We've eaten Italian from Torino to Messina. Italian Villa serves very good food. The missus had Linguini w Meatball and Marinara sauce. She said it was first rate. I had Linguini Pescatore. The seafood was excellent and the slice of grilled salmon was a vast improvement over the typical tasteless whitefish that so many serve. The sauces are authentic, exactly as one might find in a village trattoria. The salads could be better, essentially a bowl of iceburg with token veg, but at the meal price, not unexpected. At least it was crisp and fresh. The service is competent and friendly. Lack of wine is the result of state liquor commission rules.

Let's not waste time: Italian Villa isn't remotely Italian and barely manages to serve food. The restaurant smelled like half-refrigerated clams and several of the overhead lights were out, making the dining room gloomy but still glaring. The servers were too incompetent to answer questions about their dishes, though they speculated that some "were spicy." Unsurprisingly, their service was incompetent--they got our order wrong, spilled a glass of water on us, and then failed to get the correct dishes out of the kitchen after twenty minutes of confused apologies. Of the food that made it to our table, the rolls were about as bad as rolls can be: pointless balls of white bread that could make a frozen hamburger buns sound exciting. The spaghetti with meat sauce tasted like it was rejected by Chef Boyardee and sold to Italian Villa after Purina turned it down. The noodles would have been improved if you boiled them in dishwater. We ended our night buying edible food... at Wal-Mart. You don't have to know anything about Italy or food to know that a restaurant sucks--and Italian Villa sucks, far beyond a reasonable doubt. They will live on in my memory as one of the most disgusting, incompetently run restaurants I have been to. Think I'm exaggerating? Give them a try, but don't forget your charcoal pills.

I'm sure some foodie guy, whose best friend knows this girl whose grandmother cooks better Italian food, -- why does everybody get so freaking snobby with Italian?!? I digress - I've never had a better Chicken Parmesan! Crispy, hot, covered with cheese, good plate of pasta on the side. I could have been extremely hungry, or extremely grateful because they stayed open an extra 15-20 minutes for me! Got a cannoli to go and am looking forward to having it in the morning! If I'm in Carlsbad again, I'd definitely go back!

We were blown out of the water to find such a fantastic Italian Restaurant in New Mexico. The chef is from Italy and really cooks up the real thing. We have traveled to Italy several times and the food we had here was as good as any we have eaten. Wish this chef were in out home town, we would be regulars! Service was competent and friendly and the price made this delicious dinner a real bargain.

We ended up at this place because the other places we wanted to go had a hour wait. Service was fair, food below average-limited menu. No alcohol service. Would probably only go here out of desperation.

Food was ok. I had the Chicken Picatta I've had better, but I've also had worse. Bread and fried cheese were very tasty. Waitstaff was attentive, but since we were the only people there, it was hard for them not to be. Other issue - the A/C was up too high and it was a bit chilly!

We tried Italian Villa when it first opened. Before writing a review we decided in all fairness to return after a few months, have sandwiches instead of entrées and be able to enjoy a glass of wine with our meal. My "rather limited view of good Italian food" does in fact include a glass of wine so I'm gonna whine about it with a nod to reviewer R.L. When we went in after they first opened we were told that wine was coming soon. It hasn't, so we'll see if wine is ever added to the menu. Sorry Folks in this day and age any Italian Restaurant that doesn't offer wine is simply missing a major component of the cuisine. The Meatball Sandwich I had was good. Not great, but good. Definitely better and bigger than Subway. The Veal Parm Sandwich my companion had was not as good as the Meatball. The Veal tasted like a frozen, food service product. The sauce on the sandwiches is the same sauce they use on their plated dishes. It's more like a Pomodoro than a Marinara. If you like a long-cooked deeply flavored sauce, this sauce will not satisfy you. I had hoped for some soup with my sandwich but that didn't and apparently isn't going to happen at Italian Villa. No Minestrone, Tuscan Wedding, Pasta Fagioli NO SOUP! The Soup Nazi must work there because there is NO SOUP FOR YOU! SO the pluses: Pretty good sandwich Rolls before meal are excellent Reasonably priced And the minuses: No butter, just fake butter-like spread. Ask for olive oil for the rolls No Wine (C'MON! You're an Italian place!) No Soup (C'MON! You're an Italian place!) If I return to Italian Villa it will be for a take-out sandwich. A far better choice for Italian in Eddy County is Piccolino's in Artesia.

Even without wine, this was a wonderful meal. Now, to be clear, we were looking for dinner on a Sunday evening, and most of our choices in town were closed. That being said, we were not disappointed. I had chicken picatta, husband had chicken Murphy. Mine was good, his was excellent. (I have since looked up the recipe and will be making it at home.) Rolls were fresh and plentiful. (Yes, real butter or olive oil might have been nice.) House salad dressing (tomato vinaigrette) was tasty, too. Wait staff were friendly, hard working and efficient. I didn't even miss the wine, because it was 104 degrees and we were tired from walking the caverns all day. We just drank water...lots of water. You might be able to bring your own wine with you. Call them and ask. We are not dessert eaters, so our ticket was $23. This was a great choice and I would definitely eat there again. (I am so glad I did not read these reviews before we ate there.)

7 of us ate here tonight and it was delicious! We had a seafood pasta plate, a couple veal parmigiana, chicken marsala, spaghetti and lasagna. Portions were generous, service was excellent and the food delicious! And the bread rolls were to die for!

This place stunk for being italian. How do run an italian restaurant without having some vino (wine). Strike one When I ask the waitress if they use real crab in their crab linguine with vodka sauce and she has to check with the cook, then tells me it is, and then it really isn't...strike 2 When my crab linguine w/ vodka sauce comes out with a few morsels of imitation crab and covered with talipia, (that isn't one of the ingredients according to the menu), and has alfredo sauce-not vodka sauce-how do you cook with vodka if you don't have a liquor license? Just wondering. Strike three. Bread was good, house dressing was good, Sinatra music was good. That's it. Don't care if they're open on weekends if they can't get good food, or service. Stick to making sandwiches which my friend says was good. Stay away from your attempts at plated italian food, horrible. Will not be back till the decor, service, and a new cook are found.

New place in town and they are open weekends, yay. The menu has a fair selection to choose from, I had the Eggplant Parmagiana and was happy. The portions were big enough that I didn't leave hungry. The Cannoli was yummy as well. Service was ok, and the place was clean with a bit of Sinatra playing in the background. I'll go back there.

THE WORST service I've ever had. Mind blown! I went to eat with my family and my husbands chicken came out cold, so we sent it back and was waiting for them to remake it for 20 min. We were all done with our meal so I went to pay with my mother and they told us we had to pay for the meal we didn't receive b/c "we were still going to eat it" I explained to the cashier and our waitress that we were not going to pay for something we haven't received yet and she said, " well does he want to eat it here or to take it to go?" And I said, "he'll have it here." They compromised and took it off...cool, done deal. I also kindly tipped them as well. So we wait another 15 min for it to come out, so my mother asked if my husbands meal was ever going to come out. Her response was "oh I thought he didn't want anything else?" And I told her that "when you send something back, restaurants normally remake the same food you ordered and bring it back" and she said,"you didn't say he wanted it." So I talked with manager or the man in charge and his response was, "I don't know, either you or her (pointing at waitress) will have to pay for it, I just want my money." The manager, waitress and the cashier all argued with us. We left very confused as to why or how they were trained to serve people and talk to people. Very disappointing and in need of proper training. They need to ensure they hire people who know what customer service is, otherwise it can hurt the business as a whole. I will not eat there again.

Italian Cuisine

The immense popularity of Italian cuisine globally isn't unknown. You can find an Italian Pizzeria around every corner of almost every city in the United States. Not to forget that in every house, people enjoy mac and cheese as comfort food. But it would be wrong to believe that Italian food starts with pizza and ends with good pasta as this Mediterranean country has much more to offer other than these two dishes. In Italian Cuisine, there is a high use of fresh tomatoes, all kinds of herbs, great quality of cheese, all types of meat, seafood and fresh handmade pasta. Many find it hard to believe that Italians have been making noodles long back.

Italian and Greek cuisines are always mistaken to be same, but they are poles apart. The primary difference between the two cuisines is the use of cheese in most of the Italian dishes. Italians love to cultivate their own cheese and process them as per their food requirement. It is believed that some cheese is so expensive that cheese producers secure them in lockers.

If you are bored eating the same old pasta or pizza, you can try some of the authentic Italian dishes like Risotto, Polenta, Ribollita, Lasagna, Fiorentina Steak, Bottarga, Ossobuco, Carbonara, Focaccia, Arancini and Supplì. Another item which Italians love to relish every morning is a good cup of Italian Coffee. Once you taste a freshly brewed cup of Italian Coffee, you might not visit Starbucks ever again. Authentic Italian food is made with heart and soul, so go find a restaurant where you can relish Italian cuisine in your city.
