    Ordered the dry spicy chicken wings, whole rack of ribs, a side of mac & cheese and a side of spicy rice and beans. Tried a little bit of everything and it was delicious! The flavors on the ribs and wings are fantastic. Service is very friendly and food comes out quickly and hot. Will definitely go back to try the fried catfish!

    I love these guys! The ribs and chicken are delish. The coleslaw is great too. Super nie staff and the owner is such a sweet guy. No wonder they're so busy.

    First a bit of housekeeping - Winckler's Ribs is hard to find. It is located in a small space on Washington Street, immediately to the rear of Anthony's Pizza. It is north of Bridge Street and difficult to see until you are right on top of it. Look for the red awning. Your perseverance will be rewarded. Walking in, I immediately met Mike Winckler, owner and rib chef extraordinaire. He was sitting on the only seating available inside his shop; a small bench for take out customers (and resting top chefs) to chill while waiting for the next wave. He looked up at me with a smile as I apologized for ending his moment of peace. He was wearing a white chef's pants, jacket and high hat. As I was the only buyer I took the opportunity to talk with him and look around as he stood over the grill working my order of a half rack of ribs. The sizzle and smoke arose in energetic clouds as it was sucked up by the exhaust fans. Some of it escaped to my nose where my brain immediately went into hyperdrive as the sauce molecules slammed into my sensory filters. Oh My! Involuntary salivation. Gulp. I saw his shelf of hot sauces from around the world, and those cans of mysterious powders in shades of orange, red and yellow like you find in huge piles in old markets in India or Pakistan. Not curries, but something more esoteric. The ribs were now showing black streaks where the meat was completely cauterized and the sugars from the marinade and basting sauces were caramelizing into a crunchy sealant. As the final step, Mike poured the red amber finishing sauce over the ribs, turning them a glossy orange-red. Loved that tint. He packed the finished ribs in an aluminum foil bottomed styro box, accompanied by a small cup of his Cole Slaw and a chunk of Corn Bread. Afterwards, we watched the video commercial for his ribs through You Tube on his HDTV above a refrigerator. It was fun and further built my anticipation. I drove home excited. This prelude would be meaningless unless his ribs backed up all this build up. They did. The meat willingly parted from the bone. The first bite was a surprise. Rather than the sweet, tart BBQ explosion I expected, I was confronted with something more subtle. The taste was complex; both mildly sweet and hot, with undertones of other spices I could not identify. Nutmeg? Something sort of nutty? Not sure, but I loved it. The texture of the meat remained intact. Softly chewy and sticky. The glaze and shards of meat that were left on the bone were sucked off with relish. The Cole Slaw was sweet. The Corn Bread was really more like Corn Cake - moist and sweet. I loved these ribs, although they were different than what I had eaten before. It was obvious that a lot of thought, study and preparation went into their creation. I will return, and may have found a buried treasure in the droning leftoverness of Morrisville, in the shadows of Trenton, alongside the mighty Delaware flow.

    I just tried this place the other day for the first time. I ordered the chicken and ribs combo with potato salad and slaw. The meat was very flavorful, tender and juicy. You can really taste the dry rub and the bbq sauce was also excellent. The potato salad and slaw were some of the best I've had around here. If you like bbq and have not tried this place I highly recommend that you do. I will definitely be returning.

    Amaaaaazing! We came here expecting it to be mediocre, but were pleasantly surprised. I'm glad I read the other reviews, because it was in fact hard to find. But on to my experience. We were originally going there to eat out, but there wasn't a place to sit. This was a take out only place. The cashier gave us some helpful recommendations on what to order. We had to go with the ribs though, and I'm glad we did. These were meaty ribs with lots flavor. They fell off the bone. I usually like a little pull to my ribs, but these were fantastic. I loved the charbroiled taste. The cornbread was fantastic. Very sweet and dense. The fries were surprisingly crisp, even after being in a styrofoam container on our way home. On a side note, the owner stopped out just to say hi while we were waiting. VERY nice guy. I'll definitely be coming back for more.

    Chef Mike is the man!!! Ribs are bangin'!!! Crawfish hush puppies are to die for!!! Potato salad is the best ever!!! Jambalaya, when he has it, is amazing!!! I can't leave without macaroni and cheese! It's awesome!!! Too bad I live in Florida now! Sure do miss that place!!!

    There is not much to add to what's been said already. But let me add a comment about their buffalo wings. I had them last night and they were delicious. They were perfectly cooked - crunchy outside and juicy inside. Mr Winckler gave me the sauce in the side because he didn't want to loose the crunchiness of the chicken. The things I like about him is the care and detail he puts into this seemingly ordinary food called BBQ and makes it special. Highly recommended!

    Wish I found this place when I first moved there. Food is really good nice big plates. The owner even let me try a couple of things which I ended up buying more food and taking it to my family.

    Winckler's is a tiny little hole in the wall but don't let it's size fool you - this place completes the trifecta of awesome food joints on the corner of Washington and Bridge Streets in Morrisville (Ben's and Anthony's being the other two.) Although I'm not a huge ribs fan, I am a huge Winckler's fan. This guy has defined ribs for me and when I have a craving, nothing else will do! Some of the counter staff are a little clueless and it can be hard to get through on the phone, but those are minor inconveniences to get his awesome food. Right now the place is closed until further notice. Hope everything is alright because there's no substitute!

    This place is located directly behind Anthony's Pizza. The food is delicious! I'm still trying items on the menu, but their food will satisfy you completely. The ribs are tender, juicy, sticky and sweet! They're drenched in BBQ. The macaroni and cheese is baked, as well as, full of flavor. Potato salad is the perfect blend of satisfaction. The corn bread may be better fresh, but it was dry. Rice is alright, but the collards are pretty good. Over all I rate the place almost five. It may take a little while ordering over the phone, but it's worth the wait!

    What a delicious find! The meat fell off the bone on the chicken and ribs that I had. The potato salad was great! Corn bread was a little dry. The peanut chocolate pie was as good as dessert as a peanut butter-holic like me could want! When I am in the Treetop area again I will definitely be back.

    Fantastic place and they do free samples must try all of their menu selections the ribs are out of this world finger licking good I say perfect barbecue ribs for take out for a summer day love it!

    As good as it gets for me! I've been here a handful of times when I lived in the area. I miss those tender, fall off the bone ribs and yummy sauce! And the cornbread, woooooo yum Chef Michael is a nice guy too I'm gonna have to go back soon, I'm literally salivating thinking about them ribs

    I could smell his food as soon as I turned on to bridge street. I went at the end of the day today and I wanted to comment on how remarkably clean he keeps his restaurant. I ordered a rack of ribs and some jambalaya. The ribs fell off the bone as soon as I picked them up. The outside was caramelized/charred and the inside meat was perfectly soft. The jambalaya was spicy and nicey. Mr. Winckler is going to go places cooking like that.

    Where do I start? Two of my coworkers decided to join me on a culinary adventure. We ordered the chicken and rib combo. WOW! Meat so tender it literally fell apart with a fork. We loved the sauce (boyfriend did not care for it when he tried it later).....collard greens.....they were the best I've ever had! Chef Michael is warm and welcoming. As a fellow local business owner I am always reaching out to network with like minded individuals. Get ready for an increase in business chef...word is out!

The sides were delicious, coleslaw, cornbread and crawfish hush puppies The cashier and owner were also extremely pleasant.     This place gets 5 stars from me because it is the best BBQ I have found in the area. The ribs are moist and fall off the bone. The wings are delicious with a great sauce. The cole slaw is excellent and fresh. I have been looking for a place to go to get some excellent BBQ and Winckler's is my new place.

    Mike Winckler, the owner and chef at this little establishment, serves up some of the best ribs I've ever had in my life. So far I've tried the ribs, pulled pork sandwich, the burger, grilled chicken, louisiana fried catfish, and chicken wings. So far, I thoroughly enjoyed every meal I ordered from this place. I think marinades and sauces that the chef is using, in addition to skillful preparation, is what makes the food so good. I guess one way to describe Winckler's would be soul food with Cajun flare. It's a southern-style meal, and as such it will be juicy, sloppy, and amazingly flavorful. I've been a customer for a while, and Mike Winckler, the owner and chef, is very friendly and loves to get to know his clients. He tries to remember his repeat clients, and he enjoys chatting when he has time. It turns out that Mr. Winckler is a French-trained sous chef, and in the 1970s he worked at the Princeton Hyatt and the Nassau Inn, back in the hay day of those places. Winckler's is some of the best food that Trenton area has to offer, in my opinion. The place is TAKE OUT ONLY and do call ahead because Mr. Winckler doesn't like to rush food prep and he doesn't cut corners.

    Phenomenal ribs. Tangy and falling off the bone. I don't work very close to Winckler's but make the 45 minute round trip sometimes for lunch. It's that good. Their dry spicy ribs, brisket sandwiches, and jambalaya are also wonderful. I recommend calling ahead of time and placing an order rather than showing up and potentially waiting 10-15 minutes for your takeout meal.

    It was ok. Ordered the ribs and I am not a fan of when they fall off the bone without even touching them. My friends and I thought that perhaps they were left over from a few days ago and just heated as we were there early for lunch. Wings were good but pretty standard. Will go back, but I will find it hard to make this one of the regular luncheon stops we make given we work pretty far away. Place did seem very clean and well run.

    The food is VERY GOOD but the delivery guy is NEVER around AND the cashier and phone are handled by a different person every time I order, and they are always a confused 14-16 yr old. The food would shine more if the place was run better.

    After talking to the incredibly friendly owner for a few minutes, I left Winckler's Ribs with my lunch: a half-rack of ribs and side of cole slaw. The ribs were falling-off-the-bone tender and the barbecue sauce was nice and tangy without overwhelming the flavor of the meat. The cole slaw was sweet and creamy, good enough that I finished it all even though I'm generally not a fan. Definitely worth crossing over the bridge from Trenton for. Not that I want to encourage a bad habit, but smokers taking advantage of Morrisville's numerous vice tax-free tobacconists ought to stop here for some smokey goodness I definitely approve of.

    Eh it's ok. I couldn't find the place for the life of me! Finally found it. Place is smaller than smaller. I couldn't find a menu. Had to ask for a menu. You should have menus out for customers to look at. I asked the girl behind the counter about how many bones were on the rib sandwich and she yelled back to the guy because she had no clue! I asked what meat was in the greens and she didn't know. I asked her more questions and all she did was tell back and ask because she didn't know. That's a horrible sign! You need to know what your selling. I asked for a receipt and she didn't even know how to do that either. The place was a little dirty too. There was grease coming out of the machine in the ceiling where the equipment was. It was kind of nasty! The ribs had no flavor whatsoever and the sauce was way too sweet, the greens weren't fresh and were way too bitter. I found 2 bones in the greens which I almost swallowed! The beans were terrible and mushy and all clumped together. The cornbread was very dry! Lastly I asked for extra sauce on the side when my order came up and she again had to ask the guy if they had extra sauce. The guy told me they don't have extra BBQ sauce and he put enough on the ribs. I like extra sauce on the side. How does a BBQ place not have extra sauce on the side???

    I've spent a few days now debating whether I want to review Winckler's because I don't want others finding out about how great this place is. It is small and there is no seating, so I'd prefer to keep it to myself, but my morals have me doing otherwise. Everything I have ordered from Winckler's has been delicious, but the ribs are in a class of their own. Amazing sauce, fall off the bone ribs with a nice char on the outside. Even the cole slaw is abnormally good and when has anyone ever commented on how tasty cole slaw is? Lastly, Mike Winckler is a great guy. He is very personable and makes for great conversation. If you read his bio up on the wall, you also realize how qualified he is. Classically trained, he has quite the resume and it is an honor to have him running such a hole-in-the-wall shop with such great food. The only bad part about Winckler's is that it isn't closer to me or else I'd be here every day.

    Clean place and enthusiastic owner. Ribs did not taste smoked. The sauce was not to my liking....too much vinegar and almost orangey clove tasting. Collards were loaded w too much pepper, and, black eyes peas were too bland. Those looking for authentic smoked ribs should look elsewhere. If you can deal with the sauce which wasn't to my taste, and like spare ribs that are fall off the bone tender due to possibly being boiled w no chew to them you will like this place. Just not to for me. The place is immaculate and friendly and the food is prepared with pride and is of high quality. Like I said, I didn't like the flavors........you may!!

    Walking in I knew that this joint would be good -- pork, smoke, fire -- today was a good day. As we usually are when we try a new place, we over ordered so we could get a sampling of the goodness on the menu. We ordered 2 full racks of ribs, collard greens, red beans and rice, fried catfish, corn bread, 3x candied yam and probably more that I'm still in a haze over. Overall the food was pretty darned good. Since I had a bit of a hike to get back home, the catfish, while fantastically delicious was a bit soggy on the breading (took 30ish min to get home). The ribs fell off the bone as soon as my wife picked 'em up. That's money right there. The sauce was wonderful. It had a bit of an asian spare rib taste/color with some vinegar bite. Super fantastic. The five of us, including my somewhat picky 7 year old daughter devoured just over 85% of the ribs. Sides were awesome too. Candied yams -- heh, not much to say there -- sugar and yams -- that's like Ginger Rogers and Fred Astaire right there. Collard greens had a nice bitterness that went well with the smoked turkey. The rice and beans were probably the lowlight of the meal only because they seemed to be a bit oversalted. Perhaps my palette has changed a bit since we don't eat a lot of salt, so take it with a grain of it. The cornbread was a fantastic, cakey delicious treat only missing a can of corn in the batter (mmm mmmmmmm I love corn in my cornbread). Tried a sampling of the BBQ rice in the store and it was nothing like I've ever tasted. True winner right there. Will most definitely come back next time we're having a hankering for BBQ and/or ribs. Would love to see what Chef Mike can do with some brisket, though. Fantastic experience. Highly recommended. And remember, this establishment is not a chain; the owner is cooking your food. When looking for a dining spot, please consider your local eateries.
