexican this is not. However, if you are looking for Americanized Mexican or Tex Mex, this place is pretty tasty! They can get expensive, $9 for a salad, but if you go on Tuesdays they have great $5 specials. Also, they (always) give free quesadillas to kids under 6, they let my kids each order 2. I recommend the pork barbacoa salad with black beans and creamy tomatillo dressing. Ask for your tortilla in the side or else they put it underneath and it gets soggy. It can be confusing if it's your first time, it's loud and sometimes hard to understand what they are asking you. On every dish you have your choice of meats and beans. The options are on the menu. They will ask if you want each item in your dish even if it is on the menu description (Cilantro? Tomatoes? Etc) Just be aware that cheese, guacamole, and sour cream cost extra. Their self serve drinks are pretty fantastic too. If you like soda, there are the standard options (coke, sprite, etc) with 9-12 Torani syrup options. They also have horchata, jicama juice, strawberry lemonade, and mint limeaid (my favorite!)

Great selection. Everything seems to be fresh. Fire roasted chicken salad is delicious! And for $5 it can't be beat. We got here just in time (before 5pm). Now the line is they the door! Will def come back

Ugggg! I usually love Cafe Rio but this was a really bad experience. To begin, one of the people in my group needed to go potty and they were out of TP and the bathrooms were a mess. When we quietly informed the male child behind the counter that the men's room was in need of attention he immediately yelled, much like when you've said the secret word, to the teen GIRL down at the salsa fresca station to go check it out. She informed him, she was BUSY! Next we ordered, but the buckets of ingredients were such a mess!!! The limes looked like the had been around longer than my last Daddy. We ordered salads and by the time we got to the lettuce bucket lady she informed us they were out of lettuce, no wait, they had some they just needed to cut it. As a peace offering we were given enough lettuce to feed a medium size village in Tanzania. Finally 40 minutes after we ordered we took our salads to our table that I swear doubles as a diaper changing area, and began to dig in. There would have been less liquid if we had ordered soup! There needs to be at least one person over 14 working here. Thank God the dressing was still yummy!

Tasty food. My quesadilla was stuffed full of large chunks of steak, almost too much to finish. The cheese dip with the chips was excellent, much better than similar dishes at competing fast-casual Mexican restaurants.

Dining options in Vernal are limited. The gentleman at the Marriott Springhill Suites suggested dinner here so we walked across the parking lot to check out the menu. We knew it had some chops will the police cruisers in the parking lot and a significant percentage of the local force inside having dinner! The set-up is like Moe's or Willies, you order and they prepare your meal as you watch. There are many meat options (chicken, beef, pork, veggie) and a variety of ways to order your meal: salad, burrito, enchilada, quesadillo - and they make the dish your way - as you watch. Including freshly made flour tortillas. We enjoyed the chicken taco salads on their patio. Large portions and very tasty. The Cafe Rio radio/music was a nice addition (boomer music).

Meh. The food isn't bad but this is like a different chain version of Chipotle without the sustainable food aspect. The service is decent. I hate that for some reason at all these chain Mexican restaurants you can't get a decent burrito without meat- can't a girl get a bean, cheese, rice and some fixings in her burrito? I asked for jalapenos and I got a side container of them- how about putting them in the burrito? Also I think it's expensive for what you get but if you like standard boring chain Mexican then you'll love Cafe Rio. I'd prefer to hit the town taco trucks.

Apparently it was voted #1 National Mexican Food Restaurant by someone... This is a fast growing chain of quick Mexican restaurants (see; chipotle, qdoba, moe's, etc). However, this one seems a little different. I enjoy the tortilla soup and fresh salsas. Plus, they have a great selection of hot sauces to choose from! The pork barbacoa and grilled steak/chicken tacos are also a good choice. They also make their tortillas fresh in front of you. They also have a rotating daily special ranging from Chili Relleno's to coconut shrimp tacos. Too bad this location does NOT serve beer...

Like Chipotle with better tortillas and worse everything else.

Cafe Rio is a chain restaurant but for Vernal it is an excellent choice.

Chevy's meets High Tech Burrito. Not the most authentic Mexican food but it was good with reasonable prices.

I've been to this place twice now, and I have to say its just ok. I like that they make fresh tortillas, but other than that their food is ok, nothing to rave about. Come here for desperation and a quick bite.

They really need to get a manager in there ASAP because there obviously isn't any leadership there to control the employees. I witnessed employees on the line put handprints on each other with food residue. An employee dropped salsa on the ground, laughed and didn't clean it up. The food line was a mess. Pretty shocked of what I saw and will never return or recommend this place to any client, friend, family member...pretty much any human being.

Terrible experience. Ordered steak burrito enchilada style was charged nearly $4 for side guacamole and sour cream. After taking a bite the steak in the burrito was cold as if it had just been taken out of a fridge. I went back to the counter politely asked for it to be heated up. Staff was unapologetic seem annoyed by my request. Got the burrito back steak was still cold went back and requested a refund. Not once did the staff apologize but rather treated me very rudely. The burrito flavor was very bland to begin with. Also taking old cold steak and putting it into a heating bin is most defiantly against health standards. Would not recommend this chipotle wanna be chain to anyone truly awful experience. 11:30am 2/9/2015

Food is decent (above average for Vernal, UT), good salads, pork and tortillas, but the fire grilled stuff is pricey and too salty. The daily specials are great for variety as well. Some items are overpriced, but the specials are good, and the tostada is a real bang for the buck. Service isn't very good. They rush you through, its very loud, no explanation of what actually comes with your item so you often find extra charges at the register for things like cheese, dressing, or sour cream. Very inconsistent, so some nights it is better than others. And the people that stamp your punch card make a real mess of it because they try and do it so fast - you have to get the thing stamped 12 or 13 times because they just stamp in the same spot over and over. Every time you try and redeem the 10-stamp card you have to insist that yes, there really is 10 stamps on it.

To start with, this is not Mexican food. This is Tex-Mex. While they are similar, the styles are completely different. Being Tex-Mex, I should have known better than to order an enchilada. It was decent, but there was certainly nothing special about it. It was also DROWNED in sauce. Additionally, it doesn't help that the person behind the counter kept asking me "mild, medium, or spicy sauce" when the menu talks about tomatillo, red chile, and green chile sauce. The chile con queso was tasty, but a bit too sweet. The flour tortilla the spouse had with their quesadilla was wonderful. The guacamole was really good as well. Next time, if there is one, I'll go for the burrito. That's pretty much all you want to eat if it's Tex-Mex, anyway.

When my friend and I were leaving Vernal, UT on our road trip, we were having a hard time finding a vegetarian friendly place to stop for lunch. We pulled into Cafe Rio in a cantankerous mood from heat, hunger, and frustration. I was shocked when this turned out to be the best move we could have made. I had the enchilada style burrito with the chile roast beef, and it was one of the best burritos I have ever had in my life. Reasonably priced, huge portions, and fresh ingredients, all in all this was seriously good tex-mex food.

I eat here on an almost weekly basis, usually for lunch during work because I can order online or over the phone and they have it ready and piping hot fresh when I get there. The service is exceptional! I love the people there, they are super friendly. Love the food, and you can pretty much create your own dish based on whatever ingredients they have. If you have a salad or tostada, switch things up a little and try "cilantro-lime dressing." It is better than the house dressing in my opinion. In Vernal, this is the best option of any food establishments. In fact, I haven't eaten at another restaurant in Vernal since they opened!

really really good food..their pork is the best meat you can get and it goes good in anything they make ..my son is 3 and I always get a cheese quesadilla for him and even that is delicious. the only reason I gave it 4 stars is because now that they've been open for a while they kinda skimp on the meat and if you ask for more they charge you like a dollar.

This is a great addition to the limited dinning choice in this humble town. I happen to enjoy this more than Chipotle and wished we had one in my hometown

The food is consistently good and the service is always friendly. The pork salad is my personal favorite, but you cannot go wrong with about anything. The chili relleno needs a little help...

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
