This is my family's premier go-to place for Mexican food in Waterloo. Jose is always a joy to see and I always look forward to him greeting us as his "friends". Try their steak tacos on corn tortillas. They are completely addicting and their margaritas are top notch.

This restaurant has become a destination. My wife and I are here at least once a week and have never had a bad meal. The service is excellent, but expect to wait if you arrive during prime dinner time. The salsa and chips are top notch and you can tell they are fresh made. The menu is large and there it's a section with house specialities that must be tried. Sure, they have the traditional tacos, burritos and enchiladas but the Pollo Jalisco is phenomenal...it's a chicken breast that has been marinated in a sauce made specifically for this dish, then breaded and served covered in Chihuahua cheese and Pico de Gallo. Yum! I have told all of my friends and co workers about this restaurant and cannot recommend it highly enough!

The food is fantastic; much better than they typical small-town Mex you might expect. Enchilada combination was especially nice. Margaritas are big and tasty but not strong. Service is pitiful, though. Not enough waiters, and the ones working were disinterested. We asked all three working for the Wi-fi password, each of them said they would find out, but no one ever did. Wi-fi can make or break the whole dining experience when you have a 2-yr-old.

Casa Romero deserves 10 stars! This by far is the BEST Mexican restaurant I have eaten at! The authentic food and amazing service do not get any better than Casa Romero. Growing up with authentic Mexican food prepared by my Grandma was something difficult to find in a restaurant locally until I found Casa. I highly recommend this restaurant! Oh, I forgot......the Margaritas are fantastic as well!

This is, without a doubt, the best Mexican food I've ever had. I've had several dishes and everyone has been fabulous. The service is excellent. You can tell they really care about their cutomers. I can't give this place enough stars!!!

Casa Romero is the best Mexican restaurant in this area. They take the time to prepare the food right instead of trying to get it out as fast as possible. I have ordered something different every time I have went there and never been disappointed. If you're looking for a change up from the normal chain restaurant flavors, then make this stop a priority.

They made some improvements which worried me at first but they actually made what was almost perfect, perfect. Roasted veg salsa is awesome. Shrimp enchiladas are undoubtedly my favorite dish. Friendly fast service. Spinach enchiladas yummy, and the Burito mexicano I am told us excellent. We actually ordered meals for for next days lunch. Love this place, can't wait to try other dishes.

My friends are a regular here so I thought I would join them. I don't know what is there attraction to this place. The margaritas tasted like they were just lime juice. The salsa was too spicy and our server was a little slow. I ordered a quesadilla, and were charged extra for the sour cream. They had a nice outside patio area, if I could only bring my own drinks next time...

This place restored my faith in Mexican food! I moved to New Mexico several years ago and when I came back to the Midwest I was disappointed by the Mexican restaurant selections. This is the first place I found that has amazing authentic Mexican food. The staff is also very friendly. Felipe has gone home for a few months but we can't wait until he returns. Great food, great staff!

My favorite Mexican restaurant by far, and I have tried many Mexican restaurants! The food is excellent! Chips and salsa are the best around. My Wife and I absolutely love their food. The Monterey burrito with beef is fabulous. Very friendly atmosphere and good prices. A+++++

Absolutely love this place. The food is excellent and the pitcher of margaritas are extremely tasty and reasonably priced. You'll do yourself a disservice if you don't occasionally order of their specials board at least every other visit.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
