    I was passing through Kansas, in my car with a broken air conditioner, on a day that was 100 degrees, when we stopped at this oasis for the perfect Mexican dinner. The free chips and salsa are better than most, the chips even coming out still warm, the salsa a little spicy and refreshing. We decided we needed margaritas to forget about our car woes, and they did not disappoint, large, reasonably priced, and a nice balance of lime and tequila. I had one of the vegetarian combos, which came smothered in an amazing cheese sauce, and my dad had an enchilada combo. They cheerfully substituted red sauce for green sauce when asked, and he says it was delicious. The total bill was very reasonable, and the service was prompt and attentive. In summary, I highly recommend other travelers consider stopping by!

    Fast, friendly service. Food was just ok, but the prices were reasonable. Stopped while traveling through because I saw they had the white queso dip, which is a staple in all Mexican places in the South, but is nowhere out west where we've been traveling for the last two months. Boyfriend had to ask for more cheese on his nachos because his barely had any. Maybe just an off day, I'd give it a shot again.

    Great Mexican food and good value. I enjoyed the special dish Mojaltece. Perfect for carnivores. A nice selection of Mexican beer and good desserts, too.

    Who knew that Kansas had amazing Mexican food!! Great service and food! Service was great and was very patient with two toddlers so definitely a great family atmosphere. When approaching, we were the only car but more patrons came as the night progressed.

    If you are stuck at the truck stop or hotel it is a place to eat. Waitress couldn't understand English and kept having to get someone to help with my order. Combo dinner for 8 bucks is a good deal but an extra taco for 4 is crazy. If shut down at loves might try again but otherwise not worth a stop out of my way

    This great restaurant had only been in business 5 weeks, but what a find! Newly remodeled, the interior has a great ambiance with rattan chairs. The booths have been refurbished, also. But the food is fantastic, starting off with warm chips & salsa. We had the $8.99 lunch special of 3 cheese enchiladas smothered in fajita chicken. The huge plate also came with rice, lettuce, sour cream, & freshly made guacamole--not spicy--just the way I like it! Great meal! I shared with my hubby and he was surprised that we both felt full. And no charge for the extra plate like some restaurants! This is a great place to eat lunch or anytime after 11:00 AM when you're in Western KS, w est of Hays, KS, about 16 miles. An added bonus is that it is next door to a Love's gas station that always has excellent gas prices. And you can have dessert also at the Dairy Queen next door. I did fail to mention that the Cancun Mexican Grill also has a cute bar area with lots of margarita choices and other spirits. With easy on & off Interstate-70, it makes a wonderful place to stop to fill your tummy and your gas tank!

    This place has the best ceviche and quesadillas ever. The portions are crazy and the prices are great, I recommend this to everyone passing through. Margaritas are so good too

    Awesome food. Good drinks. Great prices. Friendly staff. Stopped for the night crossing through Kansas. Stayed at the Days Inn right here in Ellis, KS. Nice little town. This restaurant is a diamond in the rough. Totally made my night. :-)

    The outside of the building is in inviting, but inside the atmosphere is great. Prices are perfect and the food really made you feel like they pay attention to the menu. Try the strawberry frozen margarita for a real treat.

    Took a minute or two to get seated. Very polite and capable of speaking to their menu items. I got the nachos after battling on whether I wanted a chimichanga shrimp fajitas. Definitely a restaurant worth checking out if passing through! Cheap, good food, and quality service. Also, glad to note I inquired about their margaritas and if they had any strong ones. My waitress happily made it a bit stronger.

    So good! My wife and I are from Southern California and were very skeptical about eating Mexican food in the Midwest but saw the great reviews of this place and decided to give it a try. $3 Margaritas on Tuesdays and Thursdays, excellent! They have a great kids menu, definitely a plus. The highlight of our trip, however, was the fajita plate. It was served on a sizzling skillet and the flavors were totally authentic and very delicious. Ellis doesn't have a lot to offer for hungry travelers but this place should do the trick. Give them a try, you won't be disappointed!

    This food is quite good! I have eaten here several times while in town on business. The staff is friendly and fast and the premises are clean and cozy, although they do have some wobbly tables. The food is fresh and flavorful, it comes out hot and fast. Their chips and salsa are good and come out right away with your drinks, they are very good about refilling chips and sodas. This is right off the highway and totally worth it, don't let the idea of roadside Mexican food throw you, this place is a gem on I-70!

    I am STOKED that I found good Mexican food within walking distance of a truck-stop. Any restaurant that close to a truck-stop is usually horrible, cheap and just in general, totally avoidable. This was not the case with Cancun Mexican Grill. I wanted a HUGE burrito. I always cut it in half, eat half now and then save the other half for lunch the next day or for later when I've got the munchies. In my case, the latter was the case. I went with the "Jumbo Burrito" with beef. It came with lettuce, rice, beans, tomatoes and was covered in cheese. It was fantastic! I've only had a burrito like that in San Antonio and to have it in Kansas was freaking amazing. My husband ordered the chicken taquitos because they would be easier to eat while he drove and he said they were delicious. They came with a small order of rice and beans, a guacamole salad and were topped with cheese. The chips and salsa were also fantastic. I could probably say that besides my burrito, this would keep me coming back to Cancun Mexican Grill. These people really know what they are doing. I'd suggest going inside and ordering because the language barrier is extreme.

    We stopped here on the way to Denver. The guacamole was good, but don't order fish ceviche. The fish was not raw, cooked in lemon juice. It seemed like it was just cooked and then had lemon added to it. Not real ceviche....

    Outstanding chips and salsa. But the vegetarian food came drowned in a white plasticy cheese sauce. I would have really enjoyed my meal without that sauce. Service was good--food came out super fast.

    I never would have guessed that the best Mexican food I've ever eaten would be in Kansas. I've been here once before, and decided then that this would be a permanent fixture on my I-70 runs. This trip I tried the Fajitas Hawaiianas, a traditional fajita dish with a Hawaiian twist. The usual marinated beef and chicken found in fajitas are mixed with shrimp and pineapple, and of course onions and peppers, all of this served on a base cut from a whole pineapple. The flour tortillas are soft and hot, and although I'm not normally a fan of refried beans, I found myself cleaning the plate. For dessert I can't go any farther than their flan. This is difficult to get right... so many places tend to burn the caramel sauce, making it bitter. Here, the sauce is light and sweet and just wonderful. However of all the parts of a meal here, the most amazing is the salsa. Utterly divine, with just the right hints of kick, I would have no problem eating the stuff with a spoon. This restaurant will forever be locked in my GPS as a must-stop when I'm on I-70 in Kansas.
