Food is consistently delicious. From chips & salsa to sopapillas. Attentive servers. Carne adovada smothered red is highly recommended but only if you like it smoky and SPICY, as I do! The waitress said the Green Chile is hotter. Ay Chihuahua! Only con is they are closed Mondays and margaritas are just so so.

Good Mexican eating. It's a little mom and pops joint that has some good NM Mexican food. Definitely digging this place. I got a beef Sopapilla. And it was def the right choice. Staff is friendly and food came out quickly. I gave them 4 sides of rice...

Darn good food! Chimichanga was really good; fish tacos were outstanding (two was plenty), and the sauce to drizzle over them was just right; the black bean and corn side dish was the perfect compliment to both.

I am not completely sure what the issues were last night. We have been to this establishment many, many times. We had family in town and thought this was the perfect place to eat. Well, no. We waited for over an hour for our food and once it arrived it had obviously been sitting for a while. My medium-rare carne asada came to me well-done, which was returned immediately and I had no patience to order anything more. When your 13-year-old daughter notes her simple bean burritto has been sitting for a while then we obviously have a problem!!! It took more than 20 minutes to even be seen by a server to order drinks. I am so unhappy with our experience last night and the fact we spent over 88 dollars for a dinner that was so awful with family in town is greatly uspetting!

Quite bad New Mexican food. Tamales were horrible soggy and tasteless mess. Chile Relleno was heavily breaded and filled with what appeared to be velveeta. Chicken enchilada was barely larger than a taquito but decent. Service was decent. Interior largely nice but we were seated near a corner with very bright exposed light bulb, broom mop etc in full view. Outside patio was not open even though perfect weather in mid sept.

Breakfast was good food hot chili not. Chili tasted canned not homemade so did the salsa. I think owner was in talking to everyone around us but didn't stop with us. Oh well don't think eat here again.

This has become a regular stop when back in Aztec. It's good authentic New Mexico Mexican food. They pass the sopapilla test. The enchiladas are tremendous. The wider than normal choice of draughts is another plus. The 4 stars instead of 5 was simply because the papas were simply mashed potatoes the last time I was there.

Rubio's is a great gem in Aztec. We came in early September. It was cloudy and they have an outside patio with a nice fountain. The hostess and servers were really friendly and knowledgable about the food. Whether or not the chips were house-made is debatable (I didn't ask) but the salsa had a good kick. The previous reviewer said the service was slow. While that is accurate, good things take time. The food was excellent and worth the wait. I tend to measure all Mexican restaurants by their Chile Verde and it was amazing. I would suggest it. Rubuos is also a micro brew. I had the R's Amber which was very good but didn't have a chance to try the rest. We ordered two entries, a beer, and a pins colada and it came to less than $40. It was a great deal for the quality and quantity of food. I highly recommend Rubio's.

My mom and I had lunch here today figured I'd give rubios one more chance, it was VERY disappointing !!!!! We get sat down and the server gets our drink , chips and salsa. The salsa vas good but the chips were horrible! They tasted either waaaay over cooked or old and very hard. We get our food and there was very little green chili on my enchiladas, the beans and rice were horrible!!! The beans taste canned! Seriously refried beans is the easiest thing to make and not hard to cook. We were very disappointed with the food!!! The food was tasteless and blan ,Not even salt could help the food I'd rather eat Taco Bell then rubios. The owner was there and you would think he'd go to tables and see how everything is, very unprofessional !!! We will not be back here again. If you want tasteless food I guess this is the place for you

Nice little Mexican food joint in the middle of tiny Aztec, NM. Service was a little slow, but the food was tasty. Four of us ate lunch and ordered enchiladas, crunchy tacos, and chili rellenos. No one was disappointed with their food. Chips were not house-made, but I've had worse. The salsa was not chunky, more a smooth sauce but it had a little kick to it. Would definitely eat here again!

Delicious Mexican food. Very pleasant atmosphere. Good service. Inexpensive. Our party of three ordered fajitas for two and an order of tacos and it cost us 36 dollars. Everything was fresh and delicious. The flour tortillas were superb. You can choose to eat in the patio area or in the bar area with live music or in a regular dining room. Very family friendly. Located on an attractive main street in a small town with great ancestral Pueblo ruins nearby (Aztec Ruins National Monument).

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
