    Zaptas is great handmade Mexican food in the small town of Meridian. The homemade flour tortillas are fantastic. The breakfast cannot be beat and is our personal favorite in all of Bosque County. On Mondays or Tuesdays, the pork chile rojo is a specialty and you will not be disappointed. On other days, try the beef fajitas. They are wonderful.

    Wonderful little spot for breakfast burritos. They actually have a pretty big menu, but all we had were burritos and migas; both were simple but yummy! Hand made flour tortillas. The large at $3.25 had a huge tortilla (15 inch?) generously stuffed with eggs and whatever grilled goodies one desired (chorizo, bacon, sausage, cheese, onions,pico de gallo even migas). The salsa was very mild albiet tasty. The small at 1/2 the prices was over stuffed and may have been the best deal! They also served menudo which many were ordering. I'm no connoisseur, but they gave me a sample and I thought it was very good. Breakfast served til 10:45.
