Good food with strong taste and fresh ingredients which does drive some higher cost.

Unfortunately, they changed the raspberry chicken recipe, so they lost a star in my book. The other star is because they're not always consistent. Sometimes the rice & beans are still hard. Or they give crap portions. Other than that though they are pretty decent.

Decent. You can get a solid meal if you don't mind spending $$ a moderate price for what is economy food. It felt cold and corporate, and had pop music blasting outside. Didn't really enjoy my meal. Eat and run.

Good "chain" Mexican food. Customer service at this location was lacking. Could have been a single individual (hopefully) but in this case, it would stop me from coming back. Like the concept in other towns I have traveled through over the last few months. One more comment, $5+ for a single taco is a bit much. Beans and rice can be added so maybe then it is worth it.

Place is good !! Everything tasted fresh. It's not authentic but it is good. I personally love the quesadillas and there beans are cooked well, meaning they are not hard. It has always been clean during the times I have gone. All the employees looked clean and were very nice during my visits. My only one complaint would be that they're hottest hot sauce is more like a flavorful tomato sauce.. but that is due to my preference in spicy food.

Amazing Mexican food! Plus you can choose any weekly special if you're a college student (with your ID). They don't scrimp on the portions either, which I always appreciate. The steak and beef burritos are at the top of my list. Try to avoid coming when it's busy unless you're okay waiting in line for quite a while.

I have been to this Costa Vida several times now, the Staff is very friendly and accurate in taking you orders, the place has been pretty clean the times I have been there. The food is always fresh and wonderful tasting! I truly enjoy this restaurant.

My husband and I went here excited, expecting it to be like Cafe Rio. I was very disappointed in the service, stressful atmosphere, and food. Service: I want to give them the benefit of the doubt, but my experience there was much less than satisfactory. They messed up several orders in the time I was in line, got dishes out of order. They asked if we wanted sour cream, along with salsa, etc., without ever informing us the sour cream would cost extra. Overall, it seemed like all the employees were way too stressed and confused. Atmosphere: my husband and I planned to have a nice night out, but quickly decided to get the food to go. The place is very dark, crowded, and overly noisy. If I could describe the environment with one word, I would say stressful. Food: overall, not bad. But I was certainly disappointed. I got a sweet pork salad, and my husband got a sweet pork burrito. Both of us got a VERY small amount of meat... They were practically vegetarian. The tortillas also could be better. The food is obviously the best part, but they could do way better. In my opinion, it wasn't worth the money or the service to ever go back.

If my life were a sitcom, this would be the place where my friends and I hang out and discuss our lives. It's like our Seinfeld coffee shop, our Friends Monica's apartment, our HIMYM bar, if you will. We always come here to talk and enjoy GREAT food. We also always get the same things: Steak Deep Dish Nachos and 2 Sweet Pork Deep Dish Nachos. These are to die for!!! Basically, if you're looking for a nice place to eat, you LITERALLY cannot go wrong with Costa Vida!

I was craving burritos but Ramires and and Gringos were closed so I went here. Worst choice I have ever made. I ordered what I wanted and payed $6 and ate it. First two bites were good but then I started actually tasting it and I instantly felt like I needed to throw up. The beans tasted like salt and paste and the cheese was extra sharp or about to expire. I couldn't finish it. Got Home brished my teeth before even taking off my coat and now I feel the stomach coming. I will not return even if it is in another state.

This is just a chain mexican food restaurant that is overrated (see also: cafe rio) This is not mexican food. Get authentic mexican at the taco bus or ramirez. Well as authentic as you can get for being in rexburg idaho i mean. The only reason i give it two stars is because it has an ability to fill a hungry college student for pretty cheap.

Over the past couple years we had nothing but horrible experiences at this Costa Vida with the employees, HOWEVER, management has since changed and it is now amazing! The best service and kindest, friendliest employees work there now. They are so nice there and the food is the best!

My wife and I go here quite a bit, now we get the sweet pork nachos every single time we go, because they are seriously that good! Try them and you'll never see nachos the same. Usually the regular size nachos are enough for both of us.

The only reason I can't give Costa 5 stars is because the wait times are HORRENDOUS. The food on the other hand is quite the opposite. The sweet pork is excellent and portions are rather large. The enchiladas are great and if you choose to go the burrito route make sure you order it "smothered" or it can be pretty dry. If you save room for dessert try the tres leches. Currently living in CA and have yet to find a tres leches that beats this one. Be prepared for big crowds, a loud atmosphere, but some really good food. Also don't be hesitant to grab a staff member if your table needs wiped down, so many people are in and out of here they tend to miss one every once in a while.

I used to really enjoy this place, but recently they have failed to make a burrito worth paying for. When I order a sweet pork burrito I expect to actually be able to taste the sweet pork. What I taste is just the beans and rice because of the lack of meat in the burrito. I might as well order a bean burrito instead of paying for the sweet pork. If this continues I will no longer eat here because you do not get what you pay for.

The food here is great. My favorite is the smothered chicken burrito it's dang good and huge. That being said the line is always long and slow moving. I feel like when they are making my food I always feel rushed and they assume way to much. They ask if you want something added while they are adding it. You must answer super quick if the answer is no.

POSITIVES: I have always enjoyed the food here (homemade tortillas, flavorful beans and rice, great salads, tacos, enchiladas, burritos, quesadillas, etc). As others have mentioned, it's a decent "fast casual" Mexican food restaurant. Their portions are great for the price. NEGATIVES: depending on the time of day, there may be quite a wait. Unless you get the special of the day, it seems a bit overpriced. PRICE: about $5-8 per meal. RECOMMENDED: I usually get the meal of the day. Bring your student card for a discount. *For those people that rated this poor because it's fast food, you need to stop comparing apples to oranges. Obviously, this isn't authentic mexican food, and if that's what you're looking for, then go to the Taco Bus. Otherwise, see this restaurant for what it really is: good 'ol Americanized mexican fast food.

This place was packed on a saturday night. We moved the the ought the line quicker than expected. The food was fresh and tasty and the service was efficient.

Really good food at a fair price. Although if you go at night or on Saturday you may be standing in line waiting to order for awhile, but its kinda worth it. I love their salads and their kids meal is a very good deal. One bad thing is its always really hot inside in the summer, so I always have to get my food to go.

Since Costa Vida has replaced Bajio's in Rexburg, it has been a popular option for lovers of "Fresh Mex." As much as I liked Bajio's, Costa Vida is a bit of an upgrade--their meat and sauce options just taste a little better. Like most similar chains, you have your choice of burritos, tacos, quesadillas, enchiladas, or salads with a standard set of meat, bean and rice options. Their sweet pork is incredible, as is the mango chicken or raspberry chicken. They also have fish or shrimp taco options, which Hungry G. readers will know is a homerun for me. The key lime pie is a very nice choice for dessert. A Cheap Tip: big eaters should order an extra tortilla ($0.49). You'll have plenty of stuff on your plate to fill it with and its like getting two for the price of one.

My husband and I have to try hard not to come here more than once a week... The food is fresh, delicious, and prices fairly especially with student discounts and deals.

I look at all the recommendations on here and think where did mine go wrong. Actually, the food isn't bad. It's not that good, either. It's not authentic Mexican. It's a chain of stores that sells the same stuff as other chain Mexican restaurants. There's not a lot of cheese to be seen on my nachos, or when I ask for sweet pork on my burrito, I should get more than a tablespoon. It's also not cheap in my opinion. $8 for a small nacho and drink? Really? $11 for a burrito and small drink? Really? If I'm paying that much, they shouldn't skimp on the toppings and the food should be better than the cheap joint down the road. :(

I love this place. It's comparable to Cafe Rio, but with some variations on some of the classics such as the pork nachos (they put queso sauce on the nachos, which is amazing). Definitely one of the best restaurants in Rexburg, and far superior to what was there before (Bajio).

I just love Mexican food. Costa Vida is great. I like the Taco Buses too. Costa Vida you just go down the line like Subway and tell them what you want. So the food is quick. Price could be a little better but okay. I love Horchata, but theirs isn't mixed well at all and is watery.

Not much different than the other competitors but I got food poisoning from these guys. Not my first choice for sure.

Way better than Bajio. Particularly the chicken. Its fresh grilled and not sitting in water. They have good student deals so bring your ID.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
