    I squeezed one last Alabama BBQ place in before I left! Chuck Wagon is claimed by many locals as having the best BBQ in town. While the venue is small, it's homey and authentic. Everyone there knew the owner, Mike, and the whole place had a great vibe. The best beef brisket I've ever had! Hands down. The beef was juicy and smokey, falling apart as he cut it up for me. You know how you can tell something is going to be delicious before you even put it in your mouth? This was one of those times. I didn't get to try the other meats because the portions were so big, but everything looked amazing. I had my brisket with a whopping 1 lb potato! I got there around 2 pm and got the last plate before he closed down, so show up early! Amazing. I can die a happy man, with a tummy full of brisket.

    Heads up: Chuck Wagon is in their "winter hours" time frame now. They have dinner hours on Thursday and Friday **only**. I was so frustrated by this that I didn't notice the exact hours, but I think it was 5-8 PM Thursday and Friday. Suggest calling before going there to be sure they are open.

    This is THE place to get Texas beef brisket in the Huntsville area. The barbecued smoked sausage too, especially the spicy version. All I ever get is the brisket and sausage, since there are plenty of other places in Huntsville for pork and ribs. The available sides are OK to good; best in my opinion are the baked beans, loaded with "debris" ( a New Orleans term for meat trimmings). Potato salad and cole slaw are ordinary. I like the serve-yourself availability of shredded cheese, sliced onions, and jalapenos to add to your plate. The barbecue sauces are OK with the "spicy" barbecue sauce not all that spicy. I'll leave it to the other reviewers to rave about the brisket, it really is melt-in-your-mouth. The two reasons I rate this place 4 stars are that it's a bit overpriced and it's very crowded. But this is definitely one of the go to places in Huntsville-Madison.

    Best BBQ I've ever had! I'm visiting my boyfriend, who lives here, and I wanted to go on a BBQ binge, since we don't have good Southern Style BBQ places. I read a few of the Yelp reviews before coming here, and saw their Facebook site. The pictures were tantalizing, so I said we should check this place out. I had the 2-meat plate with Brisket and Spicy Sausage with baked beans and potato salad as sides. The brisket was the MELT IN YOUR MOUTH kind, with great smoky flavor. The sausage wasn't too spicy, but it had great flavor as well. I thought the BBQ was so good that I came back a few days later and bought 3 lbs of brisket and 2 lbs of the spicy sausage to freeze and bring back with me to Hawaii in my cooler! The place is a bit cramped, but it's okay because it gives that "hole in the wall" secret places type feel. I'm definitely stopping by anytime I'm in town again!

    This place has amazing BBQ, but it tends to be very crowded during lunch time and the cafeteria-style ordering can result in 10-15 minute waits. If you have the time, I recommend that you go here. And please don't let the decor of the building fool you - it's a great restaurant! It is a bit pricey, with a Rib lunch costing you about $11.00 not including drink. But they're great ribs!

    I drove by this place for over year, never really knowing it was open. It looks like a hole in the wall, but I'm glad I was recommended this place for some good BBQ. They have brisket (which is less common in Alabama) that I found to be very tasty. They also have pulled pork, chicken on the breast, ribs, and BBQ sausage. Everything is prepared fresh daily and the meat is cut and prepared right in front of you. The spicy sauce is not too spicy (just right I'd say) so don't be afraid to try it. The sweet tea is Southern, but will not induce a diabetic coma. The bread and side items were are nicely prepared and I really had no complaints. Seating inside and out is in short supply, so try and get their early.

    The best brisket I have ever had, period. Everything else that is on the menu is top notch as well. The place gets packed and it is cafeteria style. You request your meat, which is cut right in front of you, the sides are added and you are about to enjoy some of the best BBQ ever. Dont be discouraged about the line, its worth the wait.

    Ribs were good and very tender. Their beans mixture were delicious and I'm not a bean eater. Their briskets were also very juicy and tender. It's a nice whole in the whole BBQ, one of the better ones in town. I just don't understand how we spend around $30 every time for only 2 people... Price is too inflated.... lol

    I'm from Chicago...total awesomeness. Food was great...huge portions and tasty. It's your typical southern BBQ and it taste great! It's a hole in the wall place so don't expect it to be a classy joint... but highly recommended.

    Mecca for BBQ in the Huntsville area. This is my Church. You get to watch the Beef Brisket being cut and put on your plate infront of you.........this is almost porn to a real Southern Man. The beans are amazing!! If you love BBQ you have to try this place!

    Whatttt how have I not submitted a review for this place yet? It's my favorite BBQ spot, and its right next to my house! I could walk here if inclined to do so (and assuming at some point Madison adds some sidewalk). So here's the deal - best brisket. Hands down. The ribs are delicious, even the chicken is good - and I rarely eat chicken at barbecue places. Also, unlike most BBQ places, they don't slouch on the sides. What they have is good all around. I don't think I have ever had anything bad here, in fact just the opposite. This place rivals other places I've been like Fox brothers and Heirloom Market in Atlanta, and it's right next to my house!

    THE BEST. I grew up in a BBQ family, my family has even fed past presidents, but this is by far the best BBQ I have ever had. The quality is outstanding and the service is personable and makes you feel like you are at home. The food is prepared to order and butchered right in front of you. I have tried the ribs, brisket, sausages and they are all amazing, including the sides and desserts. You will not find better BBQ than this...

    If you like Texas style BBQ you will love The Chuck Wagon. The only downside to this place is the amount of room inside, but trust me the taste is worth the inconvenience standing in line and squeezing around people. The Brisket is cooked with the fat on it and then cut in front of you (the fat and ends are moved off) and you are left with a moist and delicious piece of meat. The end pieces are slid into the beans. I recommend the beans as one of your sides. The ribs are great as well. The atmosphere is rustic, you can smell the smoked meat throughout, and everything tastes great. Out of 5 places we tried during our trip to Huntsville (the Redstone Arsenal) The Chuck Wagon is the best. To give you an idea of how good the food is...the line never had less than 12 people the entire hour we were there for our business lunch. The line moves fairly quickly considering one person is cutting / serving the meat. If you are in the Huntsville area and are craving BBQ, The Chuck Wagon will satisfy your craving.

    you haven't had REAL BBQ until: 1) you've eaten such food between 80-95 degrees West and 30-37 degrees North 2) you've eaten white bbq sauce 3) your food is served on a divided tray 4) your seat is upholstered of old blue jeans sewn together 5) your tablecloth is made up of an over-sized red bandana 6) the first person you see coming in the door is wearing a long apron and has a butcher's cleaver in his hand 7) in the shadow of the first guy is a separate guy who serves you your sides who only speaks with his eyes 8) 3 of 4 given people working there wear cowboy hats 9) the outside porch (yes porch) of the place has at least 3 barrels, 2 wooden wheels, and 1 triangle 10) there is a trailer parked in the back so the bbq is armed and ready to rock and roll if there is an apocalypse

    Wow, who knew you could get excellent BEEF BBQ in this part of the country. The meat was flavorful & oh so tender. There are plenty of sauces to choose from, but I didn't think the meat needed it. I had the loaded potato with brisket. I realized immediately I didn't care about the potato; I couldn't get enough of that delicious brisket. My hubby had the 2 meat plate with ribs &brisket. His sides were BBQ beans with more meat than beans! To my surprise the beans didn't taste like they came out of a can. They have to be homemade slow simmered with secret ingredients. I haven't tasted anything like them. We finished off the meal with pie. It's obvious this cowboy takes his cooking seriously. Everything he serves tastes like homemade. I don't know if it is, but it sure tastes like it. If you drive by, don't blink, you may miss this establishment. The building is about the size of a large shack & parking is around back.

    I grew up in Oklahoma and was so excited when my husband said we should try this little BBQ joint in Madison, that he'd heard was pretty good. WOW, I've been hooked ever since! Mike Holley SURE knows his way around the BBQ pit, and it's exciting to me to have someone who knows that the best BBQ involves a cow! LOL. Seriously, this is very reminiscent of what the best BBQ joints in Texas, or Oklahoma, look like and taste like, and it's right here in Madison, AL. Don't miss it!!

    Hated the restaurant, loved the food. Dinky little building with what appeared to be surplus tables. The food was very good, but I would have preferred a slightly smaller portion for a little less money. The BBQ was wonderfully tender and moist and LOTS of it. The sides are typical BBQ fare. I would recommend this to any BBQ fan. I am going to say "good for groups" and mean four people and "good for kids" altho I hate being in such close quarters with whiny, noisy kids...

    I'm in a different city every week and this beef brisket is hard to beat. Homey atmosphere and friendly staff. Paid close to $20 for a big paper plate of BBQ, baked beans, potato salad, corn on the cob, and root beer. Worth it. They said they'll soon be licensed to sell beer. Only complaint is their hot sauce isn't hot where I come from.

    The best in HSV. Barbecue has Texas sauce style with perfectly smoked meats. The brisket, which I use to determine if a BBQ joint, is outstanding. The ribs are tender and succulent without being (fast food) fall off the rib overcooked. The sausage is excellent with a nice smoked flavor. I am not a BBQ chicken fan, I can't speak to the chicken. I really recommend this place above the many outstanding BBQs in The HSV area.

    I was on a business trip to Huntsville, AL and I asked my local teammates to recommend a good BBQ place for lunch. They all said Chuck Wagon and now I know why. I ordered the pulled pork and brisket plate. It was outstanding. The meat was incredibly tender and full of flavor. I highly recommend their spicy BBQ sauce as the mild was too mild for my tastes. Come early as this place fills up quick.

    Let me start with the statement- I LOVE BBQ. Growing up in the south, BBQ is what I grew up on. Someone at my work suggested I try Chuck Wagon, she was so confident I would enjoy my meal that she offered to pay me for my plate if I didn't like it. The brisket is amazing. The pulled pork is the best I have ever had (my mouth is watering as I type this review). I could make a meal out of the baked beans. The homemade BBQ sauce is wonderful and the white sauce is perfect. I have told everyone I know about this place. We had them cater a luncheon at my work and everyone loved it. The guys came back for 2 or 3 plates of food. Amazing food.

    Let me tell you how happy I was to make it to Chuck Wagon BBQ... I was in town for the week and wanted to try CWB, but was afraid I would miss out because of my work schedule and the restaurant hours. I had some free time for lunch and headed straight towards. There was a long line, which almost intimidated me, but I decided a long that long, meant it was WORTH the wait. So happy I stayed! I ordered the two meat plate with brisket (I asked for the burnt ends) and spicy sausage. It was amazing! The brisket was perfect, not fatty at all. The sausage was great too! Potato salad and beans were good, but not the reason I came here. If you are looking for some amazing Cue, this place is the real deal. I travel and check out the BBQ in all the states I visit, and I will dare to say this is some of the best!

    This place is a must for anyone that spends any amount of time in the Huntsville/Madison area. The ribs/brisket/sides are 5 star. The beans are to die for. I love BBQ and I would only rate two places in Alabama 5 star... This is one! Note: There hours are weird. You can bank on them being open 11-2 Monday - Friday. Anything else is hit or miss. Also, when I say they are open at 11, I mean you better get there at 1050 and stand outside. By 1105 the line is wrapped around the building!

    Texas BBQ in northern Alabama? Count me in! Make sure to bring the stretchy pants because this place doesn't mess around when it comes to portions. Chuck Wagon's fall-off-the-bone ribs are outstanding! Add a little of the hot bbq sauce and try not to make a mess as these things are a handful. The brisket was very tender and juicy, but definitely needed some sauce to add some much needed flavor. I thought the sausage was decent, but nothing to write home about. For sides I tried the baked beans and the potato salad. Both were excellent and I especially enjoyed the burnt ends in the baked beans. Don't even get me started on the peanut butter cream pie...as Guy Fieri would say, "that is out of bounds!" Finding great bbq in an unassuming place is always a treat and if I find myself in the area again I'll definitely be back.

    Their food truck was part of the Rocket Republic beer-versary. For $8, one might expect more than a small bit of brisket and cheese "sauce" scooped out of a can. I'm sorry.. that's just not that appealing. You have a good reputation, this isn't the way to keep it.

    Best BBQ in the Huntsville area, and quite possibly in Alabama...Had a taste for some Q and found this place well reviewed on Yelp (thank you Yelpers) Simple set up, tiny place, GREAT BBQ. Went for lunch, came back with some friends for dinner...Portions are big...prices aren't great but fair...service was friendly (cafeteria style)...tried the brisket, ribs, pulled pork and spicy links...all delicious and the sides were great too...Would post pics but my hands were too messy both times and the food too good for me to slow down and take some...will post some next time...

    Holy shit this is good BBQ. Some of the best I've ever had. Chuck Wagon is an absolute must if you're in the Huntsville area. The long and short of it: 1. Brisket. The brisket. Get the brisket. Stop reading right now and order the brisket. It's tender, flavorful and my mouth is watering just thinking about it. 2. Sauce. Their BBQ sauce is pretty decent, but I thought it was ultimately not needed. I tried the mild and the hot sauces but didn't see a real difference in them. 3. Price. Not the cheapest place in the world. A 1 meat (get brisket) plate will run you over $11.00. Throw on a drink and tax and you'll end up shelling out $15.00 minimum for lunch. That being said it's still completely worth it. 4. Wait. It's a pretty small place. It's a pretty popular place. There will be a wait, though again it's worth it. This may be the best BBQ I've ever had, so pass up all the other BBQ Huntsville has to offer and get some brisket. Overall Grade: A

    The best bbq this side of Texas. It is authentic Texas barbecue in every aspect. One warning, get there early, it is very popular and there will be a line. The brisket was very flavorful and perfectly prepared, tender but still with texture. The ribs were perfect as well. We will have to go back for the chicken and sausage. Pricing was very affordable for such a popular restaurant with high quality food. If you are in Madison County, this place is a must and worthy of the wait. They are closed on Saturday and Sundays, and only opened for dinner on Thursdays and Fridays.

    I've review this restaurant before. Mike (in the cowboy hat) runs the place and he was born and raised in Texas. His food is definitely authentic Texan fare. I hit this place every time I can when I'm in town. My only complaint is that he is only open for dinner Thurs and Fri. They're open for lunch during the week, but I can rarely make that any more. Arrive early. Parking is a little tight during peak periods, but I would highly giving this place a try.

    I am in town for work and staying at a nearby hotel. When I saw this highly rated BBQ joint I knew I had to try it. I had the ribs and brisket. It definitely did not disappoint. I arrived right after they opened at 11 and the line was already about 20-30 minutes long. It looked significantly longer when I left 45 minutes later. There's not much for me to add that hasn't been already said. Incredible BBQ. If this place was in Austin, TX it would have a 3 hour wait everyday. A nice little gem somewhere you wouldn't expect to see outstanding Texas BBQ.

    We visited this place on our first night we moved to Huntsville. It was conveniently located in front of our hotel for night and boy oh boy am I glad we stopped there. The brisket is to die for and the sauses and sides are all delicious. Great little BBQ joint.

    It may be located in north Alabama but once you walk through the door, you're in Texas. You won't even find an Alabama or Auburn hat hanging on the wall. You will find Texas, Oklahoma, and Tennessee. So I repeat. No Alabama. It doesn't appear to irritate the locals, until maybe now if they read this, because there is ALWAYS a line. This place has an old Texas ranch feel. You will have a hard time beating the pork BBQ, beef brisket, and sausage anywhere. I mean anywhere. My mouth is watering just thinking about it. Eat here and get some meat with a side of meat. You'll leave wanting to rope a bull at the closest rodeo.

    It feels as though a ray of light from heaven shone down in a moment of divine intervention. 1st let me say I was not excited to be in town since it was a business trip. As they say however with the bad comes the good, and oh, was Chucks so very goooooooood! Brisket was outrageously tender, juicy and jammed with smokey flavor. Bakes beans with chunks of pork as a side was perfect compliment. Coldslaw homemade of course and ideal to help offset all the rich meat. If you do nothin else in Huntsville, make time for a trip here. You will NOT be disappointed. Be sure to check the hours open. I believe they are open only for lunch from Mon-Wed.

    I'm not going to tell you anything that you can't read in the other reviews. We stopped in at around 7:00pm on a Thursday night (NOTE: I think they are only open for dinner on Friday and Saturday nights). We entered through the back porch. The restaurant is fairly small with seating for maybe 50 diners. Chances are when you arrive, there will be a line. When we got there, the restaurant was about 50% full and there were six people in line in front of us. The menu is pretty simple. Decide whether you want a 1-meat, 2-meat, or 3-meat plate, and they just try to choose the meats. As others have said the brisket is fantastic. He will carve the fat off the brisket so that you're paying for meat. The meat is weighed on a scale, so you don't want to be wasting weight on fat. He also has sausage (regular and spicy), ribs, and pulled pork. I loved the spicy sausage and thought my giant rib was decent. Each plate comes with two sides. You can choose from beans, potato salad, corn on the cob, or cole slaw. I had the corn and the slaw. The slaw was vinegar-based and had a bright taste to it (and it had nice color). As others have said, the prices are a bit on the high side, but all things considered, I would say it's worth it. This is a small business and the quality of their food sets them apart. There's a Logan's just down the road if you're looking for a mass-produced bargain. When I am in town again, I will definitely stop back in! One final note: If you want to drink water, I suggest you bring your own. There is no water available from the soda fountain and there is no bottled water for sale.

    Hands down the best barbecue in Huntsville/Madison. Choose between brisket, ribs, pork, sausage (mild or spicy) and chicken. The meat is cut right in front of you and is always very consistent. Ask for a chuck wagon sandwich (brisket and sausage sandwich). The only slight complaints could be the price and the hours. These don't detract at all from the experience though.

    If I am in Huntsville and Chuck Wagon is open, this is where I go. I eat BBQ every chance I can everywhere I go. This is one of my absolute favorite places. ALL the meats are excellent. My three favorite are: Sausage, Pork and Ribs, and brisket... ok that's 4. I've never had chicken here so I cannot say. My favorite side, baked beans. They push leftover meat from the chopping over into the baked beans. I always get a combination platter because everything is top notch. If you like pork, his is as good was what we get in North Carolina. If you like Brisket, well I've not really had any better than his and yes I've had brisket in a number of famous Texas locations. But a favorite meat of mine is sausage and his is simply put, awesome. I cannot imagine how anyone could not like this place, no matter what your tastes are for barbecue. There are not a lot of places that will get a 5-star rating from me; however, I do not have to think twice about giving them this rating. In fact as I write this I am trying to figure out how I can get back over that way to have some more. Good for groups: It's a small place. If you have a group you'd best get there before the line forms. Parking: Again a small place, so not a lot of parking. If you are staying at the Holiday Inn Express you can walk over.

    Best smoked brisket I've ever had! The staff is great, and I almost always get the spicy Chuck Wagon sandwich (Smoked brisket sandwich with spicy sausage), and I add slaw, jalepenos, and white sauce to it. It's so good, the line is usually out the back door by 1130 or so, so go early if you want to beat the line.

    First BBQ I have tried since moving to Alabama and I have to say this is DELICIOUS! The pulled pork, brisket, beans and potato salad are all to die for. Can't wait to try the ribs and sausage! The cole slaw wasn't the best (too much vinegar). This place is a must try if you're in the Huntsville area. :)

    This place is fantastic. My wife and I went there one of the nights they're open, and the owner came up and talked to us. (My wife is from Texas, so I think they just know.) Anyway, he was very nice, and he had great, funny stories. Good man to meet. I've been here a few times for lunch, and it is always fantastic. Plenty of food. The pecan pie is delicious. The beans are outstanding. I always get the smoked sausage as part of the two meat plate. But the brisket. Oh dear Lord in heaven, the brisket... It is life-changing. Not if you're herbivorous I guess, but for the rest of us, the brisket is amazing. Tender, flavorful. I was stationed in Texas, and let me say I've never had such great Texas brisket as this. As I said, my wife is from Texas and she likes it. Normally, that's something Texans reserve for stuff from Texas. But here it is in Madison. (It could be because, like I said before, the owner is from Texas. But I'll ignore that and just assume it's because the food is so good.) Highly recommended.

    Only open for lunch most days, dinner Thursday and Friday, and worth it if you catch them. Very juicy and tender pulled pork, very tender beef brisket, and some of the best sausage I've ever had. Don't come here if you are counting calories. But do come for heavenly tasting food. Oh yeah, the bbq sauce is AWESOME!

    Finally got the chance to stop at the Chuck Wagon for lunch today. I went with the Ribs & the Beef Brisket for my 2 meats, potato salad and beans for my sides. Ribs were excellent, brisket was the best I've ever had. Sides were outstanding also. Yes, the food is as good as the reputation. I plan to be back in the near future.

    Giving an opinion on a BBQ joint is potentially treading on thin ice, but I'll take a stab at it for chuck wagon. I was on a road trip, it was lunchtime, and I pulled out yelp. Chuckwagon was conveniently located next to the interstate, so there I went. A tall bearded gentleman in a cowboy hat was serving the meat. I got a double combination platter. Ribs and pork. I wasn't thinking, I know, but I was hungry. Next time, I'll go for sausage or beef or chicken instead of pork in two forms. When Cowboy Hat was slicing up some pork for me, he glanced over at the baked beans, apparently thought they needed more pork chunks, so he slid all the pork he had just sliced up for me over into the baked beans. He then stuck his knife in the beans and gave them a good stir. "I'll take some baked beans as well, please, sir." The pork was very tender and juicy with an excellent full flavor. The ribs, of course, reflected the same traits. The baked beans were absolutely some of the best I've had in a restaurant. I suppose I am gushing over them because I normally don't like baked beans at all. These were most certainly made from scratch and lacked the normal syrupy, "let's just dump more sugar in here" quality of most baked beans. The coleslaw was another highlight. Cabbage, onions, carrots, bell peppers, pimento peppers, red wine vinegar, oil. No mayo. An interesting and delightful combination. Their barbecue sauce was kind of vinegary, a little spicy, and subtly sweet with an overall bright flavor. Solid. It was a little pricey, but what you'd expect from a "destination" barbecue joint. Worth it. Especially if you are traveling and looking for a local restaurant close to the interstate.

    Every time I'm in the area at the right time, I go to Chuckwagons. I love it because the employees are always nice and the owner Mike, who is very nice himself is there. As picky as I am with most brisket, I must say they have the best. It melts in my mouth on every bite with the lightly toasted buttered bun. I even add their homemade "hot" sauce. The flavor is really good and the kick is perfect.

    I have never posted on a restaurant before because I was never moved too. I use the Yelp app every time I go somewhere new. That being said, This is the best friggin BBQ ever. The place looks kinda scary from the outside, but its whats on the inside that counts. Awesome service and outstanding BBQ.

    I had the pork sandwich which wasn't anything spectacular. What threw me off about this place is how particular they are about the amount of food they give you. They have a weight scale in front of you to make sure they don't give you TOO much. God forbid if you get an extra ounce. The lady in front of me was about to put a scoop of cole slaw on her plate when the employee yelled at her "ma'am, there is a difference between a side of cole slaw & cole slaw on your sandwich!" I would check out other BBQ joints. Avoid this one.

    Ehhh... it's BBQ. "A-OK" is still a high rating as it really is just average... Is it the best BBQ I've ever had? No. However some folks seem to think so... It's not bad, but it's just plain old BBQ. Personally the guy down the road selling from the BP gas station (I think) prepares better BBQ and has a better attitude as well. He's the one who has two huge black BBQ's on the corner.

    I come here about every two weeks. I get the two meat plate...brisket (with a few burnt end pieces), spicy sausage and double beans. Hold the toast. If you want great Texas BBQ, come Chuckwagon! Some say its pricy, but it's worth it. Make sure you check there Facebook page for their hours. Their hours change with the different seasons. During lunch don't bother coming in the front door. Because there's always a line, just go around back and come in through the back patio. Also if your in line by the back door, KEEP IT CLOSED please. Unless you want the flys with your meal.

    2 meat plate brisket & sausage, thought both were very flavorful and tasty. Mixed it up with the sauces and wasn't particularly high on any. The Hot tasted like a Siracha base, very thick. Mild was too brown sugary for my liking. The white sauce was solid however. BBQ beans were great, coleslaw was not. Overall was a great meal that I would come back for.

    I fell in love with this place the first time we walked in there... The food was marvellous, melting in the mouth and starting an addiction.. We had to come back again & again.. Even when going back to Europe we kept dreaming about it, cherishing memories. But when we came back a couple of weeks later.. And we almost couldn't wait to be back there, we were so disappointed!! The pulled pork , the sausage and everything but the bread were no comparison, the taste & texture were not the same!! While the owner had previously always ( even just nübefore closing tome) cut a fresh slice of delicious meat, the service staff now was not half as trying... We tried some more times after that, thinking that everyone can have a bad day once in a while... But it stayed the same way, just like it was a totally different place altogether..The owner was obviously not around.. I hope he is back in charge now I hope the place will bounce back, to what it used to be ....

    Positive: the meat was damn good. 1 meat plate is almost $12 with 2 sides and toast. The sides were not anything special. The old man knew his meat cuts though. He sliced off excess fat and made sure what he weighed out was good quality meat. The meat was the only good part, otherwise nothing special here. Which is why I gave an average review.

    This is one of those places that is a little tough for me to review. I went at lunchtime, had the brisket sandwich, cole slaw and beans. As far as the food goes, the brisket was moist and tender, pretty good flavor but a little light on smoke for my taste. The beans were excellent and the cole slaw was fresh but a bit on the bland side. It's one of the better BBQ places that I've found in the Huntsville area from a food perspective. The place is a bit pricey though. $2 each for what amounted to about 2 tablespoons of beans and slaw is a bit much. $25 for 2 for lunch. So it's good food, but don't expect and bargain lunch specials!

    Since being in Huntsville for a week I have been to this place twice. They make some great BBQ! I have tried the brisket, pulled pork and spicy sausage. I didn't care so much for the pulled pork, I thought it didn't have a lot of flavor. I do however love the brisket, it's full of flavor and has a great smoky taste that I like in BBQ. The spicy sausage is also great. The sides are so-so. I thought that the slaw was a little to sweet for my taste. I thought the baked beans were pretty good though, I like how it has scraps of the meat in there. Overall a great place for BBQ, and make sure to get the brisket!

    Texan BBQ .. YUM. Wow this place is good. From plates of 1 meat - 3 meats - SO good. I love this place. I had the smoke ring around the brisket so delicious. Juicy and tender - falling apart. The spicy sausage was good and cut right into coins and the natural casing had a nice snap =) I didn't go for the sides (cole slaw - vinegar-based, potato salad, refried beans) so I could leave more room for the food =) Additions like pickled jalapenos, pickles, onion, cheese and etc... make the dish. I could smell the smoke 1 light before I arrived at the location - a tiny corregated metal walls and ceiling with a charming Texas shack feel. There is a screened in outdoor patio that accomodates the overflow of the staggering # of patrons. The guy slicing up the meat was so kind. I asked for no sides (so i could eat more meat) and he gave me an extra piece of meat =) THAT is Southern Hospitality. I personally love Texas BBQ and Kansas City BBQ so.. I love this place more than a rival - Big Bob Gibsons. =) Try it out.. expect a line.. but know it is worth it.

    Great little place that is totally off the radar. Most people find out about it from word of mouth. The Chuckwagon special is a sandwich with both brisket and sausage (mild or hot). The Brisket and sausage are the best items. I didn't care for the ribs and the pulled pork was good but not as great as the brisket. Do not enter the front door. The line is usually out the back door.

    Simply amazing...best local eatery in Huntsville...only place worth mentioning in Huntsville :P get the chuck wagon sandwich and you won't be disappointed. This sandwich consists of pork and sausage (I always go for the spicy sausage). They weigh the meat so you never feel like you are getting shafted (though sometimes you get more fatty bits than others). After they slap your sandwich together you get to dress that sexy thing up the way you like...I go for the hot bbq sauce and jalapeños. There are a few sides and dessert options, though I have never tried any of those bc I go for the bbq and leave fat and happy from the bbq...tunnel vision kicks in from the sight and smell of that succulent meat. if you have never tried this place, GO HERE! as a heads up, i think its most popular with the arsenal folks at lunch...a line forms from the moment it opens, but moves pretty quickly. It is a cute little shack from the outside, southwestern style on the inside (run by an ex-texan). this place is simply amazing.

    My review is not based on the food for I have yet to eat there. As a matter of fact I have heard great things about this place. Unfortunately I haven't ate here because the restaurant hours are so inconvenient that they're closed every time I have tried. Today was our fourth trip there (after looking up hours on our third trip). Unfortunately not only are they opened for only 3 hrs a night but apparently they are also closed on weekends!! For everyone claiming how great this place is, it's down right shame that they are closed 90% of the time and you have to jump through hoops just to try to give them your business!!! Maybe I'll just give up on this place....

    Just about every review here mentions the long lines waiting to get this amazing BBQ - and they're right you have to wait in line. Of course the reason why is the guy literally weighs every portion on a scale. It's the most inefficient process I've ever seen! I thought to condescend to him and explain that he could do twice as much business if he would just eyeball the portion size and move on. I mean seriously I guarantee he can cut an exact portion without that scale - he's serving out a hundred of these a day for crying out loud! But then I realized that the BBQ man knows exactly what he's doing - he's creating an experience. The hole-in-the-wall cramped dining area, the purposely long line, the scale weighing the product like it's gold - it all contributes to the feeling that this BBQ is a hidden gem that only the most studious and patient are able to find. Yeah, the BBQ is good - but with a slice of pie and a drink you're at $20+ for lunch! If he gets me in-and-out in 5 minutes there's no way I'm paying that kind of premium on the product. So my apologies to the Chuck Wagon man for having thought that there was a better way - he gets it...he gets it.

    The brisket is amazing here. The owner is really nice and had told me that he came from Texas, so the food is pretty authentic Texan food. The place could definitely be bigger, because when lunch hits there are practically people standing outside the door. It's sort of a cafeteria style place, you point to the meat and side that you want and they put it on a plate for you.

    We parked in back and came in the back door through the veranda in back. It was muggy as the sun set Friday, so we opted to eat inside. My gal had brisket and I the ribs. The place is small. Lots of take out going on too. The line was pretty constant and we spent not more than 5-10 minutes to place our order and get our food. It's not fancy, but it's clean, close and memorable. Best of all the meat is yummy. My ribs were some of the best ever, tender, smoky, and juicy. The sauces were well done. The potato salad was OK. I liked the beans. My gal said her brisket was excellent ... wouldn't share any with me, even after I tried to distract her with pieces of my ribs to get some to try! She did say the brisket was not a smokey flavored, but worth having again. Next time we get our relatives from TX and CA out here, we're going the treat em' to this. It's a bit of local color & BBQ not to be missed.

    When I scheduled my second trip to Alabama, my first thought was that I would get the chance to eat great Chuck Wagon BBQ again. I ate two dinners here this trip, and the ribs were absolutely superb, as were the potato salad and slaw sides. I have not found another Huntsville / Madison BBQ joint that even comes close to holding a candle to Chuck Wagon.

    Along with religion, politics and gay marriage on the list of things not to talk about on a first date, maybe we should add BBQ. It is one of those issues that people have a strong opinion on and it is difficult if not impossible to change minds. But most people haven't made a visit to the Chuck Wagon. This place won't just change minds, it will change lives (okay, that might be a slight exaggeration but it is awesome). I have driven on highway 20 countless times, and I never noticed this place. Not once. I only knew it existed because I saw reviews on Yelp. The first time you go looking for this place, keep an eye out because you might miss it. I became a believer in the Chuck Wagon before I even tasted it. Watching the man behind the counter slice up the meat is a think of beauty, and he only gives the best cuts. Pay attention as he carefully selects only the best, and cuts off the fat. Cutting off the fat is important for multiple reasons, but here mainly because he weighs the exact portions of meat, so by trimming the fat, you know you're only getting the good stuff. This is one of the few places in the world where the atmosphere isn't great, there is always a long line, it is slightly overpriced, and it is painfully cramped, and NONE OF THAT MATTERS. Just close your eyes, breathe in the sweet smell of dead animals, and be patient; the wait is worth it. It is absolute meat perfection and it cannot be beat. You don't deserve a voice in the great BBQ debate until you've had lunch at the Chuck Wagon.

    A quick hop off of the Interstate, Chuck Wagon BBQ was the place that my Huntsville clients told me that I must try. They were right! Smoked beef brisket barbecue reigns supreme at Chuck Wagon, and they take their mission very seriously. In my book, great barbecue is built around well-spiced meat slowly smoked at low temperatures for many hours. The outer surface of each slice should proudly display a firm crust ("bark") and a magenta ring; the deeper into the meat, the better. Whether finished over fire, or in an oven, it's all in the smoking. Exceptionally tender and deeply smoked to perfection, Chuck Wagon BBQ seems to read from the same page. Portions are large, but prices are high. Judged by the smoked beef brisket alone, it would take only a few tweaks to their dry-rub seasonings (already good) to bring Chuck Wagon up to the standards of the best in Texas. Left unsauced, and with apologies for a "meh" dining room environment, Chuck Wagon would easily weigh-in at four stars, minimum. What drew me into a search for barbecue in Northern Alabama was a curiosity regarding their local sauce variation; a spicy mayo and vinegar blend. It was nowhere to be seen at Chuck Wagon. Instead, some very ordinary home-style sauces stood in. While there was variety in the choices, none of the sauces sampled could prove a match for the succulent beef; generally, they weren't assertive enough to accent the meat. Too bad, Chuck Wagon, "you could have been a contender."

    Okay, I am a purist when it comes to barbecue potatoes. I maintain Big Bob Gibson's is the best barbecue potato, but for just a good barbecue restaurant this is the best around. The only problem (and not one I felt could take a star away) is that the guy clearly knows how good his food is because it is pricier than I would prefer. The brisket... fork tender. The barbecued chicken was moist and flavorful. The sausage was juicy but not overly fatty. All of them were so good I didn't even bother trying the sauces. To top this all off, the sides from which to choose included peach cobbler. Anywhere I can get generous portions of such a delicious dessert as part of my meal without making me pay extra, I will be back. I know the decor is atrocious and cheesy, but I loved it. I highly recommend this for anyone who understands and appreciates how delicious animals can be.

    The Freaking best. Restaurant opens for lunch sometime between 11:15 and 11:30, but line starts at 11:00. The Beef Brisket is so moist and tender, and the BBQ beans are "sick". There is more meat in the BBQ beans here, than some places have in a portion of meat!! All the beef, pork and sausage scrapings go right into the beans! Getting served BBQ by a man in a cowboy hat, almost brings tears to my eyes. It is really funny to watch, but as the line snakes round by the meat carving station, it gets really quiet ,and all the men just look at the briskets getting carved up. It's a religious moment. This place is the classic Friday lunch place

    This is - by far - the best bbq I've had since moving to the area. They're not open every day of the week (Closed Sat thru Monday) but they are by far worth the wait. This is a family run business that is run with solid Christian values. I've seen him throw out a freshly cooked brisket because as he said, 'If I wouldn't eat it, I'm not going to expect you to.' The staff is friendly and very customer driven. Food is always fresh and as I said, the best I've found in the area, bar none. The lines are sometimes long - the prices are a little high - but you get what you pay for... It's excellent food, with an excellent staff, and worth every bit of wait. My 'usual'? 3 meet plate with: spicey sausage/beef brisket/ribs - side of potato salad and corn on the cobb, butter please. You get a piece of texas toast that makes a great container for some of that brisket. Add your choice of sauces (I choose XXX) and you're on your way to a top class meal. They do not take American Express, but do accept debit cards and of course, cash. Enjoy your meal - it's made me so hungry typing this, that I'm headed there now! STEVEO! My regular please!

    Absolutely amazing BBQ! I feel spoiled because this was hte first BBQ spot I discovered in 'Bama. It's only a little ironic that it is a Texas style BBQ shack, with the smoker out back and the decor featuring denim (as in old jeans) upolstered chairs. I've tried Thomas pit BBQ (which some locals swear by), but it could not hold a candle to the fresh, large portions served up at Chuck Wagon. It might be a small place, but I've been back twice a week since moving to the South, and will continue this trend for as long as I, or my waist line, will allow. I almost don't want to share how much I love this place, for fear that too many will flock to the Chuck Wagon.

    2.5 stars... I had high expectations for this place, as many people in huntsville recommended it... sadly, I come away with a mixed review! The ribs were cooked perfectly, and had great seasoning on it, they were served dry (without the sauce on them) but I was still able to eat them just fine... nice and moist, with a little kick on the end from the rub! The ribs were probably the best part of my dish! Unfortunately, the barbecue sauce failed to deliver... both sauces were bland, I do not know if they mixed up the bottles, but the hot barbeque sauce was not hot at all or spicy... I tried both, and they both tasted the same! Next would be the brisket that everybody is talking about, luckily I got a brisket that he just pulled off the shelf/tray which got me excited! Maybe my excitement raised up my expectations, but the brisket was dry on the outside and nice in moist on the inside, but it did indeed have a nice smokey flavor to them... The dryness means that it had probably been sitting there longer than he had wanted (I think), even though he had it wrapped up in cellophane...? which should have kept it fresh.... Weird... Which makes me think it was overcooked... Just odd.... On to the potato salad, not much to say it tasted like store bought potato salad, I know he probably prepares it fresh, but need to vary his recipe in order to make it to different from Albertson's or Kroger's brand po. salad... Finally was the beans, it had nice flavor to it and chunks of meat, but still tasted on the ordinary side and needed something extra to push it over the top... I have been to many barbeque places around the world, unfortunately this 1 ranked in the middle of the pack and is overpriced to boot... This place was better than thomas pit barbecue taste wise with the ribs, but the overall experience was lower because of the variation in the food was too bland to handle. If I go back it will be for the ribs and the ribs only, it is not worth the price of a plate of the other items... Ribs 5, brisket 3 (yummy smokey flavor would give it a 5, dryness dragged it down big time), unless I were to get a brisket that is even all the way through (it is possible, had it in San Diego)... The rest drag down the score...!

    Great BBQ place. I heard great reviews before I came and I was impressed by it. Way better than Gibson BBQ. I had the beef brisket, pulled pork, ribs and pecan pie. Everything was amazing except for the beef brisket. Seemed overcooked and a bit dry, but my friends had it yesterday and it was great. I probably got the end piece or something. I'd definitely comeback to try the fried pies and BBQ Chicken! Watch out for the flies if you decide to eat outside in the back though.

    The line started at 11 AM. By 11:13, when I arrived, it was already out the back door. People aren't lining up here for the hype. The food is rock solid. Expertly smoked brisket is the star here, but the pulled pork and hot sausages were also good. The brisket is trimmed in front of your eyes and then sliced thickly. Juicy, tender, and flavorful, you won't need a lot of sauce for this meat. The beans were the meatiest I've ever seen, but the cole slaw was vinegar based and not creamy at all. I've had better BBQ, but not in Huntsville and not in a long, long time.

    MMMmmmm! Fantastic BBQ, as good as it gets. It's perfect for a nice day when you'd like to eat outside. I don't care for sitting inside too much because it gets pretty cramped in there. This place is a complete shack on the side of the highway but the BBQ is the best in Huntsville. I highly recommend the brisket and the ribs. The beans are really good, but they don't give you much of them. I never have room for dessert so can't really recommend anything there. I believe they are only open for lunch during the week and that's it, and if the guy that owns the joint (the man in the hat cutting the meat) feels like going out of town the place just closes right up while he's gone. The two reasons for the 4 stars instead of 5 is the cramped eating area inside (as I mentioned before) and the price. It's about $15 for 2 meats and a few tiny sides and a drink. It's a bit of a splurge for a lunch for me, but when I'm craving BBQ it ends up not mattering so much. Oh, and, get there early if you don't want to wait in line for an hour. They open at 11am.

    I am not much of a BBQ lover, but my husband is. So we decided to give it a try. We went at lunch time (make sure you get there early). And I had the mild sausage and brisket with potato salad and corn on the cob. The brisket was unbelievable juice and tender. I also was a big fan on the potato salad. The rest was good. The set up is very strange and made it a little confusing. It is a tiny shack and they are currently trying to expand. Hopefully once they are done with the expansion it will not be as crowded and easier to understand the ordering process.

    Absolutely the best BBQ I've ever had.... and I've had a lot. You do have to time it right, they don't stay open all the time and once the day's cook is sold, it's gone. It's so very very worth it though. Their potato salad is the closest thing to "how grandma made it" I've ever found, and their baked beans are so good I could just eat a whole bowl of just those!

    I used to live in Madison, and this was the place to go. I have never had barbecue this good. Of course, I have lived in California most of my life - but I cannot explain how good this place is. I would fly back to Alabama just to eat the food here.

We had better ribs from a truck in St Thomas 2 weeks ago, the ribs in St Thomas were juicier, tastier, and melted in your mouth from a guy cooking in a trailer pulled behind it pickup truck. Considering what we got (quantity, quality), the price should have been in the $17 range. Eating inside was out of the question, it was about 60 degrees in the area with the tables. Eating outside resulted in constantly swatting the flies to keep them off the food. Lawlers has better sauce than Chuck Wagon, and I think they are a good deal cheaper too.

    Now let me tell you! This little well kept secret is a country boys dream! Nothing says DIXIE like a BBQ buffet! hand cut juicy brisket made to order makes you wanna slap your momma! piss on the fire and call the dogs cause this is the country bumpkin has found the promised land. Love IT. they just need to make the exit wider cause I AM FULL when I leave!

    This is some of the best BBQ in town. Plates are expensive, but totally worth the price. They don't have much on the menu, and there is a line out the door before they even open, but again - worth it. It's sometimes hard to find seating for a group, and sometimes hard to walk around because it's cramped, but it's definitely worth trying.

    I was told about this place from some locals and they were right. This place is incredibly good and the staff is very friendly. Very much military friendly. I urge you if you're in the area to give this place a shot and tell everyone you know!

    After travelling and eating my way through Texas, i was under the impression that most Texans had no clue how to properly cook a beef brisket. The Texan that opened this BBQ joint is NOT in that category! I ordered a two meat plate lunch with two sides. The bricket ROCKED the ribs ROCKED the coleslaw ROCKED the corn on the cob was OK. I will definitely be coming back to this establishment and give it my full recommendation.

    Been to several 'cue joints in town, but if you want genuine Texas BBQ brisket, look no further! Absolutely tender brisket smoked for hours. (Alabamians tend to go with ribs or pulled pork.) The hours they are open are kind of weird but you cannot go wrong if you go there for lunch or dinner. If the wind is right you can smell that 'cue smokin' driving down Highway 20.
