    We were so, so glad when Moab got its own sushi place back in 2011. No longer did we have to drive to Durango or GJT. I think Sabaku is much better than the ritzy, too-pricey place in Telluride, and they don't care if you're in hiking pants. The sushi-chefs are friendly and will chat you up, especially if they see you come in multiple times. My favorite roll is the LaSal, is has this lovely thin-slice of lime on top and I am a sucker for citrus. Their combinations are so good and never boring. I can only comment on the maki-rolls since we never tried the other entrees. The specials are inventive and named after local places and local geologic features. We also loved the Fiery Furnace roll. The moab airport is just north of town, and Sabaku gets their fish flown in. Very good stuff-- I LOVE this place and miss it when I'm not there.

    we had a great experience at the bar tonight! great service and delicious sushi far from the coast! we especially enjoyed the spider roll and spicy hamachi roll. the sake flight was not only delicious but a great price! It's great to see that the place is busy even though its off the main drag (which was very touristy). thanks to all the reviewers at yelp who helped us find this spot!

    The chefs and wait staff are extremely friendly, but more importantly, the food and drinks are outstanding! Their fish is flown in fresh every day. I travel all over the world, have eaten sushi in every city imaginable and this place ranks up there with the best of them!. My only "complaint" is they aren't open seven days a week or for lunch so I could eat there more often. And, to top it off their prices are very reasonable. You expect to find good steakhouses and barbecue in Moab, but it's a real treat to have such a great sushi restaurant in the middle of the desert.

    We were arriving in Moab latish (around 8:30) and yelp steered is to this gem. The wait staff was attentive and friendly. I ordered some nigiri and two rolls, my wife ordered a noodle dish. The rolls had great flavor and wonderful presentation. The nigiri (hamachi, sake and some sockeye salmon from Alaska) was good as well. The noodle dish my wife ordered was great too.

    I love sushi. But this place wouldn't hold it's own on the west coast or east coast. It was a pleasant experience overall - but the food wasn't great - the flavors were just off. So if you're a sushi connoisseur - you probably want to pass on this one. If you want a lively atmosphere (yes the place was packed) with decent happy hour specials for sushi-esque dining - I'm sure you'll have fun.

    Tried this place having very low expectations and were very impressed! We live on the road, love sushi and are always looking for good sushi. We really didn't expect to find good sushi in Moab. Loved the modern and relaxed decor, the music, and the very friendly staff. The prices were reasonable. I was afraid the sushi would not be good, after reading Mary C.'s review. But it was actually very good! We ordered our usual: philly roll, unagi rolls, spicy tuna, and shrimp tempura. They were all very tasty. The sauce was good but not overpowering as is so often the case. You could actually taste the fish. The philly roll was melt in your mouth good, the shrimp tempura still a little warm from the fryer. The temperature of the sushi is something I really notice, and this restaurant got it just right. The rolls were cut perfectly, nice and small. My 6 year old gobbled them down with no problems. It took about 15 minutes to get our food. We were starving but I didn't feel this was an unreasonable wait. The second roll we ordered did take a little longer but there were two tables ahead of us that hadn't been served yet, so, understandable. Everyone around us was enjoying their meal it seemed. I tried to understand how a different reviewer could have had a bad experience here, but I have to say I just don't get it. We came at dinner time and there were several other people. Maybe she reviewed it when they first opened? This place was outstanding in my opinion, and we'll definitely be back whenever we're in Moab.

    Sabaku is one of my favorite places to eat out in Moab. The LaSal and Delicate Arch rolls are my absolute favorite. The service is always great; sometimes it's a bit of a wait, but the atmosphere is relaxed and the end result is worth it!

    I eat lots of sushi and am not easily impressed by sushi. Needless to say, I was extremely skeptical of a sushi bar in Moab, UT despite the generally favorable reviews on Yelp. However, I am happy to say that I was extremely impressed by the sushi here. In fact, it is one of the best sushi I've had in the last couple of years! The fish is flown fresh in from Hawaii everyday and you can really taste it in the sushi. The food was so good that I returned on the second night in my 2 nights in Moab. I got the Rainbow Bridge, Castleton, White Rim, and 2 entrees (Grilled Tri-tip and pan-seared salmon). The food was all fresh but my favorites were the Castleton (best value as well) and the White Rim. I highly recommend this restaurant!

    While I was surprised at the Sushi house in Cortez, which rated 4 stars, I was disappointed here. Sushi was so so and service likewise. Atmosphere didn't do anything for me. If you are ever up in Seattle, try a bento box at Fuji Sushi in china town.

    That's right, folks. There is a good sushi in the desert. There were a lot of locals at the sushi bar, and the place was still hopping when we arrived a little after 9 pm on a Wednesday night. The fish here was surprisingly fresh. We got the Castle Rock and the White Rim, and we enjoyed them both. We also ordered the Southwest Edamame. It was seasoned with lime and something close to Old Bay - I'd definitely recommend it.

    fish was super fresh! surprisingly fresh! we think the sushi rice may be made with a tad too much sugar, but besides that, the hijiki seaweed salad was the best we have ever had. loved the welcome Rickie gave to us. Highly recommended.

    I stopped here on my trip to Arches and Canyonlands because I have very limited access to sushi in Idaho. I grew up eating sushi and absolutely love it. This place was super yummy. I stuck with the basic sushi rolls because I didn't have a lot of money to spend. The prices were sort of high but not bad for sushi or a tourist town like Moab. I started with a California Roll and a Tempura Shrimp Roll. It was nice to see real crab on the menu unlike a lot of those places that serve you imitation crab- isn't that the point- fresh seafood? The California Roll was good but not the best I've ever had. I sort of wish I'd only ordered the Tempura Shrimp Roll because DAMN it was so tasty I ordered another. Yum! I wish I could have tried some of the higher end sushi as well but oh well. The service was friendly and efficient and they didn't treat me any different for being a party of one like some places. I highly recommend eating here in Moab.

    Went here on the evening on New Years Eve. Not much else open in Moab in the off-season...or New Years. Was very surprised! I am lucky to travel for work...and have had the opportunity to eat sushi across the USA and this small place in Moab hit the mark! Good service and good food! Prices are really good as well! If you have a sushi craving in Moab, check this place out!

    Not bad for Utah sushi! Staff was very nice and helpful, food was tasty, prices were fair considering they fly their fish in daily from Hawaii! We were a party of two and ate until we were full for around $40. I would recommend this over some of the other places around Main St. for something a little different.

    After a 12 hour day of fun in the hot desert sun, Sabaku Sushi was the perfect place to cool down and have dinner. The wonton appetizer, ceviche and Castleton roll were excellent as was our service. I ALWAYS enjoy my time at Sabaku Sushi. Definately recommend you try it.

    Sushi was average fare. Better than what I'd expect for the middle of Utah, but most definitely nowhere near the truly 4 and 5 star sushi places I've eaten in the past. Not a great ratio of fish to other stuff (little fish, lots of other stuff). Go in with low expectations and you'll be pleasantly surprised.

    More Californians that really liked Sabaku Sushi. Located off the main street, it has a nice relaxed feeling with tasteful decor and perfect lighting for a romantic dinner. The close proximity of other tables and high noise level when they are busy does limit the privacy. Our rolls were excellent but thought two more per serving would be perfect. The edamame was a bit too salty for our taste but the perfect amount for two people. Service was good. Will go back next time in Moab.

    Seriously one of my favorite spots. Like the poster below, I was a bit hesitant on taking in sushi in the middle of the desert and thinking of the hours from the nearest ocean but my local friend Steve raved about this place. I am so happy I tried it because as quite a few of the posters stated, I am a bit of a sushi snob and have eaten it in many of the major cities and overseas. This place turned out to be awesome. We ordered the spicy hamachi, the Delicate Arch and the Hidden Valley roll (fruit, macadamia nuts and eel sauce around a seaweed wrap? Who would have thought?)....all of which was ridiculously good. I like that they had a no-rice roll (Delicate Arch), replacing the seaweed with sliced cucumber. We ended the meal with orange in plum wine - super tasty and healthy. The service was great - really nice people; friendly environment. I was passing through town but was entertained to see locals joking around with each other and the staff - good energy and lots of laughs! That's what makes small towns so cool. In regards to a past poster's comment, who cares what ethnicity anyone is in making good food? One of the best Mexican restaurants I've been to is run by Chinese in NYC. My mom is Chinese but she makes the best lasagna ever (although taken from my American grandma's recipe). Recipes and culinary ideas exist to be handed down and shared. I think it's awesome to move beyond any of these boundaries and share in each others' cultures but giving them a unique flavor. Sabaku deliciously proves that.

    Really great options for the vegetarian at this place. Or you can ask for a vegetarian free-style roll, tell the wait person what kinds of things you like and the chef will gladly make a customized roll. We've eaten many times, during different seasons and the quality is consistently high. Don't miss this place.

    The sushi was incredibly tasty. My friend that goes to a lot of Sushi places was blown way. Their untraditional way to make the Sushi with all kind of vegetables and sauces or even lemon was spatial and every type came out delicious. The service was very friendly and efficient. The restaurant was remodeled and look new and clean. The price was reasonable. What a surprise in this small desert town.

    Great service, our server knew everything about the menu. She was even able to suggest some things for our gluten free/vegan friends. Food was above average for being in the desert. Cool atmosphere. Loved it!

    You will be surprised. Good sushi in Moab UT! Wait staff was incredible. We had a huge order of various sushi, beers, sake, etc...and our waiter got everything perfect without writing anything down. I've eaten a lot of sushi in my time...and I think this was good..not great...sushi. We ordered various roles and pieces. It all tasted very fresh. Just not blow you away sushi. The prices were pretty high..but we expected that. There was also some good live music with a guy playing guitar. Would go back again in a heartbeat.

    Sorry, but we were not impressed. Chirashi was way too small for the price. $22 for about 9 very small pieces of sashimi. Waited over an hour for a seat. The waitress took my concerns seriously and explained that desert sushi can not be compared to "big city" sushi. She was right! If you are used to what she called "big city" sushi, you will be disappointed.

    Very creative and excellent quality. The tofu appetizer recommended by the waitress is an absolute must, amazing taste and cooked to perfection. If you don't like tofu, order it anyway. You will be a fan. As we sat at the sushi bar, we asked the sushi chef to create a few dishes....all of which were awesome. We ordered fried tempura bananas with green tea ice cream for dessert, not a piece was left. So yummy. We are thnkng of planning another Moab trip, we will be back. Maybe a few times during our next stay. Just amazing. thank you!!!!!

    (see edit below) 5-star sushi. 1-star service. I'm placing the average at 3 stars in favor of the sushi, but I literally got my sushi from the chef at the bar BEFORE my waitress even talked to me. I even asked my chef who i should order drinks from, she said the waitress, then she went over to the waitress to let her know I hadn't been helped yet. Waitress acted worried like she had no idea... then took a casual 5 minutes before coming over to ask if I needed any appetizers or drinks... even though my entree was already sitting in front of me. Maybe she thinks appetizers as dessert is some trendy new hipster thing? Yea, no. SUMMARY: Amazing, amazing sushi. Horrible waitress who I gave no tip to. EDIT: I came back here the next night and sat in the same waitress' section. She had seen my Yelp review, remembered me and was very apologetic. While it's tough to make up for what had happened the night before, she went out of her way with a complimentary appetizer and speedy, prompt, attentive service. The bonus coozie at the end was just icing on the cake. I was a fan of the sushi before, but I'm a redeemed fan of the wait staff as well :) I'm leaving my original review as a record but I've amended my rating.

    Came back to Moab and was glad Sabaku was still here. We were here 2 years ago. It is still one of the best sushi restaurants we've been to!! Had the poke appetizer, the sunshine roll and sandstone crunch were outstanding!! Wanted to eat more but just got too full. Sat at the bar and service was great and good conversations with the staff. Will come back to Moab if for no other reason than Sabaku.

    A great find in Moab. As I'm just passing through town I was lucky enough to find Sabaku Sushi. I walked in just as they were doing happy hour, so I had some excellent cut-price rolls. The staff were lovely and engaging, they really helped create a great atmosphere. The fish is fresh and the menu is creative. I recommend Sabaku for anyone wanting sushi in the area.

    Sushi in Moab?!! Apparently so, and fresh and beautifully made sushi! The sushi surprised us with a playfulness (names of local rock formations) and an unexpected palate of flavors. For example, The La Sal roll had buttery salmon topped with a micro thin slice if key lime, lightly dusted with black Hawaiian sea salt. Amazing pop of flavor!!! Absolutely delicious, and different from any sushi I have ever tasted. Another favorite was the Delicate Arch, a piece of art with amazingly balanced flavors. Great sushi! We will return!!

    We were lucky enough to be in town for the opening night of 2014 season. The fish was super fresh, and the preparations were superb. The one item that deserves special mention is the poke salad. We are big fans of this dish, and have had it in many locations including Annapolis and the Big Island. This is the best preparation we have had.

    It was expensive. Over $120 for 3 of us. Still a little hungry when we left. The food was so so but this is the only sushi bar in Moab. The service was good.

    My husband loves sushi. Me, not so much. When I saw there were only a few choices for non-sushi lovers, I was hesitant to agree to a sushi place. Add to that the distance Moab is from any ocean, and my trepidation increased. But all the reviews on yelp said this place was great, so I let my affection for my spouse override my generally good common sense. And I am so glad I relented! We started with the spicy tuna topped crispy wontons. I asked to have one of them with no seaweed for me and the waitress, Courtney, could not have been more pleasant and agreeable. My hubby ordered the sunshine roll, and I ordered the elk tataki. Both were awesome. We decided to indulge and ordered more--he the Colorado roll, me the shrimp tempura and the veggie tempura. Again, perfectly done. The tempura was light and crispy with not a hint of grease. The overall experience from walking through the door to paying the bill was stellar. The hostess was very friendly and cheerful, our waitress Courtney was wonderful and the food was superior. Definitely worth a return trip!

    after hiking delicate arch i was craving sushi which i didn't think i could find in moab. thanks to yelp, however, i was led to sabaku sushi which was delicious! delicate arch was definitely my favorite, but i also enjoyed the castleton and rainbow bridge rolls.

    Surprisingly delicious, fresh and creative sushi for the desert. The Delicate Arch roll is one of the tastiest rolls I've had honestly. It has a light onion sauce on it that is really good. I'd go back and just order several of these and be happy. We sat at the bar, the service was confusing as you order drinks and apps from a server and the sushi from the sushi chef. I was confused about how to tip... I will definitely go back on my next visit to Moab. I highly recommmed this place. On a slightly negative note, both cocktails that we ordered were pretty "meh" I had the Saketini and he had the Sundance. We most likely would have ordered another each if they were any good.

    I wasn't really looking for sushi in the middle of the desert, but decided to risk it off a recommendation. They also had a Sushi Happy Hour, which sounded good. The service wasn't fast, but it was very friendly and genuinely helpful. The sushi was very good - good enough to have Round 2. I ate at the bar, where the atmosphere was welcoming. I will definitely be back to visit!

    A nice change of pace when dining in the desert. Everything was as good as an LA sushi bar. The ingredients were fresh and had great flavor. The rolls had a different twist from a traditional sushi rolls. After several days of heavy beef meals, this dinner was light and refreshing.

The rolls we ordered were great too.. Can't recall all the names but The Fiery Furnace was great if you like spicy. We went twice during our stay.

    Best mochi ice cream I have ever had! I ordered two! Delish!!! I got the mango roll which was ok, the rice fell apart easily but my shrimp tempura roll was amazing and the rice was perfect!!! Loved it! Spicy mayo was thick and creamy and spicy! Service was excellent and friendly. Refreshing water, tons of yummy drink options. Great atmosphere, yummy and perfectly cooked tri tip, fair prices and will be back!!! Highly recommend.

    My partner and I had dinner last night. The sushi was amazing, and so fresh tasting. We had the fiery volcano roll (our favorite), the Colorado roll, the California roll, the Sandstone roll, and the spicy scallop roll. It was all so delicious, the service was excellent, and the prices were very reasonable. I highly recommend!

    I never expected to find such a great place in the middle of the desert, but this place is fantastic. The sushi was fresh, the presentation is unique, the staff is tremendous, and the taste was unbelievable. The specialty rolls combined a variety of flavors and were out of this world. After talking with the chef a few minutes he made me a roll that wasn't on the menu and it was fantastic. You can tell that they care about their craft. Service was quick and they aim to please. You cannot go wrong by eating here. Now I have another reason than the parks to come back to Moab. Thanks!

    The food here was AWESOME. (To qualify this, I'm a bay area CA native who loves sushi and has eaten it all over the country/world) I went at happy hour and the prices were fantastic. The rolls were creative and really tasty! The soup and salad were fresh and delicious too. Even the water was tasty (had cucumber in it!). The atmosphere is funky and lively. Previous snarky reviewers were probably expecting a more traditional setting. The place has a nice, relaxed vibe and the sushi is legit. YUM! You will not regret going here!

    While the fish was, indeed, fresh for being in the middle of Utah, I'm not sure what sushi the other reviewers have had when they describe this place as some of the best they've ever had. The Fiery Furnace was decent, and the Rainbow Bridge was inventive in concept (a California roll with a variety of sashimi on top), yet neither was remarkable in taste. I don't even remember what kind of sashimi we also had with our meal, it was that unmemorable. The decor of the place was appropriately stylish, even if it leaned a bit toward the Moab-stoner-hippy side of things. All in all, you have to give them props for putting sushi in the desert, as well as growing most of their fresh ingredients locally. Next time in town, I'll need to give them another shot.

    Moab, UT, has some good food options. SS is my favorite, one of the best, excellent menu. I was in Moab for two nights and enjoyed three meals...two pleasant evening meals at the SS sushi bar. Check out their extensive offerings and the fresh ingredients right there in front of you. There are good beverage options. You can easily run up a large tab so take care to be selective. The chef and wait help is friendly and efficient, and I relied on their right-on suggestions on my first visit. I started with the miso soup and then a seared tuna nigiri appetizer, a poke salad and went for their suggested seared salmon with grapefruit entrée. Fresh, fresh, fresh. Their seasonal IPA was my beverage of choice. I went back and enjoyed SS with friends and winged the ordering on my own with excellent results. I've got the place to go whenever I return to Moab. Check it out and enjoy.

    The prices here are much too high for what you get. $7 for a shallow dish of cucumber salad is ridiculous. Rolls are priced at the high end but portions are on the very low end. Basically, everything is priced at least 25% more than it ought to be. Service is very weak, with dishes poorly timed by the kitchen. My wife was served her entree, and finished it, AND had time to go to the bathroom, before my appetizer was served.

    I suppose this is an OK place for Japanese food, especially when considering we're in Moab, UT. My steak was way over seasoned with pepper and my friend's steak was way over cooked and dry. But their salad as well as chicken and fish entrees were pretty good. Service was attentive and fairly responsive. But the miso soup tasted like it came out of a packet. So, all in all, just an average dining experience.

    Didn't expect to find a sushi place in Moab that rivals the best sushi we've had home in Seattle, but here it is. Sunrise cocktail was delicious. Delicate Arch roll was fantastic, as were the spider rolls and salmon sashimi. Very kid friendly with their own menu, crayons, and chopstick holders. A little pricey, but well worth it.

    Went here based on the reviews from Yelper's. Being from California, I have been to my fair share of sushi places and this place was not very good. The waitress recommended the special which was a pan-seared white fish that was marinated in miso., so I decided to try that and a house salad. My Mom ordered the pan-seared chicken and a California roll. The place was not crowded at all, but it took a good 20-25 min for us to get our California roll and my salad. I have never had a California roll taste like tuna from a can, but this smelled like tuna from a can and tasted like it too. No sooner did the waitress put our sushi down and she was bringing our entree. The chicken was good, but my fish was burnt on both sides and the rice was cold. I sent my plate back and requested another one. It took FOREVER to get my food back. My Mom had finished half her meal and was waiting for me to get mine back so I would have to eat alone, but it took at least 15 mins to get my plate back. This time the fish was barely cooked.....and the rice was still cold. The manager finally came over and said she was sorry and that she would credit me for my meal and half off my Mom's chicken. I was going to give one star, but that isn't the waitress or managers fault, so I gave them two stars. Atmosphere was funky and staff were cool, but I would not go here again if I ever come back to Moab.

    The good: great food. The bad: busy. Longer than usual wait for food. Happy hour is lame. Arrived at 5:15 or so on a Wednesday right during happy hour. They have happy hour 5-6. I thought it was all sushi but it's only select rolls. Like 10. It's also not fully half priced, just discounted. We ordered the tuna, philly, rainbow, seaweed salad, shrimp tempura, edamame, and hot tea. Definitely one of the best places in Moab. The edamame was overly salted. We just brushed it off. The rolls were roasted and oiled seaweed paper. Super good. The Philly was the best I've ever had in my life. The wait was longer than my liking, and the servers were running around a bit hectic.

    Let me just preface this review by saying the sushi was SO. GOOD. In fact, some of the best sushi I've ever had. However, less than an hour after eating here, I endured hours of stomach pain and vomiting. It felt like there was a demon taking up residence in my stomach, breathing fire and splashing and stomping around. Other than that, prices weren't bad. If I hadn't had the unfortunate experience of vomiting up sushi, I'd probably visit here again. It's worth mentioning that the two companions I came with did not get ill at all, but I'm 100% sure that this is what caused me to become so sick so quickly.

    Well, despite our better judgment to have sushi in the middle of the desert, we tried this place for dinner on a Tuesday. The yelp reviews raved about how amazing this place was. We knew it would be busy, so we called and they put our name on a list and then we moseyed over from our bed and breakfast. When we arrived, there were many people waiting and it took the hostess over 15 minutes before we could even tell her that we had arrived. I understand that it was very busy, but I expect some acknowledgment ("hi, I'll be with you in a second") or whatever. But nothing. When she finally made eye contact with us, we told he that we called ahead, she looked confused and then grabbed two menus and put us at the bar (at least we didn't have to wait too long, but it was weird). We ordered a few orders of the nigiri (rice and fish) and it was average at best. We are admittedly picky sushi eaters, and this fish was NOT stellar, but had a very bland flavor. We then tried two rolls, and they were good. The flavors were interesting and the presentation was great. The sushi bar staff was working very hard and it appeared as though they took great pride in their work. With one beer, 4 orders of nigiri, and 2 rolls, the tab was more than $75 after tip and tax. Woah! So not worth the quality. As my mom always says, beware of desert sushi. She was right...

    If you like sushi you must visit Sabaku Sushi!! This cozy sushi bar in the middle of downtown Moab is a pleasant surprise! Unfortunately, due to an exhausting day of hiking we were not able to eat in and placed our order to go. We sat at the bar having a drink while our rolls were being made, be aware in Utah you have to eat while drinking so we ordered edamame which was very refreshing for after our hike. The Fiery Furnace was delicious and I highly recommend!! Spicy tuna with Sriracha and eel sauce...Yes please!! The White Rim was refreshing with a lot of flavor. Delicate Arch was a riceless roll with crab, tuna and salmon in a cucumber roll and a nice palate change. Devil's Garden which lived up to its name, had a nice sweet taste with the mango but the pineapple habanero sauce balanced the sweet perfectly. I always try the spider roll of every sushi place I visit and Sabaku did not disappoint! We then asked for a recommended roll from the staff which was the La Sal Roll, I really like the asparagus and salmon mixture with a lemon and Black Sea salt finish. Overall, the atmosphere, wait staff, and chefs were excellent! I will definitely go back here on our next visit (eating in this time) and if I lived in Moab I would be a regular at the Sabaku Sushi Bar!!!

    First time in my life that I leave a roll. My Tekka maki roll was rice with wasabi that left me crying. I love spicy, but when I order a roll with tuna in it I want to be able to taste it. The worst roll ever. The other traditional rolls were fine

    This is quite the popular place for dinner! Fresh fish sounds about right! Wait time was about 15 minutes. Each sushi dish that we ordered was right around the $12-$15 range. All the house speciality rolls were named after all the famous arches...very fitting. However being that the arches were an orange based color on a sunset and sunrise I was expecting more of the salmon throughout the rolls but was only found in a couple. With that being said we ordered the following: Delicate Roll: a mix of tuna, salmon, crab and avocado rolled in a rice less wrap of cucumber topped with onion ponzu. This was a delicious delicate roll! $15 2 Spider rolls: this is a traditional maki sushi. Fried soft shell crab with sprouts, avocado, cucumber, spicy mayo, eel sauce sprinkled with sesame seeds. An all time favorite. $9 each. Shrimp Tempura Plate: comes with 3 fried shrimp tempura with a mound of speckled sesame seed rice, and eel sauce. This was a bit disappointing for the price especially when it comes with rice. Should have subbed it with at least 3 more shrimp tempura. This is a typical appetizer muncher. $7 Surf and turf roll: this is up to the chef. You just tell the server what kind of taste you're looking for. For me I went with the sweet, savory and citrus notes! Seared elk....yes I did write elk is placed on top of the freestyle roll. I essentially had tempura shrimp and cucumber with the tuna and thin slices of seared elk on top with a ginger Serrano to decorate the roll and lemon bits to competent the roll. Very tasty! If you're not into the whole elk idea then you can easily remove it. You'd be surprised with how it tastes! $15 The server and the Service was great! This is a definite place to try if you're out here on vacation!

    One night after hiking I fancy sushi, it was busy in the place. The food came very very slowly. When it arrives, it was totally underwhelmed. While the rolls are ok, I actually forgot what I had, it is some kind of tuna rolls, but it was better than the chicken entree. The chicken was soaked in sauce. Good job I am not in Moab that often.

    So. So. Good. I went during happy hour (cheaper sushi prices). Sat at the bar and watched them make it right there. The guy making mine was very friendly. Just really really great tasting sushi. Would definitely go back.

    WOW! Was not expecting this kind of GEM in Moab- Everything was SO fresh! Our party of 4 sat at the sushi bar and both of our sushi chefs were unbelievably knowledgable, personable and artistic with our food. We started with some edamame, seaweed salad, crispy wontons with tuna, and sake/beer. Everything was absolutely delicious. From the sushi bar, we ordered a sashimi sampler, salmon and avocado rolls, California rolls, arches roll, and a ahi tuna roll with elk on top. Wow. The sashimi was more fresh than most of what we get in California, the salmon avocado rolls had fresh crushed sesame seeds, the arches roll was delicious-- rolled in cucumber, and the tuna roll was incredibly good with buttery elk on top!!! Ps-- even the daikon was freshly grated and the stone ground wasabi was better than any I've ever had!!! Couldn't rave more about this amazing find!

    Who would ever think a small town like Moab would have such a great quality Sushi bar. Living on the Coast of California we love our sashimi and nigiri. All the fish we had was very fresh and not frozen numerous times. Our Sushi chef Jeff was very friendly and creative. One of the dishes we had was the poki salad which they used fresh local greens with a seaweed salad that accompanied the assorted fish they chopped up in a delicious light flavorful marinade. It was one of my favorites! We will definitely come back when driving through Moab.

    The restaurant was so busy that we couldn't get a table, but sitting at the bar isn't a bad second option. Loved the rolls, especially the vegetarian/vegan rolls, and the dessert was really tasty. I never expected to find a good sushi place in Moab but I was really happy to have found this place. The sushi chefs were really nice and the hostess and server was great.

    Yes our bill was almost $100, just the three of us, light dinner, no drinks. But you're paying for upscale quality here. A lot of thoughts were even put into decorating the bathroom! I had no doubt my food would be top notch. Sabaku's menu has a few surprises with items I've never seen offered back home. I had to ask if the "Spicy raw kelp noodle salad" was like "zucchini pasta" or an actual noodle dish. The answer is it's more like the former, i.e. no carb. It's basically Kelp (some sort of algae) sliced really thin to create that magically crunchy bite. Topped with macadamia nut sprinkles, this is one refreshing dish you're unlikely to find very often elsewhere, I highly recommend it! Edamame was standard but I also see they offer a spicy version. The night's special was some sort of wild caught salmon (I forgot where she said it was caught at), in either Sushi Roll or Sashimi form. We had the roll, it was quite good. Later we also asked for the Sear Salmon entrée, which I'm not sure if they used the special salmon. But it didn't matter as the thick piece of fish was perfectly seared, with a nice crust but still a bit raw in the center, a hint of sweet chili sauce made it even better! It sat prettily on top of a bed of grilled vegetables. A simple but satisfying dinner. Two other rolls we got were: - The Maze (Tempura green onion and crab, topped with albacore, ginger serrano sauce and tobiko). Never had tempura green onion before and the distinctive taste really shines through in this creative roll! - White Rim (Tempura shrimp, cucumber and avocado, topped with tuna, eel, eel sauce and sesame seeds). Very fresh ingredients. There's not a lot of sauces on Sabaku's sushi, they prefer to let the ingredients take center stage In the end I had the Ginger Beer Float for dessert (it's on the dessert menu, not the beverage. But for the leftover ginger beer not fitting inside the glass, they'll bring the bottle out for you to enjoy; check out my picture!) Again, never found such a thing at any other Japanese restaurants I've been to before. Not sure if the Ginger Beer was locally made but it has an awesome label on the bottle and tasted pretty interesting. Makes for a nice contrast from the (great) vanilla ice cream. We were really craving for fried rice, too bad it wasn't offered here. If the owner is reading this, I hope you consider having such a standard dish but putting the Sabaku touch on it. I'm sure it'll turn out wonderful! Our server was very polite, and patient. Most of the time she squat down to our chair level in order to answer our question, etc, nice gal!

    Well... not sure how it got 4 star. Food really doesn't taste that impressive. The miso soup appetizer is too diluted and not too many miso in it. We ordered Colorado, which is way too spicy. You can only taste out jalapeno. Other than that it has some veggie in it I guess. We also ordered the Arch. Wel.. there's no rice in it. Only has some cucumber wrapping. It tastes kinda good, which has sashimi in it. But the overall environment is good and the service is pretty good.

    I came here after getting rained on at Arches National Park.... all that hiking to see the Delicate Arch made me so hangry. They serve hot ginger tea (with real ginger bits!)--which was a nice break from the cold outside. I had the spicy tuna, crispy salmon skin, and negihama makis. I also enjoyed the hawaiian fish served with truffle oil and thinly sliced cucumbers. Overall, a very delightful meal.

    My guide over at Moab Dessert Adventure told me I had to give this place a try, so before I left I got an order to go... a decision that I quickly scrawled on construction paper and added to my "HOLY COW WHAT A GREAT DECISION"-Treasure box that I keep under my bed. I gave the lady on the phone simple instructions: I wanted $40 worth of sushi, I wanted to be wow'ed, I wanted more raw fish than rice, and not to waste valuable seaweed space with crab meat or cream cheese. I pitched this lady (sadly this sushi angel's name was forgotten) a knuckle slider, and she loaded up and crushed it out of the park- I'm talking double-grand-slam-fiesta-home-run status. Most importantly--THE SURF AND TURF*-- elk, avocado, tuna- WHAT?! ...I know. *Listen...1. Stop reading this. 2. Go to this place. 3. Order this. 4. Give the sushi chef a high five- and an extra one for me! My to-go order unfortunately didn't grant me the privilege of five finger congratulating the sushi warlock responsible for this beautiful creation :( All the other rolls we had were awesome. I could go into detail explaining each one's unfathomable ability to simultaneously stroke each of my senses... but I'm starting to drool on my keyboard. Go. Here.

    This is a surprisingly good sushi restaurant. I enjoyed everything we ordered but I particularly liked the ELK TATAKI which is not really a common sushi menu item when you think about it. Moab is a small town near Arches National Park and has limited quality spots for grubbing which Sabaku happens to hit the mark. The fish smells and tastes fresh which is crazy since the area it's located in is like a desert. My guess is they get their catch from the Salt Lake up north. I would definitely come back here again if I go to Arches National Park once more. Our server was also extremely attentive until the end when some party called in and arrived 5 minutes to close and took their sweet time ordering and wouldn't let our server go to attend to other matters like say my table that required the check. It wasn't our servers fault but the pretentious customers who lack the common decency to get things done in a timely and rapid manner especially when it's already 30 minutes pass closing time. C'mon...Who do you think you guys are? Anyway, good sushi considering the location.

    Incredible selection in the desert with no ocean anywhere nearby (flown in from Hawaii)! Thematic specialty rooks like The Maze & Devil's Garden are AMAZING and desserts are daunting, think tempura bananas with green tea ice cream! This is a given multi-visit location to dive into the depths of options but wow did they deliver. Favor it was honey chile-glaze salmon with grapefruit. Orange plum wine second and most amazing finish was the dessert roll - fresh berries and banana wrapped and tempura fried then covered with chocolate... Oh, sakerita is incredible and mochi selection impressive.

    Disclaimer: I rated this restaurant a 3.5 because of its location. The fish is fresh for being served in the desert. It would struggle to receive a 3 in a coastal city. Service was spotty, a group that arrived after us was seated earlier, presumably because they were older. I was left standing for quite a while. The prices at first seemed quite reasonable considering the location; but when the food arrived the quantity was underwhelming. Flavor was average to good across the board. Nothing much else to say!

    This is a busy tasty Japanese restaurant in Moab. A couple of little problems were dealt with quickly by our server. Clearly popular with locals and visitors. We had edamame, the shrimp tempura appetizer, Poke Salad appetizer, and a Rainbow Bridge Roll. Everything was very good.

    I suppose craving sushi in the middle of the desert was a hopeless cause in the first place.. But they did well for what they had. Spoiled with fresh seafood from coastal SoCal, I expected more from a 4 star sushi joint. I'll start off with a good point: I loved the art on the walls. They were nice to look at as I waited for food. The chopsticks were also cool. Service was okay. Awkward, actually. Expensive! Especially for the quantity. They also had an option to pay for freshly ground wasabi.. 2$. Nah. My meal was as follows: Delicate Arch: Recommended by the waitress and yelp. It's a no-rice cucumber wrap futomaki. It was okay. Nothing crazy or "to die for." Philly/spider/spicy scallop: Small. Otherwise very average. Sake nigiri: salmon was surprisingly fresh, but again not amazing. I suppose it was enough to sate the fish crave. Just a reminder: Moab is not known for sushi.

    Delicious and very fresh fish. The rolls were delicious, BUT don't expect much fish in them. The rolls will have a very thin slice of fish on the top. Mostly filled with avocado, veggies, anything but fish. I also had a vegetarian roll, fried apple, and it was good too. My husband had the yaki tori and it was very flavorful. We also had several pieces of nigiri: Hamachi, salmon, and tuna. Also very fresh but once again, it was what I consider to be on the small size. I admit, I'm spoiled living in the Bay Area with all the fresh fish and Japanese restaurants around. Bottom line: if you want sushi in Moab this is very good, but be prepared to pay for it.

    Just ate here and the food & service were terrific! Who'd a thunk one could get great fresh fish in Moab, but this place does. We were pleasantly VERY surprised how good it was! Had the "Delicate Arch" roll, albacore belly sashimi, hamachi nigiri, agedashi tofu, & salmon skin hand rolls... each was perfect. Kudos to owner/chef Frankie Winfrey for training his sushi chefs well and putting out a great product even in the desert!

    Out in Moab for work and came here for the HH prices I saw on their website. I was very surprised by the wide range of options on the HH menu. If I was in Seattle or an Ocean side city I would probably not give this place four stars, however, I am land locked in the middle of the US in Moab, UT and taking that into consideration the sushi was good and the service was great! I live in Denver and I would say it compares to Sushi Den or many other "great" Denver sushi places. It fixed my craving and for a great cost for HH!

    I discovered this place while researching restaurants to visit during my stay in Moab back in May. This was the one sushi place in town and I decided to give it a try to fulfill my sushi craving while here. I kept my expectations low (since being from San Francisco where there are plenty of good places within the City and in the nearby suburbs). However, the sashimi I ordered was quite fresh and good quality. I even overhear the Japanese family sitting at the adjacent table and apparently also visiting day if was good. The prices weren't too bad either given the location and lack of sushi competition.

    Great sushi and sake. I was there last week after a fun day of rock climbing. Sushi hit the spot. Coming from California & having been to Japan a few times, I'm picky with my Japanese food. Sushi was really fresh and well prepared. Unfiltered sake rocked. The dessert was delicious. Overall, an excellent experience. Really liked the friendly staff. Great place to hang out in Moab!

    The food is mediocre and overpriced, which is like other non-fast food restaurants in little towns around National Parks in Southern Utah. The Rainbow Roll is good and the fish on the roll is fresh. However, nothing is really special. Delicate Arch is a weird combination to me. The restaurant is a little expensive. 65 dollars for two people,yet we were still hungry when we left. Plus the dishes came really slow. We waited 20 minutes for our first dish. It is in Moab, so I shouldn't ask too much. However I have experienced better Sushi restaurants authentic or not at lower price. If you want to have Sushi, wait until when you are back home. Here just pick Subway, burgers or even gas stains and save your money.

    I came to this place by myself twice. The first time was last year-2014-I liked the speciality sushi roll options and got my sushi prepared and delivered rather quick. The second time I came here I didn't really like the experience. I decided to sit at the sushi bar since I was single and wanted faster service. The restaurant was busy but not packed, and there were only 4 other people sitting at the bar. I'm probably sitting at the bar for about 6 or 7 minutes by now, only been greeted from the sushi chef. I then asked the sushi chef if I order my drinks and food through him, he told me a server would be right with me. I eventually got a water from my assigned waitress. I ordered a roll from the chef which took about 20 minutes. When I finally finished my first roll I ordered another one and that was prepared way faster than the first. By the time I was done with my second roll my waitress still hadn't come up to me to ask if everything was prepared nice or anything. To get my bill I had to search for my waitress and ask for it. As for the sushi? I got the roll that had a mango dressing on top, there was hardly any of the mango dressing on top of the rolls, thus making the sushi very dry and hard to swallow. Even when I dipped the sushi in soy sauce it felt as if I was swallowing mainly rice. I felt that with both of the rolls I ordered it was mainly rice and a dash of fish....anyway, next time I vacation in Moab, I will not be going here.

    Five stars to the wait staff, four stars to the atmosphere, three stars to the food. The hostess and waitress we had were exceptionally friendly, helpful, and down-to-earth. They were there with towels within seconds when we had a water spill! It's a pretty hip little place, but the space is limited and tables too small. I honestly didn't think the sushi was anything special. The rice was a little dry. It was pretty pricey for small quantities ($9-15 for 8 pieces). I did appreciate the creative menu; the vegetarian roll options were better than those at any other sushi place I've been to! The poke salad was very beautiful and fresh. It too, however, was fairly small for a high tab ($13). We had to order three bowls of rice to supplement.

    We decided to try Sabaku Sushi based on reviews we read. We throughly enjoyed our meal. The staff was friendly and helpful. We tried the Delicate Arch and the Rim tempura. Both were very good. This is easily one of the best sushi meal we have had.

    The sushi here was amazing. We ordered the rainbow, fiery furnace and the colorado. They were all super delicious. My fav was the colorado with green chillies for a lil kick. husband loved the FF. Highly recommend it and we will def dine here again on our nxt visit.

    Seriously! Five stars for sushi! Sabaku was an amazing surprise in the desert....wait....anywhere! The rolls are inventive and everything was very fresh. We had the Colorado and Fiery Furnace rolls and they were to die for. Then we finished off the night with a Dessert Roll and Mochi....I can't remember what all is in the Mochi but it was damn good. the Dessert Roll was heavenly....strawberries and blueberries wrapped in rice and tempura fried with a drizzle of Belgian dark chocolate. Can you say "whoa".....wow! Sabaku Sushi is a must when visiting Moab.

    Should have know better. Our surf and turf roll was pretty good but it went downhill from there. The tri-tip was a cut of cheap, under seasoned beef so bland I ended up asking for sauce to put on top of it. It was served on top of unseasoned veggies and alongside an oddly cup shaped portion of white rice. Girlfriend's yakiudon noodles, well, we think they were some sort of dry noodle that was overcooked. Not the doughy type of noodle yakiudon usually comes with. If you're expecting the sort of entrees you've had at other Japanese restaurants, you'll be disappointed in the taste and presentation. This might be the first time I've experienced buyer's remorse after paying the check. Oh, and my can of diet coke was expired. Didn't realize until we'd already paid the bill. On the plus side, the service was great and the atmosphere was nice. Our waitress was attentive and the sushi chef friendly. In closing, we'd strongly advise you try out the pizza, or burgers from somewhere else. If you do decide to go here, get sushi.

    Sabaku, translated, means Desert, and surrounded by the awesome Red Rock desert of Moab, the name fits, though Oasis would fit even better. We found the ambience on the mister-cooled patio delightful, the service (Andi) attentive, friendly and efficient, the food quality and variety over the top excellent. We had salads (cucumber and garden) were fresh, brightly flavored, and satisfying. We had the avocado roll (exceptional in freshness) and a special Sweetheart roll featuring goat cheese, strawberry and spicy tuna inside, Coho salmon and avocado outside - - brilliant!! Wonderful ice cream filled Mochi for dessert topped off a memorable, enjoyable dining experience. We will return next time we're in Moab!!

    Hello, my name is Marcus and you are viewing my review. I gave it two stars. I did this because my roll was mediocre in my opinion; it was the sandstone crunch roll. It had salmon, avocado and panko crumbs to make it crunch. It was made in the California roll style. You could not tell that there were any panko crumbs on the roll if the plate was on the other side of the table, the crumbs were very sparse. The roll was presented in eight cut up pieces which were very small. I came in not very hungry and left feeling normal. The fish couldn't be properly evaluated, for the pieces of fish were too small to taste properly. I would give 1 star if it weren't for my father's roll, the delicate arch, being decent. Other than that the service was good and they had a unique southwest style edamame. But, I don't rate service, I only judge the food!

    I know what you're thinking. Sushi in Utah? Yes. Sushi in Utah. This was one of the most creative and delicious sushi restaurants I've ever been to. The service was so friendly and although we were told the chefs were swamped, we were served promptly. Everything we had was fresh, interesting, and above all, super tasty. We started with the spicy mussel shooters and the ceviche: both were great starters to share. We continued with the Delicate Arch Roll which was creatively wrapped in cucumber, the well-balanced Sunshine Roll, a Sake Maki and a Tuna Tataki Nigiri. I wish I was still eating.

    Best sushi in Utah! I would recommend the sandstone crunch and the surf and turf with elk. The atmosphere was fantastic, and the customer service was top notch. The restaurant was very clean and well appointed. The sushi bar was a fun place to sit and the sushi chefs were pleasant and very friendly. In addition to the regular menu items, the sushi chefs are more than willing to create rolls or items to your personal taste! Highly recommend this restaurant....this place is definitely one of our new favorite places to eat in Moab!

    The good: great food. The bad: busy. Longer than usual wait for food. Happy hour is lame. Arrived at 5:15 or so on a Wednesday right during happy hour. They have happy hour 5-6. I thought it was all sushi but it's only select rolls. Like 10. It's also not fully half priced, just discounted. We ordered the tuna, philly, rainbow, seaweed salad, shrimp tempura, edamame, and hot tea. Definitely one of the best places in Moab. The edamame was overly salted. We just brushed it off. The rolls were roasted and oiled seaweed paper. Super good. The Philly was the best I've ever had in my life. The wait was longer than my liking, and the servers were running around a bit hectic.

    Let me just preface this review by saying the sushi was SO. GOOD. In fact, some of the best sushi I've ever had. However, less than an hour after eating here, I endured hours of stomach pain and vomiting. It felt like there was a demon taking up residence in my stomach, breathing fire and splashing and stomping around. Other than that, prices weren't bad. If I hadn't had the unfortunate experience of vomiting up sushi, I'd probably visit here again. It's worth mentioning that the two companions I came with did not get ill at all, but I'm 100% sure that this is what caused me to become so sick so quickly.

    Well, despite our better judgment to have sushi in the middle of the desert, we tried this place for dinner on a Tuesday. The yelp reviews raved about how amazing this place was. We knew it would be busy, so we called and they put our name on a list and then we moseyed over from our bed and breakfast. When we arrived, there were many people waiting and it took the hostess over 15 minutes before we could even tell her that we had arrived. I understand that it was very busy, but I expect some acknowledgment ("hi, I'll be with you in a second") or whatever. But nothing. When she finally made eye contact with us, we told he that we called ahead, she looked confused and then grabbed two menus and put us at the bar (at least we didn't have to wait too long, but it was weird). We ordered a few orders of the nigiri (rice and fish) and it was average at best. We are admittedly picky sushi eaters, and this fish was NOT stellar, but had a very bland flavor. We then tried two rolls, and they were good. The flavors were interesting and the presentation was great. The sushi bar staff was working very hard and it appeared as though they took great pride in their work. With one beer, 4 orders of nigiri, and 2 rolls, the tab was more than $75 after tip and tax. Woah! So not worth the quality. As my mom always says, beware of desert sushi. She was right...

    If you like sushi you must visit Sabaku Sushi!! This cozy sushi bar in the middle of downtown Moab is a pleasant surprise! Unfortunately, due to an exhausting day of hiking we were not able to eat in and placed our order to go. We sat at the bar having a drink while our rolls were being made, be aware in Utah you have to eat while drinking so we ordered edamame which was very refreshing for after our hike. The Fiery Furnace was delicious and I highly recommend!! Spicy tuna with Sriracha and eel sauce...Yes please!! The White Rim was refreshing with a lot of flavor. Delicate Arch was a riceless roll with crab, tuna and salmon in a cucumber roll and a nice palate change. Devil's Garden which lived up to its name, had a nice sweet taste with the mango but the pineapple habanero sauce balanced the sweet perfectly. I always try the spider roll of every sushi place I visit and Sabaku did not disappoint! We then asked for a recommended roll from the staff which was the La Sal Roll, I really like the asparagus and salmon mixture with a lemon and Black Sea salt finish. Overall, the atmosphere, wait staff, and chefs were excellent! I will definitely go back here on our next visit (eating in this time) and if I lived in Moab I would be a regular at the Sabaku Sushi Bar!!!

    First time in my life that I leave a roll. My Tekka maki roll was rice with wasabi that left me crying. I love spicy, but when I order a roll with tuna in it I want to be able to taste it. The worst roll ever. The other traditional rolls were fine

    This is quite the popular place for dinner! Fresh fish sounds about right! Wait time was about 15 minutes. Each sushi dish that we ordered was right around the $12-$15 range. All the house speciality rolls were named after all the famous arches...very fitting. However being that the arches were an orange based color on a sunset and sunrise I was expecting more of the salmon throughout the rolls but was only found in a couple. With that being said we ordered the following: Delicate Roll: a mix of tuna, salmon, crab and avocado rolled in a rice less wrap of cucumber topped with onion ponzu. This was a delicious delicate roll! $15 2 Spider rolls: this is a traditional maki sushi. Fried soft shell crab with sprouts, avocado, cucumber, spicy mayo, eel sauce sprinkled with sesame seeds. An all time favorite. $9 each. Shrimp Tempura Plate: comes with 3 fried shrimp tempura with a mound of speckled sesame seed rice, and eel sauce. This was a bit disappointing for the price especially when it comes with rice. Should have subbed it with at least 3 more shrimp tempura. This is a typical appetizer muncher. $7 Surf and turf roll: this is up to the chef. You just tell the server what kind of taste you're looking for. For me I went with the sweet, savory and citrus notes! Seared elk....yes I did write elk is placed on top of the freestyle roll. I essentially had tempura shrimp and cucumber with the tuna and thin slices of seared elk on top with a ginger Serrano to decorate the roll and lemon bits to competent the roll. Very tasty! If you're not into the whole elk idea then you can easily remove it. You'd be surprised with how it tastes! $15 The server and the Service was great! This is a definite place to try if you're out here on vacation!

    One night after hiking I fancy sushi, it was busy in the place. The food came very very slowly. When it arrives, it was totally underwhelmed. While the rolls are ok, I actually forgot what I had, it is some kind of tuna rolls, but it was better than the chicken entree. The chicken was soaked in sauce. Good job I am not in Moab that often.

    So. So. Good. I went during happy hour (cheaper sushi prices). Sat at the bar and watched them make it right there. The guy making mine was very friendly. Just really really great tasting sushi. Would definitely go back.

    Well... not sure how it got 4 star. Food really doesn't taste that impressive. The miso soup appetizer is too diluted and not too many miso in it. We ordered Colorado, which is way too spicy. You can only taste out jalapeno. Other than that it has some veggie in it I guess. We also ordered the Arch. Wel.. there's no rice in it. Only has some cucumber wrapping. It tastes kinda good, which has sashimi in it. But the overall environment is good and the service is pretty good.

    WOW! Was not expecting this kind of GEM in Moab- Everything was SO fresh! Our party of 4 sat at the sushi bar and both of our sushi chefs were unbelievably knowledgable, personable and artistic with our food. We started with some edamame, seaweed salad, crispy wontons with tuna, and sake/beer. Everything was absolutely delicious. From the sushi bar, we ordered a sashimi sampler, salmon and avocado rolls, California rolls, arches roll, and a ahi tuna roll with elk on top. Wow. The sashimi was more fresh than most of what we get in California, the salmon avocado rolls had fresh crushed sesame seeds, the arches roll was delicious-- rolled in cucumber, and the tuna roll was incredibly good with buttery elk on top!!! Ps-- even the daikon was freshly grated and the stone ground wasabi was better than any I've ever had!!! Couldn't rave more about this amazing find!

    Yes our bill was almost $100, just the three of us, light dinner, no drinks. But you're paying for upscale quality here. A lot of thoughts were even put into decorating the bathroom! I had no doubt my food would be top notch. Sabaku's menu has a few surprises with items I've never seen offered back home. I had to ask if the "Spicy raw kelp noodle salad" was like "zucchini pasta" or an actual noodle dish. The answer is it's more like the former, i.e. no carb. It's basically Kelp (some sort of algae) sliced really thin to create that magically crunchy bite. Topped with macadamia nut sprinkles, this is one refreshing dish you're unlikely to find very often elsewhere, I highly recommend it! Edamame was standard but I also see they offer a spicy version. The night's special was some sort of wild caught salmon (I forgot where she said it was caught at), in either Sushi Roll or Sashimi form. We had the roll, it was quite good. Later we also asked for the Sear Salmon entrée, which I'm not sure if they used the special salmon. But it didn't matter as the thick piece of fish was perfectly seared, with a nice crust but still a bit raw in the center, a hint of sweet chili sauce made it even better! It sat prettily on top of a bed of grilled vegetables. A simple but satisfying dinner. Two other rolls we got were: - The Maze (Tempura green onion and crab, topped with albacore, ginger serrano sauce and tobiko). Never had tempura green onion before and the distinctive taste really shines through in this creative roll! - White Rim (Tempura shrimp, cucumber and avocado, topped with tuna, eel, eel sauce and sesame seeds). Very fresh ingredients. There's not a lot of sauces on Sabaku's sushi, they prefer to let the ingredients take center stage In the end I had the Ginger Beer Float for dessert (it's on the dessert menu, not the beverage. But for the leftover ginger beer not fitting inside the glass, they'll bring the bottle out for you to enjoy; check out my picture!) Again, never found such a thing at any other Japanese restaurants I've been to before. Not sure if the Ginger Beer was locally made but it has an awesome label on the bottle and tasted pretty interesting. Makes for a nice contrast from the (great) vanilla ice cream. We were really craving for fried rice, too bad it wasn't offered here. If the owner is reading this, I hope you consider having such a standard dish but putting the Sabaku touch on it. I'm sure it'll turn out wonderful! Our server was very polite, and patient. Most of the time she squat down to our chair level in order to answer our question, etc, nice gal!

    I came here after getting rained on at Arches National Park.... all that hiking to see the Delicate Arch made me so hangry. They serve hot ginger tea (with real ginger bits!)--which was a nice break from the cold outside. I had the spicy tuna, crispy salmon skin, and negihama makis. I also enjoyed the hawaiian fish served with truffle oil and thinly sliced cucumbers. Overall, a very delightful meal.

    Who would ever think a small town like Moab would have such a great quality Sushi bar. Living on the Coast of California we love our sashimi and nigiri. All the fish we had was very fresh and not frozen numerous times. Our Sushi chef Jeff was very friendly and creative. One of the dishes we had was the poki salad which they used fresh local greens with a seaweed salad that accompanied the assorted fish they chopped up in a delicious light flavorful marinade. It was one of my favorites! We will definitely come back when driving through Moab.

    My guide over at Moab Dessert Adventure told me I had to give this place a try, so before I left I got an order to go... a decision that I quickly scrawled on construction paper and added to my "HOLY COW WHAT A GREAT DECISION"-Treasure box that I keep under my bed. I gave the lady on the phone simple instructions: I wanted $40 worth of sushi, I wanted to be wow'ed, I wanted more raw fish than rice, and not to waste valuable seaweed space with crab meat or cream cheese. I pitched this lady (sadly this sushi angel's name was forgotten) a knuckle slider, and she loaded up and crushed it out of the park- I'm talking double-grand-slam-fiesta-home-run status. Most importantly--THE SURF AND TURF*-- elk, avocado, tuna- WHAT?! ...I know. *Listen...1. Stop reading this. 2. Go to this place. 3. Order this. 4. Give the sushi chef a high five- and an extra one for me! My to-go order unfortunately didn't grant me the privilege of five finger congratulating the sushi warlock responsible for this beautiful creation :( All the other rolls we had were awesome. I could go into detail explaining each one's unfathomable ability to simultaneously stroke each of my senses... but I'm starting to drool on my keyboard. Go. Here.

    Great sushi and sake. I was there last week after a fun day of rock climbing. Sushi hit the spot. Coming from California & having been to Japan a few times, I'm picky with my Japanese food. Sushi was really fresh and well prepared. Unfiltered sake rocked. The dessert was delicious. Overall, an excellent experience. Really liked the friendly staff. Great place to hang out in Moab!

    This is a surprisingly good sushi restaurant. I enjoyed everything we ordered but I particularly liked the ELK TATAKI which is not really a common sushi menu item when you think about it. Moab is a small town near Arches National Park and has limited quality spots for grubbing which Sabaku happens to hit the mark. The fish smells and tastes fresh which is crazy since the area it's located in is like a desert. My guess is they get their catch from the Salt Lake up north. I would definitely come back here again if I go to Arches National Park once more. Our server was also extremely attentive until the end when some party called in and arrived 5 minutes to close and took their sweet time ordering and wouldn't let our server go to attend to other matters like say my table that required the check. It wasn't our servers fault but the pretentious customers who lack the common decency to get things done in a timely and rapid manner especially when it's already 30 minutes pass closing time. C'mon...Who do you think you guys are? Anyway, good sushi considering the location.

    Incredible selection in the desert with no ocean anywhere nearby (flown in from Hawaii)! Thematic specialty rooks like The Maze & Devil's Garden are AMAZING and desserts are daunting, think tempura bananas with green tea ice cream! This is a given multi-visit location to dive into the depths of options but wow did they deliver. Favor it was honey chile-glaze salmon with grapefruit. Orange plum wine second and most amazing finish was the dessert roll - fresh berries and banana wrapped and tempura fried then covered with chocolate... Oh, sakerita is incredible and mochi selection impressive.

    Disclaimer: I rated this restaurant a 3.5 because of its location. The fish is fresh for being served in the desert. It would struggle to receive a 3 in a coastal city. Service was spotty, a group that arrived after us was seated earlier, presumably because they were older. I was left standing for quite a while. The prices at first seemed quite reasonable considering the location; but when the food arrived the quantity was underwhelming. Flavor was average to good across the board. Nothing much else to say!

    This is a busy tasty Japanese restaurant in Moab. A couple of little problems were dealt with quickly by our server. Clearly popular with locals and visitors. We had edamame, the shrimp tempura appetizer, Poke Salad appetizer, and a Rainbow Bridge Roll. Everything was very good.

    I suppose craving sushi in the middle of the desert was a hopeless cause in the first place.. But they did well for what they had. Spoiled with fresh seafood from coastal SoCal, I expected more from a 4 star sushi joint. I'll start off with a good point: I loved the art on the walls. They were nice to look at as I waited for food. The chopsticks were also cool. Service was okay. Awkward, actually. Expensive! Especially for the quantity. They also had an option to pay for freshly ground wasabi.. 2$. Nah. My meal was as follows: Delicate Arch: Recommended by the waitress and yelp. It's a no-rice cucumber wrap futomaki. It was okay. Nothing crazy or "to die for." Philly/spider/spicy scallop: Small. Otherwise very average. Sake nigiri: salmon was surprisingly fresh, but again not amazing. I suppose it was enough to sate the fish crave. Just a reminder: Moab is not known for sushi.

    Delicious and very fresh fish. The rolls were delicious, BUT don't expect much fish in them. The rolls will have a very thin slice of fish on the top. Mostly filled with avocado, veggies, anything but fish. I also had a vegetarian roll, fried apple, and it was good too. My husband had the yaki tori and it was very flavorful. We also had several pieces of nigiri: Hamachi, salmon, and tuna. Also very fresh but once again, it was what I consider to be on the small size. I admit, I'm spoiled living in the Bay Area with all the fresh fish and Japanese restaurants around. Bottom line: if you want sushi in Moab this is very good, but be prepared to pay for it.

    Just ate here and the food & service were terrific! Who'd a thunk one could get great fresh fish in Moab, but this place does. We were pleasantly VERY surprised how good it was! Had the "Delicate Arch" roll, albacore belly sashimi, hamachi nigiri, agedashi tofu, & salmon skin hand rolls... each was perfect. Kudos to owner/chef Frankie Winfrey for training his sushi chefs well and putting out a great product even in the desert!

    Out in Moab for work and came here for the HH prices I saw on their website. I was very surprised by the wide range of options on the HH menu. If I was in Seattle or an Ocean side city I would probably not give this place four stars, however, I am land locked in the middle of the US in Moab, UT and taking that into consideration the sushi was good and the service was great! I live in Denver and I would say it compares to Sushi Den or many other "great" Denver sushi places. It fixed my craving and for a great cost for HH!

    I discovered this place while researching restaurants to visit during my stay in Moab back in May. This was the one sushi place in town and I decided to give it a try to fulfill my sushi craving while here. I kept my expectations low (since being from San Francisco where there are plenty of good places within the City and in the nearby suburbs). However, the sashimi I ordered was quite fresh and good quality. I even overhear the Japanese family sitting at the adjacent table and apparently also visiting day if was good. The prices weren't too bad either given the location and lack of sushi competition.

    The food is mediocre and overpriced, which is like other non-fast food restaurants in little towns around National Parks in Southern Utah. The Rainbow Roll is good and the fish on the roll is fresh. However, nothing is really special. Delicate Arch is a weird combination to me. The restaurant is a little expensive. 65 dollars for two people,yet we were still hungry when we left. Plus the dishes came really slow. We waited 20 minutes for our first dish. It is in Moab, so I shouldn't ask too much. However I have experienced better Sushi restaurants authentic or not at lower price. If you want to have Sushi, wait until when you are back home. Here just pick Subway, burgers or even gas stains and save your money.

    I came to this place by myself twice. The first time was last year-2014-I liked the speciality sushi roll options and got my sushi prepared and delivered rather quick. The second time I came here I didn't really like the experience. I decided to sit at the sushi bar since I was single and wanted faster service. The restaurant was busy but not packed, and there were only 4 other people sitting at the bar. I'm probably sitting at the bar for about 6 or 7 minutes by now, only been greeted from the sushi chef. I then asked the sushi chef if I order my drinks and food through him, he told me a server would be right with me. I eventually got a water from my assigned waitress. I ordered a roll from the chef which took about 20 minutes. When I finally finished my first roll I ordered another one and that was prepared way faster than the first. By the time I was done with my second roll my waitress still hadn't come up to me to ask if everything was prepared nice or anything. To get my bill I had to search for my waitress and ask for it. As for the sushi? I got the roll that had a mango dressing on top, there was hardly any of the mango dressing on top of the rolls, thus making the sushi very dry and hard to swallow. Even when I dipped the sushi in soy sauce it felt as if I was swallowing mainly rice. I felt that with both of the rolls I ordered it was mainly rice and a dash of fish....anyway, next time I vacation in Moab, I will not be going here.

    Five stars to the wait staff, four stars to the atmosphere, three stars to the food. The hostess and waitress we had were exceptionally friendly, helpful, and down-to-earth. They were there with towels within seconds when we had a water spill! It's a pretty hip little place, but the space is limited and tables too small. I honestly didn't think the sushi was anything special. The rice was a little dry. It was pretty pricey for small quantities ($9-15 for 8 pieces). I did appreciate the creative menu; the vegetarian roll options were better than those at any other sushi place I've been to! The poke salad was very beautiful and fresh. It too, however, was fairly small for a high tab ($13). We had to order three bowls of rice to supplement.

    We decided to try Sabaku Sushi based on reviews we read. We throughly enjoyed our meal. The staff was friendly and helpful. We tried the Delicate Arch and the Rim tempura. Both were very good. This is easily one of the best sushi meal we have had.

    The sushi here was amazing. We ordered the rainbow, fiery furnace and the colorado. They were all super delicious. My fav was the colorado with green chillies for a lil kick. husband loved the FF. Highly recommend it and we will def dine here again on our nxt visit.

    Seriously! Five stars for sushi! Sabaku was an amazing surprise in the desert....wait....anywhere! The rolls are inventive and everything was very fresh. We had the Colorado and Fiery Furnace rolls and they were to die for. Then we finished off the night with a Dessert Roll and Mochi....I can't remember what all is in the Mochi but it was damn good. the Dessert Roll was heavenly....strawberries and blueberries wrapped in rice and tempura fried with a drizzle of Belgian dark chocolate. Can you say "whoa".....wow! Sabaku Sushi is a must when visiting Moab.

    Should have know better. Our surf and turf roll was pretty good but it went downhill from there. The tri-tip was a cut of cheap, under seasoned beef so bland I ended up asking for sauce to put on top of it. It was served on top of unseasoned veggies and alongside an oddly cup shaped portion of white rice. Girlfriend's yakiudon noodles, well, we think they were some sort of dry noodle that was overcooked. Not the doughy type of noodle yakiudon usually comes with. If you're expecting the sort of entrees you've had at other Japanese restaurants, you'll be disappointed in the taste and presentation. This might be the first time I've experienced buyer's remorse after paying the check. Oh, and my can of diet coke was expired. Didn't realize until we'd already paid the bill. On the plus side, the service was great and the atmosphere was nice. Our waitress was attentive and the sushi chef friendly. In closing, we'd strongly advise you try out the pizza, or burgers from somewhere else. If you do decide to go here, get sushi.

    Sabaku, translated, means Desert, and surrounded by the awesome Red Rock desert of Moab, the name fits, though Oasis would fit even better. We found the ambience on the mister-cooled patio delightful, the service (Andi) attentive, friendly and efficient, the food quality and variety over the top excellent. We had salads (cucumber and garden) were fresh, brightly flavored, and satisfying. We had the avocado roll (exceptional in freshness) and a special Sweetheart roll featuring goat cheese, strawberry and spicy tuna inside, Coho salmon and avocado outside - - brilliant!! Wonderful ice cream filled Mochi for dessert topped off a memorable, enjoyable dining experience. We will return next time we're in Moab!!

    Hello, my name is Marcus and you are viewing my review. I gave it two stars. I did this because my roll was mediocre in my opinion; it was the sandstone crunch roll. It had salmon, avocado and panko crumbs to make it crunch. It was made in the California roll style. You could not tell that there were any panko crumbs on the roll if the plate was on the other side of the table, the crumbs were very sparse. The roll was presented in eight cut up pieces which were very small. I came in not very hungry and left feeling normal. The fish couldn't be properly evaluated, for the pieces of fish were too small to taste properly. I would give 1 star if it weren't for my father's roll, the delicate arch, being decent. Other than that the service was good and they had a unique southwest style edamame. But, I don't rate service, I only judge the food!

    I know what you're thinking. Sushi in Utah? Yes. Sushi in Utah. This was one of the most creative and delicious sushi restaurants I've ever been to. The service was so friendly and although we were told the chefs were swamped, we were served promptly. Everything we had was fresh, interesting, and above all, super tasty. We started with the spicy mussel shooters and the ceviche: both were great starters to share.     Best sushi in Utah! I would recommend the sandstone crunch and the surf and turf with elk. The atmosphere was fantastic, and the customer service was top notch. The restaurant was very clean and well appointed. The sushi bar was a fun place to sit and the sushi chefs were pleasant and very friendly. In addition to the regular menu items, the sushi chefs are more than willing to create rolls or items to your personal taste! Highly recommend this restaurant....this place is definitely one of our new favorite places to eat in Moab!

    You will be surprised. Good sushi in Moab UT! Wait staff was incredible. We had a huge order of various sushi, beers, sake, etc...and our waiter got everything perfect without writing anything down. I've eaten a lot of sushi in my time...and I think this was good..not great...sushi. We ordered various roles and pieces. It all tasted very fresh. Just not blow you away sushi. The prices were pretty high..but we expected that. There was also some good live music with a guy playing guitar. Would go back again in a heartbeat.

    Sorry, but we were not impressed. Chirashi was way too small for the price. $22 for about 9 very small pieces of sashimi. Waited over an hour for a seat. The waitress took my concerns seriously and explained that desert sushi can not be compared to "big city" sushi. She was right! If you are used to what she called "big city" sushi, you will be disappointed.

    Very creative and excellent quality. The tofu appetizer recommended by the waitress is an absolute must, amazing taste and cooked to perfection. If you don't like tofu, order it anyway. You will be a fan. As we sat at the sushi bar, we asked the sushi chef to create a few dishes....all of which were awesome. We ordered fried tempura bananas with green tea ice cream for dessert, not a piece was left. So yummy. We are thnkng of planning another Moab trip, we will be back. Maybe a few times during our next stay. Just amazing. thank you!!!!!

I'm placing the average at 3 stars in favor of the sushi, but I literally got my sushi from the chef at the bar BEFORE my waitress even talked to me. I even asked my chef who i should order drinks from, she said the waitress, then she went over to the waitress to let her know I hadn't been helped yet. Waitress acted worried like she had no idea... then took a casual 5 minutes before coming over to ask if I needed any appetizers or drinks... even though my entree was already sitting in front of me. Maybe she thinks appetizers as dessert is some trendy new hipster thing? Yea, no. SUMMARY: Amazing, amazing sushi. Horrible waitress who I gave no tip to. EDIT: I came back here the next night and sat in the same waitress' section. She had seen my Yelp review, remembered me and was very apologetic. While it's tough to make up for what had happened the night before, she went out of her way with a complimentary appetizer and speedy, prompt, attentive service. The bonus coozie at the end was just icing on the cake. I was a fan of the sushi before, but I'm a redeemed fan of the wait staff as well :) I'm leaving my original review as a record but I've amended my rating.

    Came back to Moab and was glad Sabaku was still here. We were here 2 years ago. It is still one of the best sushi restaurants we've been to!! Had the poke appetizer, the sunshine roll and sandstone crunch were outstanding!! Wanted to eat more but just got too full. Sat at the bar and service was great and good conversations with the staff. Will come back to Moab if for no other reason than Sabaku.

    A great find in Moab. As I'm just passing through town I was lucky enough to find Sabaku Sushi. I walked in just as they were doing happy hour, so I had some excellent cut-price rolls. The staff were lovely and engaging, they really helped create a great atmosphere. The fish is fresh and the menu is creative. I recommend Sabaku for anyone wanting sushi in the area.

    Sushi in Moab?!! Apparently so, and fresh and beautifully made sushi! The sushi surprised us with a playfulness (names of local rock formations) and an unexpected palate of flavors. For example, The La Sal roll had buttery salmon topped with a micro thin slice if key lime, lightly dusted with black Hawaiian sea salt. Amazing pop of flavor!!! Absolutely delicious, and different from any sushi I have ever tasted. Another favorite was the Delicate Arch, a piece of art with amazingly balanced flavors. Great sushi! We will return!!

    We were lucky enough to be in town for the opening night of 2014 season. The fish was super fresh, and the preparations were superb. The one item that deserves special mention is the poke salad. We are big fans of this dish, and have had it in many locations including Annapolis and the Big Island. This is the best preparation we have had.

    My husband loves sushi. Me, not so much. When I saw there were only a few choices for non-sushi lovers, I was hesitant to agree to a sushi place. Add to that the distance Moab is from any ocean, and my trepidation increased. But all the reviews on yelp said this place was great, so I let my affection for my spouse override my generally good common sense. And I am so glad I relented! We started with the spicy tuna topped crispy wontons. I asked to have one of them with no seaweed for me and the waitress, Courtney, could not have been more pleasant and agreeable. My hubby ordered the sunshine roll, and I ordered the elk tataki. Both were awesome. We decided to indulge and ordered more--he the Colorado roll, me the shrimp tempura and the veggie tempura. Again, perfectly done. The tempura was light and crispy with not a hint of grease. The overall experience from walking through the door to paying the bill was stellar. The hostess was very friendly and cheerful, our waitress Courtney was wonderful and the food was superior. Definitely worth a return trip!

    after hiking delicate arch i was craving sushi which i didn't think i could find in moab. thanks to yelp, however, i was led to sabaku sushi which was delicious! delicate arch was definitely my favorite, but i also enjoyed the castleton and rainbow bridge rolls.

    Surprisingly delicious, fresh and creative sushi for the desert. The Delicate Arch roll is one of the tastiest rolls I've had honestly. It has a light onion sauce on it that is really good. I'd go back and just order several of these and be happy. We sat at the bar, the service was confusing as you order drinks and apps from a server and the sushi from the sushi chef. I was confused about how to tip... I will definitely go back on my next visit to Moab. I highly recommmed this place. On a slightly negative note, both cocktails that we ordered were pretty "meh" I had the Saketini and he had the Sundance. We most likely would have ordered another each if they were any good.

    I wasn't really looking for sushi in the middle of the desert, but decided to risk it off a recommendation. They also had a Sushi Happy Hour, which sounded good. The service wasn't fast, but it was very friendly and genuinely helpful. The sushi was very good - good enough to have Round 2. I ate at the bar, where the atmosphere was welcoming.     A nice change of pace when dining in the desert. Everything was as good as an LA sushi bar. The ingredients were fresh and had great flavor. The rolls had a different twist from a traditional sushi rolls. After several days of heavy beef meals, this dinner was light and refreshing.

    Best mochi ice cream I have ever had! I ordered two! Delish!!! I got the mango roll which was ok, the rice fell apart easily but my shrimp tempura roll was amazing and the rice was perfect!!! Loved it! Spicy mayo was thick and creamy and spicy! Service was excellent and friendly. Refreshing water, tons of yummy drink options. Great atmosphere, yummy and perfectly cooked tri tip, fair prices and will be back!!! Highly recommend.

    My partner and I had dinner last night. The sushi was amazing, and so fresh tasting. We had the fiery volcano roll (our favorite), the Colorado roll, the California roll, the Sandstone roll, and the spicy scallop roll.     I never expected to find such a great place in the middle of the desert, but this place is fantastic. The sushi was fresh, the presentation is unique, the staff is tremendous, and the taste was unbelievable. The specialty rolls combined a variety of flavors and were out of this world. After talking with the chef a few minutes he made me a roll that wasn't on the menu and it was fantastic. You can tell that they care about their craft. Service was quick and they aim to please. You cannot go wrong by eating here. Now I have another reason than the parks to come back to Moab. Thanks!

    The food here was AWESOME. (To qualify this, I'm a bay area CA native who loves sushi and has eaten it all over the country/world) I went at happy hour and the prices were fantastic. The rolls were creative and really tasty! The soup and salad were fresh and delicious too. Even the water was tasty (had cucumber in it!). The atmosphere is funky and lively. Previous snarky reviewers were probably expecting a more traditional setting. The place has a nice, relaxed vibe and the sushi is legit. YUM! You will not regret going here!

    While the fish was, indeed, fresh for being in the middle of Utah, I'm not sure what sushi the other reviewers have had when they describe this place as some of the best they've ever had. The Fiery Furnace was decent, and the Rainbow Bridge was inventive in concept (a California roll with a variety of sashimi on top), yet neither was remarkable in taste. I don't even remember what kind of sashimi we also had with our meal, it was that unmemorable. The decor of the place was appropriately stylish, even if it leaned a bit toward the Moab-stoner-hippy side of things. All in all, you have to give them props for putting sushi in the desert, as well as growing most of their fresh ingredients locally. Next time in town, I'll need to give them another shot.

    Moab, UT, has some good food options. SS is my favorite, one of the best, excellent menu. I was in Moab for two nights and enjoyed three meals...two pleasant evening meals at the SS sushi bar. Check out their extensive offerings and the fresh ingredients right there in front of you. There are good beverage options. You can easily run up a large tab so take care to be selective. The chef and wait help is friendly and efficient, and I relied on their right-on suggestions on my first visit. I started with the miso soup and then a seared tuna nigiri appetizer, a poke salad and went for their suggested seared salmon with grapefruit entrée. Fresh, fresh, fresh. Their seasonal IPA was my beverage of choice. I went back and enjoyed SS with friends and winged the ordering on my own with excellent results. I've got the place to go whenever I return to Moab. Check it out and enjoy.

    The prices here are much too high for what you get. $7 for a shallow dish of cucumber salad is ridiculous. Rolls are priced at the high end but portions are on the very low end. Basically, everything is priced at least 25% more than it ought to be. Service is very weak, with dishes poorly timed by the kitchen. My wife was served her entree, and finished it, AND had time to go to the bathroom, before my appetizer was served.

    I suppose this is an OK place for Japanese food, especially when considering we're in Moab, UT. My steak was way over seasoned with pepper and my friend's steak was way over cooked and dry. But their salad as well as chicken and fish entrees were pretty good. Service was attentive and fairly responsive. But the miso soup tasted like it came out of a packet. So, all in all, just an average dining experience.

    Didn't expect to find a sushi place in Moab that rivals the best sushi we've had home in Seattle, but here it is. Sunrise cocktail was delicious. Delicate Arch roll was fantastic, as were the spider rolls and salmon sashimi. Very kid friendly with their own menu, crayons, and chopstick holders. A little pricey, but well worth it.

    Went here based on the reviews from Yelper's. Being from California, I have been to my fair share of sushi places and this place was not very good. The waitress recommended the special which was a pan-seared white fish that was marinated in miso., so I decided to try that and a house salad. My Mom ordered the pan-seared chicken and a California roll. The place was not crowded at all, but it took a good 20-25 min for us to get our California roll and my salad. I have never had a California roll taste like tuna from a can, but this smelled like tuna from a can and tasted like it too. No sooner did the waitress put our sushi down and she was bringing our entree. The chicken was good, but my fish was burnt on both sides and the rice was cold. I sent my plate back and requested another one. It took FOREVER to get my food back. My Mom had finished half her meal and was waiting for me to get mine back so I would have to eat alone, but it took at least 15 mins to get my plate back. This time the fish was barely cooked.....and the rice was still cold. The manager finally came over and said she was sorry and that she would credit me for my meal and half off my Mom's chicken. I was going to give one star, but that isn't the waitress or managers fault, so I gave them two stars. Atmosphere was funky and staff were cool, but I would not go here again if I ever come back to Moab.

    We were so, so glad when Moab got its own sushi place back in 2011. No longer did we have to drive to Durango or GJT. I think Sabaku is much better than the ritzy, too-pricey place in Telluride, and they don't care if you're in hiking pants. The sushi-chefs are friendly and will chat you up, especially if they see you come in multiple times. My favorite roll is the LaSal, is has this lovely thin-slice of lime on top and I am a sucker for citrus. Their combinations are so good and never boring. I can only comment on the maki-rolls since we never tried the other entrees. The specials are inventive and named after local places and local geologic features. We also loved the Fiery Furnace roll. The moab airport is just north of town, and Sabaku gets their fish flown in. Very good stuff-- I LOVE this place and miss it when I'm not there.

    The chefs and wait staff are extremely friendly, but more importantly, the food and drinks are outstanding! Their fish is flown in fresh every day. I travel all over the world, have eaten sushi in every city imaginable and this place ranks up there with the best of them!. My only "complaint" is they aren't open seven days a week or for lunch so I could eat there more often. And, to top it off their prices are very reasonable. You expect to find good steakhouses and barbecue in Moab, but it's a real treat to have such a great sushi restaurant in the middle of the desert.

    We were arriving in Moab latish (around 8:30) and yelp steered is to this gem. The wait staff was attentive and friendly. I ordered some nigiri and two rolls, my wife ordered a noodle dish. The rolls had great flavor and wonderful presentation. The nigiri (hamachi, sake and some sockeye salmon from Alaska) was good as well. The noodle dish my wife ordered was great too.

    I love sushi. But this place wouldn't hold it's own on the west coast or east coast. It was a pleasant experience overall - but the food wasn't great - the flavors were just off. So if you're a sushi connoisseur - you probably want to pass on this one. If you want a lively atmosphere (yes the place was packed) with decent happy hour specials for sushi-esque dining - I'm sure you'll have fun.

    Tried this place having very low expectations and were very impressed! We live on the road, love sushi and are always looking for good sushi. We really didn't expect to find good sushi in Moab. Loved the modern and relaxed decor, the music, and the very friendly staff. The prices were reasonable. I was afraid the sushi would not be good, after reading Mary C.'s review. But it was actually very good! We ordered our usual: philly roll, unagi rolls, spicy tuna, and shrimp tempura. They were all very tasty. The sauce was good but not overpowering as is so often the case. You could actually taste the fish. The philly roll was melt in your mouth good, the shrimp tempura still a little warm from the fryer. The temperature of the sushi is something I really notice, and this restaurant got it just right. The rolls were cut perfectly, nice and small. My 6 year old gobbled them down with no problems. It took about 15 minutes to get our food. We were starving but I didn't feel this was an unreasonable wait. The second roll we ordered did take a little longer but there were two tables ahead of us that hadn't been served yet, so, understandable. Everyone around us was enjoying their meal it seemed. I tried to understand how a different reviewer could have had a bad experience here, but I have to say I just don't get it. We came at dinner time and there were several other people. Maybe she reviewed it when they first opened? This place was outstanding in my opinion, and we'll definitely be back whenever we're in Moab.

    I eat lots of sushi and am not easily impressed by sushi. Needless to say, I was extremely skeptical of a sushi bar in Moab, UT despite the generally favorable reviews on Yelp. However, I am happy to say that I was extremely impressed by the sushi here. In fact, it is one of the best sushi I've had in the last couple of years! The fish is flown fresh in from Hawaii everyday and you can really taste it in the sushi. The food was so good that I returned on the second night in my 2 nights in Moab. I got the Rainbow Bridge, Castleton, White Rim, and 2 entrees (Grilled Tri-tip and pan-seared salmon). The food was all fresh but my favorites were the Castleton (best value as well) and the White Rim. I highly recommend this restaurant!

    While I was surprised at the Sushi house in Cortez, which rated 4 stars, I was disappointed here. Sushi was so so and service likewise. Atmosphere didn't do anything for me. If you are ever up in Seattle, try a bento box at Fuji Sushi in china town.

    That's right, folks. There is a good sushi in the desert. There were a lot of locals at the sushi bar, and the place was still hopping when we arrived a little after 9 pm on a Wednesday night. The fish here was surprisingly fresh. We got the Castle Rock and the White Rim, and we enjoyed them both. We also ordered the Southwest Edamame. It was seasoned with lime and something close to Old Bay - I'd definitely recommend it.

    I stopped here on my trip to Arches and Canyonlands because I have very limited access to sushi in Idaho. I grew up eating sushi and absolutely love it. This place was super yummy. I stuck with the basic sushi rolls because I didn't have a lot of money to spend. The prices were sort of high but not bad for sushi or a tourist town like Moab. I started with a California Roll and a Tempura Shrimp Roll. It was nice to see real crab on the menu unlike a lot of those places that serve you imitation crab- isn't that the point- fresh seafood? The California Roll was good but not the best I've ever had. I sort of wish I'd only ordered the Tempura Shrimp Roll because DAMN it was so tasty I ordered another. Yum! I wish I could have tried some of the higher end sushi as well but oh well. The service was friendly and efficient and they didn't treat me any different for being a party of one like some places. I highly recommend eating here in Moab.

    Went here on the evening on New Years Eve. Not much else open in Moab in the off-season...or New Years. Was very surprised!     After a 12 hour day of fun in the hot desert sun, Sabaku Sushi was the perfect place to cool down and have dinner. The wonton appetizer, ceviche and Castleton roll were excellent as was our service. I ALWAYS enjoy my time at Sabaku Sushi. Definately recommend you try it.

    Sushi was average fare. Better than what I'd expect for the middle of Utah, but most definitely nowhere near the truly 4 and 5 star sushi places I've eaten in the past. Not a great ratio of fish to other stuff (little fish, lots of other stuff). Go in with low expectations and you'll be pleasantly surprised.

    More Californians that really liked Sabaku Sushi. Located off the main street, it has a nice relaxed feeling with tasteful decor and perfect lighting for a romantic dinner. The close proximity of other tables and high noise level when they are busy does limit the privacy. Our rolls were excellent but thought two more per serving would be perfect. The edamame was a bit too salty for our taste but the perfect amount for two people. Service was good. Will go back next time in Moab.

    Seriously one of my favorite spots. Like the poster below, I was a bit hesitant on taking in sushi in the middle of the desert and thinking of the hours from the nearest ocean but my local friend Steve raved about this place. I am so happy I tried it because as quite a few of the posters stated, I am a bit of a sushi snob and have eaten it in many of the major cities and overseas. This place turned out to be awesome. We ordered the spicy hamachi, the Delicate Arch and the Hidden Valley roll (fruit, macadamia nuts and eel sauce around a seaweed wrap? Who would have thought?)....all of which was ridiculously good. I like that they had a no-rice roll (Delicate Arch), replacing the seaweed with sliced cucumber. We ended the meal with orange in plum wine - super tasty and healthy. The service was great - really nice people; friendly environment. I was passing through town but was entertained to see locals joking around with each other and the staff - good energy and lots of laughs! That's what makes small towns so cool. In regards to a past poster's comment, who cares what ethnicity anyone is in making good food? One of the best Mexican restaurants I've been to is run by Chinese in NYC. My mom is Chinese but she makes the best lasagna ever (although taken from my American grandma's recipe). Recipes and culinary ideas exist to be handed down and shared. I think it's awesome to move beyond any of these boundaries and share in each others' cultures but giving them a unique flavor. Sabaku deliciously proves that.

    The sushi was incredibly tasty. My friend that goes to a lot of Sushi places was blown way. Their untraditional way to make the Sushi with all kind of vegetables and sauces or even lemon was spatial and every type came out delicious. The service was very friendly and efficient.
