I have been here twice. The experiences have not been good. The first time our order was messed up twice. First our appetizer was forgotten, and second my husband's steak which he ordered medium-rare arrived cooked beyond well done. To a char. To a crisp. The potatoes were also gray and tasted of acrid margarine (really? You can't use real butter?). My Chicken Brian was so dry so as to be laughable. I'm not being dramatic. It was awful. We chalked it up to the place being new and the staff having to work through the kinks. So we tried it again later, this time ordering another steak and a salad. My husband's steak was good, prepared correctly, but my salad literally was garbage. The romaine was wilted and pallid and the chicken adorning it was dry and tasteless. I couldn't believe it. Look, I'm a fair reviewer. If you're good I will review you accordingly, if you're bad I won't pull punches. My experiences at Carrabba's were just downright bad, from service to food, and I was more than disappointed. I may try them again since they are so close, and if they improve I will update my review. Until then ... a 2 star review is generous.

Excellent Service and great Chicken Bryan. I was surprised to find I'm the first to review this location just West of Colorado Mills off of West I-70 and Colfax. We stumbled in very hungry on Saturday evening on the way back from a day of skiing. We looked a hot mess but were treated the same as the fancy folks dressed up for Saturday Date Night. ;) Our server Brian was amazing as was his entire wait team that worked together so extremely well. I was impressed...I have not been to this chain in many moons but the Chicken Bryan was just as good as I remembered and the excellent service will bring us back next trip down the MTN. . Skip the pasta and try the fish or meat. Heck just ask for Brian and Bryan and you can't go wrong.

Excellent food. Excellent service. Recommend the veggie lasagna. Amazing! Was there with friends and again a year later for a private party. Consistently good both times.

The food is excellent! I've been here 4 times since they opened, and it's been great every time. You can tell that everything is made fresh to order too.

Listen- it's a chain. My thoughts are that everything on the menu should be a show stopper. Can't say that about the Steak sandwich for lunch. Delicious but you get more meat on a dollar hamburger at the Arches. Pasta dishes were worth a repeat visit. Service was good but under staffed. got seated in the bar after lunch time, and my waiter was the bartender. Hostess mistake.

Might want to think twice before you decide to pay for service and you happen to be a minority. We were skipped over several times for groups that came in after us. Can you guess the only difference? We will be voting with our feet.

Five staff were at the host desk when we walked in. One host promptly seated us at a booth, giving us menus. There were no more than six other tables with people at the time (about 2:00p.m.) We waited almost ten minutes. No waitress, no water, no "hello" or " welcome". We could see staff standing in several places talking amongst themselves. As we left, we reminded the two gabbing hosts that it might be a good idea to having someone provide service to customers.

First visit, early (4:00 PM) dinner. Perennial Sinkers, we decided to dine at the bar. As we entered I scanned for the tell-tale cliches of employees huddled in chit-chat as observed by other reviewers. No sign of them. But I feel your pain, bubbas - an all too often sight at restaurants nowadays. Interior was neat and clean (it has only been open a few months). Bartender was pleasant and efficient. Watchful of our needs but not imposingly so. As it was Happy Hour we ordered an appetizer to share (calamari). A generous helping with a marinara sauce arrived quickly. Fresh and tasty but the batter mix was some too salty for our tastes. We each ordered the Shrimp and Scallops. Salads arrived; ingredients very fresh, chilled but not overly so. Bartender offered grated cheese. We were also served bread with an olive oil dip. Bread was a very good Italian, probably made on-site. Entrees next up. Timing between deliveries was excellent - not too fast, not too slow - something we really appreciate and quite rare for chain restaurants. Shrimp a little small but scallops large, both cooked just right. But, again, batters too salty for us. Side pasta was very good. We've not been to Olive Garden but found Carrabba's definitely better than Macaroni Grill. Prices of the entrees seemed high but we're old and everything seems high-priced now. No more lobster dinners at the Copper Kitchen for $4.95 I guess. As to the 'love it-hate it' mix of reviews here? I don't know what to think; perhaps birthing pains not uncommon for a new restaurant. Still, it is a chain and all the processes should be all cookie-cutter. We'll return - at least for Happy Hour and aps; perhaps for dinner also. I don't give it a Five Star only because I am used to three generations of homemade Italian, I think plates should be cleaned in the kitchen, not in customer view - and the 'too salty' issue.

Ate at this Carrabbas for the first time tonight. Very impressed!! Everyone was friendly, professional and attentive. The dinner pairings were excellent! Kudos to Aaron, the manager. He has done a great job.

Italian Cuisine

The immense popularity of Italian cuisine globally isn't unknown. You can find an Italian Pizzeria around every corner of almost every city in the United States. Not to forget that in every house, people enjoy mac and cheese as comfort food. But it would be wrong to believe that Italian food starts with pizza and ends with good pasta as this Mediterranean country has much more to offer other than these two dishes. In Italian Cuisine, there is a high use of fresh tomatoes, all kinds of herbs, great quality of cheese, all types of meat, seafood and fresh handmade pasta. Many find it hard to believe that Italians have been making noodles long back.

Italian and Greek cuisines are always mistaken to be same, but they are poles apart. The primary difference between the two cuisines is the use of cheese in most of the Italian dishes. Italians love to cultivate their own cheese and process them as per their food requirement. It is believed that some cheese is so expensive that cheese producers secure them in lockers.

If you are bored eating the same old pasta or pizza, you can try some of the authentic Italian dishes like Risotto, Polenta, Ribollita, Lasagna, Fiorentina Steak, Bottarga, Ossobuco, Carbonara, Focaccia, Arancini and Supplì. Another item which Italians love to relish every morning is a good cup of Italian Coffee. Once you taste a freshly brewed cup of Italian Coffee, you might not visit Starbucks ever again. Authentic Italian food is made with heart and soul, so go find a restaurant where you can relish Italian cuisine in your city.
