This restaurant doesn't look like much from the outside, but don't pass it by! The food was really WONDERFUL!! We're from So. California and are used to Mexican food, and weren't sure we would get good food here in central Florida. But, we did!! This is definitely a place to eat!!

Can't lie the steak was good, but I ordered take out and they forgot the desert. That's when I saw their true colors come out. I called to see what we could do since I was 20 mins away when I opened the tied-up take out bag. Their response, "what do you want us to do?!" Followed by just "come back here and pick it up." That would be simple if I wasn't 20 mins away and at work already. They offer to take off the charge for desert. Call ends followed by two calls from them that they hang up the second I answer. I call back and that's when the foul language started flying. Call ended with "F&@$ it, I'll just credit the whole meal" - dial tone. If you order take out, untie the bag, check for everything, and save the Mexican Horror Story episode.

I grew up in Arizona and California and since moving to Florida I haven't found many authentic Mexican restaurants. The service was excellent and the prices were so low for such great quality food. My boyfriend had the chicken chimichanga which was delish and I had the taco salad with shredded beef, I also had a margarita all for $21! I really appreciate good food and kind service, check out this place, I'm sure u won't be disappointed!

Great Mexican food! Meat was well seasoned. Guacamole was fresh, salsa had perfect amount of kick and everything tasted homemade. Even the kids cleaned their plates! Prices were very reasonable and service was wonderful. Definitely going back!!

Another excellent meal here. Mexican at its finest. Fresh and authentic! The flan is out of this world good. $2.99 for a HUGE Dos Equis Amber (has to be 32oz) Great service also, very attentive. Do not be fooled by the outside appearance this place is great. The first time I pulled up my family looked at me like "are you nuts?" I insisted we try it as I did not want the usual chains on that evening. Afterward my family was planning a revisit.

We Loved this place! The food was good and the service was fantastic. If you like spicy food you need to ask for the green salsa, it is hot and wonderfully tasty. I had the combo with a chili relleno and a chicken flauta, beans & rice. Everything was made fresh at the restaurant, not something frozen tossed into a fryer. My husband had the beef taco salad and he really enjoyed the flavorful dish. The guacamole here is outstanding! We will go back! PS. Dinner for 2 $15

Legit roadside Mexican food out in the middle of nowhere. Yelp's map has this in the wrong spot, but it's right across the street from Walmart. With all of the strange construction going on, we ended up passing it and having to u-turn it to come back. We all enjoyed our lunches of chicken mole, taco salad, and a massive burrito! Portions and prices were spot on, and our server was very friendly and attentive. Our server even helped us out with our Spanish as we are along the way in learning a 2nd language :) Definitely one of your best options for food in Bushnell!

Location: east on 48 just off of exit 314 on I-75, on the northside of the road. Parking: in front and along the side. (watch out for the Rv'ers on golf carts). Ample and shared with a few other businesses. Service: nothing to complain about. Been here twice. off season (summertime), it wasn't crowded. In season, it was packed. The service both times was sufficient, quick to refill drinks. Food: Decent to good food. I've had the Steak Mexicano which was good. Best: Salsa for the chips and salsa. One of my favorites to get at restaurants is the salsa from Chili's. Has that right tang. This is close. Would have given this a 3 stars but i do like the salsa. so a 4. going back: sure.

Had lunch here recently at the recommendation of a coworker and glad I did. Ordered the super coyote burrito and happy to say it was delicious. Ingredients were fresh and meat was cooked perfectly. Chips and salsa were pretty good as well. Wouldn't hesitate to eat here again.

Been craving Mexican! Read reviews on a few different sites and decided to give Coyote Rojo a go. Quite a few cars when we pulled in, always a good sign. Another good sign, actual Spanish speaking employees! Chips average, salsa good! Had a bit of kick to it. Hubby ordered tortilla soup and two enchiladas. One chicken, one cheese. He was pleased with the soup and the enchiladas. The chicken enchilada had a large portion of white meat. I ordered the ground beef burrito, all the way. Which means with sauce and cheese on it. Pleasantly surprised, considering where we are. My burrito had a lot of meat in it, a decent serving of sour cream, and picadillo. A little light in the guacamole for my taste. My only negative was that the lettuce they put the condiments on was pretty wet. Made the burrito a bit soggy. A good American Mexican restaurant. Would recommend it.

Should be awarded the best in Sumter County. Awesome food; cheap prices; huge portions and superb staff. A local favorite. If you're traveling I-75, stop in, you won't be disappointed.

I drop by Coyote Rojo for dinner every few weeks if I'm craving Mexican and don't feel like making the drive to my favorite Mexican joint. The chips and salsa are great, and I usually get the fajitas or the Super Burrito. The first time or two I went the food was awesome, but lately its been bland and dry. Prices are good for her portions, though, and the service is usually great.

On the road back home and stopped by because it was close to the highway. Service was fast and attentive. My michalata was prepared well and the enchiladas and carne asada tacos were great! Probably won't ever be back again because I don't live near by, but I will defiantly recommend it to you!

I love good Mexican food and this place.... What a surprise! The service was fast and pleasant, as well as the starter of homemade chips and salsa hit the spot and I knew we were in the right place. Lunch combinations was awesome, and the shredded beef was seasoned to perfection. I can say that my plate as well as my friends was empty! Will be back!

What gem in disguise. Hard to tell how good this place is from the outside. My wife and I were pleasantly surprised. After a long morning at the Webster flea market we needed a good place to eat lunch. This place sounded good on Yelp so we stopped. We were seated right away and served fresh hot chips and homemade salsa. Delicious. We both chose chicken fajetas. The chicken was tender, flavorful and the peppers, onions and tomatoes were fresh and tasty. The order was so large we had enough for a take home box. The food was very good and the server was very pleasant and helpful. We can't wait to go back.

Enjoyed everything! Chips and salsa very good. Chicken fajitas were excellent. Tortilla soup was one of the best we've ever had. The chili relleno was very good too. The service was outstanding and everyone was very nice. Glad we found this place!

*This review is for 09/28/14* We had a function at the Dade Battlefield and were very hungry. We did not want to hit the road back home before stopping to get something to eat so myself and a group of friends stopped here for some good Mexican food. The Yelp reviews seemed positive so why not check it out? The hostess greeted us courteously and was able to put some tables together so we could all sit together. The decor inside reminded me of pueblo-style houses with coyotes everywhere. They have several TVs mounted on the walls all tuned in to Futbol. We started off with the housemade chips and salsa but between all of us that disappeared very quickly. They may have brought us about 4-6 baskets of it. I ordered the Sangria and the waiter made sure that I meant the alcoholic Sangria and not the Sangria soda. After tasting the Sangria, I probably should have had the soda. That was the strongest Sangria I've ever had in a restaurant! Good, but strong. A friend ordered a Margarita and said the same about it. To eat, I ordered the combo dinner of 3: a beef enchilada, chile relleno, and a chicken tamale. I've never had chile relleno or a tamale but it looked good in the picture. The enhcilada was ok, my mother makes them better. The beef wasn't seasoned enough for me. The tamale was just ok as well, not that flavorful. The chile relleno was actually pretty good. I like anything stuffed with cheese and it was packed with it. A friend jokingly told the waiter that it was my birthday while I was sitting beside him. I didn't think he took it seriously until I saw all the waiters come over to me singing "Feliz Cumpleanos" and presenting a birthday Flan to me. One waiter was spoon-feeding it to me and he put a bit of the whipped cream on my nose and on my cheeks. How embarrassing. I was a good sport about it though. I don't know if I would go out my way to come back here if I was in the area, but if friends wanted to go I'd go. Just don't tell them it's your birthday.

Started with some yummy chips and salsa. I grabbed the burritos fajitas, she had the beef fajita salad. We were amazed at how quick the order was delivered and how scrumptious everything was. Our picky child even liked the enchilada! Totally recommend this place to anyone in the mood for outstanding food.

Absolutley Excelent! Great for a family meal, couples date night, or night out with friends. The facility is always clean, the staff is very attentive and polite, and I have never had a bad meal. The prices range from inexpensive for an item combo to around $21.00 for steak, chicken, and shrimp fajitas for two. But the meal is worth every penny. They also have a good kid's menu with kid friendly favorites like mac & cheese and chicken nuggets for little palettes that may not like quite yet. Your tortilla basket never goes empty and your drink never runs dry! The perfect place to squash your tex mex craving.

We went here for the first time and really enjoyed ourselves.. The food was very good, especially loved the salsa. Great prices, several specials on the combination plates and fajitas. Parking couldn't have been better, directly in front of the restaurant. Martin and Manny were both very friendly and they made sure we had everything we wanted. Excellent service. We were welcomed as we entered and thanked on the way out. Next time in the area we hope to stop by once again.

Wanted something other than the basic fast food options and Coyote was the winner. The food is fresh and plentiful. I would think everything would be a good choice. I had the chili relleno which was delicious. The service was friendly and quick which was perfect as we still had a distance to go. A wonderful and energizing break with terrific food.

Atmosphere is like any other mexican restaurant, prices are reasonable, food is great, service is excellent and margaritas are awesome! If you like spicy, get the green salsa. Between the four of us, we ordered tacos, carnitas, burritos and fajitas, and everyone thought they are great. Like others suggested, avoid the fast food places and go there. If I live around here, I'd definitely frequent this place!

I keep thinking I must have been at a different place than the others that gave this dump a positive review. The place is dark, dingy and on the old carpet smelly side. My shredded beef in the supreme burrito was ground hamburger. It was flavorless and mushy. I wish I ate at the McDonald's across the street instead.

I regularly meet my fellow members of the Sumter County Chamber of Commerce at Coyote Rojo for lunch and we always receive superior service. The food has been delicious every time & the chips -n- salsa are plentiful. We'll be back !!!

Great Mexican Food at a great price!! The service was good and I enjoyed meeting the owners. I love the tortilla soup and get it regularly. It has fresh chicken, rice, guacamole, and cilantro. Very filling and a large will provide you with leftovers.

(6/6/2011 )Wasn't too impressed with Coyote Rojo. Three people in our party. flautas, taco salad, and super nachos. 2 flan, 1 sofapilla. No cinnamon on chips. Meat was super dry. Fried salad bowl was cold and stale. Flautas were dry inside.

As good asit gets for the central Florida area. Now me being From Southern California Ive had my share of tacos and burritos. On to the food. Chips an Salsa, verry good no vinegar! This salsa is fresh, and made with lime juice and cilantro! My Lady and I had split an enchilada, shreded beef taco and shredded chicken burriro with a chili rellano on the side. Every thing was FRESH and the chili rellano was roasted before it was battered and fried it took me back to my grandmother's kitchen as a kid.

We found this gem while visiting my dad in the area. The food was fantastic! My dad and I each ordered some sort of sampler, and added a burrito for a couple bucks more. The kids each ordered burritos, one chicken, one steak, both were awesome, and enormous! For the moderate price the amount of food we received was crazy. We carried out 2 take out containers filled to the brim with left overs! We ate them cold for breakfast and they were still yummy! Haha! The food was fresh, flavorful, and it was authentic. The staff was friendly, and the service was great. Every server that passed by our table, plus the owner, checked on us; but by no means were they overbearing or invasive. Right off of I-75, so if you're driving by, this stop is a must!

Have been dining here for about 3 years. Food is consistently excellent. Margaritas are the best. I have tried at least 8 different dishes on the menu and have never has a bad one. My husband cannot eat Mexican food so he always order the "Sea of Cortez" and he loves it! I have nibbled off his plate and OMG it's fabulous. I have to honestly say that this is by far the best in FL, TX, WA, GA,

We stopped here while driving from Tampa to Gainesville, surprisingly busy for a Sunday afternoon! Service was prompt and courteous, food was homemade and seasoned well. Both me and my picky, health-conscious girlfriend found it delightful. Plus, the tab was under $20. Total score!

Great food, great atmosphere, the price was right and their guacamole was to die for. This was recommended by a friend and we will certainly enjoy many more family meals here. My only gripe is the hostess was bland and not personable at all, other than that I enjoyed myself and I know my family did too. Chimichangas for both of us, beans and rice for the bambino.

    (5)
  • E D.

Authentic, homemade, fresh. Best kept secret for locals. If you don't fill up on the homemade chips and salsa, two of my favorites are shrimp fajitas and the chimichanga. The price is right. Ask for Pedro or Pablo...they are awesome !!!!

  • Roberto G.

We had dinner there last night for the first time and it was delicious. Two of us had fajitas (the special that night) and one in our party had the "Vista del Mar" entree which was the seafood entree. Delicious. Service was prompt and friendly. Staff continuously filled our salsa and chip bowls as we waited for our meals. Highly recommended!! Best restuarant in Bushnell area.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
