Guadalajara Family Restaurant Menu

Over priced menu, watery, bland salsa, ground beef with the texture and flavor of dog food, and inconsistent customer service. I'd rather eat Taco Bell for a week straight than have one meal here... At least it would be money better spent.

Love the atmosphere and quality food. Excellent guacamole and salsa. Very good mole dishes (with several different types of mole) and overall many good choices on the menu. Service is consistently friendly, patient, and extremely responsive (one of those places where they refill your drinks before you have to ask).

Great Atmosphere and the service is excellent. Food is delicious and I've had margaritas there which I really enjoyed! I'm glad this restaurant is in Peyton as there's not to much out here. I bring friends here. It's a great place!

Got their take-out and it was delicious. Shrimp enchilada is fantastic. Enchilada Culichi was very good as well (I got chicken). Why anyone would go to a place called Guadalajara and think they're finding tex-mex is questionable. This is very good Baja Mexican. 10/10 would order from again.

We stopped for dinner on the way back to Colorado Springs from the Paint Mines. It was late at night (9pm) so most establishments were either closed or about to close. This restaurant is open late so we lucked out to even find it. I absolutely LOVE the decor of this place. It is a newer restaurant, very large, with Mexican decor and I love that. The wait staff was very pleasant and polite and everyone spoke Spanish to the customers. I liked it. :) The prices are on par with what we have seen around the Springs. The food was ok, but nothing to write home to mom about. I am not sure why its so difficult to find good tex-mex in this area. There are tons of Mexicans in this area, but it seems like they can't cook as good as in other states we've lived. Overall a decent place to stop if you go to see the sunset at the paint mines, but surely I would not make a special trip to Falcon to eat here :(

Food and service are both great. Had the seafood chimichanga and it was great! Will definitely be back.

In town from California for a few days and went here with friends. Margaritas are great! Guacamole a bit bland and disappointing. Enchiladas are really tasty. The tamale I had... not so much. Had too much masa dough and not enough pork inside. Nice staff though

Quality food and killer Margaritas (original). Service is consistently good. Menu is too big, but so is Cheesecake Factory, so... House salsa is hot, but mixed with mild it's a perfect medium.

Just okay if you absolutely NEED some mexican food. The plates are about the size of a hubcap. Each serving is really about 3 servings.

They serve mild salsa and hot salsa with chips and the hot salsa is HOT! That's a good thing, seems like it's hard to find a good hot salsa at most places. Margaritas are good, food comes out quickly, huge portions, I would go here again.

The food is pretty standard. The menu is quite expansive, so there's really no reason to walk away not finding something that meets everyone's needs. The service is just ok - not bad, but not exceptional. I guess if you are one of only two Mexican restaurants in town, there's no need to exceed anyone's expectations.

This place equals tres margaritas. Salsa is great! Beans and rice are typical chain restaurant style, noting special, nothing horrible. Their Guadalajara plate is my all time favorite thing there, it's huge and yummy! The hospitality here is also good, never a long wait and speedy service.

Service was pleasant, but the food was only average. Their salsas came in three different heat levels, which conveniently satisfied varying preferences. Great concept, but the mild had no flavor. Fajitas were OK, yet cooked with too much grease. Pricey compared to other places.

Great place, I'm a regular and enjoy my food and service every time! Obviously not perfect has it's flaws, but doesn't every restaurant? Any way, great for all occasions, authentic Mexican food and love the waiters; they're nice and make you feel just at home! 5 Stars!

I'm not a fan at all. Their salsa is really spicy, but their food is very bland. Not impressed :(

Both my wife and I really liked Guadalajara. We were skeptical when we arrived, but friends told us we would like it, and by the end of our meal we did. The food was very fresh and flavorful, the service excellent. We eat Mexican food all over Colorado and this Mexican food is as good as any we've had in this state.

Chicken bones in the food! And the manager/owner shrugs his shoulders and says "eh... it happens." A child could have choked! Not even an offer to replace the meal or take it off the check. Never gonna eat there again!

We were here visiting from California, visiting my brother who lives close by. He suggested eating here. We're glad he did. We have awesome Mexican food near us in Cali, so we can be picky. The food here was average, we'd go again, but nothing to write home about. The place is spotless. We were there the Saturday before Christmas, no waiting for dinner or our food. The service was 5 star. A super shout-out to Mario, who was our singing and joking waiter. He was delightful, and made the experience a total joy.

This is one of the only restaurants in our area. I liked it when they reopened, but over the year their food didn't sustain great quality. The servers are nice. The price is average. They could work on their menu again. There is still a lot on it. No one needs that many choices and if the chef didn't have to make so much I think the food would taste better. My favorite restaurants have a small menu and every dish is made to order. Anyway, we still go there a few times a year when we need something different.

Great food, great service. They do a great job with customer service. Drinks are never empty, always refilling chips. Everyone works as a team. The food is really good and you can split it because the portions are large. The bartender is great. The drinks are always good. Great to see a restaurant in Falcon with a wait. Worth the try!

Service is unmatched! Everyone is cheerful and appreciative of the business. The fajitas are phenomenal :-) great salsa, margaritas, and their breakfast is great too! You won't be disappointed!

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
