    We tried the ribs and pulled pork sandwich for our main course. As sides we chose the beans cornbread. My wife and I are very critical because it takes a knowledge of smoking and mopping the meat to accomplish tenderness, great flavor, and keeping the meat attached to the bone. We were impressed. We understand it takes a lot of work but this is the way ribs must be done. Pulled pork was great. No need to elaborate. A crunchy, tangy coleslaw on top made it different. Meat was lean as it should be with great tenderness. Don't be afraid to ask for sauce if you love it like we do. Beans and cornbread were terrific compliments. Everyone from Texas to Memphis, Kansas City to Milwaukee has their version of what they feel barbeque should be. Don't be afraid to ask for sauce. I loved the sauce and I should have asked for more, especially if you re-heat your meat:) My hope is that brisket comes sooner than later and according to one of the owners, it is right around the corner. Its now my #1 stop each week. Will and April

    DELICIOUS!!! I've have been dying for some great ribs here in the Milwaukee area. This place is it!!! Very simple menu not complex, so you know that they perfect the dishes that they are selling. Let me tell you that this food is EXCELLENT. The ribs are tender and soooo flavorful with the smoky flavor but not overwhelming. I'm not a sausage person but this sausage was very good with a hint of spice.The sauce is FANTASTIC!!! Its sweet and spicy and they give you just enough so you can appreciate the taste of the meat not drowned in sauce. Milwaukee with have a hit on our hands!!! You absolutely have to visit this place. AWESOME!!!!

    Great to meet Randy and Molly today and to see/smell their passion for BBQ. Went for the pulled pork and ended up with an amazing smoked sausage with spicy corn slaw (heaven)!!! I see many more stops in the future...must sample the menu top to bottom.

    I am a huge fan of the three stack shack BBQ food truck! They have great food and every associate (and customer) is so friendly. It's a great spot!!

    We were tooling down State street today and by happenstance we took a slightly different route than usual and saw this little shanty billowing out BBQ smoke. Never have I seen my husband so quickly lurch to such a sudden stop, make a big U turn across a parking lot to check out this little smoke shack. Being huge BBQ fans, we were naturally excited. Real wood smoke, piggie sign, piggie string lights, and a jolly pitmaster handing us bits of sausage and cornbread to taste while he waited for our ribs. This is the REAL DEAL. Milwaukee needs this place. Them ribs were good, damn good. Smoke flavor through and through, soft, delicious rub and not overly sauced. Our full rack of ribs came with a purple cabbage slaw and jalapeno corn bread (which passed the baby test as well!). We also tasted the sausage - a hint of spice but oh so nice. There were also jugs of sweet tea dispensers at the window - that's doin it right! This place fills a deep void for us - real down to earth, no frills, delicious, smoked with love. LOVES: The QUE The piggie lights The location - literally walking distance/2 min drive for us Would like to see: More menu options like brisket, chicken - I know I want too much but there's so much potential here Maybe a little more corn bread included with a full rack of ribs In the summer - picnic table and string lights If I could give 4.5 stars I would, I think it will rapidly head into 5 star territory, can't wait to go back!

    FOUND IT!!! No....not my keys But, I FINALLY found an "eyeballs rolled back in my head" BBQ in the MKE area!! From the Three Stack Shack food truck!!!! OMG!! I got the ribs. VERY thick meat. Cooked to perfection. You can get it sauced or not. I recommend getting sauced...YUM!!! The sides were beans and slaw....WITH a twist. The beans were delicious sweet BBQ bean, with some sort of twist....maybe something citrusy in there....I couldn't quite place it....totally mouth watering. The slaw was unlike any I have ever had ... a mixture of purple cabbage with some quite surprising ingredients. Being from the south, I have found it next to impossible to find really great BBQ in MKE. Three Stack Shack just make the impossible possible. I WILL be back!

    Descriptive phrase: well-smoked BBQ meat-trailer. I finally managed to track down Three Stack Shack's little trailer after much searching (keep an eye on their Facebook, as their website led me astray). It really is just a trailer, with a wood-fired smoker under one end. We ordered a Pulled Pork sammich ($6.50) and half-rack of Ribs ($13.50). They have no seating anywhere, but we found a park nearby. The pulled pork was very large, and even though the meat itself had very little sauce it was instead topped with a tangy coleslaw. This allowed for the actual smokey flavor of the meat to bleed through more than a BBQ taste. The half-rack of ribs, with about 5-6 bones, was delicious. I would've liked a tad bit more sauce, but this, similar to the pulled pork, allowed the wood-fired taste to come to the front. Meat was tender and literally pulled right off the bone clean. Well-worth the price on all fronts. Both came with an extra side of spicy slaw, and the ribs with a big cup of pork'n'beans. You should bring your own wet-wipes. Make sure to stop, if you can find it.

    Absolutely great BBQ in a city that is lacking it. Miles cheaper than brick and mortar alternatives, and much tastier. Great food truck. I dare you to not order after you've been down wind of their smoker in action. We had the spicy sausage and cup o ribs. Sausage had a great snap to it, and served with good crunchy slaw on the bun. Ribs came sans cup, which I thought was odd. They were smokey, flavorful, and priced wonderfully.

    Seeing the reviews, I was really looking forward to trying this place so I gathered a couple of co-workers and went on lunch break. The main reason I decided to check this place out were to try the ribs I've been reading about but to disappointment when we arrived at 11:45, the guy working said the ribs wouldn't be ready for another hour. Feeling bad about that he let all four of us try the Sausage sandwich with generous portions. It was good and a nice gesture but couldn't replace the fact that I still wanted ribs. It was windy and there's no where to sit or even throw out your napkins (but they'll happily throw out for you). It was awkward trying to order because the lady kept confusing the orders. When we got back to work we noticed the orders were all switched around so we had to trade sandwiches, etc. 2 of us liked the food, 2 of us thought it was so-so, none of us were overwhelmed. Maybe we hit them on a bad day, but the first day being 50 degrees in months you'd think they'd be prepared. None-the-less I'm glad I tried the place, but there's no reason I can think of to return.

    Ok..... So I have decided since the weather has refused to cooperate I have decided that it will be "Summertime in my belly"! I have been trapezing(can't believe that is not a real word) around Milwaukee to all the BBQ restaurants and even stopped for some frozen yogurt. I was shocked to come across a BBQ truck in my own back yard. Thanks Yelp!! The owners were super friendly. So after I got my food and was on my way home I had to pull my car over because the smells coming from the bag were affecting my ability to concentrate. I tasted a rib(just a nibble), I tried the BACON beans, and the corn slaw. I then ate everything right ther in my car parked on the side of the road on State St.!!! The one item I did not mention is the Jalapeño Cornbread because it gets it's own paragraph below. The ribs were perfectly smoked and excellently seasoned with the right amount of heat needed for my faux summertime day. There be BACON in them there beans. I mean real BACON not skinny flimsy pieces of faux BACON! The corn slaw was differently delicious. Almost like a corn and cabbage relish. So that brings us to the Jalapeño Cornbread with Jack Daniels BUTTER. Okay so I am a Georgia Girl with the tattoo to prove it. Cornbread should not have anything in it but corn and bread(??)! However, sometimes somebody comes along and they break the rules and MAGIC happens!!!! Just like Kevin BACON in Footloose. This cornbread was everything it was supposed to be and more! It was moist, sweet(cornbread should be sweet), crumbly, hint of spice, and BUTTER spread on top. If that wasn't enough it comes with Jack Daniels BUTTER(wish they sold that at Woodman's). The butter had enough of a punch to it that I wouldn't give it to my kids. In fact I think it is safe to say that it is baby making BUTTER! Sweet & Creamy with a punch. I wanted to turn the car around, mind you I was not far away, and get another round of everything but double Cornbread. I do not mean to down play any of the other food. The ribs were delicious and the beans had BACON in them, real BACON. The cornbread stole the show for me! The only hmm... for me was that they don't have rib tips on the menu but the cornbread made up for that!! I will be going back again, again, and again!!

    Randy's at it again with the Laredo beef sandwich. When I heard he had a new menu item I had to try it. Its a new twist on a beef sandwich and I have posted a picture of it. First impression out of the wrapper was it looked like a good quality bun. Let's brake this thing down for people. It's a light bun which was toasted filled with smoked beef and peppers with the right amount of wetness. The top was still crispy and the bottom was a little soggy, I like a little soggy beef to start with. The beef was lightly smokey and the peppers were mildly hot for me. Over all it was good and if you like the occasional beef sandwich than you should try this twist of it. The ribs and the sausage are still my favorite but it's nice to see they are thinking out side the box again. This is not a brisket sandwich by the way. I might even have BBQ spicy sauce added to this even though that's not how it's made, that might just complement this sandwich nicely. Just a thought people. Give them a try.

    I wanted to like this place, I really did. Based on the reviews, had high expectations. As mentioned, the guys working the truck were very friendly and engaging, and the smell was fantastic. Unfortunately, the food itself was very disappointing. The ribs were tough and fatty as the same time. The flavor was a bit lacking, and the sauce was just ok. So, the main course/attraction was a bust. We also split a hot link, which was good. It had a high fat to meat ratio and a great spicy kick, and the coleslaw added a nice touch. But the richness of such a fatty mixture made it hard to eat more than half. Tried all three sides. The beans themselves were a bit undercooked, and the sauce was more brown sugar than anything else. The coleslaw was good, and the roasted corn complimented it well. The cornbread and jack butter was absolutely wonderful, and the only reason I'm going with a 3 rather than 2. Perfect combination of sweet, savory, and spiked. If I ever went back, would just get a couple order of cornbread, While that would be tasty, not the best endorsement for a rib place.

    I got the hot sausage with the slaw. Yummy! Cooked very nicely and the slaw on top is perfect, tangy. The baked beans are absolutely AWESOME!!! So good and I'm not usually a huge fan of baked beans (not really sure why I even ordered them but I'm so glad I did). I also got the chipotle corn bread. It was nice and moist but I'm super duper picky about my cornbread (I spent a lot of time perfecting my own recipe and even at that have found that my recipe is only good when made with Aunt Jemima corn meal. So yeah...super picky). The chipotle just made it taste odd to me. It was well-executed though so maybe if I had been in the mood for something really different...I'd have liked it more? Mostly I just wished I had bought a second sausage. Next time I'm going for the brisket. Cash only.

    I'm impressed by the entrepreneurial efforts of the owners. What a great location for a food truck. The logo is professional. Now on to the food. It's take-out only, so I picked up food for myself and 3 co-workers. They really know how to do ribs and all the sides are top-notch. The owners and employees were friendly and helpful. Maybe in the summer they will add a picnic table so customers could eat it hot, right there! I gave it 3 stars, for a-okay, which is how I feel about it. I'll go back in the future and maybe will upgrade my review. But it's a solid 3 for now.

    If you love ribs, then this is the place to eat. Tender, juicy and full of flavor!! Not boiled or baked just smoked with love to the bone. The price point is perfect for picking up and taking food for the family. You won't be disappointed . Do yourself a favor and get the newest bestess ribs in Milwaukee!!

    This place is less than average. I was beyond worked up that a new BBQ place was in my neighborhood and a food truck (trailer) at that. I have only had the chance to try the ribs, I would have went back to try the other items thinking it was possibly a bad batch, however they do not keep the hours posted as they were closed the other two times I tried, possibly due to weather which is understandable. Getting back to the ribs, the rack I shared with my friend was extremely tough as though it had only been smoked for an hour. The meat was actually stuck to the bone and took far to much effort to get any meat off. For the first time in my life I had to get a knife and fork to eat ribs off the bone! Like I said I would be willing to go back hoping this was a fluke at which point I can update my review. I really hope it was an isolated event since this place could do great in our area. If it doesn't I will stick to Ashley's.

    So I was sitting in my work van reading the friday paper n eating a cousins sub when I read about this place in the cue section. "Wait!", I thought as I was at the cousins on 68th n state, "this truck has to be right here!". I looked to my right and saw the smoke billowing from a small white trailer. I immediately went over to check it out as im always looking for good bbq in milwaukee. Unfortunately I already finished my sub, so I wasnt real hungry, so I just got the $6 rib cup to sample them. 3 meaty st. Louis style(way better than baby backs when done right) ribs. All ive been thinking about all weekend is getting back there next weekend. Reasonable prices and Proabaly best ribs iv'e had in milwaukee. And yes I've been to the overhyped/priced smoke shack downtown. Definitely recommend.

    Can't pick a favorite, because everything we ate was outstanding! We received a sample of sausage while they prepared our sandwich. I am not fond of spicy sausage, but one bite and i ordered that too! Not to spicy, perfect seasonings and wonderfully smoked and sauced. The slaw, amazing, the cornbread I was sad I didn't order more. So flavorful with the jalapeños. Our pulled pork sandwich on a Scortino roll was beyond wonderful. Next time i would order more sauce, it was so good. The beans were also fantastic, with a lot of bacon in them. Wish they had a 10 * rating because 5 isn't enough!

    Last night we were in the mood for barbecue, I had no idea that Three Stack Shack had opened right by our house. I got there right before they closed. They had a rack and a half left. I was concerned that getting the last ribs of the day would be tough, and my fears were groundless. The ribs were great, tender, great sauce. The beans were excellent and I enjoyed the slaw. The owners were very friendly. I am looking forward to going back earlier in the day when they still have cornbread and to try the sausage.
