    Let me say that I am willing to cut some slack to a restaurant that has only been open for a couple of weeks. Went Saturday night with 8:15 reservations. Due to horrible traffic we were about 20 minutes late and neither phone number I could find listed for the restaurant were working when I attempted to call them. It was jam packed when we finally did arrive and we were told that we would be seated shortly. We did manage to find a spot at the bar and had a couple of cocktails while waiting for about 20 minutes. Upon being seated we were ready to order after looking at the menu at the bar. I ordered a salad as did my husband along with a side order of kale and a steak for him and the trout for me. My husband was informed that they were out of steaks....okay I can see being a new restaurant that maybe they weren't properly prepared but the steak was the only cut of red meat on the menu so my husband reluctantly ordered the Butcher's Revenge which is basically there version of a $30 hamburger. Things take a turn even further as the food starts to come out. First his salad, then mine followed about 5 minutes later.....didn't think much of that but then our side of kale appears but not entrees. We were starving at this point so we proceeded to eat the kale and wait a little longer. At one point the waitress came out to say they hadn't prepped enough fish for the trout entrée I had ordered so it may take a few minutes longer....okay fair enough I guess......finally my husband's meal came out he wanted to wait for mine before beginning his.......a solid 15 minutes went by and no trout......finally go the attention of a manager type person and explained that my husband's food was going cold while he waited for mine to arrive......away she went to check on my trout.....still nothing......now at least 20 minutes have gone by before another woman came over to apologize and explain that the chef's "concept" is to send things out as they are ready not necessarily as a whole meal.....that the dishes are meant to be shared......? I told her that I had no interest in sharing my husband's meal and that if that were the case they should probably inform people of this as they order....she assured me I would get the very next fish meal that came out. A couple minutes later the dish arrived, BARELY above room temp. Certainly not piping hot from the oven..... The food itself: The salads were tasty a house salad and a field green. The kale was delicious but not necessarily $9 worth. My husband was really put off by the Butcher's Revenge and he is a big meat eater....it was a blend of a few different meat with some slab of something fatty on top. I thought they said a crispy pig skin but this was far from crispy. It was served between to really hard looking pieces of toasted bread. He said the texture was really "weird and mushy" and the flavor was a little off putting. He ate less than half. The trout was quite good served over some white beans with good flavor. The personnel were all very friendly and well informed, no problems there. We were offered free dessert for our troubles but I felt that maybe a little more should have been done for us. Maybe it was due to being only open a couple of weeks but for me there were too many things wrong to go unnoticed and I wanted others to be aware of the chef's "concept" on sharing before going in to Republic I am pretty certain I won't return, too many other new similar type places to check out.

    Went here for diner tonight. Very cool, historical building. I love the story behind it. The food was excellent. Full of flavors. I had the trout. Next time I will probably do a few appetizers to try out multiple foods. My husband had the butchers special. He loved it. It was so tasty ( NOT heart smart. Lol). For $3 he was able to receive a beer and a shot with his meal. My favorite part was dessert. I had the brown bread ice cream... To die for!! I would like to see a few more diner items on the menu, although they just opened, so I'm sure as time goes on they will add to it. The service was good. Our waitress was very nice and knowledgeable, We asked for extra bead and that took about 25 minutes to bring it to our table . Also, my cousin ordered appetizers as diner and they brought them out before our meals and they brought our desserts out at all different times. That was annoying. They really need to work on timing. Besides these few glitches, it was a great experience and I look forward to a return visit.

    Three friends and I went on a restaurant tasting expedition this past Sunday. We started out in Corktown for drinks and appetizers and we were trying to decide where to have dinner. I called Republic and left a message on their voice mail asking someone to get back to me if they were open on Sunday. We received the call from a very friendly woman at Republic while we were 15 minutes into our 2-hour wait at a Midtown restaurant. She explained that their "soft" opening weekend could accommodate 4 people if we wanted to come by. I am SOOOO glad we made the decision to abandon our wait and head to Republic! Our evening was filled with amazing food, incredible hospitality and breathtaking ambiance. Our server, Jason, explained how Republic intends its guests to experience their restaurant. The food doesn't necessarily come out of the kitchen all at the same time, so it is best if you understand that. It was not a problem for us at all because we shared everything! This kind of dining is my preference because I feel like I'm allowed to experience more of what the chef intends to offer rather than the ordinary "all salads delivered at the same time, all entrees delivered at the same time, etc...." This kind of dining is much more spontaneous and engaging. Ok, onto the food! We had the Ploughman's platter. Every morsel, every schmear, every flavor was a welcome taste of wonderful. From the homemade sausage to the incredible bread to the shrimp butter (I was going to have to hurt someone if they cleared this from our table before I sopped up the last remnants of it). The Beef Tallow fries were wonderfully seasoned and served with a savory dipping sauce. The Pepper Bread and smoked butter gave me the impression that all of its ingredients came in on a farmers truck and were delivered to the restaurant that morning! The Chef's Whim Potato was dripping with flavor and butter! The House Salad had an incredible anchovy vinaigrette that wasn't too overpowering, but with just the right amount of anchovy flavor. The last time I enjoyed such a magical meal was in Homestead, Florida at Paradise Farms. Congrats Chef Kate! You've got an award winning restaurant on your hands!

    3.5 rating First visit 3/28/15 - original chef 4 of us dined and enjoyed. The carrot salad was the best thing we had. Bone marrow fritters pretty good. My steak was good too. The guys ordered 2 very heavy dishes, duck pastrami and whatever platter of parts were being served that night. I was not impressed, but maybe it's just not my kind of food. Second visit 7/23/15 - new chef A group of 10 of us went and had a great time. Not sure what we didn't order! The best stuff we had was veggie based... Carrot salad again, fries, cheese platter, beet salad, some other greens. I'm just not sure why EVERY DISH has to have parts on it! Not everything has to have meat, offal, or jerky sprinkled on top! After many appetizers, an order of roast chicken - how dare they charge $40 for that! - and a couple desserts, we went for coneys at Lafayette. Enough said. Bottom line? I wouldn't go back. You need a very open, adventurous palate for this place, not mind the small plate type of dining, and not mind overpaying for dinner or leaving there hungry.

    Great food. Beautiful presentation. Fabulous service. We will definitely go again. Gazpacho- the best I've had Fried green tomato Benedict- eggs were a little soft for my taste but I know that's a personal preference. Duck pastrami- really good. Very peppery. Tallow fries- awesome! Crisp fried walleye- really really really tasty. Craft cocktails were yummy.

    I've been here a few times now and it keeps getting better. Having lived in SF, LA and Paris, I think I have pretty high standards when it comes to food. The service here is perfect - attentive, not overbearing, knowledgeable, everything you could ask for. The ambience is also great - you can dress it up or down, however you feel comfortable and you won't be out of place. And the lighting is on point - dim, flattering, not too dark. When I have fussy visitors in from LA, I can feel confident they'll be impressed here. Oh yes and Mike, the bartender (who was also our server), is exceptional. As well as the manager, Lisa. People here will go out of their way to accommodate you. That's hospitality.

    I don't rave about too many things worthy of being served in heaven.. But let's hope the beef tartare, pastrami duck and potato dumplings make it up there. Seriously just heavenly. I mean who even thinks of ordering potato dumplings for dessert? Those were my winners. Hope it's on the menu when you go!! The butchers burger and the beef tallow fries were ok. Try the brown bread ice cream as well! Yum. The egg and ramp was really interesting as well, would probably try that again. Overall a great place!!! Would definitely visit again.

    A little pricey but pretty much everything we tried was way above average and well worth it. Highly recommend checking this place out if you can. If you're on a budget, go there for Happy Hour. Great deals plus knowledgeable and friendly staff to boot.

    I'm struggling to understand the 5-star reviews of Republic. I'm not sure if I caught the Chef on an off night - but the food was far from great. When you walk in - you'll experience a sense of deja vu, as they clearly used the same interior designer as Wright & Company. From the exposed ventilation system to the Edison light fixtures -- this place is about as unique as a girl wearing an infinity scarf. We had a small group & ordered several items from the menu: Tallow Onion Rings, the Pig Heart Carpaccio, Rabbit, Carrots, Ploughman's Plate, Fried Green Tomatoes, & the Potatoes. We also ordered a few of their craft cocktails - here is my lengthy summary. First off when we arrived our 2 partners were already at our table. The first thing we were told by our friend was that he had so far ordered (3) beers off of the menu and they were out of all three. *sigh*. (Note: I do not hold the waitress accountable for the out of stock beer.) Finally - about 20 minutes after arriving - we have received drinks. This is probably due to the fact that only one bartender was working on a Friday night. Service was SLOW. I ordered their Devil Wears Prado, which is a spicy, margarita type drink. My partner ordered a dirty martini with a vermouth rinse. My drink was okay. The kick of the spice was nice, but the other flavors weren't noticeable. It also came in a tiny NYE style champagne glass - which I HATED. I don't understand why either -since tequila is not served like this. My partner's martini came in the same glass - which was laughable. The martini was not made to order, and was terrible. Moving along - we started with the Ploughman which is the meat & cheese board. I was a little underwhelmed. There were only two (2) types of cheese to the 5 types of meat. Boring. The bacon loaf was snackalicious though. The dill spread was divine, the spicy mustard was average and the rest was unmemorable. The Pig Heart Carpaccio was not exciting at all. It was relatively flavorless and sliced into tiny little pieces (no wonder there was not flavor). The Tallow Onion Rings were served at the same time and they were great! Deeply fried and flavorful....but they're onion rings.... The Rabbit and the Carrots got the highest of praise, although the rabbit definitely was not the start of his dish (the pistachios were). The carrots were cooked well and had a nice braise to them and I would recommend this dish. The Fried Green tomatoes and the Tallow fries were bad. The tomatoes were over cooked & the breading was far too crunchy. The poached egg was slightly overdone with this dish as well. This made me sad. I love fried green tomatoes, and really wanted this dish to be excellent. The Tallow Fries were terrible! Overdone fries that were (get this) somehow too salty AND bland at that same time. We spent about 10 minutes trying to wrap our heads around it. The dipping sauce they were served with was runny and also seemed bland. We skipped dessert. Overall - it is not worthy of the price or the wait. Again - maybe we got them on an off night - but when you are claiming to be the place that Republic wants to be, you cannot have "off nights". On the other hand our server was great. I believe her name was Ashley.

    I have been intrigued by this building for years. It's great to see it actually being refurbished and occupied. Republic has a fresh look but the service needs seasoning (too fresh). We had reservations before Tigers' game and were sat timely, after drinks at the bar. Tito's soda came in perfect hi ball. Not too much soda and could taste the Tito's. Bartender friendly but not breaking and speed records. Menu was interesting. Water was poured at the table, on the table and over one menu by the "water girl". Dirty dishes remained at our table far too long. Our server and many others passed by empty-handed without clearing the table. FOOD- We ordered lamb sausage and lavender salad as apps for 4. Sausage was great, salad small and some lettuce wilted (disappointing for the price). Split the Whole Trout, Pork Chop, and 2 of the Chef's Whim Potatoes. Pork spot on and loved the trout. Potatoes didn't live up to the server's mouthwatering description, She also suggested 2 for the table. We could have gotten away with 1 or skipped them altogether . It's my usual experience that I enjoy the small plates (or appetizers) more than the entrées. However, in this particular case I highly recommend the two entrées that we had. The small plates could've been skipped altogether. The bathrooms are in a terrible location. Two separate unisex bathrooms both located right next to the service bar in the kitchen entrance. Poor planning. Will give them a few more weeks to work out the bugs as far as the service is concerned, but we will be back. Great to see a new option in Detroit

    I recently tried Republic and I have to say I was not that impressed with the food. I do want to come back and try dinner though. I was there during lunch and the selections are not the same. I had the Chicken Sandwich (house roasted chicken, ranch pub cheese, local smoked provolone, asparagus, local greens, served on farmhouse sour dough). Sounds amazing right!? It wasn't, it was just regular. Good, but not great. I wish I remembered what the cocktail I had tasted like thought, it was awesome. Kind of spicy, not too sweet. I love spicy drinks. I was disappointed in my sandwich, but I'm keeping this place on my list. Their dinner menu has some nice things on it and the other reviews are good. Service was awesome too, our waiter was very nice.

    Fantastic and friendly service here at republic, the restaurant is booked up on the weekends so come in early and sit at the bar. The Devil Wears Prado is a zesty Thai Chile infused Grenadine-based tequila drink with a lot of zest. Top food items of the night were the bone marrow butter (be sure to stir it in) topped with little caramelized onions. Next up was a little set of fresh beets across creme fraiche, bright and pungent in color and flavor, respectively. The roasted carrot salad had a nice balance of color and flavor with the cashew cream and fill pesto. The dill really carried through and was a shining star of the trout, which was stuffed with baked fennel. To top it off, the brown butter ice cream topped with fennel was "to die for". Currently trying to figure out how to come back tomorrow and die again, schedule permitting.

    While visiting Detroit I stopped in here around 5:30 for a light dinner before a concert. The place is trendy and spacious in the heart of Downtown Detroit. I started with the Duck liver mousse! It was creamy, salty and all that good stuff. Full of flavor! Served with pickled grapes (totally transforms the dish), hazelnut and mustard seeds. Spread over toast its the perfect start to the meal. I downed the Devil Wears Prado cocktail along with it. Drink is cute but spicy! Their not playing checkers here! My entree' was Whole Roasted Trout. Fresh and prepared perfect with White Beans and Fennel Dressing. I wish the beans were a little more tender which is why i cant give it 5 stars. Other than that i walked out full and satisfied. Great spot to check out after work if you havent already. Cocktails and Small Plates or a full dinner! You cant go wrong either way!

    Smashing. Wasn't sure what to expect here. This is a somewhat casual / somewhat shabby-chic spot in downtown Detroit. They seem to attract a very diverse crowd from folks with kids to guys at the bar with shirts unbuttoned way too far down. Food: we did all the small plates and every single item was delicious. No complaints at all from the table. Lamb carpaccio. Bone marrow fritters. Butcher's Board. Roasted carrot salad. Really. Everything we had was great. Staff: Fun. Warm. Helpful. Not sure what else you'd need. Wine list was small and 'well curated' as they say - but had some solid options.

    Holy crap. Get in here now before you can't get a reservation. Went with a group and we ordered most of the menu. Absolutely incredible food and so reasonably priced for the quality. Standouts definitely included the lamb loin, which came with essentially what was fried lamb fat. It's difficult to describe, but trust me it's amazing. Another standout - the duck pastrami. First of all, the duck breast was huge! And it was just melt in your mouth outstanding. Other favorites were the sunchoke slaw and roasted carrots, and dessert is not to be missed. They also have a great selection of drinks. I tried the summer solstice, which quickly shot to the top of my favorite cocktail list. And we ended the night with a Pineau de Charente, which is a fortified wine blend. Our fantastic server, Paige, recommended it and everybody at the table really enjoyed it.

    Detroit has just been on point with the restaurants lately. I've been to a few really great places in the area, so obviously I had to check this place out. The first thing I really appreciate about Republic is that they TAKE RESERVATIONS. I can't tell you how frustrating it is to drive an hour to put your name on a 2 hour wait list to eat dinner. My friends and I made a reservation for 3 on a Sunday night and had a great time. We ordered the beef tartare, beef tallow fries, roasted carrot salad, bone marrow fritters and some desserts- my faves were the carrot salad and the fries. Everything is served in small shareable plates, kind of similar to Selden Standard. I forget the drinks we ordered, but they were super creative and delish as well. Totally worth a try- I will be back!

    I notice all of the 5-star reviews are from people who actually got to enjoy a meal here. We would have loved some food! Unfortunately we never got to order any. My review is entirely about the service, which I'm convinced has to be karma for when I was a snotty 18-year old working in a record store and judging people who asked for Spice Girls. TL/DR version: The vibe was off. It was not fun. Nobody was friendly. Not one person asked us if we'd like to order food. We will not be back. We happened to be downtown and hungry at 7pm on a Friday. There were 4 of us. We did not plan ahead, so we were prepared for a long wait, or the fact that there might not even be a table. We are not a demanding bunch. So we check to see what's available. We were met with a wide-eyed response to our request for a table for 4, like we're putting this establishment in a bind by showing up unannounced. Yes it was a Friday at 7pm, but it was not packed, and there were no other parties waiting. We could only assume that their more well-informed patrons with reservations would be arriving at any minute to fill all these open tables. I'm sure that's a perfectly great reason to make everyone else feel like a burden. Good news though, they found us a high-top! Before we could sit, another hostess (miffed at someone, presumably the first hostess who sat us?) intercepted us to say "there's a party of 10 with reservations coming and we can't seat you here. But you can sit at the bar." If she apologized I don't remember because what it translated to was "luckily we can do you this one-time giant favor and seat you at the purgatory counter (bar) with these other 6 other unfortunate walk-ins." At the purgatory counter we looked at food and drink menus, waiting quite some time before someone to ask if we wanted a drink. I can't speak for the fellow to the left of us, but I observed the unmistakeable body language for "I've been done for a while and probably have a parking ticket now" - exhibited by craning your neck to locate anyone willing to make eye contact, in between checking your watch and having your wallet out. Finally got our round of drinks, and kept looking at the food menus since we were extra starving by now. Normally one of us would speak up about being ready to order food, but at this point we'd each had a strong drink on an empty stomach and were amused by the blatant absence of caring. We agreed to wait it out and see if anyone would ask if we wanted any of the delicious things we'd been pointing at on the menu for the last 25 minutes. By the way, pointing at the menu excitedly is the unmistakeable body language for "We enjoy eating. Everything looks amazing. Here take our money." The bartender eventually took our menus away without a word. Is it not protocol to ask at least one time if we want food? It's dinner time, not 11:55pm and your kitchen is closing. The place itself never got any more packed in the 40 minutes we were there. And the party of 10, whose high-top we almost acquired illegally? Never showed. Bad vibes from start to finish. And what for? We paid our tab and left. Last note: I'm generous with benefit of the doubt. Sometimes a member of the staff has a crappy night. Maybe they had to put their cat to sleep. Or it's supposed to be their day off, or got into an argument with their best friend. I get it, and usually there's some other redeeming thing that makes it better. But unwelcoming vibes from 3 staff members in a row, and never being asked if we'd like to order food? Nope, that's weird, and something is off. The food might have been the one redeeming thing, however, well you know.

    The parking situation is bad. You can park in any of the streets surrounding the castle, but it's pretty limited parking, so it's almost always full. Outside of that, there's nothing very close. My wife and I parked at the Renaissance Center and took the People Mover over to a stop that's about 2 blocks away from the GAR. The view is also unfortunate. You're inside of the coolest building in sight. But as you look out from it all that you see are parking lots and the Motor City Casino's atrocious lights. The atmosphere on the inside however is pretty cool. It's an eclectic mix of being inside of a 150 year old castle while having a raw and natural feel that most independent new-american restaurants have these days with a flare of an upscale establishment. The service was pretty excellent. The waiters were extremely educated and helpful in regards to explaining the menu and being able to answer any questions that we had. During my reservation I had mentioned that it was our wedding anniversary, so when they brought out the bill they informed us that the dessert was on the house. And the food... I was expecting good food. I was not expecting extraordinary food. And that is what we got. While everything that we ordered was delicious, none of it compared to the Butcher's Revenge. My first bite of this burger whisked me away to a mental state of perfect bliss. For the entire 30 seconds that I chewed this nothing else existed. My entire world was tasting this burger. This is no ordinary burger. The menu doesn't even attempt to describe it. Ask your waiter about it, he or she will tell you. For now I will say that it is an exceptional compilation of meats and toppings that shouldn't even be called a burger. To compare it to such commonplace things as hamburgers is an insult. I don't return to expensive restaurants a lot. I like to broaden my horizons and try new things. But I cannot wait to go back to Republic.

    I came back for the beef tallow fries, rabbit pot pie, and beef tartare. The fries are a must -- crispy but still soft on the inside and great seasoning. The rabbit pot pie was really delicious, I was expecting it to taste gamey but it tasted just like chicken, seriously. The beef tartare wasn't my favorite, the mustard really overpowered the beef. If they can tweak that a little, it would be perfect. Other than that, the whole experience and service is really great and I can't wait to come back and try more dishes!

    My husband and I went a few months ago and loved it, so I suggested it as an outing to one of our work groups. They also had a great time and came away with full bellies at a reasonable price - definitely not cheap, but you get your money's worth as far as quality of food and service. One of the best new places in Detroit - such a creative menu! My only complaint (and that goes for a lot of the other new establishments) is that it was very loud - if that issue was addressed it would be an improvement to the overall experience, which was pretty close to perfect anyway.

    This restaurant is phenomenal. The food is outstanding. The steak tartare is the best in Michigan. A personal title of mine held by another restaurant up until I had Republic's. The Egg & Mustard sauce on the bottom, once mixed into the deliciously and lightly seared steak, is a harmonious blend of awesome. It was literally an awesome sauce. The Ploughman's platter was nothing I was expecting. The curated selections of sauces, dips, meats and pickles was a meal in itself. The pinnacle of the night was the Butcher's Revenge. 6 different and gentle animals gave their lives for this amazing dish. So much so, that I can't even remember each different animals noble sacrifice. Foie Gras, Pork, Mallow, Crispy something and two others made for a delight! The drinks! We were so lucky to get a seat right in front of Paul. He shaped our experience to make it even better. I had my first drink all selected and he brought it to me without even asking. Am I that predictable? Of all the cocktails we had, none was better or worse. They were all different and delicious. On top of that his beer and wine knowledge helped select two perfect pairs to our meal. Constructive criticism: The bread is pepper bread the best. But it comes on a lot of dishes (all three of mine). I'm sure I picked the three but I would have like to see more diversity. Would you take a group of vegetarians here...no. But if your wife is a veggie and you are happy carnivore, the options are limited. I'd love to see the Republics take on a veggie entree. It doesn't have to be a whole menu. Just one so everyone can enjoy. Don't let those two points stop you. It is still 5+ stars and worth your trek. It is also just enough off the main drag of downtown to have parking. Not a lot but enough.

    We had a fun Girls night at Republic and sat up at the bar since there was no wait. Make a reservation if you are planning to go! We decided last minute and I will always take a seat at the bar if I'm with one or two people. Our bartender, Nelson was a lot of fun and gave great food and drink suggestion. He let us try some inventive drinks with interesting ingredients like locally made drinking vinegar. In addition to the inventive cocktail list is a good wine list making it easy to try some wines you haven't seen before. The menu is mostly small plates with a few larger items. We started with the charcuterie board which had the most amazing house-made Boursin cheese and rustic bread. The miso bok-choi salad and lamb-beef meatballs were my favorites. There were many other things on the menu I would like to try next time. I will definitely be back!

    Wow! This is the new hot spot in Detroit! Great place to grab a drink or dine at the bar! A bit noisy but still a very trendy and enjoyable environment! I highly recommend the trout, I think it's the best trout I've ever had... even better than the trout dishes I've had in the Rockies! For salads, I thought the roasted carrot salad was delicious and unique. It's comprised of all carrots (no lettuce) topped with a pesto sauce. It's big enough to share too! Will definitely be back hete! Loved the ambiance and perfect for a date!

    Damn, Detroit is on Fire. Republic is just an incredible experience that I look forward to trying many more times. Stopped in on a Thursday night and there were places at the bar, had a seat and was quickly served water that was never empty(Nice). Got their whiskey drink that is kind of a cross between an Old Fashioned and a Sazerac which was very nice and will try this at home. For food I went with the steak because the way is was described to me I had to have it, plus the night before I had a steak that was probably poured out of a bag and microwaved at Chile's. The steak was done perfect and the rutabaga mash had a sweetness and a bit of a chunk that was great. A bit of very flavorful salad on top and some beet sauce underneath. Do The Steak. For a finish was the Brown Bread ice cream that really does not sound that great and does not say much more about it on the menu. However the Awesome Waitress/Bartender had me swooning for it with her description and it lived up to the hype.     PROS: 1. Damn good food - god, damn good food! CONS: 1. Very BUSY. We went at 10PM, thinking we could get a table but could not. No worries, we sat at an eerily empty bar. What was everybody afraid of? Sit at the bar! 2. Seemingly EVERY damn new restaurant in Detroit is so very loud! I wish I could hire an audio engineer to put foam on the walls and ceiling in some of these new restaurants (I know, "first world problems"). MISC: * Also, during our dinner the fire alarm went off. The staff apologized and explained that somebody lost their balance and ended up tripping the alarm by the mistake - it was a false alarm. As an aside, Detroit really has recovered from the bankruptcy with civil services intact! There were no less than 15 individuals from the fire and police departments at the restaurant within minutes.

    Unexpected greatness. Our evening at Republic could not have been much better. Splitting four appetizers over the course of two hours left us full and impressed. Each of the appetizers was unique, skillfully prepared and robust in flavor. Hands down best meal I've had out in quite a long time.

    Republic has an eccentric menu of some curious couplings that had me surprised at the creativity. No simple dishes here but they pulled it off. Delicious food. They reach and attain. The bouillabaisse was succulent with a lighter sauce. Its trout astounding but sparse. The tempura fried squash blossoms very tasty. The lemon slices edible and zesty. The potato whip of the day was pared with fish roe (?) another bold move that works. The duck confit salad with egg, duck and grapes was a creamy goodness. The decor is eclectic and lively. Very comfortable too. The angle of the bar mimics the angle of the GAR building which gives it a good diagonal feel. Its a true Detroit building of war heritage and glad to see it back up housing this restaurant. There could have been a touch more food on the plates, but they don't kill you on drink prices like a lot of places now. The $4 drinks of the D are long gone like the $20 parking tickets, but I was happy to see Republic get away from $12 mandatory price. Keep your sugar syrup. Oh and my girl got splashed twice by the glass sprayer at the coffee station?!!?! wtf. For some of you prissy folks this would ruin our entire night and the review. It didn't. Republic works well.

    Service was terrible. Server was a complete B. Was in Detroit for a business and came here for a meeting with people I had never met.. She insisted we all share everything and made it uncomfortable. Food was mediocre. It's all tapas, hard to feel satisfied with the hodgepodge meal I had... And now my stomach is upset. Steer clear of the Republic unless you want to go for a beer and appetizer.

    Make sure you make a reservation. Quite a popular restaurant. Wonderful atmosphere. Friendly servers. There cheese assortment is light and quite delicious. Small menu but if you are looking for contemporary taste and style definitely the place to go. I had a rabbit dish. Chef did an awesome job cooking it.     The boyfriend and I came here to celebrate our anniversary. Street parking was relatively easy to find and we were able to secure a reservation through Open Table. We arrived early and ordered a few drinks and appetizers. The fries were delicious (ask for their house ketchup) and the lavender field greens salad was light and refreshing. All dishes are very shareable (which I love). We ordered the Duck Pastrami and Roasted Chicken entrees. I usually don't prefer duck, as it tends to be too gamey for my taste, however this dish exceeded my expectations. The duck had a beautiful crispy outer finish and a soft, tender center that was slight sweet and buttery smooth. SO DAMN GOOD. The roasted chicken was also delicious, but a bit salty for our taste. We got both the Creme de Pot and Espresso Granita for dessert. Both delicious and highly recommended. Service across the board was very high- our server was pleasant, informative, and very efficient. The restaurant really gets this right. Everything looks and feels like a well-oiled machine. We will definitely be coming back soon! Thanks for making our date night so special, Republic!

    Living in Los Angeles and Nyc I guess I'm hard to please when it comes to great food.. I think this place has great potential.. The atmosphere and service is impeccable.. But the food is very inconsistent... Almost to much of everything salt or sauce.. Really masks the taste of the actual food product.. The beef tartare deff pass on that.. First there is only one bite with out bread and the flavors are just no go. The pickled shrimp I really Enjoyed.. It was like ceviche meets pickled.. Yummy The chicken liver moose was amazing that's a must, if I would come back it would probably be for this only reason. Duck Brest was okay.. Very fatty it was good but wouldn't come back for this. The fries were interesting if you like sweet stuff then order it.. I enjoyed it, my fiancé was not pleased and he loves his fries. The sauce on the side that comes with it is supper fatty.. You could taste the duck fat and I love that but it's just too much.. Very overpowering and not in a good way. The roasted carrot salad was delicious, I feel like every farm to table restaurant anywhere in world should have that down to a science.. Overall I think this place is okay.. It's good but nothing to rave about or crave. Hope this helps!

    Excellent tapas-esque restaurant. Dishes were all delicious. Dessert was phenomenal! Staff courteous and friendly. Great drinks. A little pricey, but worth it. Cute ambience inside the restaurant. Definitely will go back. Update: AMAZING staff, our original table was for four, and they still squeezed us in with an additional three people on a very busy Saturday night. Once again, the food, everything was AMAZING. the best restaurant in Detroit at the moment.

    Visiting Detroit briefly and my friend brought me here and we had a great time at the happy hour. I had an amazing old fashioned that is served with one giant ice cube and orange slice and it was very delicious. We also had the beef tallow fries which were absolutely amazing. They were nice and sweet and the dipping sauce was fantastic.We also had the corned lamb thing with donut thing. I'm not sure what the name was. But it was also awesome. We sat at the bar here because we weren't staying long but the bartender was really nice and chatty and really just gave me a good first impression of Detroit overall.

    Republic was a unique experience. My husband enjoyed the dishes more than I did. The menu is small and is a farm to fork type of restaurant with small plate portions. Dishes are quite unique and requires an open pallet.

    Been open for a bit now and they are in a nice groove. Stopped in for a late lunch and sat at their bar. The hostess greeter with a smile. Wonderful, comfortable interior that plays the building it resides in well. I started off with a well made cocktail. (an Aviation) The bartender was friendly and skilled. Had a nice conversation without being to chatty. I enjoyed the Duck Breast Pastrami sandwich w/ Horseradish Au Jus. It was splendidly complex. A small side of their house made chips completed the meal. Portion sizes were great. Not to big, not to small. Not the first time I've been here, and I will be back. I hope they maintain their standards. :)

    Food is very good overall. They're a bit slow in the kitchen, but service was very attentive with frequent water refills, etc. We split the chicken for two which had a lemony flavor but still savory, and it was delicious. Hubby had the onion rings which were delicious, but the season vegetables (grilled green onions with spicy jelly) was a strange mix that was a bit spicy and left something to be desired. For one thing, green onions by themselves just makes for long chewy strands rather than cut up in a dish with other veggies. The portion was a bit small and unfulfilling. For dessert we ordered the strudel and a cappuccino. The cappuccino was insignificant and I honestly make better ones at home with frothier milk and a heartier serving. The strudel thing was totally not what I expected. It was more like a fruit crisp or crumble which I dislike immensely in general. It was simultaneously too sugary and too tart, but our server graciously took it off the tab before I even tried it to compensate for the long wait. Overall, I would definitely recommend it. They have many interesting items on the menu and it's well worth a trip from the suburbs since Novi/Northville/Plymouth is a sad little food desert for contemporary American cuisine.

    Why can't I find a place that I love to eat in downtown Detroit ?? I will say this place has very nice ambiance . It's centrally located to comerica park. I found the food to be mediocre though . I didn't lovveee anything I ate . A couple things we tried we're the cheese after which was pretty decent . The roasted carrots were okay nothing to rave about as some people did. The cherries and tomatoes salad honestly I would pass on it . I didn't really like it and wished it had some greens in it to complete the taste. A couple things to note are reservations on weekend are a must unless you plan on sitting at the bar . The options are pretty limited and the menu does change every so often . I'm glad we tried it out . I love supporting local business . They mentioned that most of stuff is farm raised and organic which is pretty awesome . I will upload some of pics now . I would recommend trying it out but still looking for that one place in Detroit to give me that wow factor ! ( so you know my taste my close favorites are joe meur and seldon standard ). I do want to remind you that I don't order meat / chicken so I do have some limitations .

    This place is amazing! From the beautiful Detroit castle that houses it, to the imaginative creations of a very talented chef. It is pricey, but the adventure in gastronomy is well worth it. Nice ambiance, decor, and perfect atmosphere for a meeting or casual lunch with friends. There is free parking on the street. I went for lunch and selected an appetizer and lunch entree for $25. I couldn't resist the pickled shrimp, locally farm raised in Detroit. Yes, Shrimp raised in Detroit, lightly pickled, sweet and delicious. And the duck pastrami french dip, served on fresh baked roll with a nice side of arugula tossed in a light vinagerette. I highly recommend Republic.

    Worth trying and trying again! A few tips: 1. Don't come on game day unless you want to pay more for parking, if you can even find parking. 2. Don't order more than a dish at a time unless you're with a group. A table for two is small and the food comes out pretty quickly...our table was covered with platings. 3. The seating towards the west windows can be a little painful while the sun is setting FYI. They don't have window treatments so you may have to deal with the blinding sun while you eat. If you request a table for two make sure you don't get a west window table. 4. Definitely order the Carrot Salad and the Potato Dumpling dessert I've been on a serious roll lately with all the new spots around town being as good as reviews leave me expecting. Republic was 3.5 stars of fantastic due to a few minor issues. But first...the atmosphere is very cool and very chill but with a flair of pride for what they're doing here with their farm to table movement. It's easily one of the coolest buildings to dine in too. Service was mostly top notch although they did forget to place the order for our first dish...the Bread and Butter. This turned out to be a convenient mistake however, more on that in a minute. We started with a few cocktails. Be aware that depending on what you order it could take a little bit of time for them to make. They made me a near perfect Sazerac, showing that they'll, both, take time to make a proper drink and that they know what they're doing. I didn't investigate the cocktail menu beyond the whiskey list, which was substantial. Additionally, there was a host of other liquor provisions, which all looked in order. Meanwhile, our server gave us the spiel on the building, an explanation of farm to table, and then a brief overview of the menu. All small plates here folks with exception of the whole roasted chicken which serves 4. The menu is very easy to get through and the dishes all sounded wonderful. Thinking we had an order of Bread and Butter on the way, which was taking a bit of time, I ordered three more dishes. The Carrot Salad, the Beef Tallow Fries and the Duck Pastrami all sounded like great starters. but then everything pretty much arrived at the same time. If the Bread and Butter had came out we wouldn't have had room for it at our tiny table anyway. The fries were crispy, herbaceous and came with a nice aioli but weren't anything craveworthy. The aioli was really thin too, almost watery, which was a little unusual. The Duck Pastrami...also unusual and the least favorite of the dishes we ordered. My hang up with it was how RAW it was. I'm no expert on duck. I haven't cooked it before and I rarely order it, but I think it's usually served medium rare with a pink-reddish center trailing to a crispy skin on the outside, right? I also know that pastrami is definitely fully COOKED, all the way through. This duck was pretty much RAW-RAW all the way through, kind of tough, and stringy where the skin connected to the meat. I didn't really get the pastrami link either. It may have been rubbed or brined in the spices used for pastrami but it was indistinguishable and not good. It was served over fried spaetzle, if I'm not mistaken, which was pretty good. Sadly it was a very small portion of the noodles and at $27 it was not a winner! On the other hand, the Carrot Salad was freaking AMAZING!!! So much so that I went home and pulled together a similar roasted carrot salad with a dill pesto the very next day. Republic's had a cashew cream that I'm working on making, but definitely order this salad. It was simple and light but full of fresh flavors. At this point, our table was pretty much covered in silverware, platings, empty dishes, drinks and candles. It was a little cumbersome. The food comes out quickly so I wouldn't order more than one or two dishes at a time. Our server gave us the impression that it would take a bit longer for items to land on our table but that wasn't the case. The kitchen runs very efficiently so wait times on plates were very short. For dessert our server began giving us what would've been a lengthy description of the dishes they had but the sun was blinding my date since they don't have window treatments so I was trying to move things along. (Yes, I did offer to switch with her) I knew I wanted to try the potato dumplings on recommendation from friends, and the Chocolate Pot de Crème sounded like a winner, so we cut him a little short and ordered. The Pot de Crème came in a ramekin with a small ball of beet ice cream on top. The crème was light and perfect...the beet ice cream added an almost cherry flavor to the dish...it was a total delight. But, the Mashed Potato Dumplings dessert was crazy good!! Fried mashed potato balls sprinkled with powdered sugar and resting on a disk of lemon poppy seed ice cream. Textured, sweet, savory and varying temperatures...everything about this dish plays with your senses. Fun with a little whimsy...try this for sure.

    It's obvious that the entire staff at Republic really love what they do. From the Host, who was happy to point out 2 empty seats at the bar for us to kill our 10-15 minute wait time, to the bartender who artfully whipped together delicious craft cocktails for us to enjoy while we waited, to the waitress whose eyes lit up as she described her favorite dishes on the menu. A great deal of care and pride has been put into this establishment and it shows. We started with the Ploughmans Plate which comes with house-made bread and an assortment of meats, cheeses and garnish. Everything was absolutely fantastic. We opted to split the Beef Tallow Fries which came with a delicious aioli for dipping and the Dry Aged Steak which was hands down one of the best steaks I have ever had in my life. Exceptional flavor and cooked perfectly. Though we were splitting everything, most of the Butchers Revenge ended up coming home with us, which was also fantastic. The only real downside was the parking situation. I can't even imagine how difficult it must be to find a space to park during a sporting event with the limited amount of spots in the area. Definitely build in a few extra minutes to find a space. Or maybe Uber is the way to go? On a weekend, it seems that you would definitely need a reservation. It also should be noted that restaurant hours are 5:00pm to 10:00pm every day.

    Loved this place. I tried it for the first time last week with a few girlfriends and we were all equally pleased with the food and service. We basically tried the whole menu. The cheese app, shrimp app, beets, fries, potato special, the lavendar salad, the carrot salad, The Butcher's Revenge and the Chicken. All were wonderful, but the Chicken stole the show for me. The chicken does take 60 min to prepare, so make sure to put that in right away and order some appetizers and other foods to pick at while you wait. Our service was great.

    So, I'll start by saying that myself and the group were blown away. Words have been thrown around such as "incredible" and "amazing" and those may not be fitting enough adjectives. While there are other fantastic options in Detroit, and the list keeps growing, this might have been the favorite of all four of us after tonight. The cocktails were expertly crafted and everyone definitely enjoyed what they had. So much so that they kept coming! The food was on another level. The term I've heard most about this place is "meat-centric' which might be pretty accurate. Most dishes did have some kind of meat or meat flair if it were. Everything that was set down at the table was perfectly prepared, with the fan favorites being the Lamb Belly and Duck Pastrami; even the Carrot Salad was on point which none of us truly expected to enjoy as much as we did. Between the four of us, we split eight dishes (two orders of the Lamb Belly because it was just that good) and a dessert which was more than enough for all of us! Don't be intimidated by the desserts either; they seem odd but we had the Mashed Potato Dumplings and the flavor was perfect. It sounds like the menu will be rotating seasonally but that won't stop me from coming back soon!

    We have eaten here twice now and each time was stellar. Liz was our waitress for both experiences and she is phenomenal. Great knowledge of the menu and all her drink suggestions were spot on to our tastes. All the employees are friendly and really enhance the dining experience. You can tell they enjoy their jobs. We have tried most dishes on the menu- standouts are the pot pie (my husband ordered it both times), pickled shrimp, duck confit salad, and the duck pastrami. We tried the locally sourced blue spruce ice cream last night and it was amazing. Served on a chocolate chip cookie with a sprinkling of walnuts and cocoa. Out of this world. We will be craving that dessert! Definitely becoming one of our new fav places to go!

    I wish there were more stars to give. First of all, amazingly friendly service all around - everyone seems really invested in the customer and the business - everyone takes pride in the food and drink and that's an inspirational attitude to be around. Great ambiance, a fantastic range of food to choose from. The carrots and seasonal beet dish take the act of eating to another level. Trout was fresh and lovingly handled. And, literally, the brown butter ice cream is the BEST ice cream I have ever eaten. Cocktails were on point. Recommend summer solstice, tastes like sunshine, the devil wears prado. I dig this restaurant so hard. Wish I didn't live so far away.

    We ate the Ploughman's lunch, which is a super great deal. It was $20 for a entree and a side and the portions are very generous. The Rabbit Mortadella sandwich was really tasty and I recommend the cheese platter. We sat at the bar, and our bartender Joe was really helpful with drinks, suggestions and service. We will definitely visit again and hopefully do dinner next time.

    Given how booming the restaurant scene in Detroit is, I was very pleasantly surprised to be able to secure a reservation here on a Thursday evening. The beautiful, polished interior creates your first impression, and it's hardly a hollow facade. We were brought to our table immediately, and quickly thereafter greeted by our server Jason. I usually write about service towards the end of a review, but in this case I'll make an exception. The service from Jason and the rest of the staff was simply outstanding. Another reviewer keenly mentioned that a lot of places this new have slip-ups or hiccups initially, but Republic avoids that. And it's completely true, whoever hired the staff did a terrific job. Jason was very friendly, attentive, funny, but above all informed and professional. He was able to answer our obscure and pretentious foodie questions with ease, and he always knew when we needed something. The non-verbal service from the support staff was equally quick and impressive. Our table was reset promptly at just the right time between courses, without either of us ever having to ask for anything. We ordered three appetizers to start: the now famous bone marrow fritters, the ploughman's board, and the lamb loin. Jason explained to us that one member of the kitchen staff uses a particular and unusual method to add each ingredient of the fritter individually, and that the two accompanying garnishes - bacon jam and a rutabaga preserve - vary in ratio according to chef's whim. Very interesting and, needless to say, tasty. But I expected it to be great and I wasn't surprised. I cannot say the same for the ploughman's board, which blew me away. It's a platter of a few house made cheeses and meats, and two items in particular were unbelievable: the lamb sausage and the chicken liver mousse. And, they pair seamlessly with other items on the platter, such as the creamy blue cheese or the grainy mustard. The portions are delicately doled out and a perfect amount for two people to enjoy. The lamb loin was very decadent and tasty, well paired with the chocolate reduction, but a little fatty in my opinion. Which objectively is fine, but it made it a little more difficult to eat, especially given the relatively blunt silverware we had at our disposal. Out of the feasts section, we ordered the duck pastrami. I think I'm going to struggle to articulate how good and perfect it actually was. It was fatty too, though much more accessibly so, but more than anything the duck itself was so artfully balanced with every other ingredient. The crust of the duck has an initial strong sweetness, that's then tided over by a more savoury spaetzle, that's then made sweet again by the carrot emulsion finish. Just perfect. Rumours of the brown bread ice cream have not in fact been exaggerated. Either this or Antietam's pot au chocolat is my current favourite dessert in the city. This one has several different layers, a torched marshmallow type of top, a decadent brown sugar ice cream in the middle, and brownie bites at the bottom. It takes a little bit of work and a few bites, but once you can get at all three at once, you truly appreciate the dish. It's a sensory experience of contrasting flavours, textures, and very different temperatures that somehow stays together neatly. I was pretty distracted with the food options so didn't dive head first into the recesses of the drink menu, but what I saw looked great. Enormous bourbon selection by restaurant standards. I had a black IPA from Green Bush with the starters, then a glass of Beaujolais with the duck and dessert, and it worked for me. Each menu item offers drink pairings which I thought was pretty neat. Overall, much like my review of Selden Standard, there isn't much to say without gushing, which I clearly did anyway. Those two are in my opinion the best restaurants in Detroit right now, and certainly the best suited for a paced night out. The individual dishes at Republic may be slightly better, but the more tapas-oriented style of Selden Standard affords you the chance to try it all at once, so there's something wonderful in each of them. Where the restaurants are identical is in their unbeatable service which, like all great service, seems completely effortless. Republic is a must-try in the already amazing Detroit foodscape and I'm eagerly awaiting Chef Williams' next project, Parks and Rec.

    Republic needs to just hand out their doughnuts as you walk in. Or maybe just stuff them in your mouth before you can say anything. They melt in your mouth and the sweet, salty, and lemon taste is perfect. Dinner was fantastic. Made a reservation and was seated within 5 minutes. Ordered the roasted carrot salad, bone marrow fritters, trout, and obviously the doughnuts. Carrots were perfect and I loved the cashew sauce that they used in it. The bone marrow fritters are phenomenal. Perfect amount of savory taste from the marrow balanced with jam and puree. Trout was cooked perfectly with crispy skin. Didn't find any bones which is always a win with fish. Order the doughnuts. It is a mistake if you don't.

    We went to Republic on opening night and it was fantastic! You have the option of ordering full meals or small plates. My wife and I decided to go with the small plates. We started with the bone marrow fritters. Sounds a little gross, but they were great. Then we had the field greens salad, which had many locally sourced ingredients. Really good. Then, we had lamb loin and a shrimp dish that's not on the printed menu. I love lamb and it was fantastic. My wife thought it was a bit too rare for her taste. Good - I got to eat all of it! But, she ate most of the shrimp, which was also really good. Then, although we didn't need it, we ordered a dessert to share. It was called "Brown Bread Ice Cream". That sounds kind of gross, too. But, wow! This is one of the best desserts I ever had. It's impossible to describe. It has a little layer of broiled meringue on top. Mmmmm. I may go back tonight just for that. The restaurant is beautiful. The building itself is my third favorite building in the city architecturally. (#1=Guardian Building, #2=Old City County Building, #3=GAR Building) They did a fantastic job making this space into a restaurant. The wait staff was extremely knowledgeable about the menu and food preparation, and even the history of the building. Before going I was a little concerned about where I was going to park. But, it was not a problem. We didn't notice the sign until after we parked, but they have attended parking available. We just parked on the street. We loved it and will definitely go back. In fact, the brown bread ice cream is calling me now.....

    Wow. Oh wow. Everything was so so amazing. Interestingly it doesn't much matter what the words on the menu describe, whatever we ordered (and our hungry group of 6 ordered just about everything). House ground meatballs sound average but were transformative. Onion rings were the best super light treatment and if they aren't the best you've ever had, I'll refund your money (well not me but maybe someone will). Beef brisket perogies also sound sorta average but were the best thing I've eaten in a while. What are pickled shrimp anyway? Don't know but they are great here! Menu changes constantly (it's a farm to table restaurant--you get what the earth gives you) but the local steelhead trout was great too. Wow. Run here quick. Addendum: oh shit the desserts! I don't love carrot cake but the thing they CALL carrot cake is amazing. My dining partner said "when I come back I'm only ordering 5 plates of that". Homemade ice creams great on great.     We were lucky enough to snag a table on opening night. Everything we tried was delicious and the service was superb. We ordered almost every vegetarian option on the menu and shared our plates around the table. My favorite part of the whole experience is eating in this unique and renovated space in Detroit. The building is a castle and was pretty much redone from top to bottom. I love how the food scene is booming in Detroit. Bravo Republic for having faith in Detroit's potential!

    I knew this place was going to be awesome because it's inside of a Castle! Well it's not exactly a castle, it's the Grand Army of the Republic building, located where grand River Avenue and Cass Avenue meet in downtown Detroit. The restaurant has a modern hip feel with beautiful hand-painted wall art and subtle lighting. The menu is streamlined and simple. The staff know the menu well and explain exactly how each dish is prepared. This came in handy because we have dietary restrictions. Every dish we had was balanced perfectly and great thought was given to each bite that the customer would be taking. For starters I highly recommend the white fish fritters and the roasted carrots salad, both were incredible! For a main dish I recommend the Roasted Trout, there's so much going on in this dish that I felt like each bite was an entirely different dish! It would be tragic to miss out on the Acorn Cake for dessert. The cake is served warm with a scoop of ice cream on top that melts into the cake happily ever after. But don't stop there, the brown bread ice cream with the toasted marshmallow topping and chocolate crumble on bottom is an experience in itself. We absolutely loved our dining experience here and will definitely be back!

    I am a steak and potatoes kind of girl. I order the same thing, no matter where I go and I'm not very eclectic in my tastes. My date recommended this place, I skimmed over the menu, and said sure. The menu itself can be intimidating if you're not hip to the terms. I had no idea what 95% of it meant outside of "duck" and "lamb." However, the servers are more than willing to explain and pretty knowledgeable. In terms of service - ours was great. Our drinks took a little bit to show up, but that wasn't our server's fault. Our plates were cleared in a decent amount of time, you have an entire pitcher of water at the table (which is a +++ for me!), and every time a dish came out, she explained what it consisted of and how to eat it. The drinks are incredibly strong (which they should be for $12) and you can ask for ice water if lukewarm water isn't your jig. All of the food was great. The best dishes of the night were the lamb loin - which was the best lamb I have ever had - and the beef tallow fries. The Ploughman's plate was underwhelming for me. The cheese and pork whatever were pretty bland and the crust on the bread was inedible for me. We asked for more bread because they give you 4 pieces for this huge spread and it was gladly given to us and much, much better the second time around - warm, soft, firm where it was supposed to be. The duck confit was a little spicy, in the right amount, and more than enough for the both of us. He ordered the brown bread ice cream for dessert and I wish I would have ordered the same. It was incredible - marshmallow (torched!), ice cream, and a brownie type thin cookie at the bottom. I ordered the butter rum cake just to get something different and it was terrible. We didn't even eat half of it. Despite it swimming in liquid, it was incredibly dry. I wouldn't recommend it. Overall, for 4 small plates, 2 drinks, and 2 desserts, our total was $94 before tip. If you ask me, that's not bad at all. We were both full, happy, and a little buzzed on the way out. We will be back!

    On the one hand, it's just another 5 star restaurant in downtown Detroit. On the other hand, it's another 5 STAR RESTAURANT IN DOWNTOWN DETROIT! The building is beautiful: triangular brick structure in the spirit of the Flatiron building in Manhattan spanning the whole city block. The restaurant is on the ground floor and is filled with light from windows on two of the three sides. The interior is creative with Edison bulbs, original detroit artwork, and a all-glass bar. Although the number of house cocktails is small (and seem to rely on a handful of ingredients like Fernet), the bar is fully stocked and the bar staff are excellent and can tailor a drink to your preferences. The menu is mostly meat dishes so you may want to bring your vegan girlfriend elsewhere. Highly recommended!

    Hands down best meal I have ever had. The ambience was wonderful and the food has so much flavor. We started with the bone marrow fritters and rabbit pot pie. Both unreal. The fritters are so lite and airy I could eat them like pop corn. They come with this sweet bar b que sauce that takes it to the next level. The rabbit pot pie was delicious. The crust was light and flakey and I was the perfect amount of meat and gravy filling. These two apps were enough to split and make me full but I knew I couldn't stop there. We split the republic steak which is one of the best steaks I've ever had. It's aged for thirty days and has this amazing buttery saltiness to the outside. It sits atop of a squash purée with a beat sauce. For dessert we got the bread ice cream, it's like snores on crack. I could eat a whole pint. Go to republic, it's worth it and you won't regret it. I promise.

    Really enjoyed our dinner here. The menu changes almost daily but we had the following: Roasted carrot salad - delicious. Dill, cashews and pesto. Shrimp butter - pureed shrimp with tomato, butter and herbs and spread it on toast. Duck pastrami - thinly sliced smoked duck. Ploughman's Plate - a charcuterie plate with changing meat, house cheese, dill pickles and pickled cherries. All of the former were absolutely delicious. Half of our table enjoyed the Lamb carpaccio. We also had the pork chop that was juicy and well-flavored. Easily 2-3 people can share a couple small plates. Those who are really hungry might order a main entree. We will be back for the chicken. Nice beer and wine selection and plenty of cocktails. Will return often.

    I say and mean this from the very bottom of my soul that I have experienced one of the best meals I've eaten in my life inside of this 116 year old building. If you like Wright and Co. or Selden Standard, this place will blow your freakin' mind. I've been here 3 times since they started having soft openings and gotten a completely different food experience each time. Sharing your food with everyone you go with is a must because that's the experience this restaurant is built around. The food comes out as it gets made. All the servers here are great and very knowledgable. We've gotten Paige twice and she was phenomenal. Request her if you can. As far as recommendations go, everyone should try the duck pastrami, whitefish fritters, carrot salad, and brown bread ice cream. The building is also very beautiful and the feel of the restaurant is amazing.

    recent date night found me and the husband at republic. he just wanted to look at the building. i wanted a ribeye. first impression, the interior is gorgeous and the seating (unlike most new restaurants) is spacious. we were seated immediately for our reservation and were greeted by a very nice server who gave a short history of the building and a great bourbon recommendation for my partner. the food is served a la carte and whichever comes first. All together we ordered a meat and cheese tray, the beef tarrow fries, the roasted carrots and the ribeye. the cheese tray had the most amazing pub cheese ever. we saved it to eat with the fries. the head cheese (made in house) was interesing and much better than either of us thought it would be. the roasted carrots had an amazing leek and cashew puree and made those plain carrots into something else. the couple seated next to us made us order the carrots just because of the puree. the fries were perfect and crunchy and salty and the ribeye was cooked perfectly with a beet sauce on the side. quite possibly the best meal i have had in detroit in a long time. only small note, the tall bar seats are incredibly uncomfortable. love, juston

    I'm trying hard to figure out what is better here, the service or the food. The staff is extremely knowledgeable of the menu and was so accommodating with my vegetarian diet. The potato chowder was so smoky and hardy I could've sworn there was meat in it but it's completely vegetarian! You must also save room for dessert and have either the acorn cake or the brown bread ice cream. Over all an out of this world experience!!

    My best friend came down for the night last minute, and we've been wanting to try the place. It was a Friday so we both figured there was no way we would get in but since it's down the street decided to see. The hosted asked if we had reservations and just when we figured we would be turned away the hostess pointed out a group was getting ready to leave the bar. We ended up having a few drinks and starters at the bar and moving our night on, but we are looking forward to going back for dinner.

    I had heard great things about Republic but to be honest I was underwhelmed. The service was good. And the atmosphere had a lot of potential. This is the kind of place you can go with a decent sized group and still feel like you can talk to everyone at the table. But the food was quite disappointing. I was in a party of 4 and we ordered the ploughman's plate which was a good start. We talked to the server who suggested along with that we get a couple small plates and a larger "family" style selection from the menu. So we got the pierogi and the meatballs and the "family style" lamb loin. None were satisfying. The lamb was covered in fat and was not even enough for more than one bite each. The other 2 small plates were not impressive. I most likely won't return based on my first impression.

    This place is such an amazing addition to the growing Detroit food scene! I went here with my parents and girlfriend while visiting Detroit and had an extremely memorable meal! Of course we ordered a bit of everything to share; every single dish was delicious! To add to the experience, the service and atmosphere are fantastic. The real stand out of the meal was the brown bread ice cream; do not leave without trying this!!

    Me and my love went out for our usual Saturday night shenanigans , after having a couple drinks in the Detroit area, we decided to give Republic a try after hearing many good things about it. To start, the place looked great inside and the atmosphere was much more then we expected, the energy was flowing nicely and everyone on staff was very welcoming ( big plus! ) We sat down right away and our server was eager to get our dining experience popping! She offered to pick each course out for us, ( which was impressive ) to us both. We started off with the roasted carrot salad, which turned out to be a disappointment and was extremely salty. For the main course we had the roasted trout with white beans and fennel dressing, again very salty! The chef was 'salty happy' and some of the other dishes that came out were also cold. For dessert we tried the brown bread ice cream which was VERY tasty, I wanted seconds! I would 100% recommend this! Since the menu did have such a large scale of delicious looking dishes, we will be back to give this place another try, hopefully for a better experience ...

Waitress was very knowledgeable, and extremely helpful describing the process since this was our first time visiting. Only negative was we could have seen the waitress a little more often for more drinks.

    My favorite place in Detroit!! I can't say I have ever had anything on the menu that I didn't think was fantastic. The duck liver mousse is a must along with any of their duck entrees. The duck breast pastrami is probably one of the best duck dishes I have ever had. Unfortunately, the head chef is leaving so hopefully their standard does not drop because as it stands, they are one of the best restaurants in Detroit.

    I had the pleasure of dining at Republic last Friday, a mere week after their official opening. I found this almost impossible to believe, given the level of the service and food. There were none of the hiccups one often sees in a newly-opened restaurant. Service was spot-on, the food was delicious, and the plates came out quickly. A tip o' the hat to management. Even with two months' of soft opening, that's quite a feat on a busy Friday. The bar area is the star here, and seems to take up half the restaurant. That's understandable, as it looks like a great place to cocktail with friends. Frankly, if the Happy Hour menu is on par with the rest of the food, I could see this replacing Roast as Downtown's hottest Happy Hour spot. The menu is small plates, as all new restaurants in Detroit must be, it seems. And it is a limited menu: four large plates, perhaps eight to ten smaller ones. The beef tallow fries and bone marrow fritters were insanely good. The butcher's revenge sandwich was a hot mess. I kinda figured that when I ordered it, but it's really too much of a good thing. Of the dishes we had, the only false note. Not that it was poorly prepared--far from it. It's just too rich and too much, and the whole was less than the sum of its parts. This one might actually benefit from deconstruction, as seared foie gras, the goat cheese slaw, and whatever other sweet was in there would be great as a small plate. Or even a slider . . . The dessert was brown bread ice cream, a jarred take on S'mores. It was so good, we ordered some to go for the family members that couldn't join us. Had I ordered the steak, as fellow Yelpers suggest, or the trout, as the waitress suggested, this would be a 5-star review. As is, 4 1/2, and frankly, I can't wait to go back to try that steak.

    I had high expectations for this place especially when my Detroit friends expressed shock to find out that this out-of-towner was able to score a reservation at one of Detroit's hottest new restaurants. Unfortunately, this place failed badly on both food and service. For that reason, I would give Republic an experienced better score (2). As a Traveladvisor reviewer from California, it is important to know my perspective which you may deem to be relevant or not. I enjoy fine dining and within the month had eaten in several excellent places in LA, San Francisco and New York. While my bias is towards lighter, Asian fare, I love Slows (my favorite BBQ place in the US) and went to Republic with an open mind on a cold Friday evening when a heartier fare would be just fine. I found Republic's fare to be heavy, but lacking the subtlety found in a dish like a Julia Child's boeuf bourguignon. The server told us that the food was supposed to be like the tavern food served after the Civil War. Perhaps this explains their lack of finesse given that food from that era lacked from the benefit of refrigeration, ingredients and equipment found in today's kitchens. My friend and I decided to try their small-plate approach, sitting at a high-top table in the bar area. Our two acceptable dishes were the field greens salad which featured bitter greens topped with blue cheese, pine nuts and maple vinaigrette and the roasted carrot salad with dill pesto, pickled celery and a cashew cream sauce. The cream sauce although tasty added to the heaviness of the dish and if lighter would have been a better complement to the main courses. I like rabbit so I ordered the rabbit pot pie served in a cast iron pot. What a disappointment. The beauty of rabbit was lost in a glutinous mass of vegetables, pie crust and a heavy gravy sauce. Nothing subtle about this dish. Again, I am fan of lamb and was disappointed in their lamb loin served with smoked leek confit, charred cippolini onions, and corned lamb fat. It was overcooked and the portion too small for two people to share. The brown bread ice cream was tasteless, a complete waste of calories. The rotating wait staff seemed completely untrained and indifferent. During the course of the evening, we encountered an initial server who knew absolutely nothing about the wine list which is not acceptable given that there only fifteen wines on the list. Other shortcoming included dishes served without clean plates and silverware (necessary with a small plate service) and a frozen dessert served with hot plates (good grief). I nicely pointed out several problems to the staff because the place is new and was greeted with unconcern and certainly no attempt to make amends. The front-of-the-house staff needs better training. The décor seemed like a mismatch of styles and the ambiance was loud and crowded as it was Friday night. On the positive side, Republic's prices were reasonable. I would normally wrap up saying that in all fairness I would give them another try given the newness of the place, but in this case they were so far off-the-mark that I think not.

    Best restaurant in the city, without a hint of hyperbole. This is what I wanted Antietam to be when I was so disappointed back in December. We skipped the "big plate" dinners and stuck to small plates. The Ploughman's Plate was headcheese, a soft white cheese spiked with white pepper, lightly sweet pickle slices, and pickled cherries, all of which were terrific. The seasonal vegetable was roasted turnips (which I think was a stop-gap when they ran out of snap peas), topped with fried onion, which was A+. Next we tried their egg and ramps plate, which was the one dish I could nit pick, as the ramps were somewhat overdone, though still very, very tasty. We pushed ahead with "Bread and Butter", which is their marrow-spiked butter concoction, which was surprisingly nuanced and very tasty. The Chef's choice potatoes were fried, smashed, hit with red wine and garlic, and served with a dollop of whitefish roe, which was the best thing we had. You wouldn't think vaguely fishy potatoes would be a good thing to eat, but you'd be wrong. God, would you be wrong. We had four wines by the glass between us (a Spanish white that was a bit like a fruitier, less minerally Sauvingnon Blanc, a French Sauvingnon Blanc, a peppery Temperanillo, and a bold Sonoma Cab), three of which were under $10 per glass and all were well worth it. They had a fairly large selection by the bottle and a very, very reasonable selection by the glass, including at least three sparkling options. We wrapped with coffee and the Brown Bread Ice Cream, which was not too sweet, despite having house-made marshmallow topping on it, believe it or not. The bill at the end of this madness? $100, pre-tip. Seriously. $100. I couldn't believe it. Phenomenal value. Try doing that at Selden. I sneaked a peek at the neighboring table's "big plates" and they'd easily feed two people if you'd shared a plate or two to begin. For instance, the trout is a whole stuffed trout. The blowout burger everyone's raving about has what must be a $10 piece of foie gras sitting on top of it. I mean, these portions were nuts. Order accordingly. Honestly, this place is the best thing going in the city right now. Highly, highly recommended.

    After passing this interesting-looking ruin of a building for years, when word reached me of its coming reincarnation as a restaurant, I knew it would be a "must" to visit (and to visit is, of course, to Yelp). Our gang of four tried Republic this weekend. Overall, our impressions were quite positive, with just a few concerns. The food portion of the menu is divided into 2 sections--"Spread" and "Feast" on the front, desserts mixed in with the different wines, cocktails, beer and other beverages on the back. The "Spread" portion of the menu is basically small plates, salads and soup. "Feast" consists of larger servings, more or less entrees, with one side dish (Chef's Whim Potato) thrown in for no good reason. Some of the "spreads" were true appetizers or side dishes. Our table got the Duck Confit, Lamb Loin, Roasted Carrot Salad, House Salad, Field Greens Salad, Baked Potato Chowder and the Ploughman's Plate. Some were very substantial and filling, others far less so. My co-diner got the Roasted Carrot Salad. He thought the carrots were a bit too much on the al dente side, but I disagreed. The cashew cream was a nice touch. The Duck Confit and Ploughman's Plate both came with pickled cherries - quite unique, and very tasty. Ploughman's Plate also includes a rotating cast of meats. This day, it was lamb - very nice, with sliced cheese and pickle. Entrees ordered included Duck Breast Pastrami. Flavor of the duck was excellent, and quantity enough to take some home for lunch the next day. The carrot emulsion (basically carrot puree), contrasted nicely in taste and texture with the duck cracklings, and the spaetzle rounded out the dish. One slight quibble: given the fact that this entree was about twice the price of most of the "spreads (apps)," the quantity was not sufficient to justify the difference. On the other hand, the Chef's Whim Potato was for some reason grouped with the Feasts, although it was basically a side dish--in quantity of food and price. Not sure what that's all about. My basic quibble with Republic is the difficulty in assembling a coherent meal from the wide array of component parts on the menu. The server, while very knowledgeable about the contents of each menu item, and very willing and able to offer wine or beer pairings, could have helped with this, but did not. So, it's a bit of a smorgasbord. If you get lucky, you will be able to put together a memorable meal from the diverse offerings. If not, then you will still enjoy a series of separate items, if not necessarily a coherent whole. Still, I found myself willing to return and see what is available. Not for a while, however -- will have to allow the budget a time to bounce back.

    Detroit's restaurant scene just keeps getting better and Republic is right up there with the best of them. Four of us went there last night and tried probably half of the menu-nearly all of it excellent, but I'll get to that in a minute. The space itself it very nicely done. I had seen the pics online and wasn't so sure, but in person it looks even better and I think they've done a great job of creating a perfect period atmosphere with a combo of new and old. It fits the food. Since most of the menu is meant to be shared, we did just that including two of the main courses. The excellent: The pepper bread is amazing. It was probably the best bread I've had this side of the Atlantic. The bone marrow fitters, the chef's potatoes, the duck breast pastrami and the dry-aged steak were all perfect. You have to get the duck. That's all I've thought about since leaving the restaurant-it really is that good. We had two of the deserts-the brown bread ice cream and the potato doughnuts. Both were memorable. The Good: We thought the beef tarrow fries were good, but not necessarily excellent. To be honest, I think the crack fries at Hopcat are probably better. The Fair: Nothing was terrible but we did have a couple of dishes that nobody at the table thought were worthy of ordering again. The whitefish fritters were OK but a little too fishy for lack of better term. The kale au gratin was very "basic" to be kind. I wouldn't bother. Overall this restaurant is an outstanding addition to the Detroit restaurant scene. The service was spot on. Unfortunately I don't remember the name of our server but she was great as were all of the others supporting her. We can't wait to go back.

    I'd probably give this 4.5 stars if I could. To start, the room is gorgeous. It's a deep navy colour with warm herringbone wood floors, velvet banquettes and a wall of booze. It's inviting but feels just special enough for a nice night out. Service was excellent. Our server was the perfect balance of friendly and helpful without being overbearing. The food was amazing. We had fries that were perfectly cooked and seasoned, with a delicious dipping sauce. We had the shrimp butter, which was a huge size (half the size would have been great since we were just two people). Then came the potatoes. They were hearty and delicious and I fell in love with them the first bite. Next was the salad, which strangely was probably my favourite item - arugula with a great cheese and a delicious leek puree. We wrapped up our mains with the steak, which was quite good but nothing spectacular (everything else was such a standout and seemed unlike anything I'd had before). I'd probably skip that next time. For dessert we had the pot de creme, which came with beet ice cream - the only real miss of the night. Maybe I just don't like beets enough but it felt like it was too much for the pot de creme. All in all, a great meal that we thoroughly enjoyed. If we lived here we would certainly be back.

    As an Ann Arborite for the past ten years, this is the best dining experience I have had yet in the Detroit area. The ambience is lively and energetic, the service excellent. My wife and I split the beef tallow fries and the rabbit stew as appetizers -- both terrific. For entrees we had the duck breast pastrami (spot on) and the Butcher's Revenge, a unique open face sandwich that is a must-try. I recommend a sparkler with this to cut through some of the richness. For dessert, the brown bread ice cream is a slam dunk. And in my opinion, the prices are very reasonable. I'm not sure how much a vegetarian would enjoy this place, but it is a veritable mother lode for meat lovers.

    My boyfriend and I, both foodies and love to explore, got to experience Republic for dinner last night. While I do agree with most reviewers, check the menu before you go because they're not your typical go to type dishes, we both thought the food was fantastic! Again, very innovative and creative. Our waiter, Jason was awesome! He was very knowledgeable and didn't lead us astray. I also do agree with the other reviewers that a lot of the dishes aren't exactly waistline friendly, but, we definitely do not eat like this every day and will be adding in an extra long dog walks this week! It's a great place to try and see how how far your palette is willing to take you! We didn't have one bad dish and the ambiance on a Sunday night was really nice. Probably a lot quieter than on a Friday or Saturday night. I rate this Mid-range in the price section because you're getting that fine dining food but the prices were very reasonable!

    Yesterday my husband and I decided to treat family to dinner at your establishment.We have yet to try and dine here and have had it on our Detroit dining to-do list. After having such wonderful experiences as walk ins at Wright & Company​, Revolver​, Gold Cash Gold Detroit​, Selden Standard​ just to name a few we were appalled at the treatment received last night at at Republic. We arrive approximately 7:45 ready for a wait (which we are always happy to wait, good food takes time and we understand) No one was waiting at the door and there were a couple high tops and bar seats available. The hostess seemed distraught that we chose not to make a reservation and asked if a high top would be fine. We accepted and were sat.......not so fast we were promptly stopped by someone else who said no, this was for a party and we would need to go to the bar. Once again shunned because of the whole reservation situation. She then threw our menus on the bar and walked away. Ok then, we can make do with the bar , get cozy and order food there. After waiting a while for anyone to notice us at the bar. Mind you it is not a large space and they very clearly see us there. We are finally served our first round and promptly forgotten about. We looked at menus, made our decision and sat our menus down (The restaurant call sign for "Hey I'm ready to order.") nothing. She walked by us several times, nothing. We then put all of our menus together, still nothing. When I finished my drink I figured she would come back like any good bartender and ask if I would like another. Nope, she took my empty glass and all of our menus and walked away. Wow. We were completely stunned at the lack of service and attentiveness for such an establishment. The only thing she was quick about was taking my credit card to pay the $50.00 tab for one round of drinks, which would have been plenty more if she would have actually payed attention to us. The waitress at Vicente's Cuban Cuisine​ thanks her though, they went above and beyond because of your terrible service and she made her tip AND the one you didn't earn that evening.     Came Hungry and Left Nauseous. Sorry to be a downer and I guess my girlfriend and I are in the minority but we had high hopes coming to Republic but left pretty sickened by the experience - and still hungry. From the $16, two ounce cocktails that the very nice waiter / bartender could not get right (we choked them down after returning them once) to the ridiculous Uber chic menu - Bone Marrow Fritters, Duck Liver Mousse, Tallow fries with Duck fat, etc, etc., we didn't find anything that sounded appetizing. We ended up with the $25 "Bountiful" Ploughman's Platter. The meats were scary, the cheeses were gross (one smelled like p#*p and tasted the same). The home made breads were like cardboard. Needless to say, we couldn't even make a sandwich out of the scraps we were given. Of course this is my only opinion and I hope them the best but I will never go back.

    This restaurant is fantastic. Just fantastic. I'm not prone to hyperbole or giving glowing 5-star reviews easily so I'm surprised myself at how much I loved the food and experience at Republic. The buildout of this new restaurant is very elegant (but not stiff) and the way it was finished acoustically it wasn't too noisy compared to some other new restaurants downtown. The food was just spectacular. Very creative and lots of nice little surprises in the various dishes. For me, the dish that blew me away was a humble order of Pepper Bread. Bread was really the most memorable dish I had at Republic? Yes. I was skeptical after seeing it on the menu because really, a bread dish for $16?? The large loaf, sized to share with a party of 4, was delivered to our table, fresh baked, crusty on the outside and chewy, warm and moist on the inside. It is accompanied by a large ramekin of the most AMAZING SMOKED WARM BUTTER I've ever had. When my party and I had this dish, we were so surprised and blown away that it set the tone for the rest of what would be an amazing meal. Other dishes we had: Roasted Carrot Salad - wow wow wow. Sweet roasted carrot spears garnished with dill and cream. I could have had this as a main dish if it were larger. Chef's Whim Potatoes - new potatoes roasted in some kind of delicious garlic butter sauce. Duck Pastrami - what can I say, fatty duck filet prepared like pastrami. Amazing. Hopefully the empty lots immediately around Republic will develop quickly so that you can take a nice after dinner stroll to digest and enjoy a pleasant cityscape. Right now, the urban streetscape around Republic is the most wanting aspect of an otherwise 5-star experience.

    Went there last night and feel in love with this place! The Steak Tartare was delicious but not the best I've ever had. However, the Duck Pastrami was out of this world!! We sat at the bar and our service was good, bartender was very knowledgable and friendly. Will definitely be back to try their other items!

    We were really looking forward to trying Republic. A group of four of us sat at the bar excited to experience this new Detroit restaurant that is getting a lot of positive local press. Unfortunately, we suffered through what appeared to be kitchen mismanagement, diabolically slow service (it took 30 minutes and 3 different servers to simply get more toast for the Ploughman's plate), rude and unhappy waitstaff (we heard the manager yelling at our bartender) and the kitchen server who came from the back serving one of our main courses to people that came in 15 minutes after we ordered. Then someone else came out to inform us that they had run out of the specials we ordered - Walleye and Wagyu beef. We actually thought they were kidding and one of our guys had put them up to the joke (how could they run out of both specials we ordered??). He said this was not a joke and they ran out of these specials. This was all before 9 pm at night on a Saturday night. So, big miss by whomever does ordering at Republic. We were there nearly one hour and a half before they notified us they ran out of specials. After a frustrating, negative experience, Republic did not apologize (or offer to pay for a even a single drink or appetizer) or try and make unhappy customers feel validated for the food and timing issues. This, in our opinion, is a hallmark of inexperienced or unskilled management staff and/or training. If a restaurant, especially a new one, has issues, we will always give the benefit of the doubt and try it again if they appear to understand when they have issues (whether food, timing, staff, or otherwise) and offer a sincere apology. This was not the case at Republic. The press reported Republic has a restaurant consultant - the consultant has a lot to work on at this establishment. Two of our foursome ate the appetizers and enjoyed the bone marrow fritters, duck fat fries and some of the meat dishes, so that is why they got the two stars out of five. Two other negative experiences - First was when we were waiting outside after the meal - several kitchen workers came out of the front door with what looked to be large dirty bowls, dishes and kitchenware and several large storage containers of food, and put them in the back of an old Ford escape missing its bumper. They left the car in front of the restaurant/at the corner with the food and dirty dishes for the entire time we stood outside (15 minutes). Not sure what this was about, but it was questionable from a cleanliness perspective and we wondered what the food and health inspectors would say. The other one was about the rest rooms. There are two unisex single bathrooms in the middle of the restaurant in between the bar and the dining room. This may just be the nature of unisex restrooms but a guy went in before me and when I went in, there was fresh urine, still glistening, on the seat and all around the front of the toilet bowl. Not pleasant in any world, no matter how cutting edge and hipster you purport to be. We were gutted by the overwhelmingly negative events of the evening and unfortunately will be cancelling our reservations that we made for our out of town guests later this month.

    My wife and I went to dinner there this past Thursday. We had seen the teaser on the local news and were excited to see what they had done with this beautiful old building. We couldn't have had a better experience. We oped to go with small plates to try as many things as possible in one sitting. We ordered the marrow fritters which were incredible. Very light and flavorful. The carrot salad was amazing. I couldn't get enough of it. They had a Ploughman's Platter which had duck prosciutto, a terrine, house made mustard and several savory mouses and a shrimp butter served with black pepper bread. We then ordered a lamb tenderloin which was phenomenal. The whole experience was outstanding. Our waiter, who's name escapes me, was very informative and friendly and explained the menu items very well. Housemade was a key descriptor and he worked at several Irish bars (so you know who I am talking about :) ). This is one of my favorite restaurants. We be dragging our friends downtown from the burbs. Well done Republic!!!

    The food was good, the atmosphere was nice and relaxed and our waitress was very nice. That being said, I would not recommend this place for large groups. We made a reservation and were told for large parties (6 or more people) they do a special menu tasting where instead of just ordering your own meal the chef preselects different items on the menu for your entire party. awesome! Until we got the bill. They had a difficult time separating the bill equally among couples and single people. Also, they split the alcohol evenly among the table, meaning the people who had one drink had to chip in more to cover for those that decided to split a few bottles on wine. There was no special pricing for this menu tasting we were told we must do for a large party. So, while we thought it was great to try so many different things, we were charged for each item at its regular price (I.e 7 appetizers, 4 salads, 6 entrees and 5 desserts, which we didn't specifically order but the waitress recommended because we were celebrating a birthday). Overall, our group felt that while the food and service were good, we felt we were forced into the special menu tasting and then left with a $800 bill.

    This was a complete surprise! Just a few blocks from Comerica Park is this awesome restaurant. I luckily came by this after another reservation fell through. The interior is cool trendy. The bar is open and also serves good drinks- I had the Seoul key, which was good but a little on the sweet side (I typically don't like sweet drinks). This is kind of a tapa style dinner, although the entree is actually full portions. Our table shared the duck liver mousse (amazing!!!!), roasted carrots, pirogues (pork filled and so delicious), meatballs were delish and so were the local stuffed peppers! For dessert the peach bread was easily shareable and equally delish! The service was friendly and prompt. I hope this area continues to open new innovative restaurants. Republic was s great experience all the way round!

    Not for discerning vegetarians. The caponata was delicious. The smoke trout received very good reviews. The shared plate idea is nice. And the bourbon list is extensive. This is about where the praise ends for the alcohol, meat, and seafood-heavy menu. In my mind, a local-conscious restuarant should not get a winning pass because its Kentucky (and otherwise faraway-produced) spirit list is good. Our server explained to us how conscientious their kitchen was (e.g. organic, free range, sustainable, local, small-scale), which really upset me. I don't want a laundry-list of food labels. I was already in the restaurant and seated with a drink; I didn't need an empty, rehearsed sales pitch that doesn't tell me anything about anything in particular. The cheese plate was a great disappointment. It featured an apple butter (quite tasty), a ball of boursin, and a prepubescent cheddar gloop. These three spreads were served with four tiny, thin wedges of grilled brioche (challah). The bread was way too soft and meager for all of these spreads. Fortunately, we were able to get some crunchier bread, but even then, weak sauce. Our server was quite inattentive to our table. He was very good with other tables, spending a lot of time with our neighbors, but definitely neglected us. I think that this avoidance is why our food arrived en masse with not warm bread. (Also, as an fyi for low-carb folks, the vegetarian and pescatarian dishes we ordered were all plated with bread, which was not often indicated on the menu.) Most reviewers are saying this is a special meal/place; unfortunately, we did not feel that.

    One of the best meals that I have had in the city. The attention to detail in the food was incredible. The service was excellent and the environment cannot be beat. Our waiter, David, gave us the history of the building and his recommendations were spot on. I cannot say enough good things about my first, and certainly not last, visit to Republic. 5 stars without question.

    Truly excellent dining has come to Detroit. Was a little apprehensive about coming to this restaurant after the chef Kate Williams left to start her own projects, but Republic manages to deliver a dining experience that's fresh and interesting without breaking the bank. Everything is farm to table and meant for sharing. The carrot salad, tomatoes and plums, and the duck pastrami are definitely highlights. Most of all, the food just feels innovative. It's the little things, like the crumble on top of the tomatoes, that allow the food to transcend the usual mundanity of "hipster place with exposed incandescent bulbs and fancy cocktails." That being said, the Grand Army of the Republic Building is beautiful and is a perfect fit for this kind of restaurant. Dessert menu is small but worth it. Peach bread is wonderfully dense. Given that this is the Midwest, prices are still pretty affordable for this type of dining. Excluding drinks and including tip and tax, I'd say it's about $35-40 a person. 10/10 would return!

    Let me first start by saying I wish there were more restaurants like Republic in the world! Farm to table concept, rotating menu, in-house cured meats, all artfully combined. We ordered appetizers and beer and shared 3 dishes between two people, which was the perfect amount of food. The stuffed peppers are a must! My favorite thing we ate by far. I would also recommend the fries with duck fat aioli. I think they have sea salt and sugar on them because they were slightly sweet. The butcher's board was just ok, mainly because we didn't like one of the meats. Overall, awesome restaurant. Definitely a breath of fresh air in Detroit. I also feel like I should comment on the service because it was excellent! Highly knowledgable staff that was attentive and friendly.

    I came here with my sister. I really liked the atmosphere/ambience of the restaurant. Our waiter was very friendly and gave us his very honest recommendations on dishes we should eat and avoid. We first ordered the caviar with bread and it tasted amazing. In fact, we ended up ordering more bread to finish up the remaining caviar. Next, we ordered the duck medium rare. It was cooked perfectly and was very tender. It had nice seasoning and went along well with the vegetables served along the side. Our favorite dish was the glazed carrot salad. Overall, I would most definitely come back here in the future. Almost all the ingredients for the food are local and brought in daily, so you know you are getting fresh ingredients. While it is a bit pricy with slightly smaller portions, the quality and presentation of the food I felt certainly makes up for it.

    OMG!!! All I have to say is if you haven't tried it yet, you are missing out! I've been twice now and both times, the food was amazing! I'd have to say Republic is currently my favorite Detroit restaurant. First of all, the building in and of itself is a sight to behold. Its height, its architecture, its presence...they're all captivating. It literally looks like a castle out of a storybook. Pulling up and seeing the building for the first time, you have a feeling you're in for an experience. And in my opinion, you would not be wrong. Thanks to the help of my fellow Yelpers, I had a good idea of the stand-out dishes and already knew what I was going to order upon arrival. We started out with the roasted carrot salad, the tallow fries, and the bone marrow fritters. They were all outstanding. The roasted carrot salad was displayed and served so beautifully. It came with a cashew cream, candied cashews, dill pesto, and pickled celery that all complemented the carrots so well, your taste buds did back flips and splits. The tallow fries came were very well-seasoned. I would have actually preferred that they were a little less salty but they were still enjoyable. They were nice and crispy on the outside and light and fluffy on the inside. The sweet and spicy dry rub duck fat aioli that came with them was awesome as well. It was creamy, bursting with flavor, and just plain delicious! And then the bone marrow fritters, my oh my. I didn't know what to expect at all as this was my first time ever having bone marrow fritters. But let me tell you, they were amazing! It was similar to the texture and consistency of hush puppies but with a surprise in the middle. It's hard to describe exactly what it tasted like but it was pretty mind-blowing! They also came with a lamb bacon jam and a roasted shallot aioli that was out of this world! The service was less than stellar. It got pretty busy and our waiter seemed preoccupied most of the time we were there. He didn't really come back and check on and check on us throughout the night. I felt like I had to chase him down to get his attention to let him know we were ready for the bill. Despite the service, the food was so good, I decided to go back to try some additional dishes. My second time, we were sat immediately and our waitress was awesome! She was super nice about explaining all the various dishes on the menu. She was so patient with me and answered all my questions. Their menu is seasonal and had changed within the month from my initial visit. I was quite disappointed to see that the bone marrows were not on the menu. Our waitress said that this was the first weekend that had not been on the menu. She explained that they were trying several new dishes so some things were taken off and others were put back on. This time, my eating companion and I decided to go with a couple of appetizers and each get an entree and then split it. After much deliberation and upon the suggestion of the waitress, we decided upon the chef's whim potato, the cherries and tomato salad, and the roasted chicken to split. I really appreciated our waitresses suggestions of the cherries and tomato salad. I was going to order the roasted carrots again because they were just that good but I'm glad we tried something different. You wouldn't think that cherries and tomatoes would be anything extraordinary but they were. Yes, it's simple but it was amazing. There were fresh heirloom tomatoes, fresh pitted Traverse City cherries, drizzled with an herbed olive oil, topped with the most divine pistachio crumbled all sitting on top of a huge hunk of whipped burrata cheese. YUM!!! The chef's whim potato was still good, although probably my least favorite dish of the night. It consisted of Yukon potatoes fried crispy smothered with a creamy sauce of leeks, shallots, celery, and fish roe topped with microgreens. The initial flavor was pleasant but then it had a slight aftertaste that stopped me from continuing to go back for more. Lastly, I appreciated that our waitress suggested that one entree would be enough for the two of us to split with our appetizers. Not many waitresses would do that. Usually, they encourage you to order more food so the bill will be higher, hence a bigger tip for them. She was very honest and didn't allow us to order too much food. And she was right. Even with our one entree, we had plenty to take home. Now, to the entree. It was an Otto's farm half chicken with a rosemary lemon curd, house pickle and field green salad, bread dressing, and saffron gravy. It was simply divine. And the bread dressing almost resembled croutons. They were so cute. Everything was so good! Bottom line, if you haven't been there, go! I definitely would like to check them out for lunch as well to try some of the items they don't have on their dinner menu.

    This place is gorgeous & perfect for a date night. I met up with my gf after work on a weeknight. I had their whiskey cocktail & an old fashioned. Both were good. For food I had ordered the bone marrow fritters & my gf ordered a salad & the carrot risotto. My fritters were yummy but the carrot risotto was not good at all. My poor gf ended up only taking a bite & not touching it again! The ambience of this place is good but I feel the food here is way overpriced $$$!!!

    This place is located in central Downtown Detroit. I found this awesome restaurant thru yelp. The food was amazing! I am so happy that I finally found a decent American cuisine restaurant in detroit. I would say this is the BEST fine dining that I have tried in Detroit (vs Roast, Rattlesnake, Coast Insignia) The decor is really modern..I love it...the glasses window throughout the restaurant made the restaurant look really bright in an early afternoon I would recommended most of the dishes we ordered. We ordered many dishes for total of 4 people because the portions were not huge 1. Beef Tartare ($15): The flavor is really unique. Small pieces of beef blended with cocoa and chile sauce..the cabbages lime curd gave additional texture to the dishes..great flavor/texture 2. Tallow Fries ($9): It is baked fries..therefore, it is not too greasy..the sauce is sweet and spicy..which is unique vs other fries other restaurant provides 3. House Smoked Dust Breast Pastrami ($28)..AMAZING!!..duck is really tender and its carrot puree goes really well with the duck meat . I will definitely come back again just for this dish 4.Roasted Local Steelhead Trout ($20)..the fish is fresh..but to me..it's not that special. The bean salad was a nice touch though. 5. House Dry-aged New York Strip ($40)..Good quality steak but lacked a little flavoring, thus I wouldn't rank it up there with other high quality steaks such as from Big Rock Chophouse/Ocean prime/Capital Grille. 6. Berry Hand Pie: great dessert after trying all these delicious food.. I will definitely come back again...Food is great..and only caveat was that all the dishes were served one after another "family style", which they told in the beginning and we said it was ok. This eventually dragged out the time for us to finish our meal. (They did offer option to serve dishes by individual plate, all at once)..plus the servers there kept coming to our table and asking to take our dishes away when we were not done. This made it feel like they were rushing us to finish our meal..

    My friends and I dined at Republic and had a wonderful time.The GAR building is a Downtown landmark and Republic should be too.The ambiance is modern and inviting. We chose and highly recommend the Chef's Special menu.The Chef's Special is prepared by the Executive Chef and features several courses going from salad to appetizers to entrees and dessert.The whole table has to participate or it cannot be served.

    I was so delighted by my experience at Republic. This is Detroit's renaissance at it's best. The turreted building is so unique - charming and historic. Inside the decor is interesting and eclectic. Their mixture of booths and tables, framed art and murals, wood floor and contemporary lighting is a big step above some of the uber-cool, new casual places in town. We went with a group of 8 people, so we did not order from the menu, but participated in a chef's choice for $50 per person. We lost count of how many dishes were served, 8 or 9 to be eaten family style. Each and every dish that arrived was an unexpected treat! For this group on non-foodies, reading the menu was a bit intimidating. So it was ideal to just have each course arrive and enjoy it's flavor and creativity. Republic got 8 'thumbs up' from our group of 8. We loved the ambience, food, service, and value!

    Literally you cannot go wrong at this place, with an updated seasonal menu, i found some of my favorite dishes from before ( bone marrow butter jam ) are gone, but i did enjoy everything i had this time around. Our party of 4 was split vegetarian & those who go all in (me). So for starters there was a special of Smoked Duck Wings - which were to die for ! the tender meat falls off the bone and into your mouth. I hope they add this to the menu on a more permanent basis. The Steak Tartare was not like your standard beef tatare found w an egg - this one had ribbons of a sort of raddish or vegetable under it with "chocolate dirt" on the plate. there was a hint of lemon that really held it all together. Local Zucchini Salad (v) -charred and raw zucchini, squash blossoms, lebneh dressing, granola - freaking LOVED lebneh - i've never experienced such a refreshing a flavorful and light dressing. This lam bacon that comes with this is out of this world in flavor, texture, and all around - i wouldn't normally eat lamb, but i gave this a go ! wow ! Roasted Carrot Salad (v) - dill pesto, cashew cream, candied cashew, pickled celery. Very nice smooth dish that was well prepared. I think it was the cashew cream that was more of a spread that laid under the carrots, gorgeous presentation. Chef's Whim Potato (v) - Youll yell WHOA !!! these are crispy but melt in your mouth i do not know what the special sauce is like omg - we wanted a second order but they ran out. Piemento Cheese - with their perfectly toasted bread & i think friend shallots like whoa. The sensory journey this restaurant takes you on is like no other in metro detroit - be brave, eat way you may not normally eat, order things you may have never tried - you really can't go wrong here !! Some other menu items are no on the online menu currently - that we ordered on Sat Night. The drinks were unreal and this place is a GEM in Detroit. I can't wait to bring the next group of friends into this awesome dining experience.

    Controversial statement: of the hot small plate restaurants in Detroit right now, I think this is the best one. I don't say that lightly. Selden Standard, DELICIOUS. Wright & Co., REALLY fun. But I gotta say, none of those places beats the rabbit pot pie at Republic. Fiance and I went to Republic on a Saturday night with our friends. We had reservations for, I think, like 9. Warning: despite that reservation, we weren't seated until like 9:45. I blame, in part, the random bachelorette party taking up five booths (Bachelorette sash at Republic? Really?). Anyway, we were standing by the coat rack drinking delicious cocktails that whole time. It was fine, honestly, but as a group we're willing to wait for food. It's really cool in there. It's hard to be more specific, it just has a cool vibe. When we were seated, we ordered just a bunch of things. Also, they brought over a free dish because of the wait (and we weren't even mad haha). Everything was great. I had some favorites, but I'm telling you, the thing that stands out is that Rabbit Pot Pie. When we were sitting at Selden Standard raving about everything we ate, we stopped and said, "yeah, but is it better than the Rabbit Pot Pie?". Delicious food. Really personal, great service. Cool atmosphere. Not a lot of parking, but whatever. Highly recommend it.

    Amazing food and drinks! I came here on a Friday night with friends and this place was packed! I loved everything about Repulic. The food was very unique and delicious. We started off with drinks and the bartender, Mike, kept making us some of the most amazing drinks we've ever had. The bartender made us a shot which he called "nuts and berries" and another with lavender in it and they were delicious! We ordered the duck breast pastrami, pickled shrimp, beef tallow fries and pork belly. I can't complain about any of the items! The fries came with a duck fat aioli which was so flavorful and delicious. The duck breast pastrami was so tender and juicy and had such great flavor. The pork belly was also so flavorful and had salsa rose and rutabaga that complemented so well with it. The price range here was a little high but not horrible. The portions are very small. The plating of the food was very nice and the decor was very interesting inside. I would definitely come back here!

    I dined here with my mom this past Saturday evening. I called up to make a reservation and they were booked, but offered up seating at the bar rail as an option. We arrived right when they opened at 5p.m. and took a seat at the bar. We ordered the majority of the menu :) We split the mixed greens salad and the house salad (which is similar to a Caesar and both were excellent. The mixed greens comes with pine nuts and blue cheese with a light dressing. We also split the carrots and the Kale Au gratin. The carrot dish was by far my absolute favorite dish. I completely recommend going there just for the carrot dish. It is in a dill pesto sauce that is wonderful and has great flavor. The kale is also impressive. Finally, we split the steak and the lamb loin to throw in some protein. The lamb was absolutely phenomenal. The only issue we had of the entire experience (which was quickly corrected) was that I ordered the steak medium. When it came out, it was absolutely medium rare - nearly rare. The bartender sent it back and served us a brand new steak which was excellent. My only recommendation is that if you prefer a medium steak, I'd order it medium well. The bartender also explained to us that they are aged for 30 something days - so that if they are cooked based on the age. We had a great experience and before tip our bill was around $90. Not bad at all for all that we ordered. I'd love to go back and try some cocktails as well. It was a great environment and the interior was really cool.

    I took my husband here for our 1 year anniversary and will be back for sure!!! The concept is small plates, which is what we love. It's so fun to try a bunch of dishes and experience new flavors and textures. We started with the Ploughman's plate and the bread was fresh and warm. I really enjoyed the stone ground mustard. It was tangy and spicy. A nice combo with The meats offered. Our server was awesome and so friendly!! My husband did not care for the bone marrow fritters and she took them off our bill - which was unexpected, but very thoughtful. One thing I will say you must get - no matter how full you are.....the brown butter ice cream. I am still thinking about it!!!! Another place for a fun date night...
