    I was going to review the former JB's BBQ and found out that it turned into Kirby Cosmo's. I was a never too fond of pulled pork. When I tried JB's, I found a new thing to love in life. The sandwich was one of the best I ever had. It is in a quaint little mountain town that is fun to cruise through and take in some sights. I would like to live in a place like Minturn. It is a very pretty area of Colorado. With BBQ like this I think I could hack it.

    after a long snow shoe hike in the mountains we were ready for a big lunch and brews, my friend is a huge fan of the saloon so we headed there first, we got there and they were not open for lunch yet, but the owner suggested we try kirby's and i am grateful we did. it was a perfect lunch after gasping in the thin mountain air. the bartender was super friendly and got us brews as soon as we walked in. we were a little overwhelmed by all the options, but settled on the jalapeno poppers to start and then pulled pork sammies with sides of slaw, mac n cheese and fries. the poppers were spicy and filled with cream cheese. i downed a grip, they were awesome. the sandwiches were filled to the brim with smokey meat and a light covering of sauce that was a little spicy but i ended up adding some hotter bbq sauce to take it to the next level. the fries were handcut and flavorful, the slaw was just ok, but the mac n cheese was really good, and i love mac n cheese. i highly recommend this place if you are in the mountains and want to fill your belly.

    We were up for the weekend and so glad we chose this spot to have some beverages and great food. Great pizza, pulled pork, ribs, and YUM - fried green tomatoes are amazing. Also loved the spicy side of Mac and cheese with the ribs. Service was fast and they even comped my husbands meal when his came out a bit later. But the best part? Friendly staff, fun atmosphere! A big group of us, including my dog, came in to watch the Women's National Team win the World Cup - and it was a great spot to do so! Love dog friendly restaurants and bars - this is a great one -and we will definitely be back next time we are up in Minturn.

    The food never disappoints here. My son claims they make the best PB&J on the planet. I enjoyed the Georgia Pulled Pork and hand-cut sweet potato fries. The kids had fun playing pinball while they waited for the food.

    Great ribs! Good bbq! Great place to come if your in vail beaver creek area. Small bar/restaurant in this quant tucked away mountain town. Come here to escape the outrageous $$$ prices in the resort town of vail.

    Disappointing experience here all the way around. Place was essentially empty, but the server forgot to place our appetizer order and didn't really apologize when we asked about it. The barbecue tasted like it was from a bag or boiled, I don't think it had ever seen actual smoke. The sauce wasn't great, but made the meat edible. The sides were forgettable. (Well wait, the fries were okay.) Mac and cheese was bland, cornbread dry. This is one of the few times where I'd say if you only option is this place or fast food, choose the drive through.

    Good pulled pork. Spicy mac and cheese. Why two stars? The waiter made us feel unwelcome while we waited a looong time for our lunch at 2:30. Did we really leave him a tip on a $62 lunch out of habit? Here is my tip for you- Sticky Fingers or Minturn Country Club unless you need BBQ. Just don't bother the waiter.

    If you like microwaved bbq plates that come out cold. And rude staff then this place is sweet. I've eating here a bunch and this place just constantly disappoints. Hey at least they are consistent!

    The BBQ is so good here, so we were extremely disappointed when we ordered the wings to go and got home and they were burnt and gross. Why would your cook send these out of the kitchen? Such a disappointment and we paid $10.00 for something we can't even eat and had to throw away.

    The JB's pulled pork is a solid choice. Good flavor and very lean. The best part was the fried green tomatoes and jalapeno hush puppies. Good beer selection too. Top it off with good service, and I liked this place a lot. I'll be back next time I'm in the area.

    Great all the way around.Love the food, drinks and the location is cool as well, the view from the deck is real Colorado in old town Midturn, a city that datres back to the 1800. A little out of the way but worth the drive. Would recommend the chicken, melt in you mouth and fall righ off of the bone, the sides are great as well. My fav is the Mac and cheese. Our area has two freat BBQ places to eat, I can not say one is better than the other because after eating at Kirbys I have seen that these guys have a gteat product as well. Will be back to see what the rest of the menu has to offer.

    This is an excellent BBQ joint in the quiet town of Minturn which is easily accessible from both Vail and Avon. It's also a great laid back place for apres ski/hike/bike where you can kick back and enjoy a cocktail and watch sports on TV as you unwind from the day. The restaurant staff is very friendly and I look forward to returning to Kirby Cosmo's every time I visit the Vail Valley. Try the Cowboy Cup (Layered Beans, Pulled Pork, Slaw, Mac & Cheese, and BBQ Sauce). Insane.

    Kirby's is a great spot , good food, no hype. If you are doing the Minturn Mile, stop in at Kirby's instead of the Saloon. Great BBQ, Pizza and Southern Food. We stopped in for Wing Night, every Monday 50 Cent wings, we went with the Buffalo wings, great smokey undertone , full of Flavor and not too spicy. We also got the Fried Green Tomatoes and Mac and Cheese. Everything was great, forgot what a gem this places is. Make sure to swing by Kirby's next time you are in the Vail area.

    This is a great BBQ spot in the mountains..perfect after skiing/hiking feasting option. I went here with some friends after a long hike on Mt of the Holy Cross. Needless to say we were starving. Between the three of us we got a brisket sandwich, smoked chicken salad, and half rack of ribs. Out of the three the ribs were the best. BY FAR. The brisket was pretty plain and not that smokey (Im a brisket snob). But the ribs..man..ive been to some of the best ribs joints in the country and these give em a good run! The sides are also pretty good..especially the mac n cheese. The space has you pretty standard cozy mountain restaurant/bar feel. I like it. The service is also very friendly and prompt. Ill be back for sure!

    For me, no trip to Vail is complete without a visit to Kirbys. It's in Minturn, a town that's managed to save its awesome laid back personality despite its proximity to Vail. Kirby Cosmos is amazing--I love their brisket, pulled pork, baked beans, mac n' cheese, and pretty much everything else on their menu. They have a good selection of craft beer (both bottle and draft) that makes a perfect pairing with their BBQ. The staff is friendly and it's really just a perfect place to head to after a day of skiing or snow mobiling...especially if you're not looking to pay Vail Village prices for a great meal (I promise this is better than anything you'd find there anyway). It should be noted I love their homemade BBQ sauce so much that my brother sent it to me while I was in Iraq...and I cried happy tears.

    Love good food, well this is a great place to get your eat on. Everything I have eaten is good, now that sound crazy but I have never had anything on the menu is very tasty and different from the normal type of food you might find in the area. Not sure what type if BBQ these guys are serving but I think it is somewhere between outheren and Texas, seems to be a bit of a mix but maybe that is the best part. Nice bar to eaat at and the sit down is also well laied out with TV's all around. Would recommend getting the plater, you more for your bucka and more to sample from. Iperfer the ribs but I feel anything you might eat is good. The only bummer is with good food the place can get busy, best for lunch and before or after the dinner rush.

    Wow! great food all around!! I had the BBQ pulled chicked, mac n cheese, onion rings, which were all so tasty. The table ordered the jalapeno poppers and coleslaw... Everything i sampled was delicious. They have a nice, long bar and great tunes from staff ipods. Definitely try this place !

    Horrible. Waitstaff/bartenders drunk and rude and cooks likely the same given the poor quality of the food. One of our water glasses was filled with vodka - not sure how they make that mistake. This is one place we will never return and thankfully there are a ton of great choices in Minturn.

    While visiting some friends in Colorado recently, we stopped for some BBQ at Kirby's in Minturn. It was late and the place hardly had any patrons. We sat at the bar and weren't exactly overwhelmed with the menu. The choices were standard fare, but nothing any of us had was stellar by any means. I'm not saying I wouldn't eat there again - I just wasn't that impressed. Perhaps the less-than-cheery bartender/server had something to do with it. He wasn't overtly rude - but you could tell he really didn't give a rats ass whether you were there or not. Not the friendly service I expect when I go out to eat! We left full and happy - but again, it wasn't anything that spectacular. I take it there isn't much like it around there and if you're in the mood for BBQ, I'd say it's worth a shot to form your own opinion on the matter.

    Vegetarians avert your eyes... :/ ... ;) ... Okay. Kirby must have lived in the south, for he makes great hush puppies with the creative twist of jalapeno pepper. The ribs are just stunning. The macs will put you under the table with bliss. All served with astounding Denver microbrew. Wow.

    While staying in Minturn, we tried to visit here a few times, but it was always packed! Finally we got a table and were able to check it out. The atmosphere reminds me of a brewery, lots of wood and minimal decor. The time we went in, there were loads of children there, taking up all the bar seats (which is a huge pet peeve of mine). There is a good selection of Colorado craft beers on tap, along with good ol' Coors products. Menu was very straight forward. I was lame and ordered a salad and some barbecued chicken, which was really good but, hey... it's just grilled chicken with BBQ sauce. My boyfriend ordered something called the Cowboy Cup... It's this yummy little thing basically has all of the components of a BBQ joint (cole slaw, BBQ pork, macaroni and cheese, etc) piled into a bowl. It was so tasty, I abandoned my BBQ chicken and finished his entree. We would have liked to have gone back during our time in Minturn, but it was just always so busy!! I can see why.

    A hidden gem. I came across this place after searching "bbq" and the other Yelp reviews did not dissapoint. This was a nice open bar only 10 minutes away from our hotel in Beaver Creek. I had the Po Boy sandwich with mac n' cheese and cole slaw. I am not fan of cole slaw but it was delicious. Next time I'm in Eagle county I will definitely make this a pit stop.

    Place is awesome. The food is just as good as the beer selection, and the bar tender had no issue when I said, "I want something local and different from the last every time this glass is empty." The place fits the tiny town which it resides, perfectly actually. Inside its cozy and doesn't feel overwhelming. The food itself was excellent. We kind of went crazy and ordered several different apps, meats, and sides, including some pecan pie at the end. EVERYTHING was worth getting. Above all else, the prices was super reasonable. You'll know when your close because of the smell of smoking meat. This place is one of the few I see worthy of 5 stars and it is certainly worth going out of the way for.

    I'm biased, I head to KCs often. Tap beer varies, mostly moderate, but recently has had better beers. Eaten the food often, like it. Expect slow and moderate service, otherwise you will be disappointed. Also some staff are moody and believe they are pressed for time when maybe not. Folks are great over all, food is great for a local joint with local flare. Understand this is not Vail, and not Eagle, and you will likely have expectations set for a nice time. Try it and make up your own mind.

    Good beer selection, small town feel, great end-of-day meal after a solid day at Vail/Beaver Creek! THE best BBQ I've had in CO. It's not large, but when I was there it was slow so no problem getting a seat and decent service. I KNOW this place gets busy with the low key feel and rural location. Overall, it was real good. Had the brisket and it was amazing! Highly suggested.

    Though it's off the beaten path a bit, this place is WORTH THE TRIP. We were out-of-towners looking for a hearty meal after a full day of snowboarding/skiing and were looking to keep it below $$$ and found this place. 1) SOLID BEER SELECTION. Frequently rotating taps, good selection more diverse than what you'll find elsewhere nearby. 2) EXCELLENT BBQ. So good- everybody in our group was surprised how good it was. Everything we had was very good- favorites included the Pig Wings, the brisket, and the mac and cheese. 3) GREAT SERVICE. It was just one dude running the whole show, yet he was personable, chill, and always kept our glasses full. Great spot, would definitely come back again while in Vail! ======================================= 1 star - Terrible. "Telling everyone to stay away" bad 2 stars - OK, I won't return 3 stars - OK, I'll come back 4 stars - Pretty good, I'll come by again 5 stars - Really good, my go-to places!

    OK, this place was frickin' awesome! Ate there just by chance on a day out in CO and boy, were we ever lucky. EVERYTHING on their menu is great. My wife and I had the pulled chicken sandwich, my son had a cheese pizza, my nephew had the burger, my sister had the pulled pork sandwich, and my brother-in-law had the brisket sandwich. It was all good. Their fries in particular are phenomenal: Thin, crispy, and crunchy, not soggy and mushy. They offer two types of BBQ sauce: Spicy and mild and both are excellent. The mild is very sweet and the spicy has a nice little chile kick that slowly comes back on you. Their beer selection is OUTSTANDING! The waiter couldn't tell me what they had as they change so often, so he took me back to the bar and walked me through their current selection. Wow. Almost all local microbrews and every single one a winner. The owner came out when we were finishing and chatted too us for about 15 minutes. A super nice guy. He named the bar after his dog. Great. We'll definitely be back.

    I've been eating at Kirbys for about four seasons and I always tell folks about this place. That being said I took at least six or seven of my friends there over the course of this past season and owners I hope you are listening your bartender is probably one of the rudest people I have ever been served by. I don't know his name but he's super short with a red beard and literally the last time I ate there I wanted to walk out along with my friends. We all work in the restaurant industry and I think we were a little shell shocked by this guy's treatment. My friends had never eaten there before and this guy didn't offer any menu suggestions began to become super impatient and didn't have a problem displaying that to us. I mean it was normal that they had questions and were unsure of exactly what they wanted. Hello your job is to guide people through the menu and offer suggestions. Then guess what we tip you. When asked what was on the tap he pointed and told them to look for themselves (I am not even exaggerating). I'm trying to like damage control and just asked him to come back because my friends were ready to leave after he sighed.. rolled his eyes and I mean literally made us feel like we crashed a private event. I was embarrassed for him and I felt terrible about the whole thing. It was the second time I had this experience with him and it actually made me not visit the place afterwards because I didn't want to run into him. That is sad. The restaurant business is competitive and all you have is your food and your service. This guy is an embarrassment to people who make their living serving and I hope someone who cares reads this because nobody should ever be treated so poorly by someone who is there supposedly to provide I mean not even great service but at least competent service.

    I find myself craving Kirby's at the most inconvenient times. That's the best compliment though, right? Their fried green tomatoes and ribs are absolutely too die for! I wish there was a Kirby's in Vail Village!

    I was excited by previous reviews of the jalapeno mac n' cheese, but surprised to see it missing from the menu when I arrived at Kirby Cosmo's. I asked my server (who was also the bartender, and the cashier, and the busser) about it, and his response was "yeah, we have that". It's really more of a side than a meal, but tasty nonetheless. The ribs were excellent, and the beer selection was solid, but the service left little to be desired. My friends and I were there about an hour before close on a Sunday night, but customers are customers. I expected a little more from this place.

    Okay, for starters, let me tell you two things: 1. I'm from Texas. 2. Therefore, I know my BBQ. I get to Kirby's, order a beverage from their great beer selection, then I opt for the "Hearty Helpin'" order of the rotisserie chicken. Now this chicken is NOT f-ing around. The meal comes out: half a chicken, fried green tomatoes, and mac 'n' cheese. Wow, I saw the plate and thought, "golly, this is great, I'll definitely have leftovers!" False. I did not leave a speck of food on that plate. The chicken was fan-freakin-tastic. The fried green tomatoes were worth the extra 50 cents as a side, do it. The mac 'n' cheese was not all that hot, if I were you, I'd opt for the hush puppies instead - which my boyfriend ordered and I helped myself to. Yumskas!

    I have been going to Kirby Cosmos since they opened. I LOVE their wings! The ribs and brisket are delicious as well. They have a lot of great sides to choose from. There is a nice friendly neighborhood vibe when you walk in the door and they have some great live music at the location in Minturn. NFL package is on tap as well as some great beers-makes for a fun Sunday afternoon! Check it out, you'll be glad you did!

    Back for more of this crazy good bbq, fried green tomatoes. Not to be missed, ever. So glad I returned to chow down on more of these great St. Louis bbq ribs, a big, satisfying salad with avocado dressing, and of course those fried green tomatoes. Wow. They've kept up the quality, so I'll be back again as soon as I'm in CO again.

    After a day of skiing Beaver Creek, we decided to get away from the masses and head back towards Summit County. We wanted to stop for water along the way and ended up getting off at the Minturn exit. When we realized that gas stations were two miles down the road, we decided to go with the flow and see what popped up... Luckily, what popped up was Kirby Cosmo's. I can't remember the last time I had barbeque I enjoyed so much. The meat was smokey and tender and the sauce packed a nice kick. Baked beans and sweet potato fries were the perfect accompaniments - well, that and one of the many, many microbrews offered. Our friendly barkeep kept us in good spirits and kept our drinks (including our waters) full. My next trip to Colorado will certainly take me back to Minturn - if only for an afternoon.

    Awesome food. We were staying at the Minturn Inn and stopped by here for lunch. Brisket is phenomenal! potato salad is fresh and delicious. Served with a side of corn bread. All this for about $12. Definitely worth checking out!!

    This is for the Edwards location. They have brisket and that is all I wanted--chopped which they kindly did for me. It was really good. I thought the sides were good and prices were reasonable. They have a pretty big menu. Moe's doesn't do brisket so can't go there.

    We waited over an hour for a mediocre buffalo burger and a pulled pork plate. The waiter also must have thought it would be ok with us as long as he ignored our table. No apology at all. Ended up getting our food to go. I doubt I'll eat here again.
