    Inside a microbrewery (Gillette Brewing Company), clearly a local favorite. The crust of my Margherita pizza was delicious but the rest was under-whelming. My family had others with more toppings and proclaimed them 5 out of 5. Overall I give it a 4.5.

    Loved this little gem! We came here based on the yelp reviews! Beer was great and so were the pizzas and desserts. We got the pesto pepperoni and the monster for pizza choices. For dessert, we split the tiny cinnamon rolls and Nutella/strawberry calzone. Our family recommends all!

    This place is amazing! Delicious, fun, and did I mention delicious?? The Stromboli is great. My favorite is the Philly cheese steak, but the Cowboy is good if you like something a little spicier. Definitely a great little locally owned place to check out. You won't be disappointed.

    We are here, passing through town - Phenomenal pizza: worthy of five stars, for sure! We got the pesto pepperoni, which has s cream cheese as one of its ingredients. A simply fantastic pizza. It is clear that all ingredients are fresh. We also got the bacon wrapped poppers, which were fresh, unprocessed and exceptional in flavor. The desert pizza was just as fresh and unique as the other two items we experienced. I would highly recommend this family-friendly establishment of anyone looking for a good dining experience in Gillette.

    This place is amazing! The service was top notch and the eats were delicious. I took a suggestion from a yelp reviewer and ordered the bacon wrapped jalapeño poppers and oh my goodness they were hands down the best I've ever had. I asked the waiter his recommendation for a beer and for our pizzas, and he didn't disappoint on either end. The pizzas were delicious (the firecracker was our favorite)! I wish I lived nearby because I would frequent this place.

    I followed the reviews and decided on this for my dinner while on business in Gillette. Service was good, food came up fast, and everyone was friendly. First up, a tall glass of cider (cuz I can't drink beer) and a jalapeño popper. It was on the upper level of my spice tolerance but I'm a wimp and I ate it anyway because it was so good! Next up, the Pesto Pepperoni Pizza, with mushrooms and bacon at the suggestion of the bartender. I'm sure it would be good as is too. The combo of pesto, cream cheese, and salty meats works in a way I wouldn't have ever thought. The star of the pizza however is the crispy, airy, garlicky, wood-fired crust. Honestly, you could probably top it worth anything and it would be terrific! I couldn't leave without sampling dessert. I had my share of cream cheese so I opted for the only dessert that does without, the Little Sins. Not bad. Same awesome crust but I think a more gooey dessert might have hit the spot. Overall, a solid place to grab some grub.

    Top notch wood fired pizza! A very nicely converted downtown building with plenty of elbow room between seating. Beer is not my thing but they have plenty of micro brew on tap and the locals really seem to love the varieties. Unique flavors and nice staff.

    I have lived in the culinary capitals of New York City, San Francisco, and Los Angeles, and have eaten in all 50 states and 30 additional countries around the world. And where do I find the bite that finally left me speechless? Gillette, Wyoming. In humanity's 30,000 year journey to master the craft of turning ground grain, water, yeast, and fire into bread, we've come up with some pretty delectable treats. Pizza Carrello elevates this craft into art, and throws down the gauntlet to all those establishments parading their Michelin stars and promising feasts of the senses. The ultimate locally and organically sourced eatery, it is the one place I can think of where you could blindly order anything on the menu and become an instant addict. Here is a partial breakdown of my meal: Appetizers: Jalapeno Poppers--this is bar snack food elevated to an unbelievable level, lovingly wrapped in thick-cut bacon. Roasted Potatoes with balsamic dressing, sea salt, and rosemary--an absolute must-try, this deceptively simple dish allows the humble potato to throw down with most meats for savor and balance. Stuffed Mushrooms--Another common appetizer elevated to an uncommon degree. I have always said I would die before becoming a vegetarian. I could survive, even happily, if all non-meat food tasted like this. Of course, my vegetarianism would have to allow for the buttery prosciutto and pepperoni treasures hidden in the perfectly browned cheese. Pizzas: The "Spring Fling" Seasonal--Perfect. Crust. I repeat, perfect dough wood-fired into a crispy and chewy foundation topped with mint, arugula, tomatoes, and balsamic dressing. I told the owners that this is their champion, the one they should send to food festivals and competitions. 11 out of 10. Steak and Potato Pizza--The specialty pizza for the Hulk, Thor, and Superman, this delectable pizza topped with generous chunks of Wyoming beef would give anyone the strength to defeat evil anywhere. The Firecracker--You want a bland pie that just tastes hot and kinda cheesy? Go to Pizza Hut, Dominos, or Papa Johns--they can provide you with those. This thing is a spicy jalapeño fireworks display cooled with cilantro and lime. Dessert: Heavenly Sins--10 mini-cinnamon buns. THE BEST CINNAMON BUNS ON EARTH. I put my name on this judgment. Cherry Ghirardelli Calzone--You know that scene in Ratatouille where the critic takes his first bite and is transported back to his childhood? This dessert did it to me..flashing me back to the first bite of warm Pop-Tart my mom gave me when I was five. This is the adult version--enrobed with tart cherries, Ghirardelli dark chocolate and cream cheese in Pizza Carrello's perfect dough. Well that's the review. You might think I'm overstating things, but I challenge you to eat at Pizza Carrello and not leave thinking I'm right. It's the kind of restaurant that makes me angry--because I live in California and have to take two flights to eat here. But I'm going there tonight for the second night in a row...see you all there!

We were a little hesitant because of the prices but it is well worth it. Please experience this place for yourself. You will not be disappointed.

    Great homemade pizza with homemade pizza dough and sauce. Locally sourced fresh ingredients make up the pizza. The pizzas are great and the desserts are sinfully delicious. The stuffed portabella mushrooms are not to be passed up either! The wait staff is friendly.

    Gillette, you have redeemed yourself. What a treasure in downtown. This place has no signage at all and if you don't know where you're going or who to ask, you wont find it easilly. It is located inside the brewery in a little corner in the back. You place your order at their little register and they take your pizza outside to their wood fired oven, even when it's 1F outside. The owner that I spoke with who made my pizza had excellent interaction with me, very professional and excited about their business. A trophy sat next to their register for Best Entrepreneur, and I personally feel that it is an award well The two I got are the Mushroom Bianco, which uses a garlice infused olive oil sauce and the Classic Sausage with your classic red sauce. This pizza is, to put it mildly, fantastic. It is hard to beat a wood fired pizza no matter where you go, but Carrello's really delivers on a beautiful, 9 inch, truly artisan pizza with a thin, light crust that is baked to perfection in their oven. The bottom gets that crisp texture and subtle smokey flavor that can only be found in a wood fired hearth oven. Both pizzas are unique with their own flavors and they are both perfectly balanced with crust, sauce, cheeses and toppings. Not one of them was too much or too little and the 9 inch size (they also have 14" which they call family size) is wonderful, especially for those of us who are known to down a big chain family size pizza by themselves. This particular aspect of the artisan foods movements is awesome to see, reduced protion sizes with a focus on delivering quality in every bite, not quantity through gigantic overloaded, over salted, fat people makers. The ingredients, from the dough to the sauces to the toppings are fresh and full of flavor and textures expected. Their menu is massive and they have different sauces and toppings to choose from, which is really nice to see and a wide array of toppings. Thereis no way you can't find a pizza you're going to love. Now, I love my classic sauce on pizza, but the bianco with the mushroom pizza was divine. The great thing is that you can eat one of these, a whole one, and not feel overloaded, bloated, or sogged down by 12 pounds of big chain pizza shit, so this would be a great place, with the brewery inside, for a nice casual date. And of course, they make them to go too. If you're ever in Gillette, WY, I cannot recommend this little gem more 5 stars!

    Was passing through from Yellowstone to South Dakota and stopped for rest and looked up pizza on Yelp. Found this place which is co-located with a bar. Didn't go in because couldn't find the sign except for the bar. Called the number and was told we were in the right place. Help, owners I presume, we're very friendly and helpful. Ordered a small with with works. Didn't expect much, but was very impressed with the crust and ingredients. One it he best pizzas my wife and I have ever shared!!! Highly recommended to anyone in area!!!! If ever there again we will definitely seek it out.

    Pizza Carrello is good enough to stand up with pizzas anywhere.I'm from Chicago, and lived in Bozeman-two places where pizza is glorious. Far and away the best pizza in Gillette, and probably the best food any where close to this town-great wings and desserts. Indeed, this little back-corner-of-brewery brick-oven pizza joint is one of Gillette's redeeming qualities. The people who work here care about their business, service, and their food quality; they're fun to talk to and good at their work. This is a must go in Gillette/ It is located in Gillette Brewing Company (Sign including Pizza Carrello coming soon) in downtown Gillette. It used to be a mobile wood-fired pizza truck, they are now located full-time here.

    I'm only temporarily visiting Gillette and I was scouring Yelp for a good pizza place and found it. Excellent pub pizza in a very well kept clean, friendly and enjoyable environment. There is no exterior signage that I noticed for the pizza place but it's located inside the Gillette Brewery

    Best pizza ever!!! And all of the staff are so friendly. You can tell everyone there enjoys their work and is passionate about the pies they're making. Prices are higher than other places, but it's totally worth every penny knowing you're getting the freshest ingredients, original pizzas and love baked into every bite. If you haven't eaten here you're missing out!

    I must have been behind the times - I just recently found out this place wasn't out about on the street, but finally had a building! I'd seen the interesting oven on wheels many times, and always told myself I'd try the pizza. Finally did and am very glad. Some friends told me to meet them here, and right away we were greeted by friendly staff. There was even a band playing. It was a nice environment. The food was great. The wood fired pizza was different, in a good way, perhaps some of the better pizza in Gillette! The ingredients all seemed very fresh and you knew your pizza was being cooked right then. Their stuffed mushrooms were a pretty tasty appetizer, too! I definitely recommend it.

    Just there tonight. As everyone previously mentioned the pizza is unbelievably fresh and the wood oven gives an awesome taste. Service was very quick and courteous on both the GBC and pizza side of the business. Only negative I can see is the small size of the place and the reliance upon an outdoor mobile wood fired over (as opposed to a built in wood fired oven).

    Mouth watering pizza, appetizers, and desserts. When my wife and I think "pizza" this is the only place that satisfies the need. The owners put passion in each individual item on their menu. They even accommodated our son with a gluten free option which he loved. The fire roasted veggies are super, jalapeño pizza is awesome, every dessert is a tasty morsel of heaven... And she serves Nutella stuffed calzone. Brilliant! You won't be disappointed.

    Awesome pizza. Have had multiple conversations with them when I ordered pizza and they LOVE pizza and fresh ingredients. Their pizza is perfect. I have tried the red sauce and white sauce and both are so good. I also tried a NY Cheesecake dessert pizza today and it was perfect. I make sure to come back every time I am in Gillette.
