Good food, cheap drinks and a friendly & attentive bartender ... these are truly a few of my favorite things. Bilski's has all three, in spades, and that makes me a fan of this "divey" Merriam sports bar. I'd had Bilski's on my radar for awhile, but just hadn't found myself there until a few weeks ago. KC was deep in the grips of the worst heat wave in over 20 years and, that night, nothing sounded better than a tall frosty beverage - Bilski's delivered. The tasty burger with crispy fries I also had were a nice bonus. I was a little surprised that the inside of Bilski's is as big as it is. From the outside it has the looks of a much smaller bar, but there are actually quite a few tables to sit at, as well as a large bar that has full seating along two sides. Given the choice, I almost always prefer to sit at a bar, but it's good to know that Bilski's has options. Also, having been back a few times now, I realize that my first visit there was on a particularly slow night. At any time there were no more than 10 of us in the whole bar. I didn't mind this, and it gave me a chance to talk with the bartender and some of the other regulars that were there. Since that visit the crowd has ranged from lively to very lively. Still, like most neighborhood bars, the people at Bilski's are friendly and the mood is very relaxed - even on busy nights. Bilski's, with everything it has to offer, has easily made my list for great neighborhood bars. I'm glad I finally gave it a try and will be back often.

It was our first visit to Bilski's and it was about what we expected. The drink prices were fair, some of the regulars were friendly and introduced themselves, and the employees were friendly. Karaoke was pretty good. Don't even bother going through the song book; just pick a song you know and turn it in; they probably have it. It DID get louder and louder though, as the night wore on. The singers were a mix of average, and pretty good. I don't think that there was one horrible singer, as opposed to some places where you're lucky to get one average singer, and the rest....well, you know. It was a neighborhood corner bar. Dark, clean, loud, and a few of the required lounge lizardettes and lizards. I think that they were used to being on the pole, but alas, there wasn't one. There was another 'attraction' or two, but I'm getting used to it. Small dance floor, and a neat little promo...the shot line!! Line up and get a shot poured directly in your mouth. :) Something different! :) 3 stars for now....the next few visits will tell the tale....we weren't knocked out, but we weren't let down either. Karaoke one night a week, free bar poker another night, and it looks like drink and food specials often!

We went to Bilski's for a poker game and were pleasantly surprised on how AMAZING the food was! Order the chicken fingers, you won't be disappointed.

Fantastic burger and side for 5 bucks!!! Small bar atmosphere was right on. Great place to stop grab a bite and have a beer.

food is usually spot-on, but can occasionally be a grease ball. super cheap, super strong drinks. and the natives are awesome. a night starting out with just a few drinks can rapidly turn in to calling a cab if everyone gets to talking and partying and doing shots!

One thing hair stylist know is great food. The Chop Tops crew can't say enough great things about Bilski's! I have had at least 3/4 of the menu items over the past few years and every selection was above expectations. Prices are below average for the amount and quality. Yes, we like to cocktail and Bilski's is a favorite for after work drinks. The new deck outside is great for spring, summer and fall drinkin'! Great, great neighborhood bar.

This is a pretty fun neighborhood bar in downtown Merriam. The people here were pretty friendly. There are various food specials, karaoke nights, etc. On the wall next to our table was a display of autographed baseballs that nearly got us into a lot of trouble. Someone had draped Mardi Gras beans onto the posts supporting each baseball, in a way that made it look like the balls were chained together. To my more intoxicated friend, it caused the display to look like a puzzle and he began an attempt to rip the balls off the posts in order to re-arrange them. Luckily I was far more sober and was able to stop him and point out his error! We were actually in a hurry and only had time for 1 drink, but despite our best efforts the bartender insisted on selling us a pitcher. Lacking time, we did not finish the pitcher and gave the remainder to a coulple of women sitting at the bar who were drinking the same beer we were. So not only did the bar make less money off us by not selling us the more expensive but non-wasteful size we wanted, the two customers at the bar just got free drinks on us so also would not be buying refills as quickly. Not a big deal, since in that case the customers benefited all around, but I just thought it was odd that the bartender turned down a slightly pricier sale that was no more difficult. :)

Food was decent. The bartenders are super nice but the clientele is pretty rough around the edges. Maybe this is what I get for venturing out of my element. I feel bad for the staff because they had to put up with apparent reg's that think they run the place.

This place is one of my Favorite neighborhood bar, friendly staff. The food is excellant and icy cold beverages served in a frosted mugs!! I highly recommend it. Has a new back deck that's a plus.

We went to see the Rumblejetts play an awkward show here tonight. It was obvious that the staff had just pushed the tables aside to clear a corner for the guys to jam... so it was a really weird situation, but cool I guess. The decor is the same as any dive bar, with anything and everything hung on the wall including mannequin legs, children's drawings, baseballs, anything you could possibly wanna look at. The drinks were cheap. We had 3 PBR's and 2 Jack and Cokes for $14! Also, the Jack and Cokes were large and poured by a heavy hand. The owner of the heavy hand seemed nice, as well as the rest of the staff. I didn't eat anything but the food sounded tasty and the band was bragging about how the Bilski burger is the best burger in the world! I would definitely like to go back sometime and give it a try when it's not jam-packed with a band.

This is the friendliest bar in Merriam. The staff are really great and the patrons have been just as nice everytime I've visited. Pool tables and darts in the game room! I've stopped in at times and people are just so nice every time. It's not the biggest or fanciest place in town but you'll definately like going here.

I came here with a group for a friend's going away party a few weeks back. We ended up here based on one of our group's recommendation for a local joint with good food and a laid back atmosphere. Which is helpful when a number of us were coming directly from our gym and were quite sweaty. This is definitely one of those places that has a large number of regular patrons and we did receive a few looks (probably because it was also poker night). We managed to get the empty pool room in the back for our group of about 20. Usually, at bars, you get the standard fare and most of the time its just...ok. But not at Bilski's! While food took time to come out you could tell exactly how fresh everything was - pretzels were fresh! and I honestly wouldn't be surprised that everything was made as orders were put in. OMG food was amazing!! Drinks - well, honestly it wasn't too different from most standard bar drinks. Everything was reasonably priced and tasted phenomenal. As far as service was, might have been slightly slow, but I think that was more due to the fact that they weren't expecting the extra 20 or so people that showed up on poker night. Plus, this looks and feels more like a mom and pop joint so there were only 2 people plus the cook (maybe?) manning the place. Overall, an awesome place to just have a low key time with friends - good times, great food, and drinks! Will definitely be back...and who knows maybe this'll be where I have my next get together with friends!

My family has been going here for many years. We even had my bachelorette party here. We were trying all sorts of shots but the waitress kept recommending more and they were all great! I love that tacos are 50cents on taco Tuesday's and they make them pretty quick.

Bilski's was suggested to me as a location to hold my going-away party last week, and that advice was on point! They were hosting a poker night that evening, but the back of the bar, in the billiards room was wide open, so we had about 20 people there for drinks and dinner as everyone wished me well on my journey back to my home city. Everyone enjoyed their food - it was classic bar fare, but tasty... you know, some bar food is just blah, but I didn't hear a single complaint about the food out of 20 people.... Service was great - they kept the food and drinks coming for the entire time we were there! Check it out - I think you'll find a new favorite spot!

Everytime i've been in there, the larger guy bartender has provided the worst service i've ever seen. If he isn't on his cellphone he's only talking to his regulars and will let your beer go bone dry for 15min before he even pans around to acknowledge anyone else. Then its "You want another?" K, now back to standing at the end talking to anyone else thats a regular. I sat there and watched him treat numerous other new patrons like this. Wish my local bar could have a warmer welcoming other than ignoring new people sitting at the bar. I'm sure there's other staff that understand the socializing aspect with your customers that comes with being a bartender, but that guy needs to go find another profession.

Bilski's might be my new favorite neighborhood bar. I was first introduced to Bilski's by another Yelper who clearly knew what she was talking about. Since then, I have been back a handful of times, and even introduced some of my friends to the joint as well. First off, drinks are cheap and bartenders keep them flowing. Next, I think they have the best chicken tenders I have ever had. They are hand breaded and cooked to order, which is awesome and certainly not expected. I have also had the loaded chili fries and chicken quesadilla. Both were excellent and very reasonably priced. Bilski's is a great little local joint with a laid back vibe with great drink and food specials. Try it out!

A few reviews back, I mentioned that we have some good friends who seem to know all of the awesome, lesser-spotted bars to hit in the KC area. Bilski's is another one of their spot-on suggestions, and I'm certainly a fan. The food is really good, the drinks are cheap, and the clientele is occasionally interesting but always friendly. The last time we were in was for a birthday celebration, and numerous rounds of shots were purchased by not only us, but other folks at the bar, who were just having a good Wednesday night! It was a really fun time...and a surprisingly inexpensive one, which was great. I always end up staying longer and drinking more than I planned here, not that that's really Bilski's fault! But once I get settled in, have some chips and salsa (or maybe nachos...or loaded fries...), and a couple of cheap drinks...well, the time slips by and I find that there's nowhere else I'd rather be for a few hours. Bilski's, I'll see you again soon.

Exactly what I want out of a dive bar. Cold beer, decent food, and adequate service... and you never know what you'll see!

Average bar with decent bar food. If you are a K-State fan I think this is a place to be for game day, and if you aren't, you can tease them and they won't get too upset (if they are winning). We went with some K-State fans, but had to move because they were setting up the Karokee. Seemed like a small place for that so we left after the game. Crowd was a little rough but all very nice people.

I was looking for a place to have some decent food, a cold beer and to watch the Royals game. I found it here and then some. The beer was served in a nice frosty 25 ounce mug and CHEAP. It was $4 for a Miller Lite draw. My chili dog was on special. It wasn't ta-da but still damn good. But there is a ta-da moment...shots of Jameson are $3.50! There are a couple of TV's around the bar as well as a large TV on the wall. It was fine for watching the game. They do have a jukebox. A couple of people did choose a good mix of classic rock, newer country and old school country. The bartender was friendly and attentive. The regulars were nice and had good conservations going. We didn't stick around for karaoke but maybe another time. There is certainly another visit in my future.
